Chocolate WITH CHOCOLATE CHUNKS AND HAZELNUTS Makes Approx 40 Biscotti.
INGREDIENTS • 6 tbsp unsalted butter (2/3 stick), softened to a little cooler than room temperature • 6 tbsp vegetable oil • 1/2 cup sugar • 1/2 cup brown sugar • 3 eggs • 2 tsp vanilla extract • 2 1/2 cups flour • 1/2 cup cocoa (preferably Valrhona or another premium cocoa) • 1 3/4 tsp baking powder • 1/4 tsp salt • 1 cup chocolate chunks, I like milk chocolate, good quality • 3/4 cup nuts, I like pecans or toasted and skinned hazelnuts, pecans are good too!
DIRECTIONS STEP ONE: Preheat oven to 350°F. If you have 2 ovens, use both. If you have one oven you will need to switch the trays halfway through the cooking time. STEP T WO: In a medium size bowl, mix together (I use a whisk), the flour, cocoa, baking powder, and salt, set aside. STEP THREE: With the whisk attachment of your electric mixer, cream the butter, add oil, and add sugars. Make sure you scrape down the sides so that everything mixes together. STEP FOUR: Add eggs one at a time, add vanilla. STEP FIVE: Switch to the paddle on your electric mixer. Add in 2
or 3 stages the flour mixture to the butter mixture, slowly. Do not over-mix. STEP SIX: Add nuts and chocolate, Do not over-mix. STEP SEVEN: Split the dough in half. Form 2 logs across the length of 2 baking sheets (1 log on each sheet), you can do this on the diagonal also. STEP EIGHT: Bake for 20 minutes. Remove from oven (leave the oven on). Let cool on the baking sheets for about 15-20 minutes. Transfer the logs carefully to a cutting board. Slice, on a diagonal, 1/2-3/4 slices. Place each piece back on the baking sheet lying on their sides. Dry the biscotti out in the oven for 15 minutes (less time if you like then chewier). ◆

W
hether you’re building a new home or renovating an existing one, chances are you’re forgoing walls in favour of large, open spaces that invite multiple functions to cohabitate. Kitchens, once tucked away and hidden behind walls, are now the heart of the home with the lines between living, dining and cooking blurring into one expansive space. More and more, designers are challenged with balancing the dichotomy between the need to carve out distinctive spaces and the desire to create a cohesive, communal gathering place for the whole family. The first step toward unifying a large, multifunctional space begins with what’s underfoot: flooring. If you want two spaces to feel connected, I always recommend carrying a consistent floor material from one space to the next. A transition in flooring interrupts the visual flow between the spaces and draws a very visible line that serves to delineate rather than unite. Materials and colours can also be used as connecting elements to establish continuity between spaces. When decorating an open concept plan, it’s always best to select one wall colour and use it throughout. A consistent wall colour allows the eye to flow seamlessly between spaces without interruption. Custom ceiling features, such as beams or panelling, conjure a sense of cohesion when carried consistently throughout adjoining spaces. You can also unite spaces

by taking a finish found in the kitchen, a brushed gold faucet for example, and replicating that finish on light fixtures or drapery hardware in the living and dining rooms. If there are sizable remnants remaining from kitchen counters, I look for creative ways to infuse the material in other areas, such as fireplace surrounds, media tables or end tables. Echoing materials and finishes create natural connections and foster flow between spaces. Within an open concept design, it’s essential to establish definition. Little pockets of distinction create areas of interest and balance the grandeur of a large space. Furniture placement is a critical design element of open concept living. I like to begin by defining zones using rugs and lighting and then layering in furniture and accessories to create space within a space. Seldom will furniture be placed against walls in an open space; instead, your furniture will float. Transitional pieces such as occasional chairs and console tables can be used to connect spaces. When designing for large areas, it’s important to avoid leaving significant voids between spaces that leave them feeling disconnected. You need enough room to comfortably move between zones, no less than 36-40” walkways, but gaping holes can leave your home feeling more like a museum than an intimate gathering place. Furthermore, it’s important to pay careful attention to scale and proportion when designing for an open space. Furnishings that are too small or too large for
the size of the room can overwhelm or underwhelm and distract from your desired aesthetic. Finally, while much thought goes into how to unify an open concept design, equal attention should be paid to ensuring there are a few focal points to avoid an overly monochromatic aesthetic. Trying adding a vibrant accent chair, whimsical feature art or a dramatic light fixture to deliver the all-important punctuation points that
will elevate your room from ordinary to extraordinary. Balance is a critical element of interior design, and it’s importance cannot be overstated when working with open concept layouts. The right combination of consistent materials and finishes, juxtaposed by eye-catching highlights and statement pieces will establish the cohesion a large space needs without sacrificing on style. ◆
