Every year, when the leaves change colour, the air gets colder and the layers get heavier, I crave a specific warm dessert that signifies all the cozy feelings this changing season brings. Unfortunately, in usual hibernation-fashion, cozy usually means carb-y. This crisp truly showcases the sweet, warm flavours fall has to offer, but without all the usual guilt. I use an assortment of apples to achieve an array of flavours and textures, and a mixture of oats and nuts to achieve a healthier crisp. Serves: 8

Ingredients FO R T H E A P P L E S

• 5 Apples* • 1 tbsp Lemon Juice • 1 1/2 tbsp Cornstarch or Arrowroot Powder • 1 1/2 tbsp Coconut Sugar or Cane Sugar

ST E P 04 / Crisp Topping: In a medium

ST E P 0 1 / Preheat the oven to 375°F. ST E P 02 / For the Apples: Peel the apples and using a paring knife, slice the apples right off the core in thin uneven pieces. (I am not a fan of coring the apples and then slicing them into wedges on a cutting board. I find the apples do not cook as well. I prefer thin slicing them right off the core and leaving the core behind.) ST E P 03 / In a large mixing bowl, toss the

apples with the lemon juice. Sprinkle with the cornstarch or arrowroot, sugar, cinnamon and salt, toss. Place apple mixture in a medium size shallow baking dish, about 2-quart (smaller than a lasagna dish), about 10” x 8-9” x 8”, or even smaller.

• 1 cup/100g Rolled Oats (I like large flake or old fashioned) • 1/2 cup/45g Almond Flour

ST E P 0 5 / Bake for 60-75 minutes or until the apples are bubbling and the topping is golden.

• 1/2 cup/60g chopped Pecans, toasted**

ST E P 0 6 / Serve warm in individual bowls,

• 1/4 tsp Sea Salt

dolloped with Greek yogurt, sprinkled with cinnamon and a drizzle of honey.

• 2 tbsp Unsalted Butter or Coconut Oil, room temperature

* I use 2 Granny Smith, one Honey Crisp, one Pink Lady and one Spartan, but choose what you like, as long as you use two Granny Smith and do not use Macintosh. ** I place the whole pecans in a zip lock bag and smash them with the back of a fry pan to chop them, then I place them in a dry fry pan and cook them on low heat until they are fragrant and toasted. This takes about 10 minutes.

My ideal vacation spot is a cabin in the woods where we can hike, swim, build fires and read books.

A place where each voice is heard. In my opinion, I think that St. Catharines and the Region of Niagara is successful in that. No community is whole unless all the voices in that community are heard.

Q: WHAT IS ONE THING THAT VERY FEW PEOPLE WOULD KNOW ABOUT YOU? I know every word to every song that the Barenaked Ladies have released. Listening to BNL is my guilty pleasure.

Q: Do you have any Pets? I have two kittens.


Q: WHAT ARE SOME FUN FACTS ABOUT YOU?

Q: Who or what inspires you?

- I enjoy playing and watching basketball. In my first year of university, I ate peanut butter and crackers for a month to save money to buy seasons tickets for the inaugural season of the Toronto Raptors.

I’m inspired on a daily basis. With Momentum Choir, I see brave hearted people who live with a disability and refuse to live isolated lives by working hard and diligently on their singing and performing. Many of the musicians of Momentum live with things that are difficult to navigate and do their very best to give back to the community through music. I’m also inspired by people who create spaces for those who live with a disability like Diane Dupuy, who started the Famous People Players and Jean Vanier, who founded L’Arche, communities for people who live with a disability and those who assist them. Diane and Jean are pioneers and trailblazers who have created agencies and communities that will help people for years to come. It’s my hope that one day, Momentum Choir will be spoken about in that way.

- Due to the hard work and success of Momentum Choir, I was given the prestigious 2016 YMCA Peace Medallion. It was an honour to receive such meaningful recognition from a wonderful and important organization. - I was granted with a St. Catharines Arts Award in the Arts and Education category in 2017. - As my career as a Music Therapist continued, I realized how many talented musicians lived in Niagara. I was supporting many of them through Music Therapy. The majority of these talented musicians, who lived with a disability, didn’t have a chance to display their talents. With the help of Bethesda Community Services and the Ontario Trillium Foundation, Momentum Choir, a highly disciplined, professionally facilitated performance choir, was born. We started with eight members and have grown to over 60. We rehearse each week and perform a dozen times a year. In 2016, Momentum Choir grew and started a brandchise in Western New York. Our hope is that one day, each community has a Momentum Choir so that those living with a disability have a chance to give back to the community through music.

Q: What is the best advice you’ve been given? I was in the middle of a job interview when one of the people said to me, “Mendelt, I think you are successful because you know how unimportant you are.” That advice has stayed with me.

