I

t’s a fact that will have Welsh and Scots patriots in a real paddy – but when it comes to celebrating, there’s nothing quite like St Patrick’s Day. You can have your St David’s Day daffodils, or do a tartan twirl over St Andrew, but the Land of the Leprechaun is peerless when it comes to parades and razzamatazz. The massive expat community in the United States has, of course, had a lot to do with it. You might say they’ve not so much cracked the whip as whipped up the craic – with the entire nation seemingly finding a green root when the big day blossoms on March 17. Spain is certainly not immune to St Pat’s Day fever...and this year the biggest parade in the country takes place on our doorstep in Cabo Roig. A crowd of 4,000 plus is expected to cheer the 300 colourful participants in Orihuela Costa’s spectacular celebration, which will also include entertainment on the nights of March 16 and 17. And there’s every reason why English, Welsh and Scots doubters should get the shamrocks out as well. Because St Patrick was not an Irishman. Indeed, his roots are said to have been somewhere in what is now Great Britain. Various sources put his birthplace as South Wales, Somerset, Dumbarton in Scotland and along Hadrian’s Wall. St. Patrick’s Day

March 17th...the day when Irish fever grips the world and just about everyone finds a drop of green blood in their veins.

History Who is St. Patrick, anyway? According to the World Book, St. Patrick lived about 389-461A.D., and is the patron saint of Ireland. Patrick was chiefly responsible for converting the Irish people to Christianity. He became known as the Apostle to the Irish. His Latin name is Patricius. Patrick was born in Britain, though noone is quite sure where. His father was a wealthy alderman and a Christian. When Patrick was 16 years old, pirates captured him during a raid and sold him as a slave in Ireland. He served as a shepherd of an Irish Chieftain in Ulster. During his captivity, he dedicated himself to religion. After 6 years of slavery he escaped and returned home to Britain. As a result of his experiences in Ireland, Patrick became driven by the idea of converting the Irish to Christianity. To prepare himself for the task, he studied in the monastery of Lerins, an island off the coast of France. He also went to Auxerre, France and studied religion under Saint Germanus, a French Bishop. Partly because Patrick's earlier education was inadequate, his religious superiors were reluctant to let him return to Ireland as a missionary. After Palladius, the first Irish missionary bishop died in 431, Pope Celestine I sent Patrick to Ireland. Patrick began his work where no one had ever preached Christianity. He gained the trust and friendship of several tribal leaders and soon made many converts. He is said to have founded more than 300 churches and baptized more than 120,000 people. He brought clergymen from England and France for his new churches. He succeeded in his mission to Ireland, even though many British clergymen opposed him and the way he organized the churches. Patrick preached in Ireland for the rest of his life. Several of Patrick’s writings have survived and serve as the most important sources of information about his work and life. Patrick wrote "Confession", an account of his spiritual developement. In it he

justified his mission to Ireland, and expressed his humility and thankfulness that God had called him to serve the Irish. Patrick also wrote a letter to Coroticus, in which he criticized a raid on Ireland conducted by Coroticus, a British chieftain. During the raid, several of Patrick's converts were killed. The letter also reflects Patrick's resentment of the scornful attitude of British clergymen and nobility toward the Irish.

Where is St. Patrick Buried? One legend has it that he was buried in the same grave as St. Bridget and St. Columba, at Downpatrick, County Down. The jawbone of St. Patrick was believed to be preserved in a silver shrine and was often requested in times of childbirth, epileptic fits and as a preservative against the evil eye. Another legend says St. Patrick ended his days at Glastonbury and was buried there. The Chapel of St. Patrick still exists as part of Galstonbury Abbey. There is evidence of an Irish pilgrimage to his tomb during the reign of the Saxon King Ine in A.D. 688, when a group of pilgrims headed by St. Indractus were murdered. The great anxiety displayed in the middle ages to possess the bodies, or at least the relics of saints, accounts for the many discrepant traditions as to the burial places of St. Patrick and others.

