OREGON’S ADVENTURE COAST

holiday delights abound here is nothing more delightful than strolling through a lighted garden at Christmastime and there is no place brighter on the Oregon Coast to experience this than the annual Holiday Lights at Shore Acres State Park near Coos Bay. Famous for its beautiful seven-acre botanical gardens and Japanese lily pond, Shore Acres shines with more than a quarter million lights, animated displays, Santa, choirs, and more from Thanksgiving to New Year’s Eve. For 33 years, Shore Acres has been transformed into a glittering holiday wonderland that draws visitors from all over the United States and from around the world. What began as a modest holiday display organized by a handful of volunteers has grown into one of the most spectacular holiday lights displays on the West Coast, and it keeps getting bigger and better year after year. The whimsical display features garden landscape lighting, 26 large holiday trees, and dozens of lighted sculptures including life-size whales, animated sea lions, an undersea garden, a leaping frog in the pond, and breaching dolphins. Volunteers with non-profit organizations serve hot cider, punch, coffee and cookies inside the Garden House as children await their turn to talk to Santa. High school and church choirs fill the gazebo with the sounds of the season as visitors stroll through the displays. It is a holiday tradition for the whole family. Gardens, Waves & Whales Once the grand estate of pioneer timber baron Louis Simpson, Shore Acres State Park features lush botanical gardens with plants and flowers from all over the world.

T

Roses, rhododendrons, daffodils, azaleas and more are abloom throughout the year, all surrounded by a forest of pines, firs, and evergreen shrubs. Perched on top of 80-100 foot rugged sandstone cliffs, Shore Acres encompasses 745 acres of verdant coastal forests, dramatic cliffs, hiking trails, and a hidden beach cove. Where once sat the magnificent Simpson mansion now sits a fully enclosed observation building where visitors can view the wild ocean and migrating whales while being protected from the sometimes wet weather found on the Oregon coast. Storm conditions out to sea can produce magnificent crashing waves. Shore Acres State Park is lauded as the best storm watching spot on the entire Oregon Coast. The beautifully natural hiking trails and rock wall along the cliffs allows for a safe distance above the waves to enjoy fantastic views. The term storm watching has more to do with the ocean conditions than the actual weather conditions. When conditions in the ocean create large swells, they translate into amazing wave action. A 15-20 foot swell will turn into a wave over 100 feet high, and swells of 25-35 feet create waves as high as 250-300 feet high. The roar of the ocean as it approaches the cliffs can be felt deep inside those lucky enough to be there. It is an experience visitors will never forget. One of the best ways to ensure you get that workout and not and not blame [INSERT EXCUSE HERE] and to wear your fitness attire when you fly. There are quite a few benefits to wearing travel athleisure over your typical work attire, including: - greater circulation, which is incredibly important for heart health, and an issue for airplane travel - easier to maneuver on the plane (have you ever had to put your carry-on in the overhead bin wearing a skirt and heels?)you’ll be ready to go for a workout precisely once you land, even if you’re too early for check-in, you can gain access to the gym facilities and don’t need to change comfort wins Now, you can be comfortable and stylish! On a recent trip to Chicago to speak at a business travel conference on Personal Well-being and frequent travel resilience, I went prepared. Damn right, I walked my walk. The first place I went once I landed? The yoga room in Chicago O’Hare Airport, and then to the gym for some weights and cardio

at the hotel. In order to do so, I’ve got to dress Fit to Fly! I’ve partnered with adidas to share 5 of my top picks for travel atheisure that will take you from your flight to your fitness center, excuse-free. Here’s what I’m packing: 1. WEAR YOUR SNEAKERS, PACK YOUR WORK SHOES The Deets: You’ll want a breathable run or cross-training sneaker that is sleek and stylish. Steer away from the bright, obnoxious colors and opt for mono-tones or neutrals for the business readers in the crowd. You’ll want a sneaker with good foot bedding to use for both working out and comfort in the airport and flight that has the ability to tie or slip on and off fairly easily. On that note, pack and extra pair of socks to have for after your workout. Or, just in case you sweat in flight, it’s always good to have an extra set on hand (ahem, foot). 2. PACK A SPILL-PROOF WATER BOTTLE The Deets: For each hour you’re in flight, you loose 8 ounces of