Q: WHAT BRINGS YOU THE GREATEST JOY OR SATISFACTION? I experience great joy when a group of musicians (could be a choir, group of people, my family or a Music Therapy session) works on a song and it comes together “well.” There are so many ways to define “well.” For me, “well” is when the music has reached people in a deep and profound way. It could be that someone feels better about themselves, feels better about their individual musicality or the groups musicality, feels the music in a way that they haven’t felt before or when the goal that we’ve set for a song is reached. Q: What does the word Community mean to you?

Q: IF THE WHOLE COMMUNITY WERE LISTENING, WHAT WOULD YOU SAY TO THEM? In my world, the word ‘inclusion’ is often spoken. Sometimes, affirmation is masked as inclusion. I believe there is a tangible difference between affirmation and inclusion. While affirmation has its merits and is nice to hear, sometimes it doesn’t go far enough. When I’m complimented on dreaming, scheming and implementing Momentum Choir to what it is today, that’s affirmation. When the classic rock band, Foreigner (yes, that Foreigner, the band who has sold more than 80 million albums, I Want to Know What Love Is) does an internet search, sees the support and inclusivity that the people of Niagara have given Momentum Choir and invites Momentum Choir to sing with them on back to back sold out shows in Niagara Falls, that’s inclusion! Thank you, people of Niagara! If you haven’t experienced Momentum Choir, you’re missing out on a unique and fun experience that will propel you to have a greater appreciation for the human spirit. If you have seen Momentum Choir before, tell someone about it. Either way, come out for our next show.

This fall I am trying to think and drink outside the proverbial box and have discovered a fabulous white wine called Arneis. I’d never heard of it, found it delicious, well priced and a hit with our friends as well. Can you tell me a little about this wine? - Brianna

THE WINE LADIES Q&A Dear Brianna, Arneis is actually a grape variety that comes from the North Western region of Piedmont in Italy. It is one of close to five hundred grape varieties indigenous to Italy. Becoming more popular these days, we are seeing more of these wines showing up on the shelves of our liquor stores. Like you, it seems wine drinkers are becoming more adventurous, and when the price is right, as it can be with Arneis, eureka!

The variety’s name is derived from a Piedmontese word meaning “little rascal.” This is due to the fact that the grapes are hard to grow, as Arneis is a low cropping variety and is susceptible to mildew. As in life, and as it is with the finicky noble grape Pinot Noir, known as the “heart break grape,“ a little struggle builds character and when the stars align, can make a wonderful wine. Just as a little side note - Arneis has been and is known to play a role as a protector in the vineyards. To the rescue, it is sometimes planted next to vineyards planted with the Nebbiolo grape, which is the king red varietal of the region. Due to Arneis grapes’ stronger smell, hungry birds taken with the aroma become 12

THE BRUCE

TRAIL BY RUTH D. MOFFATT

rekking along that endless trail, my goal was 900 km away. Once achieved, a new goal presented itself to me, 5-times the distance of the last. “Yes!” I thought,“ let’s hike the Bruce Trail five times and let’s do it in five years.” In May of 2013, on a whim, I decided to hike the Niagara section of the Bruce Trail. The trail consisted of an 80km stretch and I was determined to do it in 3 consecutive days. Truthfully, I was in way over my head, but along the way I met some people who both inspired and motivated me. Dan, who coordinated the event and encouraged non-members to join the club and Fred, who was 77 at the time, led the way down the trail. I count Dan and Fred as the driving forces behind my goal’s achievement. I took some time off after those first three days, knowing my leave to be temporary. Upon my return to the trail, I was filled with undaunted determination and I’m pleased to say, I completed my goal in May of this year. During my 8-day hike in the Bruce Peninsula, I was lucky enough to have 7 friends and a very supportive husband by my side. Like many enjoyable things, hiking and the Bruce Trail gets a hold of you. What could be better than being outside, enjoying fresh air and the ever-changing flora? Why not enjoy the seasons and spend time with friends? Not to mention the health benefits. I was completely addicted. Over the last five years, I became very involved in the Bruce Trail. I joined the Niagara Board two years ago and sit on two committees at the Bruce Trail Conservancy. I also lead about 15 hikes each year and I’ve raised close to $20k for trail securement. The Bruce Trail is practically in our backyard and yet many are unaware of the history or even the length of the trail. The Bruce Trail was 50 years old in 2017 and runs almost entirely along the Niagara Escarpment, a UNESCO World Biosphere. If you haven’t already discovered the Bruce Trail, please take a hike and bring your camera. You never know what you’ll see along the trail of white blazes. The library is delighted to report that this year an impressive 550 kids reported on 3252 books! Thanks to all of the amazing sponsors who supported these programs that encourage of love of reading and literacy in our community. Also, this summer at the library, kids s-t-r-e-t-c-h-e-d it out with Yoga Truly as part of the Power Off and Play! Initiative with Healthy Kids Community Challenge, and Waste Management Public Works was there to teach kids in the community all about recycling. They all had so much fun cleaning up Bottle Bay and learning how to sort trash to keep our planet healthy for future generations.

