adventure awaits in west virginia I

t’s been just over a year since New River Gorge reached the “Gold Standard” of being designated a national park, and excitement among visitors continues to increase. “For the first time that I can recall, the entire country seems to be talking about West Virginia – and Southern West Virginia in particular – as a bucket list destination, and if the diversity in the license plates I see in our parking lot and at the national park visitor center is an indication, we’re drawing more people from states around the country than we ever have before,” said Roger Wilson, CEO of Adventures on the Gorge. “The natural beauty of the region has always been a draw, and now travelers can experience more outside adventures than ever before.” The destination has received widespread worldwide media coverage this year, and excitement about the destination continues to build. Frommers.com recently named the New River Gorge one of the top 10 best places to go in 2022. The region was also named one of the top familyfriendly destinations to visit by USA Today; top travel re-

gion by Lonely Planet; and one of the best places to go by Conde Nast Traveler. Additionally, Time named the New River Gorge one of the world’s greatest places. So, what do people look for in activities in Southern West Virginia’s New River Gorge National Park and Preserve? Glad you asked. Here are 22 suggestions visitors can enjoy in and around the country’s newest national park: Learn or improve your adventure skills. Adventures on the Gorge offers “Learn To” and other guided skill-building experiences featuring personal coaching with passionate guides. 1 - Learn to fly fish like a pro. Learn how to tie a fly, cast and retrieve, set a hook and more. 2 – Kayak whitewater. For beginning and intermediate kayakers who want to learn how to kayak whitewater. Students will learn about gear selection, basic paddle strokes, how to roll a kayak upright, boat control and much more. 3 – Go mountain biking with a guide. Two-hour and half-day Guided Mountain Biking tours are customized to

cyclist’s skill level. Experiences range from easy scenic tours to some of the most challenging tracks in the Appalachians. 4- Learn the ropes of rappelling. Adventurers as young as eight can learn the basic skills needed to rappel off a cliff during this two-hour adventure. There are also half-day rock climbing and rappelling adventures. 5 – Take a guided hike. Hiking guides lead hikers of all abilities to the best spots for photos, the most scenic vistas and places to spot wildlife on two-hour and half-day hikes. 6 – Sharpen your aim. The resort has teamed up with The Summit Bechtel Reserve to offer resort guests new activities. The Summit operates both pistol and shotgun ranges on 60 acres with sporting clays, equipment and expertise in a controlled environment. 7 – We’ll tell you what’s SUP. Head to Hawk’s Nest Lake (It’s actually part of the New River) for some smooth water stand up paddle boarding. Take in the views from the bottom of the gorge, go for a swim and watch the trains go by. Conquer your fear of flying. After a winter at home, staying grounded may be the last thing you want to do, even if it makes you a little nervous. Adventures on the Gorge offers a variety of ways to let your body as well as your spirit soar. 8 – Zip through an Eastern Hemlock forest and protect the environment at the same time. TreeTops Zipline Canopy Tour features 10 ziplines, five sky bridges, two short hikes and a rappel at the end for a half-day aerial adventure that is devoted to sustaining the health of the forest. Part of the fees help treat trees infected by the invasive Wooly Adelgid. 9 – Get a birds’-eye view of the New River. The guided New River Gorge Bridge Walk offers a slow walk along a 24-inch catwalk 850 feet above the New River for an unforgettable view of the river and a fascinating look at the architectural features of the famous bridge. 10 – Defy Gravity. Speed demons will love the monster 1 ½-mile Gravity Ziplines, soaring 200 feet above ground and zigzagging across the ridgeline of a mountain bowl. Expect speeds of up to 65 miles per hour. Challenge those muscles you’ve been working on all winter.All those burpees, squats and push-ups you do this winter will pay off when you meet the physical challenges found at these adventures at Adventures on the Gorge.

