Labour Day RIBFEST at Burlington Centre Mall By Leslie Styles

LABOUR DAY RIBFEST was just as mouthwatering as ever this year, but done much differently. The Rotary Club’s new Drive-Thru Ribfest took place on September 7th at Burlington Centre Mall’s parking lot rather than the classic party in Spencer Smith Park. Only vehicles were permitted ensuring social distancing guidelines were met.


Grills were fired up as huge lines of waiting cars held hungry guests who ordered ribs, chicken, pulled pork, coleslaw, beans and cornbread from one of four award-winning vendors including Camp 31, Billy Bones, Pistol Pete’s Smokehouse, and Silver Bullet BBQ. East Side Mario’s and Blaze Pizza were open as well, providing guests with alternate options to suit every possible taste. A fundraising initiative of Rotary Burlington Lakeshore, the Ribfest also included live music by the James Anthony Band, inductees into the USA Blues Hall of Fame.

Farmers Market The fall Farmers Market is now selling the freshest produce in Waterdown from Connon Nursery’s parking lot. Until October 10th, they will be at this location on Saturdays from 9am until 1pm. Many of the old favourites can be found here including Jones Family Greens, Bartley’s Flowers, Top Market Meats, Hendry Farms products and more. After browsing, head across the parking lot to visit Michelle at the ‘Stuffed’ food truck and pick up your favourite variety of perogies and award winning dill pickle soup to enjoy at home. Heading down Centre Road? The Gunson’s Farm of Puslinch will be selling fresh veggies including corn on the cob, tomatoes, potatoes and more in the parking lot of Home Hardware. Mr. Gunson promises to be selling here until Jack Frost appears later on in the fall.

DID YOU KNOW THAT SUGAR AND SPICE MAKE DESSERTS OH SO NICE? A bit of heat is a surprisingly delicious complement to sugar. If your sweet tooth starts nagging you mid-evening, you’ll want something quick that’ll satisfy that craving. These easy-peasy jalapeño, lemon and lime squares can be made from scratch in under five minutes, using only your microwave. They pack a punch and are guaranteed to hit the spot.

INGREDIENTS • 1 1/4 cup (135 g) graham cracker crumbs • 1/4 cup (62.5 mL) melted salted butter • 1/4 cup (62.5 mL) melted butter, cooled for 5 minutes • 1/2 cup (100 g) sugar • 3 egg yolks • 1 whole egg • 1/3 cup (83 mL) lemon juice • 2 tbsp (30 mL) lime juice • 1 tsp (5 mL) Tabasco Green sauce • 1 tbsp (6 g) lemon and lime zest

DIRECTIONS STEP 1: For the Crust: Microwave 1/4 cup butter and mix together with graham cracker crumbs. Press firmly onto bottom of 9”, microwave-safe dish, lined with parchment paper. Cook in microwave at 80% power for 3 minutes. Check to make sure the crust is firm. If not, heat an additional 30 seconds. Set aside. STEP 2: In a separate microwave-safe bowl, mix 1/4 cup melted butter, sugar, egg yolks and egg until well combined. Whisk in lemon and lime juice, Tabasco Green sauce, zests and lemon juice together. STEP 3: Microwave in 1-minute intervals, stirring after each minute. Finish with 30-second intervals when it starts to thicken, until the mixture is thick enough to coat the back of a spoon. STEP 4: Pour lemon curd over crust. Let cool, then refrigerate for several hours or overnight. STEP 5: Cut into squares and enjoy.

As you take a country drive into Waterdown, there’s no mistaking the smell of autumn in the air as you approach Frootogo’s Pumpkin Patch and Corn Maze on Parkside Drive. Giant sunflowers beckon you into this local family-run farm which offers a fun outdoor play park for the kiddies as well as the Soup-to-go store which sells award-winning soups, baked goods, honey, meals-to-go and more. Fresh wholesome ingredients are churned into mouthwatering creations on site.


Many of our recipes have been handed down through the family. You will find many baked goods that remind you of the homemade goodies you grew up with."

Many families have made a Halloween tradition of selecting their own pumpkin from the giant pumpkin patch. Others buy a pumpkin that’s already been picked. Young children are thrilled to engage in pedal karts, swings, slides, gigantic sandboxes and observing resident goats at play in the yard. Adults and teens enjoy fire pits and the Sunflower Lookout. In fair weather, wagon rides are offered on weekends from 11:00 am until 4:00 pm.

Of course, everyone’s retirement dreams and needs are different, so you need to create a plan that is based on your own inputs. Here are the two most important inputs:

How much

do I need to Retire? The Covid-19 pandemic-related impacts on our lives are creating anxiety in a lot of ways. Many of my clients are conducting financial reviews to help get an up to date picture of their financial plans especially as it relates to retirement savings.

Fidelity’s rule of thumb:

This isn’t a fun activity at the best of times and it’s even less attractive when you suspect that you’re falling behind. My message to you is that ‘Knowledge is Power’.... you are much better off knowing where you stand relative to your goals vs. living in the dark (this is a major source of anxiety BTW).

• Aim to have savings of at least 1x your salary by 30, 3x by 40, 6x by 50, 8x by 60, and 10x by 67.

So, where should you start? I like using ‘rules of thumb’ to give perspective on big, complex things like retirement planning. I recently read an article from my friends at Fidelity Investments that uses age-based ‘factors’ to indicate how well your savings plan is progressing. Here’s a summary of the article (note that this is a US-based article so some of the inputs are different here in Canada, but the concepts are the same). 14

SAVE 10X YOUR INCOME BY AGE 67. Key takeaways

• Inputs that will impact your personal savings goal include the age you plan to retire and the lifestyle you hope to have in retirement.

1 / WHEN DO YOU PLAN TO RETIRE? The later you start retirement, the less you need to save and this reduces your ‘factors’. 2 / WHAT KIND OF LIFESTYLE DO YOU WANT IN RETIREMENT? The more you plan to spend, the more you need to save and this increases your ‘factors’.

What if you’re behind? If you’re under age 40, the simple answer is to save more and invest for growth through a diversified investment mix... If you’re over 40, the answer may be a combination of increased savings, reduced spending, and working longer, if possible. No matter what your age, focus on the goals ahead. Don’t be discouraged if you aren’t at your nearest milestone—there are ways to catch up to future milestones through planning and saving. The key is to get an understanding of your own situation, take action, and the earlier the better.

Fidelity’s savings factors are based on the assumption that a person saves 15% of their income annually beginning at age 25, invests more than 50% on average of their savings in stocks over their lifetime, retires at age 67, and plans to maintain their pre-retirement lifestyle in retirement. Based on those assumptions, we estimate that saving 10x (times) your pre-retirement income by age 67, together with other steps, should help ensure that you have enough income to maintain your current lifestyle in retirement. That 10x goal may seem ambitious. But you have many years to get there.