Legends about Patrick: Many of the stories about Patrick are based only on legends. One of the best known tales tells how he charmed the snakes of Ireland into the sea so that they drowned. Different tales tell of his standing upon a hill, and using a wooden staff, drove the serpents into the sea, banishing them forever from the shores of Ireland. One legend says that one old snake resisted, but the saint overcame it by cunning. He is said to have made a box and invited the reptile to enter. The snake insisted the box was too small and the discussion became very heated. Finally the snake entered the box to prove he was right, whereupon St Patrick slammed the lid and cast the box into the sea. While it is true there are no snakes in Ireland, chances are that there never have been snakes since the time the island was separated from the rest of the continent at the end of the ice age. As in many old pagan religions serpent symbols were common, and possibly even worshipped. Driving the snakes from Ireland was most likely symbolic of putting an end to that pagan practice. According to another tale, Patrick used a three-leaf shamrock to illustrate the idea of the Trinity. Many people believe the shamrock came to be the traditional symbol of Ireland as a result of this legend. Today, his feast day, March 17th is celebrated as a national holiday in Ireland. St. Patrick also introduced the Roman alphabet and Latin literature into Ireland. After his death, about 461AD, Irish monasteries flourished

as centres of learning. Compton's Encyclopedia adds that despite a constant threat to his life, Patrick traveled widely, baptising, confirming, preaching and building churches and monasteries. Patrick succeeded in converting almost the entire population of the island. His "Epistola" pleads the case of the Christian Irish at the hands of their British conquerors. Patrick's writings have come to be appreciated for their simplicity and humility.

The Shamrock The shamrock (at one called the "Searoy" is a type of small herb with leaves made up of three leaflets, and is the common name for any of several three-leafed clovers native to Ireland. The Irish have considered shamrocks as good luck symbols since earliest times, and today many people of other nationalities have adopted that belief. It has become the national symbol of Ireland, because of the legend that St. Patrick used it to illustrate the doctrine of the Trinity. Preaching in the open air on the doctrine of the trinity, he is said to have illustrated the existence of the Three in One by plucking a shamrock from the grass growing at his feet and showing it to his congregation. It symbolizes the cross and blessed trinity. The legend of the shamrock is also connected with that of the banish-

ment of the serpent tribe from Ireland by a tradition that snakes are never seen on trefoil and that it is a remedy against the stings of snakes and scorpions. The trefoil in Arabia is called shamrakh and was sacred in Iran as an emblem of the Persian triads. The trefoil, as noted above, being a sacred plant among the Druids, and three being a mystical number in the Celtic religion as well as all others, it is probable that St. Patrick must have been aware of the significance of his illustration.

The Leprechaun The Leprechaun is an Irish fairy. He looks like a small, old man (about 2 feet tall), often dressed like a shoemaker,with a cocked hat and a leather apron. According to legend, leprechauns are aloof, unfriendly, live alone, and pass their time making shoes. They also possess a hidden pot of gold. Treasure hunters can often track down a leprechaun by the sound of his shoemaker's hammer. If caught, he can be forced (with the threat of bodily violence) to reveal the location of his treasure, but the captor must keep their eyes on him every second. If the captor's eyes leave the leprechaun (and he often tricks them into looking away), he vanishes and all hopes of finding the treasure are lost. Legend has it that you can find the leprechaun and his pot of gold at the end of a rainbow.