Climb and Kayak on Summersville Lake. With a toypacked pontoon boat as your floating home base, this halfday adventure offers a variety of ways to play. Test your upper body strength climbing the rock walls of the lake, challenge your balance on a stand up paddle board and demonstrate your stamina by kayaking across the lake. Test your balance, strength and focus on the TimberTrek Adventure Park obstacle course. To be victorious you’ll need strength, endurance and confidence to face more than 60 platforms with bridges, ziplines, cargo nets and many other challenges. Join the Gauliathon. The rafting world’s version of a triathlon, this three-day, four-night fall-season adventure is the ultimate Upper Gauley challenge. It includes four days of rafting the Upper Gauley’s famous Class V rapids, riverside camping, meals and guided hikes. Not for rafting newbies. Spend more time with the kids.– Take them to the river. The Glade Creek Canyon & Hiking Adventure is the perfect New River adventure for families with kids eight and older, with paddling, hiking, jumping and crazy fun. Our guides love this trip almost as much as the kids. And a big bonus for parents: kids under 12 raft free. Unplug your teens on the New River Overnight. There’s nowhere for them to recharge their phones, so teens will simply have to spend real facetime with you during this two-day adventure. You’ll paddle the Upper and Lower New River by day and spend the night at a riverside campground. Go float fishing and camping. This two- or three-day adventure will give you plenty of time to get reacquainted with your kids as you leisurely cast away the day and spend the night under the stars. Introduce your teens to the Beast of the East. Sixteen is the minimum age for all Gauley River trips during the fall Gauley Season. Even if they don’t say so, your intrepid teens will be thrilled to paddle Class V rapids along with their cool parents. There are half-, full- and overnight trips, and some previous rafting experience is recommended. Share some pool time. The Canyon Falls Swimming Pool includes a water feature to entertain the little ones and a convenient poolside bar for the grownups. include: Guardians of the Galaxy: Cosmic Rewind, EPCOT’s first “other-world” showcase pavilion opening in the summer, features a new storytelling coaster that rotates 360 degrees to focus on the action, including the first reverse launch on a Disney coaster. Disney’s Animal Kingdom will open a new show, “Finding Nemo: The Big Blue... and Beyond,” reimagined to be set in the timeline of the Finding Dory SeaWorld Orlando Parks & Entertainment Ice Breaker, SeaWorld Orlando’s first launch coaster, opens Feb. 18, 2022. The ride features four launches, both backwards and forwards, culminating in a reverse launch with a 93-foot-tall spike with 100-degree angle, the steepest vertical drop in Florida. The new Reef Plunge water slide at Aquatica Orlando launches in spring 2022. Guests will zoom past a vibrant array of marine life, Commerson’s dolphins, leopard sharks and a variety of other cold-water fish. LEGOLAND Florida Resort The world’s first Peppa Pig Theme Park will open Feb. 24, 2022 at LEGOLAND Florida Resort. The standalone theme park will feature multiple rides, interactive attractions, fun live shows, themed playscapes and water play areas. Pirate River Quest, a family friendly treasure hunt adventure, allows guests to journey through the uncharted waters of the legendary Cypress Gardens and discover the secrets protecting its canals, as this all-new story unfolds brick by brick. BEYOND THE THEME PARKS Steinmetz Hall at the Phillips Center for the Performing Arts opened in January in the heart of downtown Orlando. The facility achieves an N1 sound rating - the lowest level at which humans can detect sound. Art² (“art squared”), an urban park featuring a two-story shipping container structure, is coming to downtown Orlando in spring 2022. The park will incorporate a café, art gallery, stage, seating, digital video walls and a gift shop, as well as an artificial turf courtyard, a concrete patio, picnic tables and hammocks and two food truck spaces. The Orlando Slingshot™ and Orlando Free Fall™ – two world-record-setting attractions – opened in December 2021. The Orlando Slingshot™ stands at 300 feet, making it the world’s tallest slingshot. The two-tower attraction launches two riders out of an “exploding volcano,” straight

