WITH WATERMELON, FETA, TOMATO & CUCUMBER

This salad screams summer. The combination of the salty feta and the sweet watermelon is so delicious. It is refreshing and so satisfying.

Directions

Ingredients

Step ONE

2 cups/12 oz 1� diced seedless watermelon cubes

Gently toss the watermelon cubes with the tomatoes, cucumbers and feta cubes.

10 cherry tomatoes, halved

Step TWO

5 ounces feta cheese cut into small cubes

Drizzle with olive oil, red wine vinegar, and lemon juice. Step THREE

2 baby cucumbers, cut into half moons 6 mint leaves, slivered 4 tbsp extra virgin olive oil

Sprinkle with salt and pepper.

2 tbsp red wine vinegar

Step FOUR

1 tbsp lemon juice

Arrange salad on a platter or individual plates.