St Patrick’s Day In New York The first St Patrick's Day parade in New York City was held in 1766 organized by Irish soldiers serving in His Majesty's service. City folk marched for any and all reasons back then, usually organized along fraternal, trade or military organizational lines. The early St Patrick's Day marchers would form up at their parish churches or their organizations' headquarters and march to the Old St Patrick's Cathedral (now at Mott and Prince Streets). The Archbishop greeted the groups, dignitaries and politicians addressed the crowd and the marchers dispersed in search of a bit of St Patty's Day pleasure. As the City moved uptown so did the parade, marching to the far reaches of the City and the site of the new St Patrick's Cathedral on Fifth Avenue and 50th Street. Today's parade starts at 42nd Street and marchers travel north to 86th Street. It is customary for the New York Archbishop to review the parade in front of St Patrick's. The St Patrick's Day Parade is one of the few remaining where no cars, floats, buses, trucks or other vehicles are allowed. People march, march, march up Fifth Avenue, led by members of the 165th Infantry (originally the Irish 69th Regiment of Fighting Irish fame). Sponsored by the Ancient Order of Hibernians, the more than 150,000 marchers are members of various Irish societies from New York and around the country; many Eire-based societies make the Atlantic crossing to trek the two miles uptown. Large contingents include the Emerald Societies of the New York City Police and Fire Departments, and any politician running for office within a 50-mile radius. Viewing the parade is a snap. It starts 11:00am at 42nd Street and makes it way up Fifth Avenue to 86th Street. There is no best place to see the parade, though the Archbishop usually greets the marchers at St Patrick's Cathedral. Take any subway to Midtown and walk over to Fifth Avenue. Don't try to drive; you won't get very far. Similarly, traffic is affected on all streets surrounding the parade route; a bus will get you nowhere fast. This year's parade is a tribute to those New York City fire fighters and police officers who gave their lives in the World Trade Center attack. Cardinal Edward M Egan, Archbishop of New York and the grand marshal of the parade, will walk up the parade route, then return to the Archbishop's usual spot, greeting parade marchers in front of St Patrick's Cathedral. At about 11:30pm, Cardinal Egan will call for a moment of silence, in remembrance of the 9-11-01 victims.

Don’t buy in Spain...YET!! Be sensible; try 12 months living in Spain first. Why buy and risk all of your capital when you can try first? This is how it works: rent the property of your choice for one year, paying the total amount upon signing of the contract. This includes the rent and deposit. The contract will be directly between yourself and the owner of the property. If you should decide at the end of the year that you would like to rent for another year, the contract can be renewed; if you would like to purchase the property, the rent paid for the first year will be discounted from the purchase price.

Selling the UK Home or Not? This decision will depend on whether you want to rent in Spain, or can afford a second home and also if you are confident that retiring to Spain will be permanent. Arguably it is wiser to only sell the UK home if you are sure of your long term plans and definitely wish to buy a property in Spain, which in itself will require the proceeds from your UK house sale.

Renting the UK Property? This is advisable if you are unsure whether retiring to Spain is definitely what you want to do, or you are unsure which area best suits your lifestyle aspirations. If you do rent out, then make sure you have left it with a professional agency.

Should We Rent in Spain? If you are undecided about where you want to be, then renting makes sense. It is also advisable in a market of dropping property prices. Also, rental properties are often fully equipped and ready to move into, so you won´t need to change anything at all to make life more comfortable.

What is Included in the Rental? The rental property will be fully furnished. The cost does not include utility bills or contents insurance. Normally the owner will change the direct debit to your bank account. You will of course be responsible for the general upkeep and cleaning of the property. The property will also be periodically inspected by the owner to ensure there are no problems.

Can you tell me about the tenancy agreement? The rental agreement will be set up by Professional Business Support. (J.J.Trust SL.) They are a Spanish registered company, formed

in 2004 but with 24 years experience in the Spanish property market. The agreement is a legal document for protection of the owner as well as the tenant, similar to a tenancy agreement in the UK. The contract usually includes an inventory of items in the property at the time of rental. This is very important to check, as every item outlined on the list must be returned as listed when the tenant leaves, otherwise the deposit (or part of it) may be held by the owner. If you have your own property to rent out, let us organise your contract for the legal safe renting of your property. How Far Will the Money Go? As in all countries, prices vary in Spain from area to area. The big cities are expensive, as are the more popular coastal areas such as Marbella or Barcelona. In these areas you can expect London prices for everyday living and some of the most expensive property in Spain. If your pension is limited, then being on the Costa Blanca will reduce living costs substantially. In general terms a Euro will buy you what a Pound does in the UK. As for a budget, it is possible to live off 1000 euros a month for a retired couple (with no rental or mortgage costs), whereas 1400 euros would be more comfortable and allow for some flights back home, and 1800 euros per month or above will make retirement in Spain easy.

Payments to and in Spain? It is possible to have your pensions and income paid directly into your Spanish bank account. However it is important to set everything up correctly in order to minimise bank transfer charges, Spanish reception fees and to ensure that the best exchange rate is always achieved. Doing this properly will save you thousands of Euros a year.

