Remembrance Day takes place on the second Sunday of November or the Sunday nearest the 11th November. This is to commemorate the First World War which ended at the eleventh hour on the eleventh day of the eleventh month 1918 (11 o'clock on the 11th November 1918). Armistice day, as it was then known (when the warring forces agreed to stop fighting) has been observed ever since. The First World War or Great War marked the beginning of the use of modern technology in warfare and led to millions of deaths. It was felt that the dead should be honoured and King George V initiated a 2 minute silence at exactly 11 o'clock to commemorate those who had died for their country. Nowadays Remembrance Day is marked with a number of services and parades. The Queen, government representatives and soldiers march to the Cenotaph (empty tomb in Greek) in London and lay wreaths. A two minute silence is held to remember all those who have died for their country in the First World War and all wars since. The "Last post" is played on a bugle to introduce the two minute silence at 11 o'clock and "Rouse" is played at the end. Other commemoration services are held in churches and at war memorials throughout Britain. Remembrance Day is also known as Poppy day. Poppy seeds which had lain dormant for many years in the battlefields in northern France bloomed with vigour after the earth was disturbed, becoming a symbol of new life and loss. A Canadian doctor called John McCrae posted to the front wrote a poem entitled "In Flanders fields" which served as the inspiration for people to wear artificial poppies as a sign of remembrance. These are now sold on behalf of The British Legion, a charity dedicated to supporting those serving in the armed forces and former soldiers. White poppies are also sold and worn as a sign of respect and as a symbol of peace. VE (Victory in Europe) day marks the end of the second world war in Europe on the 8th May 1945. Massive celebrations took place in Britain - particularly London, where the civilian population exhausted by the austerity of domestic life in war torn Britain, enjoyed an excuse to party. This day is still commemorated as a reminder of those who died during the second world war.

Having problems with your SIP card? With the problems in the Spanish health system at the moment, with the cancellation of many SIP cards that is in vigour at the moment. Top 10 ways to reduce stress

Stress affects everybody every day, and for the most part stress offers the push we need to respond to a pressing situation. From trying to get out of the house on time to giving a presentation, stress is your response to physical, chemical, emotional or environmental factors. Whenever there's a sudden need for quick response, our bodies initiate a cascade of chemical reactions that sends our hearts racing and heightens all our senses. In a positive context, stresses can help keep our bodies strong and minds alert, but chronic stress can have devastating effects. When you have chronic stress, your body produces too much cortisol and adrenalin—two major stress hormones. Cortisol is the worry hormone produced by fear and vigilance, and produces anxiety. Adrenalin is the fight-or-flight hormone which prepares the body to react physically to a threat. If you fail to adapt to our stresses, your body can produce too much of these hormones for too long. This results in distress, which is literally an overdose of cortisol and adrenalin. The effects can result in physical symptoms and even changes that lead to stress-related illnesses. Chronic stress has been linked, for example, to high blood pressure and heart disease. New research suggests that people whose blood pressure spikes in reaction to life's daily annoyances develop blockages

in their arteries faster than those who can relax. High stress levels also have been found to trigger asthma attacks and can precede a heart attack. Long episodes of stress can also have a negative impact on your immune system, weakening your resistance to infection as well as your ability to recover. Other physical manifestations of stress include headaches, insomnia, digestive trouble and acne. In fact, stress can worsen just about any symptom, whatever the original cause. Stress can manifest itself in a range of symptoms. You may become more forgetful or find it harder to concentrate. Losing your sense of humor is another sign of an unhealthy amount of stress in your life, as are irritable moods and increased angry outbursts. Stress can lead to an entirely different set of health problems if you seek relief from it by smoking, drinking alcohol, taking other drugs, or by eating more or less than usual. Fortunately there are a variety of natural, drug-free approaches to provide stress relief. What can you do to handle stress? The most important question to ask yourself when you feel trapped by intense stress is whether this is really worth dying for. Then, remind yourself that there is no one solution to handling stress. Everyone is different and you need to choose the stress relievers that work best for you.

Identify your triggers: Begin by first identifying all the sources of stress in your daily life. Keep a diary or make simple notes every time an event triggers your stress response. This will help you identify patterns in your perception of stressful events and circumstances that precede them. When you've gone through this exercise, make the effort, either with your employer, your partner or with yourself to change these patterns and reduce the amount of stress you currently face. Modify your responses: While some research shows that our stress response is, in part, shaped by our early childhood experiences, experts also say that we can learn to modify our reactions to make stressful events less so. Such cognitive-behavioral therapy can be done with the help of a mental health professional in identifying your stress triggers or simply by remembering the simple prayer used by many 12-step programs: "Grant me the serenity to accept the things I cannot change, the courage to change the things I can, and the wisdom to know the difference." Learn biofeedback: Even if you can't control the stress in your life, there are ways you can control your response to it. One method is to learn biofeedback. Biofeedback is a simple method in which electrodes are attached to your skin to record changes in body temperature, heart rate or brain waves in response to specific stimuli. These changes are converted into electronic sounds that change in pitch or frequency. With biofeedback, you can learn to control what would otherwise be involuntary reactions, and thereby "short-circuit" your stress response. Practice daily meditation: The goal in meditation is to quiet the mind by focusing your attention on a repeated sound, called a mantra, or image, without distraction, in order to enter a deeply relaxed state. Regular meditation practice can ease stress by helping you diffuse your triggers and allowing your body to relax. By clearing the mind, you are forced to "let go" of stressful events. If you notice mental distractions creeping back in, simply return to your mantra or image. One form of meditation called transcendental meditation, was first studied by Dr. Herbert Benson of Harvard Medical School and written about in his book, "The Relaxation Response" (William Morrow and Company, 1975). Noting the method's ability to reduce stress, transcendental meditation