up into the sky, reaching speeds of 100 mph. The Orlando Free Fall™ at ICON Park stands at 430 feet, making it the world’s tallest free-standing drop tower. Cirque du Soleil - Drawn to Life premiered at Disney Springs in November 2021. The show is a combination of Disney animation and awe-inspiring performances including 10 unique acrobatic acts. Gateway: The Deep Space Launch Complex will open at Kennedy Space Center Visitor Complex in March 2022. The 50,000-square-foot, multi-level attraction will feature a showcase of NASA and commercial spacecraft hardware with immersive displays, as well as a “journey” through space, unique launch viewing opportunities and more. ACCOMMODATIONS Walt Disney World’s immersive Star Wars-themed hotel, Star Wars: Galactic Starcruiser, will open March 1, 2022. Guests will “board” the starship Halcyon for an all-inclusive experience that puts them into the immersive world of Star Wars. The Tuscan-inspired, 126-room ette Hotel Orlando opens spring 2022 near Disney World. Focusing on wellness as an alcohol-free property, the hotel offers culinary experiences in partnership with Michelin Star Chef Akira Back, along with The Spa at ette, with services for everyone from the modern minimalist to the unruly naturalist. Lake Nona Wave Hotel, which opened in December 2021, is a leading-edge hotel featuring 216 guest rooms, 16 one-bedroom suites and two penthouse suites. Guests can enjoy three restaurants and bars; tech-forward amenities such as voice-automated in-room controls; a focus on holistic wellbeing including access to the world’s first Chopra Mind-Body Zone located at the nearby Lake Nona Performance Club; over 400 pieces of art and a 50,000 sq. foot Sculpture Garden. Walt Disney World Swan and Dolphin Resort opened a 14-story, 349-room hotel tower, Walt Disney World Swan Reserve, in Fall 2021. The property – just a short walk to Disney’s Hollywood Studios and Epcot – features meeting rooms with rooftop terraces, a restaurant, full-service health club, 90-foot-long pool and more. Opened in fall 2021, its 21 uniquely designed casitas and suites feature exteriors with giant-sized California flower murals hand-painted by Detroit-based muralist Louise Jones (@ouizi). Interiors feature floral wallpaper from wallpaper artist Ellie Cashman (@elliecashmandesign). Azure Sky, a 14-room, 21-and-over, luxury boutique hotel, will open March 2022 in South Palm Springs. The renovated property, originally constructed in 1959, offers wide-open views of the San Jacinto Mountains and is enveloped by desert landscaping, providing a sanctuary with a residential feel. The hotel’s 14 rooms range from 225 to 620 square feet and include five spacious one-bedroom suites. Set on a 230-acre private estate within the foothills of the Santa Rosa Mountains in Rancho Mirage, Sensei Porcupine Creek is scheduled to open in the fall of 2022. The new Sensei retreat will offer a luxury wellness experience, including a private golf course; world-class tennis facilities; spa, nutrition, movement and other wellness and sports programs paired with a state-of-the-art diagnostic center; yoga and fitness pavilions; a swimming pool; and a Sensei by Nobu restaurant. NEW DINING OPTIONS Willie’s Modern Fare — a ‘modern European’ dining experience in Rancho Mirage — will open in February. This will be the second joint venture between Chad Gardner and Willie Rhine, the restaurateurs behind 1501 Uptown Gastropub. Salt Flats opened in the fall of 2021 in Cathedral City featuring modern American food made with love. The foods they create “have ancient backgrounds and celebrate diversity in flavor.” Open for lunch and dinner 11 a.m. to 8 p.m. daily, Salt Flats hand sources the freshest ingredients from regional farms. GiGi’s Restaurant & Lounge is a desert-inspired, Modern American restaurant, serving creative farm-to-table fare with a commitment to the freshest locally sourced ingredients. The Indoor and outdoor spaces combine flowing dining areas with a large Indoor/Outdoor Bar, Lounge, and Firepit Cocktail area, serving elevated and reimagined classic cocktails with a worldly flair. Dragon Lili Boba Bar opens in January in Rancho Mirage with its very own menu of authentic boba milk