Buying a Property. What can we get for our money? This is a big question -and there are normally many solutions available, depending on your UK equity position, the price of Spanish property, and how much risk you are willing to take, but roughly speaking 2 bedroom bungalows in a coastal area, with services and amenities nearby, start from 50.000 Euros and detached villas from 150.000 Euros Should you wish to purchase one of our rental properties, all rents paid (up to 3 years) will be deducted from the sales price. Eat to Beat Menopause If you suffer from uncomfortable symptoms of menopause, relief may be as close as your kitchen. Hot flashes, irritability, and other symptoms can appear as your ovaries decrease production of estrogen. Thankfully, good nutrition will help ease the symptoms of menopause by supplying your changing body with the nutrients necessary for optimal health throughout this transitional phase. Oily fish: • The drop in estrogen levels which occurs during menopause leaves women more at risk for cardiovascular disease. Omega-3 fatty acids — found in oily fish — seem to have the ability to regulate and lower cholesterol levels in the blood, as well as improving the ratio of good and bad cholesterol. It is this ratio between good and bad cholesterol that is thought to play a key role in heart attack risk, and this is one of the most important effects of omega-3 fatty acids in the diet. • Sardines have a high amount of EPA, an omega-3 fatty acid. There are 1,200mg of EPA for every 100g of sardines. EPA proved beneficial to women around the time of menopause. Quebec researchers found that their hot flashes decreased by 55 percent after 8 weeks with EPA consumption. • Sardines are not only rich in omega-3 fatty acids, but also a good source of calcium. One hundred grams of sardines contain 70mg of calcium. Calcium is essential to a woman’s health as she ages, since it helps to build strong bones, thereby reducing the risk of osteoporosis, a condition common among menopausal women. Most women should get at least 1,000 to 1,500 mg of calcium from food per day. • Fatty fish contains vitamin D. Your body needs vitamin D to absorb calcium. Levels of vitamin D can decline as you get older, so ask your doctor whether you need a supplement. Nut and seeds: • One ounce (28g) of nuts contains at least 10% of the daily value (DV) for vitamin E, which may help for vaginal dryness, skin and hair condition. One ounce of almonds contains 35% of the DV and one ounce of hazelnuts 20% of the DV. • Most nuts and seeds contain calcium. Once ounce of almonds contains 75mg of calcium. • One ounce of nuts contains at least 10% of the daily value (DV) for magnesium. Magnesium is the second most commonly deficient mineral in women. Known as nature’s tranquillizer, magnesium also plays a key role in the absorption of calcium that will help protect against osteoporosis during menopause. • Nuts and seeds are good sources of essential fats. Flaxseeds are par-

ticularly rich in omega-3 fats. • Like soy, flaxseed, and flaxseed oil contain plant-based estrogens (phytoestrogens) called lignans that may help reduce symptoms of menopause. One study found that women who took phytoestrogens from both soy and flaxseed reduced hot flashes and vaginal dryness, although there was also a significant improvement in symptoms among women who took a placebo. Whole grains: • Whole wheat, oats, barley and rye, for example, contain zinc and magnesium for libido and mood-boosting. Zinc is a precursor for progesterone which is a hormone that is involved in controlling estrogen. Zinc is also needed to boost the immune system and helps to build strong bones, thereby reducing the risk of osteoporosis. Pulses and legumes: • It has been found that the phytochemicals in legumes help control estrogen levels, making symptoms connected with menopause less serious. • Some evidence suggests that eating soy-based foods such as tofu might help reduce certain symptoms of menopause, including hot flashes. That may also explain why women in other cultures, especially the Far East, where soy is a predominant part of the diet, have fewer menopause symptoms. • Tofu also contains calcium and magnesium for bone health. Low-fat dairy produce and eggs: • Skimmed milk and yogurt contain calcium and magnesium. One cup of yogurt would add 345 mgs of calcium to your daily total. • Eggs contain magnesium, vitamin D, and iron to beat fatigue. Fruit: • Vitamin-C rich fruit can help to minimize hot flashes and fluid retention. • Dried fruits, such as figs and apricots, contain calcium and iron. • Phytoestrogens are plant chemicals that are very similar in structure to estrogen, and may trick your body into thinking it has more estrogen than it really does, potentially diminishing some of the discomforts caused by lower estrogen levels during menopause. • Boron, on the other hand, seems to increase the body’s ability to hold onto estrogen. It also helps keep our bones strong by decreasing the amount of calcium we excrete each day.