water. Bringing a water bottle with you, you’ll want this for both on the plane and in the gym. Many airports have refillable water bottle stations throughout the terminals these days, so you don’t need to go the plastic bottle route. When you get to the gym, double up on the hydro servings — your body’s already dehydrated from the plane, and sweating can do the same, if you’re not replacing fluids first. 3. LAYERS, LAYERS, AND MORE LAYERS The Deets: There’s a quote: “Life is like an onion: you peel off one layer at a time.” Well, when you travel, dress like an onion and prepare for whatever climate and life can throw at you. As mentioned above, temperatures can fluctuate on a plane, and also from one’s departure origin to another’s arrival destination. Wearing layers can give you options, and it’s saves space in your carry-on. I’m a huge zip-up hoodie fan, because you cover your head and eyes to protect from any germs in flight, or when you want to sleep. With a zipper, you can easily slip it on and off as you need with the varying degrees without having to pull something awkwardly over your head, possibly knocking your neighbor in the shoulder during the process. When you think of hoodies, get the notion that your college varsity sweatshirt is what we have in mind. Think style. 4. BRING A TOWEL THAT DOUBLES AS A BLANKET The Deets: Air temperatures on planes can shift varying degrees, depending on the plane, location and cabin crew. Typically,

they veer on the cold to freezing side of the spectrum, and there’s never a guarantee (even on overnight flights) that you’ll be reserved a blanket to keep covered. Best to bring your own, and one that can double as a workout towel after. 5. PACK IT ALL IN A BACKPACK The Deets: Personally, I’m a huge backpack fan for travel, for a few reasons. They typically have great storage with multiple pockets to easily organize your work, fitness, and healthy snack (you’re bringing healthy snacks, right, warriors!?) all in one place. Plus, the dual straps of a backpack are far healthier for your spine to carry than a single sling bag over one shoulder. Last but not least, plan ahead by scoping out where you’re going to workout by searching airport gyms, nearby airport hotel gyms you can get access to, or if the hotel you’re staying at has a gym you can use. Or, have a workout ready to go that you can do that doesn’t require any equipment, such as Yoga For Travel or 10 Min Traveler Fitness Workout. Visit: www.saraquiriconi.com.

REPLENISH ATX

self-care when traveling elf-caring while traveling can be difficult as we are ripped from everything in our comfy, predictable bubbles and placed in a new environment full of potential and new experiences! Although all this “newness can be invigorating, we cannot take for granted our need to for self-care and the soothing comforts of home. As we take flight into the magical bliss of vacation and travel, finding ways to ground ourselves and practice mindfulness can be a great act of self care. A Piece of Home This may seem silly but bringing a small piece of home that is part of your daily ritual can be incredibly grounding and soothing to your psyche as you venture into the unknown. This may be a pillow case, your favorite face towel, photograph, or a meaningful item given to you by a loved one. This grounding object may bring great comfort and solace if a moment of home-sickness or disconnect arises. Try Something New Seemingly the antithesis of the previous tip: pushing yourself to try something new can bring about a surge of empowerment, self-esteem, and meaning to your trip. This may mean trying a new food, going on a thrilling excursion, or simply striking up a meaningful conversation with a stranger. Pushing past feelings of fear or discomfort or striking an item off our proverbial bucket list may allow us to return home with a new sense of accomplishment and self worth. Ritual Retention Sometimes we get in a funk when we travel because we

S

lose our cathartic rituals that usually take up vital space in our daily lives. Practicing mindfulness around continuing these rituals can allow us to nourish our minds and bodies and maintain a felt safety in our new location. If you wake up every morning and do the same stretches, do them in your hotel room too! If you wind down at night with your favorite decaf tea, make sure you pack a few in your luggage so you can feel connected to your grounding rituals no matter when you lay your head that evening. Create Your Own Adventure You know the familiar shelves of vibrant activity pamphlets that scream at you in the Hotel Lobby? Sure these are packed with fun tourist-y things to do but you can also create your OWN ADVENTURE. Look up the most beautiful park and have a tea party. Bring a great novel to a nearby rooftop lounge. Find a way to combine the local scenery with something you already love to do. This can be a great way to combine new exciting experiences with old comforting ones. Ultimately, practicing mindful self-care while traveling comes down to planning, implementation, and self reflection. If we remain cognizant of our own needs: (physical, mental, emotional) as we trek to new thrilling settings, we remain grounded in who we are and obtain a newfound ability to truly benefit from these experiences. FOUR SEASONS RESORT LANGKAWI