teas, refreshing fruit teas and creative specialty drinks with a wide selection of flavorful jellies and boba from the boba bar. Dragon Lili also serves a colorful assortment of macarons and pastries. (Boba tea is made from boba pearls, which come from cassava root and are vegan. The beverage originated in Taiwan in the 1980s.) NEW AND RETURNING SPECIAL EVENTS Modernism Week is an 11-day festival featuring more than 350 events including the Palm Springs Modernism Show & Sale, tours of iconic homes, parties, and more. Taking place February 17-27, 2022, Modernism Week highlights midcentury modern architecture, art, and interior and exterior design. Greater Palm Springs “loves” a good rallying comeback. From March 7-22, 2022, the world’s best tennis stars gather underneath our sun-kissed sky for BNP Paribas Open. The Tennis Paradise experience goes beyond the exciting on court action, with live entertainment, shopping, exquisite dining, and more. The best women golfers in the world are coming to compete in the Chevron Championship at Mission Hills Country Club in Rancho Mirage. The competition, taking place from March 31-April 3, 2022, will be fierce for the $5 million purse, coveted Dinah Shore Trophy, Famous jump into Poppie’s Pond, and honor of wearing the Champion’s white robe. The inaugural Oasis Music Festival, presented by Agua Caliente Casinos, revives the storied past of the musical playground that made Palm Springs famous. Featuring all genres of music at more than 30 venues, the Oasis Music Festival will re-create anew the celebrity, excitement, and swank of Palm Springs. making time for yourself this year

e’ve all had to look at travel a bit differently recently... Between the changing pandemic travel rules, fluctuating economy & the Covid-19 variants, I think everyone has come to terms with holding most travel plans loosely this past year. I know personally, I’ve had a couple trips canceled for lots of reasons... most recently because my friend’s coworkers got sick and no one was available to cover her office while she was away. Perhaps you can relate when people who you were planning to travel with have last minute reasons to cancel due to the very real situations everyone is facing. Regardless; now more than ever, we need to make sure we’re taking time for ourselves... to process, to stay healthy, to align and to adjust as we are full throttle into this new year. Understandably, not everyone may be traveling as often; however, there are still plenty of ways to prioritize our health & wellness. So, whether we’re at

home or traveling, here are tips to stay centered, strong and make the best of 2022. #1: Determine what you want If you’re on a vacation or you’re able to get away, the best thing you can do to feel better & more healthy is determine what you want out of that vacation. How do you want to feel after you leave the trip and what do you want to accomplish? Is it adventure and fun? Is it a bonding experience for you and a loved one? Is it work and to be productive? Or is the trip designed for you to actually get rest and relax? Either way, we all need to make time for ourselves and being clear of what we want in the beginning is always the best chance of getting what you want in the end. If you’re unable to travel, still get clear on what you want. Perhaps you can set aside a weekend or even a day to focus on your health & wellness. We all have so many responsibilities tugging at us from every angle, so if we