Home Remedies Bloating Bellies

The most effective home remedies for bloating are herbal teas. You can brew chamomile, ginger, peppermint or basil tea. Another option is to add a few drops of clove oil to a glass of water and drink it every morning. This will help improve digestion and release excessive gases. Eucalyptus oil can also be used instead of clove oil. Another effective natural remedy is to boil one tea spoon of ground cinnamon with water. To improve the taste, you can add some honey.

• The top fruit sources of boron that also contain phytoestrogens are plums and prunes, strawberries, apples, tomatoes, pears, grapes, grapefruit, oranges, and red raspberries. Vegetables: • Leafy greens, salad items and onions are vitamin-C rich, can help with fluid retention and weight control and are also a source of calcium. • Sweet potatoes are rich in natural progesterone and vitamin E to help hot flashes. Avocados are also vitamin-E rich. • The top vegetable sources of boron that also contain phytoestrogens are asparagus, beets, bell peppers, broccoli stems, cabbage, cauliflower, carrots, cucumbers, lettuce, onions, sweet potatoes, and turnips. Herbs: • Black cohosh is the herb of choice for flashes and night sweats. It is often the most effective choice for balancing hormones. • Dong quai, nicknamed the “female ginseng,” is one of the foremost herbs used in treating the symptoms of menopause. • Vitex is a hormone balancer. Use alone or with black cohosh for flashes and dryness. • Parsley helps with fluid retention. Food to avoid… Alcohol: Hinders absorption of calcium and other minerals, and depletes the body’s B-group and C vitamins. High alcohol intake is also strongly linked to hot flashes.

Caffeine-rich foods and drinks such as strong coffee and tea, Red Bull and cola hinder mineral absorption, and can make insomnia and anxiety worse. Foods high in saturated and trans fats: Pastries, biscuits, fatty meats and other high-fat foods can reduce absorption of the omega-3 and 6 fats and may also hinder calcium absorption. Salt: Can add to fluid retention and may exacerbate high blood pressure and heart disease.

Home Remedies Cough

Grapes are one of the most effective home remedies for the treatment of a cough. Grapes tone up the lungs and act as an expectorant, relieving a simple cold and cough in a couple of days. METABOLISM

Breakfast

Eating first thing in the morning helps stabilise your blood sugar levels and gives your metabolism a kick-start. Having breakfast tells your body you're up and moving about and ready to start burning fat.

Green tea Want to break down fat at a faster rate? Green tea is said to contain natural properties which increase the metabolism and do just that. TIP: If you don't like the bitter taste of green tea, go for a blended tea like green tea and orange blossom.

Drink more water Staying well hydrated is essential in helping the body flush out toxins and to produce energy which helps increase your metabolism. TIP: Fill a two litre bottle of water up every morning and keep sipping from it throughout the day until it's all gone.

Spicy foods Hot food and spices like paprika, chillies and curries give your metabolism a real kick. A fiery dinner can make your heart beat faster and even bring you out in a sweat both signs your body is working harder and therefore burning more energy. TIP: Add a pinch of paprika to a cup of hot water and lemon juice to start the day.

Aerobic exercise Do exercise that speeds up the heart rate boosts your metabolism. It even stays at this higher rate for three to four hours after you've finished your workout. TIP: Taking the stairs at work every day will increase your general fitness levels in a matter of weeks.

Eat little and often Eating small portions of protein, like lean chicken and reduced-fat dairy products, 5-6 times a day keeps your metabolism active and stops you from craving unhealthy food. Therefore reducing the amount of fat you store in all those lumps and bumps! TIP: If you don't have time to stop for extra meals, a small handful of nuts and seeds will keep your metabolism ticking over in between meals.

Muscle building Building up muscle increases your resting metabolic rate and reduces your body fat levels. People who are really toned will have a slightly higher metabolism all the time, so they can afford to eat the odd treat without worrying too much about their hips!

Vitamin B In order for your body to convert carbohydrates into energy, you really need vitamin B. And it's is also needed for a healthy digestive system. TIP: Vitamin B6 (a type of vitamin B) can be found in foods like pork, chicken, turkey, cod, eggs and potatoes.

