Cast Iron HERB CRUSTED SALMON FILLETS WITH BABY GREENS

INGREDIENTS • 4 salmon fillets, arctic char, or trout fillets • 1 tbsp extra virgin olive oil • Handful of cherry tomatoes, washed, optional FOR THE HERB MIXTURE:

DIRECTIONS STEP ONE: Take the fish out of the fridge for as long as 1 hour before cooking (if you have the time). STEP T WO: Soak your raisins or currants while you are getting everything else ready. STEP THREE: Make your Herb Mixture by chopping and mixing everything together. STEP FOUR: Rub the herb mixture all over the fish. STEP FIVE: Preheat a cast iron or large fry pan over medium high heat. STEP SIX: Put the oil in the pan, when the oil is shimmering, add the seasoned fish, skin side down and the tomatoes and cook for 3 minutes. Decrease the heat, flip the fish, toss

the tomatoes around a little and cook the flesh side for an additional 4-5 minutes. Turn off the heat and let the fish rest in the pan while you prepare the salad. STEP SEVEN: Prepare the salad. Mix the apple cider vinegar, olive oil, mustard, honey, salt and pepper in a large mixing bowl. Place the greens, cucumber and soaked raisins/currants in the bowl with the dressing, toss. STEP EIGHT: Place the fish and tomatoes on individual plates and place the salad on each plate slightly on top of the fish. ◆

Serves 4-6.

• 1/4 cup CHOPPED fresh herbs; use a rough measurement BEFORE CHOPPING of: 1/4 cup packed flat lead parsley, 10 chives, 4 leaves of basil, 1 sprig of fresh thyme (leaves only), 2-3 sage leaves • Zest of 1 lemon (do this on a fine blade zester) • 1 1/4 tsp coarse sea salt (Maldon or Adriatic) • 1 clove garlic, chopped finely • 2 tbsp olive oil FOR THE SAL AD:

• 4 handfuls of Maché lettuce, any baby greens or arugula • 2 tbsp raisins or currants • 2 baby cucumbers, sliced in long diagonals • 2 tbsp extra virgin olive oil • 1/4 cup apple cider vinegar • 1 tsp stone ground mustard or Dijon • 1 tsp honey • 1/4 tsp sea salt • Freshly ground pepper to taste

I’m a firm believer in layered lighting, especially in the powder room. Lighting can change everything—from functional to glamorous. Installing pot-lights (even just one) in the ceiling is a good upgrade for the room. That crisp, downlight is a good way to light surfaces.

Trying to achieve a dramatic powder room doesn’t have to be costly, especially when it comes to the floor. Tile is a great choice and because of the limited floor area, you may want to go all out on your choice. Go for a glossy or reflective surface for a rich dramatic look and customize it with your own pattern.

Avoid the flycatchers, those upside down “dishes” that light up the ceiling instead of what’s below (and are a good source for dead flies). Chandeliers add sophistication and help the reflective surfaces gleam and glow. In addition, add cross-illumination or side lights like pendant lights that hang on either side of the mirror, or choose show-stopping sconces. Some bathroom vanities now feature under-mounted lighting to reflect the floor—great for a night light. Choose the prettiest, shiniest, most glamourous lighting you can handle. The blingier the better.

5 / FROM SOAP TO KNOBS From the vanity to the soap dish, there are lots of choices for powder room upgrades. Today, the dresser-as-vanity trend continues and we’re seeing more custom-made cabinetry that looks like furniture. But you can transform the look for less by upgrading faucets and taps. Go ahead and mix your metals, change out door handles, pulls, and knobs. As long as your powder room is relatively moisture-free, hang framed art. Even one, new, cherishable soap dish can add drama to a powder room. ◆
