FALL 2022

Welcome to the Fall 2022 Jilly Box!

It’s moments like those that fill my heart up!
2 | FALL 2022
The Fall 2022 Jilly Box is here to help you ‘fall’ (pun most definitely intended! LOL!) in love with the new season upon us. My hope for you is that the products inside inspire you to take time to slow down and connect with those you love most.
While it’s always bittersweet saying goodbye to warm summer days, I’m SO ready to welcome all the coziness that the fall season has to offer. From enjoying that first sip of coffee on a brisk September morning to evenings at the farm; cozying up around the fire with a glass of wine (or two!!) with those I love most; talk about pure bliss! I’ve found myself enjoying the outdoors more than usual since we’ve been on the farm. The fall season, in particular, is one I look forward to most; there’s just nothing better than breathing in that crisp fall air, while the kids play in the orange and red leaves that cover the ground (while waiting for me to serve up some hot chocolate, of course!).

Well, we are so humbled to share that we were able to raise $138,600 CAD with your help in just 5 short days! We’re proud to share that we donated 100% of all proceeds to the United Nations Refugee Agency (UNHCR). Their Ukraine emergency response acts both inside Ukraine and in all surrounding countries providing around the clock protection, shelter, healthcare, food, water, blankets, and more, to support the most vulnerable.
NOW Canada is a non-profit organization that provides safe housing, recovery services, and harm reduction services for women, youth, and families. We were thrilled to be able to make a donation to NOW Canada in the amount of $30,000 CAD from the Spring 2022 Jilly Box. RECIPE PLUS: takesHowJillyhercoffee! The FrenchPerfectPress Brew HOW TO MAKE

6 | FALL 2022
If you haven’t used a French press before, you’re in for a treat! Not only is a French press portable and easy to travel with, but I love how you can control exactly how your coffee tastes by experimenting with the amount of coffee grounds you include, the temperature of water, and how long it steeps for. All you need is your Grosche MELBOURNE French Press Coffee Maker, a tablespoon, a timer, a kettle to boil water, coffee grounds of your choice, and of course, a coffee cup! Don’t worry, if coffee isn’t your ‘cup of tea’ you can follow these exact steps and substitute the coffee grounds for your favourite loose-leaf tea to enjoy, or substitute with cocoa powder to make a delicious cup of hot chocolate!
JILLYBOX.COM | 7 1 Bring 8 cups of water to a boil. 2 While the water is boiling, add 8-10 tablespoons of coffee grounds to your French press. My go-to coffee is always a medium roast! 3 Fill grounds.stirwaterpressFrenchyourwithhotandgentlythecoffee 4 Set a 4 minute timer and let your coffee steep. 5 Once the timer has gone off, press down on the plunger to push all the coffee grounds down. 6 Pour yourself a cup of coffee, include any milk, cream or sugar that your heart desires and ENJOY your perfect cup of brew! PS. If you’ve been following me for a while you may already know that my go-to creamer is the Silk Soy Creamer!

The Orange Shirt was intentionally designed with six floral emblems from some of the provinces and territories where unmarked graves were found as a result of residential schools. The fabric is a blend of 65% polyester and 35% cotton, making it incredibly soft.

16 | FALL 2022 THE MAKERS Dripping Canadianain CANADA WEST MAPLE

How did Canada West Maple start?
Sugar Shack Culture is a huge part of the maple experience. Listening to music (or bringing up instruments), having the odd drink, and eating fire cooked foods until 3am are what it's all about during maple season. Everyone is coming out of
It all started in 2017 when I decided, along with some friends, to tap local maple trees for a springtime hobby. We tapped 25 sugar maples with Canadian Tire buckets, boiled the sap over a log fire with Salvation Army canning pots, and made a few litres of smoky dark syrup. Collecting sap every day and talking around the fire as it boiled away into syrup was so much fun that I decided to pursue maple syrup making as a small business. That’s when Aaron and I took the next step. We were friends in high school and reconnected in Thunder Bay during university. He grew up making maple syrup with his parents and siblings in Fort Frances, so he was the perfect partner. Now in 2022, Canada West Maple taps 1700 maple trees itself and works with a collective of other Northern Ontario maple syrup makers to offer a wide range of maple products.