Don't eat sugar When you eat sugar your body turns it to fat if it's not burnt off quickly. Complex sugars, such as oats, brown rice, brown pasta, brown flour and nuts release energy slowly so your body has more chance to use the carbohydrates as energy. TIP: Swap the sugar in your tea and on your cereal with a spoonful of honey.

Sleep If you're tired because you haven't slept your metabolism won't have had the chance to recharge so it will be slower than normal. Plus your body will crave sweet foods to give it constant bursts of energy. So get a good eight-hour kip so you're ready to start fighting the fat! This month we have the perfect recipes for steak lovers and also some very tasty vegetarian dishes! Ingredients 50g butter, softened ½ tsp chopped chilli in oil ½ tsp wholegrain mustard 1 tsp peppercorns, crushed 2 sirloin steaks (175g each, trimmed)

Chilli and Pepper Butter Steak 1.Mix together the butter, chilli, mustard and pepper until well blended, season with a little salt. Using a small sheet of baking parchment, roll the butter into a small cylinder and chill well. 2.Meanwhile, griddle the steaks for 2-3

minutes on each side for a medium result or until desired (adjust timing for rare and well done). Slice the butter into discs and place on top of the steak and serve with a salad or seasonal vegetables.

Fillet Steak with Stilton and Cranberries 1.In a small bowl, mix the cheese, cranberries and chives together. 2.Place the steaks on a chopping board and slice in half horizontally. Spread two steak halves with the cheese mixture and top with the remaining steak halves. 3.Secure the steaks with butcher’s string or cocktail sticks. Season with salt and roll in the crushed

Ingredients 2 lean fillet steaks 50g/2oz blue cheese, e.g. Stilton, crumbled 5ml/1tsp dried cranberries, roughly chopped 15ml/1tbsp freshly chopped chives Salt 5ml/1tsp black peppercorns, crushed 30ml/2tbsp oil

pepper. 4.Heat the oil in a large non-stick pan and cook the steaks according to your preference. Transfer to a warm plate and rest for a few minutes. 5.Remove the string or cocktail sticks from the steaks before serving with any pan juices. Serve with sides of your choice.

Steak with Mustard, Soy and Port Sauce Ingredients 2tbsp sunflower oil 4 rump or sirloin steaks, trimmed of fat 200g/7oz mushrooms, sliced or chopped 4tbsp ruby port 200ml/7fl oz beef stock 2tbsp soy sauce 1tsp English mustard

1. Heat the oil in a large, heavy frying pan. Add the steaks and cook over a high heat for 2-4 mins on each side, depending on their thickness and how you like your meat cooked. Remove and keep warm. 2. Add the mushrooms to the pan, lower the heat to medium and fry for about 5 mins until tender, stirring occasionally.

3. Pour in the port, then add the stock, soy sauce and mustard and bring to the boil, whisking to blend. Bubble for 2 mins until slightly reduced. 4. Return the steaks to the pan, simmer for 1 min then serve with chunky chips, sautéed or new potatoes, plus grilled tomatoes and salad or a green vegetable.

Steak with broccoli and basil hollandaise 1.Cook the potatoes in boiling salted water for 10-15 mins or until tender. Whilst they cook, heat a griddle pan. Rub 5ml/1tsp of olive oil over both sides of the steaks and season with salt and pepper. 2.Prepare the broccoli by washing and trimming a little off the end of each spear. Bring a large pan of lightly salted water to the boil. 3.To make the hollandaise: Melt the butter in a small pan. Place the egg yolk in a blender and with the motor running, slowly pour in the hot butter, then blend until the mixture thickens. Stir in the lemon, basil and salt and pepper to

taste. 4.Cook the steaks on a hot griddle pan for 1012 mins or until cooked to your liking. 5.Meanwhile, cook the broccoli in boiling water for 3 mins or until just cooked. Drain well in a colander. Keep warm. 6.Drain the potatoes, return to the pan then lightly crush them with a fork, stir in 1tbsp of olive oil, spring onions and plenty of seasoning. 7.Divide the potatoes between four plates, then arrange the steaks and a few broccoli spears on each, spoon over the hollandaise and serve.

per halves and top with the tomatoes and mozzarella. Drizzle with oil and season. Bake in the oven for 20–25 minutes, or until the peppers are soft. 3.Scatter over the basil and serve with crusty French bread.