While it is my first September at GSS, I look forward to working with staff and families to support our students to learn every day. The long standing tradition of excellence at GSS is inspiring to all members of our school community, and extends from academics to service clubs, sports, music, drama and countless other activities. CATHOLIC SECONDARY SCHOOL Sixty enthusiastic students were carefully selected to be a part of Blessed Trinity’s Link Crew for the upcoming school year. The Link Crew is responsible for welcoming all of the new Grade 9 students to Blessed Trinity with open arms, helping every student with the transition into high school. The Link Crew spent their final hours of summer preparing for Grade 9 Orientation Day at Blessed Trinity. In order to make this day perfect for the newest members of the Blessed Trinity family, the Link Crew trained and worked together to plan a number of different activities for the students to participate in. On August 30th, over 200 new Grade 9 students showed up for Orientation Day. The Link Crew leaders came prepared, excited and ready to promote all the amazing programs Blessed Trinity has to offer. The Grade 9’s were split up into groups of ten so they were able to meet and bond with their future classmates in smaller settings. Students were also given a full tour of the school where they were able to see their classrooms and meet some of their teachers. Blessed Trinity’s Link Crew provided the Grade 9 students with a fun and informative Orientation Day. Through their dedication and commitment to making Blessed Trinity an inclusive and welcoming environment, the Link Crew provide a good example and encourage others to, “always be kinder than necessary.” BY ABIGAIL ANTIDORMI

C A M P E AG L E Grimsby Secondary School is pleased to invite 2018/19 Grade 9 students to Camp Eagle, a three-day orientation and leadership camp in Haliburton from September 24-26. We are hoping that all Grade 9 students will take advantage of this valuable opportunity by attending. The program involves a balance of active, outdoor leadership activities and skill-based sessions with activities including hiking, archery, low ropes and co-operative initiatives. The emphasis is on leadership, as well as personal, community and environmental responsibility. Select grade 11 and 12 students also attend camp as student leaders and serve as excellent role models for our newest Eagles. Not only do they lead the activities, but they also help foster a sense of belonging amongst the new cohort. The program allows participants to develop friendships with other students and with staff, which serves to enhance the GSS experience. Also, the sessions provide a vehicle to introduce students to important skills needed in high school and beyond, such as leadership, decision making and career planning. MUSIC As always, the GSS music department has an active first semester planned for its various ensembles. Students are looking forward to a departmental team building event for all students taking music this year in October, the music department feeder school road show, and of course our Winter Concert in December. A M E S SAG E F R O M GS S ST U D E N T CO U N C I L P R E S I D E N T N I C K PASA LU KO As we put Summer ‘18 in the books and look towards the new school year, I wanted to take the opportunity to highlight the exciting future that this school year holds at GSS. Student Council intends to make this the best year yet with the various activities and spirit events that we’ve begun planning. To begin our year, we have Camp Eagle, an interactive 3 day camp for grade 9s to learn about what it’s like to be an Eagle and help let every student get to know one another. With senior mentors from grades 11 and 12 leading our newcomers, students will be able to get to know a wide range of diversity within the school. Year after year, we find that this important event helps ease the transition to high school and establishes solid connections between students and staff. Several times during the school year, Student Council will hold spirit weeks, a whole week dedicated to showing off our spirit in various ways (dressing up, cafeteria games at lunch, door decorating) that are capped off with a bang (talent show, dance, sporting event). Nothing brings students together like a great spirit day when everyone can participate in a common theme and share some laughs.

mentors who will “link” our grade nines to all that our school has to offer. We kicked the year off with our Grade Nine Orientation Day on August 30th and it was a huge success! Over sixty student leaders engaged with over 250 grade nines to help their high school career get off to a great start! One mother commented by saying, “When I dropped my son off this morning, he almost didn’t get out of the car. Now that I see him at the end of the day, I can’t believe the difference. He seems so relaxed! This is such a great idea!” Through the year, there will be a variety of activities including social events, lunch checkins, academic support and strategies and so much more! The theme of LINK is kindness and we want all of our students to experience that in a healthy school community.

Students can be excited for the Winter Formal, which takes place at the end of November at a beautiful venue in our community. Everyone dresses in their fanciest clothes, eats great food, and shows their best moves on the dance floor. This event is always one of the highlights of the school year! For all the competitors in the school, Survivor is the event for you! This action packed school-wide game lets students show their best skills to avoid being eliminated. For 2 weeks, students try to outwit, outlast and outplay one another. No one is safe during Survivor! Overall, this year will be filled with memories that students will never forget. Spirit is one of our strongest traits as a school and it’s important to get involved when you can! The opportunities are endless for every student, both within the walls of our school as well as out in the community. I’m excited to make this a great year for everyone!

isitors from far and wide attended the 3-day event that occurred August 24th-26th, at Winona Park. The Winona Peach Festival is a unique based festival operated entirely by volunteers. Their motto is “People Working Together for a Better Community. ” The Festival is owned and operated by 19 community-based churches, sports and service organizations that come together for this fundraising extravaganza. A big thank you to all the volunteers, sponsors, organizers and exhibitors.