go back in time with traditional fishing our Seasons Resort Langkawi is delighted to unveil its traditional fish house where generationsold methods are used to catch the freshest fish and shellfish from the Andaman Sea. Designed by a local fisherman and crafted with islandgrown wood, the Rumah Ikan Fish House is an inspiring testament to Langkawi’s vibrant fishing legacy. The fishing method practiced at the Fish House is a rare art, one that is fast disappearing as modern, mechanized equipment gains popularity. It involves creating a complex structure that extends out into the sea, using strips and splints of wood. Since last year, the Resort has been working with Pak Din, a local fisherman, to bring back this traditional style of fishing. “Our ongoing partnership with Pak Din has played a vital role in preserving the precious fishing heritage of Langkawi. Now, with a genuine Fish House at our beach, we’re taking things one step further,” explains General Manager David Macklin. “We’re very excited to share the island’s unique living history with our guests.” Situated at the Resort’s mile-long sweep of pristine coastline, the Fish House and its surroundings transport guests to a simpler, more relaxed era. This secluded spot is where Pak Din spends his days, catching the choicest fish and squid offered by the Andaman Sea. Observe

this local maestro as he goes about his work, or try your hand at fishing in the olden ways, using locally sourced equipment. “I love to meet guests and share the fishing skills my father taught me…the same skills I’ve passed on to my sons. My favourite part is when people take a selfie with me – I feel so happy that our efforts are being seen and appreciated,” smiles Pak Din. The Fish House at the Resort will not only sustain Langkawi’s indigenous fishing traditions but also introduce them to Four Seasons guests, thus ensuring that this quiet, homegrown art lives on in minds and hearts across the world. HEAVEN IN TUSCANY

podere patrignone by: Marie Hernandez, www.seriouslytravel.com

T

his past September I spent one month in Tuscany. Whether you have been before or not, choosing a place to stay can be daunting. I wanted to stay somewhere unique and new to me so I researched the area. There are so many wonderful villas in Tuscany; one more beautiful than the other. I excitedly reached out to several. Simon and Verity, owners of Podere Patrignone responded within a few hours. After an initial email exchange, we set up a Skype call. Within seconds of the call, I knew immediately I was going to love the villa and the owners. During that Skype call, Verity made me feel like a good friend. We discussed the villa, my visit, and what experiences I could have during my stay. I was thrilled about my upcoming adventure. The Property When you travel to Tuscany, renting a car is a must. There is no other way to see its true beauty. Those classic photos you see in magazines and online are completely accurate. Actually, scenery is even more beautiful in person.

The green rolling hills, cypress trees standing thin and tall, and warm smells of olives and grapes bombard the senses and I highly recommend driving with the windows down. I arrived a little late to Patrignone and after parking my car and getting out, I laid eyes on a gorgeous outside banquet table under white linen panels, outside lights, candles and a table filled with traditional Tuscan food. Verity came over and welcomed me with warm hugs and a beautiful smile. It was like coming home to friends. What makes any visit to a new place stand out is the experience you have with the people who own and run the facility. Every single person from owners to staff exuded passion and joy for Patrignone. Before I was shown my villa, I was invited to enjoy an amazing traditional Tuscan meal under the stars with some of the other guests at the villa. I sat down at a banquet table filled with homemade pasta, fresh meats and cheeses, local wine and olive oil and fresh backed bread covered the table.