Calzone al Dolcelatte Ingredients For the dough: 2 pinches of salt 2tsp dried yeast Approx 280ml warm water 360g strong plain flour, plus extra for dusting 2tbsp extra virgin olive oil, plus extra for greasing For the filling: 450g dolcelatte, cold

and cut into cubes 75g freshly grated Pecorino cheese 80g rocket leaves, chopped 75g crushed pistachio nuts Pinch of freshly grated nutmeg 4tbsp extra virgin olive oil Salt and pepper to taste

Ingredients 180g pack sweet Romano peppers 126g pack ready to eat puy lentils 75g baby plum tomatoes, halved 75g mozzarella, torn into chunks 2 tbsp extra virgin olive oil 12.5g fresh basil leaves

1.To make the dough, mix the salt and yeast together in a jug with the water. Place the flour into a large bowl, make a well in the centre and add the water mixture along with the olive oil. Use a wooden spoon to mix everything together to create a wet dough. 2.Turn out the dough onto a clean, wellfloured surface and work it with your hands for about 5 mins or until smooth and elastic. Shape into 6 balls, place on a tray and cover with a tea-towel. Leave in a warm place to rise for at least 30 mins until the dough has nearly doubled in size. Meanwhile, preheat the oven to 200ºC (400°F / gas mark 6). 3.Once rested, turn the balls out onto a floured surface and use your hands to push

Roasted Vegetable Bake Ingredients 1 tbsp olive oil 2 small red onions, sliced 1 large red pepper, deseeded and cut into chunks 150g open cup mushrooms 2 courgettes, sliced 6 large British Lion eggs 3 tbsp chopped flat parsley

1.Preheat the oven to 200C/Fan 180C/Gas Mark 6. Put all the vegetables in a square baking tray or roasting tin, add the oil and salt and pepper and toss well to mix. Roast for 15-20mins or until golden and tender. 2.Beat the eggs together until smooth. Stir the parsley and eggs into the vegetables and return to the oven for a further 10mins or until the egg is set. Leave to cool in the tin for 5 mins before cutting into wedges and serving warm with salad.

The scent of winter Stock

The scientific name is Mattihola Incana but this plant is more commonly known as the wallflower or stock. Grown in the Meditteranean basin, central Asia and South Africa it has also been cultivated since ancient times in the Canary Islands.

Information about the Wallflower There are many species such as the Campocon Stock with its eye catching flowers and sweet perfume or the Yellow Stock with its therapeutic properties. Wallflowers have strong, straight stems growing up to 60cm in height. The leaves are lanced shaped and form clusters. The flowers are attractive and wonderfully scented. Some have singular flowers and some grow as doubles in a rainbow of colours from purple to white. These plants can be grown in pots or in groups in garden flower beds. They thrive and flower abundantly if planted in direct sunlight or semi shade. The best time of year to plant them is in the autumn although in a temperate climate such as ours they can be planted all year round. They cope well with dry soil and are sensitive to excessive dampness. It is important to plant wallflowers in soil rich in nutrients to prevent the lower leaves from becoming yellow. Too much fertilizer is not recommended as this

will darken the leaves. Continuous dead heading will encourage prolonged flowering. Stocks can be cut and arranged in a vase for indoors. They usually last about ten days if the water is changed every two days. Many famous Spanish writers have been inspired by the stock. Rafael Alberti portrayed it as a symbol of his native Cadiz, using it as a metaphor for the love of the sun, the folklore and the drama of the people of Andalucía. Frederico Garcia Lorca spoke of its perfume in his poems. However, it was the Italian botanist, Pierandrea Matthioli, born in Siena in 1500 who gave his name to the plant “matthiola incana” in recognition for the important categorizing of plants and flowers he carried out in the botanical gardens of Florence. The winter stock, with its elegance, colour and exquisite perfume is a perfect example of how a common garden plant can be simple but so very beautiful.