do not intentionally set time aside to rest and reset, you’re inevitably going to face burnout, frustration and living beyond your capacity. Believe me, after a career in finance working weekends with a crazy travel schedule, I am no stranger to burnout. When I didn’t take time for my mental and physical well-being, it wasn’t pretty and people in my life suffered for my negligence. Ultimately, the quality of your life is your decision. You can determine ahead of time if you need more time to rest and relax this year. Take a bath, read a novel or book a massage for yourself. Wellness is designed to help you be your best self so that other people can receive the best version of you in their lives too. #2: Create an action plan If you’re on a trip and want to actually relax and get rest, determine ahead of time that you’ll be in bed at a certain time or avoid booking late dinners. Set an intention to go for a hike or find a beach nearby where you can soak up some sun and meditate. If the purpose is to connect with a loved one or have some fun, book reservations and excursions that allow for what you want to happen. During my most recent trip to Miami, I intentionally avoided a late night party invitation because I knew I wanted to wake up early to catch some good beach sun, do yoga and meditate... that was my intention and I had a plan. Believe me, I’m not one to miss a good time (and I did hit a party or two), but before heading into that trip, I knew I’d have a busy schedule and felt the need to prioritize down time to center and relax, which would serve me more. If you’re at home, you can still create an action plan for your wellness intentions. Using a time-blocked schedule is always my preferred method to get the most done, and when I’m not traveling, I will block out time for myself each week to rest and recharge. Think about what feels relaxing to you and find time in your schedule ahead of time to get it done. What I’m saying is to literally make an appointment with yourself, that you treat as priority, so you can feel aligned and centered. This can be as simple as a monthly massage appointment or golf with friends. Even setting

aside 30 minutes to nap or exercise can go further than you think. Regardless of the activity, scheduling regular and recurring time for yourself, and your well-being is one of the most important practices you can do for long-term health and happiness. #3: Document your successes Keeping track of your progress is the best way to stay aligned, determine how far you’ve come and to keep you on track for your goals in 2022. Journaling is always recommended or just getting your “To-Do” list out of your head and on paper is also really important. Be sure to keep these writings or lists because when things happen or when you make progress on your goals, it’s necessary to remember how far you’ve come. This also serves as encouragement for you to keep going and stay focused on what you’re working on. If you were able to travel, document your wins or what you think worked well. Hold the feelings of rest or fun & adventure, so you don’t feel it was all for nothing as soon as you get back home. Be sure to keep those happy thoughts and carry that progress with you. If some revelations were exposed on the trip, document how you want to handle those situations. When I travel and take time to rest or have some fun, I always walk away with fresh insight that I want to take back home with me to apply. I believe it’s one of the beauties of getting out of our normal environment... to relax, shift to a positive mental state and see things from a different perspective. When we’re at home, the same principle applies. When wellness is a priority, it’s crucial to stay mindful of what’s working, what’s not working and what needs to change. I’d also encourage you to celebrate your wins! Reward yourself (especially with a relaxing treat) when you’ve accomplished a goal or made progress in an area. acations are built around what matters most to you. For myself it is being close to water, connecting with locals, and exploring what nature has to offer. My curiosity took me to the beautiful Cays of the Bahamas with a group of 10 friends. With an adventurous 8 days ahead of us, we braced ourselves for the unknown and daydreamed about all the shades of blue. Nassau-Bound We began our adventure in the Bahamian capital of Nassau where we sailed from Palm Cay Marina to our first location, Leaf Cay, where we met some fast and friendly creatures. The iguanas were big fans of grapes! We then sailed to Danger Cay to check off a bucket list item, swimming with Caribbean reef sharks! Their robust, streamlined bodies was a sight to see. The mix of mystery and adrenaline was a virtuous blend while swimming alongside them. Snorkeling and More.. Approximately 12 nautical miles away in the sand banks of Norman Cay laid our next adventure. When I heard I could snorkel above Pablo Escobar’s sunken drug plane, I knew I had to. The plane was only 10 feet down allowing us to swim by and through the eroded skeleton. The plane is now home to and extraordinary array of colorful reefs and marine life. The Exumas Sand Bar at Pipe Creek is one of the finest of the Bahamas, a favorite of many photographers. We strategically timed this adventure as the low tides disappear at night. We woke up early to experience the narrow shallow channels. During exploration of

the sandbars, I witnessed a rare sight, a spotted eagle ray. While at Soldier Cay, I swam with nearly 50 different species of fish. Bread was my motivator for keeping the marine life close. The most fascinating part of the aquarium was its ecosystem and the ability to house so many species, prevent erosion, and provide protection. Swimming with Sharks We made a stop to swim with the Nurse sharks at Compass Cay. While very intimidating, these predators are not aggressive towards humans but rather curious. So curious, that they would swim on