Everything was perfectly cooked and delicious. What a way to welcome our first night! Fresh, simple ingredients that are and locally sourced are key to making Tuscan food so wonderful. Patrignone produces it’s own organic olive oil and it’s sharp, glorious taste made this meal so wonderful. After our bellies were filled, I was shown my villa. As I walked in the “feel” of the villa was immediate. Villas in Tuscany are filled with tradition, history, culture, and a welcome, homey aura. Smells of warm delicious meals, baked goods, and ancient culture met me and I couldn’t help but wonder about the people who had lived here so many years ago. A home is a home because of what has happened in it. And this one has seen some amazing things over the years. I’m told that it’s quite possible the villa was built BEFORE the 14th century. Tradition mixed with needed modern amenities are lovingly supplied in each of the villas that Patrignone offers, everything is as it should be. Verity, owner and partner to Simon, left beautifully baked homemade bread, slices of gorgeous organic meats, their own organic olive oil, coffee, milk, and bottled water for me to enjoy the next day - another thoughtful touch that was warmly welcomed. I settled in to my cozy apartment and slept deeply, something I rarely do. In the morning I woke to the sounds of birds chirping, and the glorious smell of fresh coffee. Yes, very much like a scene in a movie, however, it was real! I was eager to see my surroundings so I prepared some coffee of my own and headed outside. Situated in the hills of Chianti, the property is surrounded by rolling hills, vineyards, and acres of trees.

33

Stretched out for miles was the most gorgeous landscape. Patrignone is what Tuscan dreams are made of. I went back into my villa and prepared a tray with the fresh meats, bread, and jams that Verity left for me and sat outside on the veranda outside of the villa to take it all in. The scenery was quite literally breathtaking. With it came a warm breeze, which brought in hints of cypress, grapes, olives, and Rosemary. Rosemary grows everywhere in Tuscany and most people don’t realize that the hedges they pass are often made of Rosemary. The sent is intoxicating. Things To Do Patrignone is the perfect home base. Literally a stone’s throw from some of the world’s best treasures like Renaissance art, spectacular churches, museums and ancient history, boredom is never an issue unless you consciously chose to be so. If you’re looking for off the beaten track things to do Castello Di Brolio is a must. The 12th century hilltop castle, owned by the Ricasoli family, is completely intact, and has views of the Siena walls. It even has a wine cellar that you can visit. (Appointments are a must!) If wine is your thing then you’ll be in the right place. You can see miles and miles of

34

vineyards right from your villa at Patrignone. Head in any direction and you’ll find any number to visit and enjoy.Pull in and ask for a wine tour and tasting. You’ll never be turned away and it’s the perfect way to see any vineyard. Bigger more tourist vineyards do require you to sign up and pay ahead of time but there is never a lack of smaller vineyards to pull into and take a tour. Other activities to get up to are horse back riding, hiking, truffle hunting, cooking classes (on site and off); there are endless things to do in this area. I signed up for the cooking class that Verity offers at Patrignone. I’d heard it was not to be missed!I joined a few of the other guests and together we set up tables to prepare the meal on. Tuscan food is simple but full of flavor. Organic food is part of the landscape of Tuscany and was around before it was a “trending thing”. We started with fresh pasta. Simply made with semolina flour, water, and salt. Verity explained that pasta is designed to take on the taste of foods and sauces served with it. We mixed our dough, formed round balls and rolled them out. Taking turns, we passed them through a hand cranked pasta machine that thinned the pasta. After they were the perfect thickness (or thinness) we hand cut the thinned sheets into strips and placed them to dry on flat trays. Homemade bread came next. Again we used a very simple recipe. Flour, yeast, and warm water was kneaded and before we rolled it all into balls I added Rosemary to mine while others added grapes, olives, salt, or just left theirs plain. We placed them in bowls and covered them to settle and rise a little. The whole group moved into the traditional Italian kitchen to watch Verity make a wonderful sauce made with ground pork, Rosemary, salt, cream, and fresh local, Parmesan cheese. When that was set to simmer for a bit, we returned to the tables to make the last of our meal. As traditional as any one can be, we made homemade Tiramisu. Again, it was the simplest recipe ever! While Verity and her staff gathered the pasta to prepare it, the rest of us were put to task setting the table. There’s something about a traditional Tuscan table that’s like no other. I don’t know if it’s the way the table is set but seeing it brings me the warm fuzzies and makes me