Alicante is a lovely place to visit, with something to offer everyone. Overlooking most of the city is the Castle of Santa Barbara, on the top of Mount Benacantil. At a height of 166 metres, it is one of the largest medieval fortresses in Spain, built in the ninth century by Muslims. The climb to the top is well worth the effort, for an amazing view of Alicante and its stunning harbour. The walk from the Plaza de Carmen is an experience in itself, through narrow winding streets. If you are not up to the uphill climb there is an elevator in the core of Mount Benacantil itself, and the castle can also be reached by car, but parking spaces are scarce. Entry to the castle is free. A return trip by the elevator from the ground floor costs € 2.40. The ticket machine is near the end of the tunnel. Insert your money, press the large green "A" button, then "Ticket", and your ticket will be printed. Maps are provided. Travelling between the two castle levels is free. From April to September, the castle is open from 10:00 to 22:00, while the elevator runs from 10:00 to 20:00. From October to March, the castle is open from 10:00 to 20:00, and the elevator from 10:00 to 19:30.

The Archaeological Museum of Alicante (MARQ), at the Plaza del Doctor Gómez Ulla, founded in 1932, has avant-garde design and uses modern audiovisual techniques, with more than 80,000 pieces found at local archaeological sites. It shows educational movies about the history of the area from the Stone Age, through Iberian and Roman eras, to medieval times. It is open Tuesday to Saturday from 10:00 to 19:00, and Sunday and holidays from 10:00 to 14:00. The Gravina Museum of Fine Arts (MUBAG), at Calle Gravera 9, in the old town, shows local fine arts and some excellent artwork by Spanish artists, displayed over 3 floors. The Asegurada Museum of Modern Art (MACA), at the Plaza de Santa María, 3, is open Monday-Saturday, 10:00-20:00; and Sundays and holidays, 10:00-14:00. On display are a few works by world-famous artists of the XX century: Pablo Picasso, Georges Braque, Julio González, Juan Gris, Joan Miró, as well as art collections by two local artists Eusebio Sempere and Juana Francés. The old town of Alicante is roughly the triangular area enclosed by the Rambla de Méndez Núnez, the Explanada de Espanya, and Mount Benacantil. It is touristfriendly, the old, narrow streets make for an enjoyable wander provided you don't get yourself lost. Here you'll also find the town hall, cathedral, an old covent, and several more art museums. In the heart of the city is Postiguet Beach, which is popular during the day and fairly busy during the evening when it's illuminated by sodium street lights. These give the beach and breaking waves a surreal effect. With a bit of travelling (by bus or tram), you can reach a spacious 7km long San Juan Beach, which is considered to be one of the finest in Spain. There are several companies near the port which offer boat trips, from 45-minute excursions on a catamaran to all-day trips to the island of Tabarca. Prices vary. Las Hogueras de San Juan is the most important festival in the city. The celebration takes place in June. Throughout Alicante, enormous monuments are constructed and burned at the end of the festival. In October is the “Moros y Cristianos” festival in various small towns around the Alicante region. Locals dress up in colourful costumes as Medieval Moorish and Christian warriors and knights. Live camels and elephants can sometimes be seen in street processions. In some areas, temporary wooden castles are built and mock battles are waged. Loud gunpowder canons are discharged into the air, and fireworks can last late into the night. Alicante is a great place for shopping. There are market stalls along the Explanda d'Espanya selling beads, clothes, flags etc. If you want to see how the locals shop, head into town down the Rambla de Méndez Núnez then turn West on the Avenue de Alfonso El Sabio, and you'll find the city's main market, the Mercado Central de Alicante (38°20'52.5"N 0°29'9.6"W). It is open until about 14:30 or so most days, the two levels sell all the fresh meat, seafood, cheeses, fruit and vegetables anyone could need. If you exit the market through the back, you'll find the flower sellers in a small outdoor square. And the city centre offers all the main chain shops, including two Corte Ingles stores and all the most popular stores in Spain. Nightlife is concentrated in Old Town, called El Barrio or El Casco Antiguo, with dozens of bars and clubs along the narrow streets. Another focal point is the eastern rim of the marina, in and around the casino, where things start and end later.

Once you have created your perfect place, how about designing each individual room? Well with www.mydeco.com you can.