top of the deck to get closer to us. This species helped us as new snorkelers as they presented little to no threat to us. Green Cay excursion Green Cay was one of my favorite places to snorkel. The sea grass ocean floor made for a beautiful site, but the real view were the sea turtles. The gentle creatures swam peacefully snacking on the grass around us with remora sucker fish attached to their shells. The remora oval disks cleaned the turtles shell while the sea turtle provided them protection. A beautiful synergetic relationship. We met the famous swimming pigs at Pigs Beach. While not native to the island, it is said that they were left by sailors who planned to come back and feast on them. The pigs ranged from piglets to 400-pound giants. While

friendly, the giants were very persistent on being fed. The second load of adrenaline exposed itself when we went free diving north of Rose Island where the drop was more than 200ft. The puzzling part was the inability to see past 30 feet. While the ocean is often peaceful it is also a strong force of nature that one can fall victim to. It is safe to say, I came out with more diving experience and respect for the ocean. Tons To Do... One can’t go wrong with the Bahamas, the wide range of activities exceeded my expectations. My advice to anyone who can travel is to take the trip, as the ability will not always be there. As an avid traveler I often get asked what the best part of my trips are, besides the knowledge I get to bring home it is the human connections that make them so memorable. Take the trip.

None are mutually exclusive from each other, and this melting pot of influences simmers a perfect cauldron from which the next gen of Portland culinary talent rises. While the pandemic caused immeasurable loss, it also created space—in terms of time, venues, and creativity—for people to finally and fully step into their passions. Whether it be food carts, coffee roasteries or family-inspired enterprises, the next gen of Portland culinary talent has arrived. Next Wave of Food Carts Portland’s food cart scene has been beloved by locals and visitors alike over the years, helping to define the city’s culinary identity with a diverse array of stationary food carts in groups called “pods.” Well-suited for pandemic dining, food cart pods allow for social distancing

and take out, which create opportunity for new pods and carts to open amidst the pandemic. New pods are popping up all over the city with diverse offerings, including CORE, a 36,000 square foot pod on 82nd Ave in Southeast Portland home to a food hall and 11 food carts including Breakside Brewery, Mitate serving vegan sushi, the Puerto Rican LeChon, and more. Just down 82nd Ave, The Yard opened in Montavilla, a new pod featuring a diverse mix of culinary fare including Taquiza Vegana serving vegan Mexican street food and Vietnamese street food cart Little Bear, to name a few. On North Williams, the new Cartside Pod is home to seven of Portland’s newest food carts, with offerings ranging from Korean soul food at Ko Sisters to local cult favorite burgers at Mid-City Smash Burgers and classic Thai dishes from PP Thai Food Cart. hall creation comes from couple Anthony and Stephanie Brown, the team behind the “Mexicajun” food-cart-turnedbrick-and-morter, Nacheaux. Their Unicorn Creationz food hall brings two new concepts to their flagship restaurant: Karnival Korner (bakery) and Bourbon St. Bar (speakeasy-style bar). While Deepak Saxina, owner/ founder of Desi PDX, a popular food cart within the Prost pod on N Mississippi, is set to open Chaat Wallah serving fun fusion representations of Indian street food, as well as Masala Market and Masala Lab in 2022, where he’ll be experimenting with Indian cuisine. Coffee Shops that Pay Homage to Culturally-Rooted Practices Portland paved the way for craft coffee roasting and continues to be a leader in the scene. Now, it’s not just about third wave coffee—which describes the artisanal and often fair-trade approach to roasting—but also sourcing, roasting, and preparing coffee that pays homage to culturally-rooted practices. Revolución Coffee House specializes in café de olla, which was a popular drink during the Mexican Revolution. The traditional coffee included cinnamon brought to Mexico by the Spaniards and was prepared by “Adelitas” (women in the military). Today, Revolución makes café de olla with beans from Café Mam’s fair-trade cooperative of native Mayan farmers. Portland Cà Phê specializes in single-origin coffee from Vietnam’s Central Highlands. If you’re looking for extra pep in your step, Vietnam specializes in Robusta beans—which has about twice as much caffeine as Arabica beans—and tastes great as a cappuccino or mocha latte (made from the locally made Holy Kakow Agave Mocha). Super Joy Coffee’s owner Joe Yang won the 2020 US Coffee Championship. Taste his award-winning roasting skills on imports of limited supply beans from the Yunnan region of China. Super Joy serves up its coffee at its coffee shop on the well-caffeinated Portland State University Campus. The red date latte, Chinese pepper mocha, and lychee ice coffee are just a few of the coffee concoctions with even more Chinese influences. Reforma Roasters opened in 2020 with a laser focus on a roastery model that was mutually beneficial for farmers, producers and the environment. The roastery’s Abuelita Blend is nostalgic and comforting. Knowing that beans are changing and unique, the Smalltime Blend is a light roast that changes by the whims of the roasters and beans on hand. 2022 plans include a second coffee shop. Portland Chefs Inspired by their Roots Portland strives to welcome everyone with open arms. This is a city that aims to make space for everyone to

