Guilt-Free Pizza with a

FIERY KICK

Don’t settle for everyday marinara when saucing your next pizza. Here, we’ve topped a gluten-free cauliflower crust with a fiery curry sauce and tandoorispiced chicken for an Indian-inspired pie.

Chicken

Tikka Masala Pizza

Prep Time: 10 mins ı Cook Time: 30 mins ı Serves: 6

Ingredients • 1 pkg (300 g) PC cauliflower pizza crust • 2 boneless skinless chicken thighs • 1 tsp (5 mL) tandoori spice blend • 2 tsp (10 mL) olive oil • 1 cup (250 mL) lightly packed baby spinach • 1/3 cup (83 mL) tikka masala cooking sauce • 1/4 cup (60 mL) thinly sliced red onion • 1 cup (250 mL) shredded mozzarella cheese

Directions STEP 1. Preheat oven to 450°F (230°C). Place crust, bottom (flat) side up, on wire rack set over baking sheet. Bake, flipping crust halfway through, until edges are golden, 20 to 24 minutes.

Chef's Tip Baking the crust on a rack allows for maximum air circulation while also supporting the weight of the toppings – and avoiding any messy spills in the oven.

STEP 2. Meanwhile, sprinkle chicken with tandoori spice. Heat oil in non-stick skillet over medium heat. Cook chicken, turning once, until golden and no longer pink inside; about 8 minutes. Transfer to cutting board; let cool enough to handle. Thinly slice into bite-size pieces. STEP 3. Wipe skillet clean; heat over medium heat. Cook spinach, stirring, until wilted and liquid has evaporated; about 2 minutes. Remove from heat. STEP 4. Spread sauce onto crust, leaving 1/2 inch (1 cm) edge uncovered. Arrange chicken, spinach, onion and cheese over top in even layers. Bake until bubbling and browned; 7 to 8 minutes. Let stand 2 minutes.

Event

Stories of mythical beings have been with us for thousands of years. These legends, which were sometimes inspired by fossils or living animals, continue to inspire us today. Now open at Joseph Brant Museum and running until January 3, 2021, Giants, Dragons & Unicorns: The World of Mythic Creatures traces the natural and cultural roots of some of the world’s most enduring mythic creatures. Organized by the American Museum of Natural History in New York, Giants, Dragons & Unicorns: The World of Mythic Creatures features unique cultural objects to highlight the surprising similarities and differences in the ways people around the world envision and depict mythic creatures. 8

The World of Mythic Creatures ON V IE W AT T HE JO SEPH BR A N T MUSEUM By Museums of Burlington | museumsofburlington.ca

The exhibition includes models and cast fossils of prehistoric animals to investigate how they could have – through misidentification, speculation, fear, or imagination – inspired the development of several legendary creatures. For example, visitors will discover how narwhal tusks were believed to be magical remnants of unicorn horns, how dinosaur fossils may have been mistaken for the remains of griffins, and how tales of sea monsters may simply have been fisherman’s tales of real creatures such as the oarfish and giant squid. Exhibition highlights include a stunning vibrant sculpture of the African water spirit Mami Wata; a replica “Feejee mermaid,” of the type made famous by showman P. T. Barnum, created by sewing the head and torso of a monkey to the tail of a fish; a “life-size” model of a European unicorn; and a dramatic model of a kraken, whose tentacles appear to rise out of the floor as if surfacing from the sea.

Giants, Dragons & Unicorns: The World of Mythic Creatures also offers numerous interactive stations throughout the exhibition. Visitors are invited to participate in activities like rearranging scale models of mammoth bones to look like a giant human skeleton. In an engaging digital interactive, visitors can build their own dragon and watch as it comes alive in a virtual environment. The exhibition also includes several video interviews with experts in various fields discussing the significance of mythical creatures and their possible real-life counterparts. To the

RESCUE

O

By Dereck Addie

ne of the most common questions I heard growing up was, “Are you a cat person, or a dog person?” To be completely honest, I grew up on a farm and my first pet was a checkered black and white Hen named Henny-Penny. For almost three years we were constant companions until Henny-Penny’s untimely demise. Meanwhile, my grandmother loved cats and at one point she had four Siamese cats. It was then I discovered that I was, in fact, a cat person. A cat’s personality varies so much from one individual to another and, while I do like dogs, I admire a cat’s aloof approach and its want or need for attention on its terms was an irresistible lure to my younger self.

Yes, I am a cat person but there are those out there who make me look indifferent at best to cats. I am talking about three dedicated cat lovers in particular; Lori Dudley from NCWL Cat Rescue, Dee-Anne Hamer from Roo Roo Cat Rescue and Beth Stone-Morgante with AVA. These women have stepped up and taken responsibility for abandoned, sick, hurt and diseased cats in the greater Hamilton area. With the help and co-operation of several local Veterinarian hospitals including New Street Animal Hospital, they have helped heal, vaccinate, spay and neuter thousands of kittens and cats, while at the same time, striving to socialize all of the cats in their care and find them loving homes through the adoption process. Cat Rescues such as Roo Roo Rescue, NCWL and AVA consist of small groups of determined volunteers who rescue, foster and assist in changing the lives of abandoned and stray cats and kittens. The demand is great and full of challenges. Cats and kittens are treated with a kindness and compassion so desperately needed by these animals. Once they are back on their feet, they are put up for adoption. The adoption fee includes spay or neuter, FVRCP vaccine, rabies shots, micro-chipping, deworming and flea treatment.

Roo Roo Cat Rescue was named after an abandoned cat living the hard life on the streets. Luckily for him, a caring neighbourhood resident named Phil kept a close eye on him, started to feed him regularly and gradually gained the cats trust. Phil was the one who named him Roo Roo. One day, Roo Roo arrived at Phil’s door with an injury to the back of his ear that needed veterinary help. It was clear that his hard street life was taking a toll on Roo Roo. Phil contacted Dee-Anne Hamer on Facebook and Roo Roo received medical treatment and tested positive for FIV (Feline Immunodeficiency Virus). After his treatment, Roo Roo went into foster care with Phil and his wife Peggy who eventually adopted him. Roo Roo is now living the good life, something hoped for with all of the cats and kittens who come into the care of cat rescues.

Above: Roo Roo - From street cat to Santa’s lap.

Another story is of a small kitten named Dot who was rescued from a farm by NCWL with a large number of other kittens. She was extremely tiny and had a very bad eye infection. When Dot got big enough to do the surgery, they removed the infected eye and unfortunately lost sight in the other. Some thought she would not be adoptable but that proved false. She is now living with a wonderful family and her best friend, a big dog who looks out for her. Cat Rescue is a hard and challenging profession to be in and those who do it depend the dedication and assistance from the teams at New Street Animal Hospital and other veterinary clinics as well as donations from the public to cover costs. Although the adoption fee does cover some expenses, the people behind Cat Rescues often are responsible for the vet bills as well as the food, litter and care for the cats and kittens until they are healthy enough to go up for adoption. If you would like to donate or adopt a cat or kitten, contact Lori at 905-920-0003, Dee-Anne at 416-8221634 or Beth at 905-317-0048 or contact your local veterinary hospital for more information.
