lue dashers, often in pairs, are found around water and can consume hundreds of mosquitos a day, aided by their sharp eyesight. They will typically come to rest on predictable favoured locations, making photography a bit easier. These macro photos were taken by a Nikkor 105 mm lens with a Sigma 2X teleconverter, mounted on a Nikon D850 camera body. Macro photography focussing typically has to be done manually.

Lemon and Lime INGREDIENTS • 1 1/4 cup (135 g) graham cracker crumbs

MICROWAVE SQUARES

PREP TIME 5 minutes | COOK TIME 5 minutes | SERVES 9

• 1/4 cup (62.5 mL) melted salted butter • 1/4 cup (62.5 mL) melted butter, cooled for 5 minutes • 1/2 cup (100 g) sugar • 3 egg yolks • 1 whole egg • 1/3 cup (83 mL) lemon juice • 2 tbsp (30 mL) lime juice

DID YOU KNOW THAT SUGAR AND SPICE MAKE DESSERTS OH SO NICE? A bit of heat is a surprisingly delicious complement to sugar. If your sweet tooth starts nagging you mid-evening, you’ll want something quick that’ll satisfy that craving. These easy-peasy jalapeño, lemon and lime squares can be made from scratch in under five minutes, using only your microwave. They pack a punch and are guaranteed to hit the spot.

• 1 tsp (5 mL) Tabasco Green sauce • 1 tbsp (6 g) lemon and lime zest

DIRECTIONS STEP 1: For the Crust: Microwave 1/4 cup butter and mix together with graham cracker crumbs. Press firmly onto bottom of 9”, microwave-safe dish, lined with parchment paper. Cook in microwave at 80% power for 3 minutes. Check to make sure the crust is firm. If not, heat an additional 30 seconds. Set aside. 8

STEP 2: In a separate microwave-safe bowl, mix 1/4 cup melted butter, sugar, egg yolks and egg until well combined. Whisk in lemon and lime juice, Tabasco Green sauce, zests and lemon juice together. STEP 3: Microwave in 1-minute intervals, stirring after each minute. Finish with 30-second intervals when it starts to thicken, until the mixture is thick enough to coat the back of a spoon. STEP 4: Pour lemon curd over crust. Let cool, then refrigerate for several hours or overnight. STEP 5: Cut into squares and enjoy.

THA NK YOU

EARL BY COMPASS FOOD BANK

Here is Earl. Earl has volunteered at The Compass for over 12 years now and is the vice-chair of the board of directors, property manager of The Compass and executive on-site during Covid-19. He says his favourite thing about volunteering at The Compass is simply, “helping others”. When asked what made him begin wanting to volunteer at The Compass, he said: “I saw a need in the community where I could actually make a difference and give back, so I got started”. Outside of The Compass, Earl enjoys bowling, cooking, and gardening, along with watching baseball. What Earl is most notably known for around The Compass and in the community, (other than being the handyman of The Compass!) is his work with The Compass Walk. Over the last 10 years, Earl has been our #1 fundraising individual, including a whopping $7,500 last year! This year, Earl has made it his goal to walk the 31KM boundary of The Compass over the six-day period on September 13th-19th. If you or someone you know would like to sponsor Earl and/or register to walk this year, please visit www.thecompass.ca/walk.

Thank you Earl for all that you do!

CLASSIC CARS s y a d s r u Th By Susan Gibbins | Photography by Peeter Poldre

NEIGHBOURHOODMAGA ZINE .CA

Classic Cars Thursdays has been a hugely successful event initiated by the Port Credit BIA to help promote the East end of Port Credit. Every Thursday evening during the months of August and September, along the south side of Lakeshore Road between Hurontario Street and Seneca Avenue, the streets are lined up with some pretty cool cars.

The passionate owners were happy to talk about their babies and even let you take your picture with the cars. There was live music sites set up as you wandered the street as well as some delicious eats and outdoor shopping. So much fun for the whole family. NEIGHBOURHOODMAGA ZINE .CA

THR OUGH YOUR EYES THE MISSISSAUGA FOOD BANK

Local Artists come together to help raise money for The Mississauga Food Bank.

12

NEIGHBOURHOODMAGA ZINE .CA

Mississauga-based music marketing company antiskeptic entertainment, along with not-for-profit Mississauga Music and internationally renowned Metalworks Studios have come together, embarking on their first ever charitable effort to benefit The Mississauga Food Bank. The aim is to raise money with an original song performed by rock band MAYBE MAY, featuring 8 prominent local artists. With local band MAYBE MAY at the centre of the initiative, the original song “Through Your Eyes” was penned during quarantine, over Zoom. It is the first co-write for front man Demetrius Nath who teamed up with Matt Zaddy, a fixture of the music scene as well as Kendra Charest-French, one of the most promising new artists Mississauga has to boast. The band enlisted 2020 JUNO Award winning engineer Kevin Dietz to fill the producer’s seat and Michael “Crusty” Amaral as the videographer on set, who recently worked on content featuring Moby, members of Goldfinger and Rise Against.

Featured on the song is a diverse and talented group of artists, starting with Filipino-Canadian Arlene who has performed at Nathan Phillips Square, Yonge & Dundas Square and Mississauga Celebration Square. Country star Alessia Cohle who takes the lead on the first chorus, has shared the stage with the likes of Brett Kissel and Tim Hicks. The song also features Chris Hummel of retro rock n’ roll outfit The Dreamboats, who have international tours in both Europe and California under their belt. In addition, you will hear the stand-out vocals of Michael Ursini from awardwinning rock band Uforia along with the rich timbre of solo singer-songwriter Tennyson King. Last, but certainly not least, is Jasmine Virginia, front-woman of ethereal prog-rock POLARITY, contributing her lush vocals on the tune. “We love collaborations as a band. And when you can attach musical work with a cause, it’s a win-win. The Mississauga Food Bank is a leader in our community when it comes to helping those in need and we need to step up to do our part more than ever during this pandemic” says Demetrius of MAYBE MAY. The goal of “Through Your Eyes” is to inspire the listener to see the challenges someone else is facing, through their eyes. The hope of this project is for the lyrics and melody to resonate with audiences, giving them a perspective they are far removed from otherwise, motivating them to donate. “Through Your Eyes” is set to release on Tuesday, September 8th via MAYBE MAY’s BandCamp (www.maybemay.bancamp.com). With a donation of their choice (minimum one dollar), supporters will receive a download of the song. 100% of proceeds collected for a 3-month period until December 8th will go directly to aid the efforts of The Mississauga Food Bank.