express their culture, beliefs, and perspectives. We’ve often found one of the greatest expressions of culture to be through food, and here are just a few of the chefs in Portland’s robust culinary scene who have expanded our palates with food inspired by their roots. Local chef Vince Nguyen has a robust culinary resume including stints at Michelin-star restaurants before settling in Portland and delving into his Vietnamese roots. At Berlu on SE Belmont, Nguyen operates a take-out Vietnamese bakery while also offering Vietnamese street foods and noodle soups in the evening. Offering a modern take on classic Filipino dishes, Magna Kusina chef Carlo Lamagna plays with the cuisine of his childhood, incorporating techniques and tricks he picked up in Chicago farm-to-table favorites. At Taste Tickler, a beloved Korean-influenced sub and bento shop in Northeast Portland, chef Andy Kim has expanded the menu to include a tofu-kimchi rice plate, japchae and banchan like pickled garlic and cucumbers, though the Philly cheesesteak, where the beef is marinated in bulgogi, has been a staple for many years. Perhaps family has had the biggest imprint on the culinary scene in Portland, with many of the chefs behind local favorites citing the mother figure in their life as inspiration. At Oma’s Hideaway, chef Thomas Pisha-Duffly’s finds inspiration by his Oma, Kiong Tien Vandenberg. Inspired by her ability to adapt and stay creative, Oma’s serves bright, funky and playful food influenced by the cuisine of Southeast Asia. Inspired by her mother, chef Thuy Pham of Mama Dút, serves vegan versions of the Vietnamese dishes her mother cooked for her growing up. According to an interview with Portland Monthly, “Her favorite treat her mother would make on weekends, birthdays, and holidays is bánh xèo, a turmeric–coconut milk Vietnamese crêpe typically stuffed with pork belly and shrimp and loaded with fresh herbs and bean sprouts.” Vegan Fare Takes Hold in Portland Ranked the best city for vegans and vegetarians in 2021 by WalletHub, Portland offers a wealth of plant-based dining options whether it’s at the neighborhood food cart pod, local dive bar, convenience store, or hotel restaurant. Opened July 2021 at Sentinel Hotel, renowned chef Jewan Manuel – aka Portland’s Plant Based Papi – teamed up with founders Karen and Eric Bowler to create an inventive vegan menu right down to the cocktails at Fortune. Next door to Plant Based Papi’s original spot on SE Morrison, Mama Dut, a Vietnamese pop-up turned brick-andmortar in November 2020, serves dishes centered around owner Thuy Pham’s house-made vegan pork belly.