D o you know what happens when two high school friends are reconnected in university and discover they still share the same childhood love for sugarbushes, foresting, and everything maple? Well, they start tapping!
What is your favourite part of producing maple syrup? Boiling time is the best time to enjoy the company of friends and family while the syrup cooks away.
JILLYBOX.COM | 17
That is the story of Sean Murray and Aaron Keffer, respectively the business lead and the operations director behind Canada West Maple! With sustainability in mind, this duo cultivated a network of high-quality Northern Ontario maple producers and is building a notable (and tasty!) small business, all while staying true to their values and investing in their community. So,grabyour plaid flannel, activate your taste buds, and let’s talk all things maple syrup with sugarmaker Sean!
What is the process of making maple syrup?
The maple syrup season in Northern Ontario begins most years in mid-March. As the spring sun begins to warm the trees after a long winter, the thawing trunks begin to release sweet maple sap. We begin tapping the trees each year by drilling a very small hole in the trunk. Then, we place a tap into the hole and use an intricate network of tubing that allows the sap to flow downhill into collection tanks. When a full day’s worth of sap is collected, we boil away the excess water and concentrate all of the sugars into syrup. It requires 40 pails of sap to make 1 pail worth of finished syrup! Once our syrup has boiled down, we pour it off the evaporator and filter it to remove any impurities. It is now ready to be bottled!
Our iconic flask bottle as well as a majority of maple syrup glass bottles are produced in Eastern Europe, notably in Poland, Slovenia, and Ukraine. With our inclusion in The Jilly Box, we confirmed
Canada West maple syrup is small batch made by very skilled producers who have been making maple syrup for a very long time. It is also ‘true to grade’ meaning that our Amber grade syrup is not made by blending various inferior syrups together to come up with an Amber colour lacking in depth of flavour but is bottled pure and straight from the sugarbush, no blending and no hiding bad syrup in with the good. We also apply sustainable processes, like the wood fired evaporation. We know that it is somewhat slower than fuel oil, but is significantly more environmentally friendly. Massive production of syrup in Quebec is dominated by fossil fuel evaporation and, while it might make the product cheaper, it comes with greater costs to our future. Our consumers can rest assured that our product is made sustainably and with extreme care to our forests and trees. How sustainable and reliable is maple syrup production? Maple syrup is a natural sweetener that has been made in Northern Ontario for thousands of years. We recognize the longstanding tradition of maple syrup harvesting on the traditional territory of Fort William First Nation and are honoured to be a part of it. Tapping does no damage to the trees and many families have tapped the same trees for generations year after year, making maple syrup a truly renewable resource. On the other hand, maple production is extremely weather dependent. However, with our network of producers – all members in good standing of the Ontario Maple Syrup Producers Association – we ensure the stability of supply and the quality of the product. The 200 ml Pure Maple Syrup Flask has a beautiful vintage look. What is the history behind the design of this product? Our 200ml Flask is the flagship bottle of our product line. It is the creation of our design lead Heather Cranston of Pulp and Paper Creative. The design is inspired by Prohibition Era moonshine liquor bottles where the labels were all hand painted and the product inside was expertly crafted in small batches. We also wanted a product that would be ‘dripping in Canadiana’ and find market appeal in western Canada and overseas markets. As Heather says: “The product is handcrafted, it is premium and elite – that said – it was likely made in a barn or deep in the woods and the label is hand drawn, but wow is it fancy!” Your flasks were sourced from a manufacturer in Ukraine. Can you share a bit more about this bittersweet story?
What makes Canada West Maple Syrup different?
18 | FALL 2022 the depths of winter during the maple harvest and the warmer weather is a great time to enjoy the outdoors and enjoy some heat once more.