think of ancient times when family dinners were where the family gathered to share their hopes, dreams and daily life. Once each place was set, we added pitchers of water both fizzy and still, baskets of our still warm homemade bread, fresh olive oil, balsamic vinegar (yes locally made) and several glass carafes of table wine from the local Chianti region. Candles were lit and Italian music was turned on. I had to pinch myself! Platters of pasta, sauces, fresh cut cheeses, and meats came streaming out of the kitchen and were placed down the center of the large, long banquet table. With moans and groans of anticipation, we all sat and Simon (owner and other half to Verity) made a toast. After cheers and the traditional Boun Appetito, we all dug in. We ate and drank till we were bursting.Verity and Simon are the ultimate hosts and insisted that we sit and enjoy dessert wine with our Tiramisu while they set about clearing what was left of the dinner. The food, company, and atmosphere were a little piece of heaven. And for a few hours we were all family. As the night came to a close, one by one people headed off to their individual villas and rooms.I can’t remember experiencing a more perfect evening and I felt blessed by it all. Conclusion Tuscany if filled with wonderful things to see, eat, and places to stay. But what makes the difference in any experience are the people that are involved in making any occasion a special one. Patrignone and everyone who has anything to do with its existence is the PERFECT place for any event or vacation. It’s hard not to feel like family when visiting Patrignone and Verity and Simon go out of their way to make their guests feel special. The special touches and attention to detail that are what make the difference and I can’t recommend Podere Patrignone enough to couples, families, retreats, or weddings. It’s the ideal choice and is everything someone dreaming of visiting and touring Tuscany could ever hope for when looking for a flawless experience. BEAVER CREEK

the westin riverfront by: Carla Pallares, www.yemayaswimwear.com

very so often, I find myself needing a quick getaway weekend to recharge and appreciate life around me. During my most recent weekend trip to Beaver Creek, I found myself in the heart of Colorado’s Vail Valley and I stayed at the most blissful and inspiring mountain side resortThe Westin Riverfront. This quintessential hotel is the perfect blend of happenings and relaxation that can give anyone needing a break from the normal day-to day exactly what they need. Beaver Creek is a dream destination for families, couples or for singles wanting a quick and relaxing escape. The Westin Riverfront is by far the best hotel for any stay at any time of year. In Spring, Summer and Fall, enjoy unparalleled access to Vail Valley’s Eagle River- which is perfect for kayaking, fishing and biking. The amenities at this hotel are one of a kind. The resort includes: a ski valet, easy access to Beaver Creek Mountain via the Riverfront Express Gondola located steps from the hotel, a state-of-the-art Athletic Club with top of the line weight machines and fitness classes, a Starbucks, a year-round outdoor saltwater pool and three infinity hot tubs. Additionally, don’t forget to bring your dog, because the Westin is super dog friendly and will welcome your four-legged pal with open

E

arms (and maybe some treats). The moment I arrived at the Westin Riverfront, the valet staff quickly greeted me and made sure to carry my luggage. Throughout my entire stay, the staff was incredibly kind and super attentive. Everyone from the bar, to the athletic club to room service provided the best customer service and absolutely made my stay even more memorable. THE ROOM If you’re like me, you often wonder, when lying in luxe linens, sinking into plush pillows and snuggling under a billowy duvet, how to create this cloud-like paradise in your own home. I’ve spent many restless hotel nights in my lifetime and I must say, that the beds at the Westin Riverfront have become my absolute favorite. My undisturbed, and restful sleep was exactly what I need and was exactly what the hotel provided me. Adding to the tranquil environment, my room had a fireplace and the perfect mountain-chic living area. The room also included a kitchenette, WIFI, complimentary water, mountain views and of course, the comfiest of all linens. The pivotal elements to a great hotel stay are white linens with a high thread count and great lighting that can be dimmed for relaxing or reading while in bed.

All of which exceeded my expectations at the Westin. THE RESTAURANT The Restaurant, Maya ‘Modern Mexican Cuisine and Tequila Bar, by Richard Sandoval offers some of the best and creative Mexican dishes I have seen in any Colorado mountain town. Chef Richard Sandoval blends the earthy flavors of his native Mexico with worldly ingredients which make the experience so authentic. My friend came to join me for dinner on my last night in Beaver Creek and we left incredibly impressed, full and happy. A definite a must have is their Pepino drink. This consists of serrano infused tequila, cucumber, citrus and a tajin rim (which I’m now absolutely addicted). We also ordered the queso fundido, mahi tacos and the chicken mole poblano which had a super tasty cilantro polenta and plantain hash. We were so full by the end of dinner that we had no room left for dessert. However, we were not too full for some spiked hot coffees. Any stay at the Westin Riverfront must include a stop at this restaurant. I cannot wait to come back and try the rest of the menu!