What are the next steps for Canada West Maple after partnering with The Jilly Box?

our glass order with an expected delivery date of late March, 2022. On February 24th, Russia invaded Ukraine and we were notified that the Peskovskiy Glass Plant, which was located north of Kiev, was under threat of becoming part of occupied territory. We felt horrible for the people of Ukraine and launched a fundraiser in conjunction with a Canadian chocolate company to raise funds to support relief efforts. Besides everything that was happening in Ukraine, our supplier was able to track our order down and let us know it had made it out of Ukraine days before the invasion. Unfortunately, though, our Ukraine factory will be offline for the foreseeable future.
What main challenges have you faced as a small business? Do you have any tips to share?
Canada West is gearing up to be THE premium brand of maple syrup in Western Canada. We think that more Canadians should be able to enjoy our high quality products and look forward to growing our brand. The partnership with Jilly Box is a great way to begin our expansion efforts and grow awareness of our products.
I am a waffle man through and through! A hearty breakfast of baked beans, locally raised and cured bacon, hashbrowns and a tower of waffles all smothered in syrup is a breakfast that just can’t be beat.
Our largest challenge has been carving a niche for ourselves in a very established industry dominated by extremely large maple producers. We are a very small fish in the maple world but we truly believe that the quality of our product, our ethics and values, and our branding have set us apart as a premium product that tastes amazing and does very little harm to our forests. My main piece of advice is to always persevere through the tough times and never cut corners on your values and products. A well-made and well-branded product will always win out over a cheaper inconsistent competitor. I also believe in using business as a tool for social or economic change. Through my business, I have been able to reshape regional forestry legislation, show at risk Indigenous kids career opportunities in agriculture, and grow a business that I can ethically hand down to my daughter one day and feel proud of.
Finally, what is your favourite recipe to make with your 100% pure Maple Syrup?

I don’t know about you, but there’s something about fall that makes me want to hibernate! LOL! I want to stay inside, cozy up with a glass of red wine and eat popcorn while watching a movie with the fam. While there’s nothing wrong with that, I’ve made it a priority to spend more time enjoying the outdoors, despite the drop in temperature. At the end of the day, I feel SO MUCH better after I’ve spent more time outside in nature. Sometimes making an effort to get outside isn’t easy, but finding activities you and your family enjoy, make all the difference. Here are five activities my family and I are looking forward to this fall!

Simple ways to enjoy the outdoors

If an outdoor activity involves chocolate or wine, sign me up! LOL! There’s nothing better than time spent around the campfire with my family; laughing until our bellies hurt and indulging in delicious s’mores together. Whether it’s just me, Justin and the kids, or we invite all the aunts, uncles and cousins, we can always count on having a great time around the campfire!

Who says you can only enjoy the beach during summer? There’s something so magical about taking a walk on the beach in the fall. Taking the kids for a stroll alongside the water, with a warm cup of coffee in my hand. I love watching how excited the kids get when they find a piece of ‘treasure’ to add to their collection!
SCAVENGER HUNT
Nothing screams ‘fall is here!’ than visiting a pumpkin patch, am I right?! We love to look for local pumpkin patches in our area and make a fun adventure out of it! While we take a stroll through the patches, we decide on the pumpkins we’re going to take home with us to create jack-o–lanterns. We snap a few photos along the way, and sometimes even end the day with a pumpkin flavoured treat!
WALKING BY THE BEACH
There’s nothing better than getting everyone involved in a fall-themed scavenger hunt! Not only do the kids love it, but so does the WHOLE family! From aunts and uncles to grandparents, we have so much fun sorting everyone into teams to be the first to find all the items on their list. Pinecones, bright red and orange leaves, smooth rocks, and wildflowers are just a few of the items on our list that you can add to yours!

PLAYING GAMES
VISITING A PUMPKIN PATCH
Whether it's a board game, hide-and-go-seek, or a game of good old fashion “TAG” our family loves playing games together. This may come to a surprise to you but we’re actually pretty competitive! LOL! We love taking our favourite games and playing them outside, before those cold winter months arrive! Even if it’s as simple as bringing a deck of cards out on the patio to play a game of ‘go-fish’, this is one of my favourite ways to spend time as a family.