Munch your way through the credit crunch with our low-cost meals

Sticky Ribs with Roast Potato Salad Ingredients 3 racks pork spare ribs, or about 1.5kg/3lb 5oz single pork spare ribs 1 small onion , diced 1 tbsp olive oil 1 garlic clove , crushed 2 tbsp smoked paprika 1 tsp mild chilli powder 300ml tomato passata 2 tbsp tomato purée

150ml cider, white or red wine vinegar 125g dark muscovado sugar FOR THE POTATOES 1½ kg new potatoes , skin on 2 tbsp olive oil 1-2 rosemary sprigs, finely chopped, or a pinch of mixed dried herbs 2 tbsp white or red wine vinegar

Method 1. Heat oven to 150C/130C fan/gas 2. Put the ribs in a roasting tin in a single layer and just cover with water. Cover with foil and cook for 1½ hrs. Drain well. If you are not finishing these straight away, cover and chill until ready to cook. 2. Meanwhile, fry the onion in the oil in a pan until soft. Add the garlic, smoked paprika and chilli powder and fry for 1 min. Add the passata, purée, vinegar and sugar and bring everything to a simmer. Cook for 10 mins. If you are not using this sauce straight away, cool and chill. 3. Heat oven to 220C/200C fan/gas 7. Brush the ribs all over with the sauce and

Turkey Meatballs in Tomato and Fennel Sauce Ingredients 400g turkey mince 25g fresh white breadcrumbs 2 garlic cloves , crushed 2 tbsp olive oil 1 onion , chopped

1 carrot , diced 1 tsp fennel seeds 400g can chopped tomatoes 1 tbsp tomato purée 400g spaghetti , cooked, to serve

Method 1. Put the mince in a mixing bowl with the breadcrumbs and half the garlic. Season and mix well to combine. Using your hands, shape the mixture into 12 balls, then chill for 10 mins. 2. Meanwhile, heat 1 tbsp oil in a pan. Add the onion, carrot and remaining garlic. Cook for 5-6 mins until softened. Add the fennel seeds and cook for a few secs. Tip in the tomatoes with half a can of water, then stir in the tomato purée. Season and simmer for 15 mins until thickened. Using an electric hand blender, whizz until roughly smooth.

3. Meanwhile, heat the remaining oil in a non-stick frying pan and fry the meatballs for 8-10 mins until cooked through. Transfer to the sauce and simmer until piping hot. Serve with spaghetti.

Honey, mustard & crème fraîche baked chicken

Ingredients thighs 4 tbsp crème fraîche 500g baby potatoes 2 tbsp grainy mustard 200g green beans 2 garlic cloves , crushed 2 tbsp clear honey 150ml chicken stock ½ small bunch tarragon , roughly 8 skin-on chicken drumsticks and chopped Method 1. Heat oven to 200C/180C fan/gas 6. Mix together the crème fraîche, mustard, garlic and stock with some seasoning. Arrange the chicken, skin-side up, in a roasting tray just large enough for the chicken and vegetables. 2. Tuck the potatoes and beans in between the chicken pieces. Pour over the stock mixture then season the chicken and drizzle with honey. Cook for 40-45 mins until the chicken is cooked through and the potatoes tender. Scatter over the tarragon before serving

Fast-Fix Friend Rice Method 1. Heat the oil in a frying pan, then tip in the egg. Leave to set for 30 secs-1 min, swirling every now and again, then tip it out and finely slice. Add bacon and mushrooms to pan, then fry until golden, about 3 mins. Add peas, garlic and ginger, then cook for 1 min. 2. Mix the soy sauce and sugar together. Turn up the heat, add the cooked rice to the pan, heat through, then splash in the sweet soy sauce. Stir through the egg and serve straight away, with more soy sauce if you like.

Chilli Bean Baguettes Ingredients 2 x 400g cans mixed beans , drained and rinsed 1 red chilli , deseeded and chopped, or 1 tsp chilli flakes 1 garlic clove , chopped 500.0g carton passata (or

400g can chopped tomatoes) 2 tsp brown sugar 2 tbsp balsamic vinegar small baguette , thickly sliced 1 tbsp grated vegetarian cheddar or parmesan

Method 1. Heat grill to high. Stir the first six ingredients together in a medium pan. Bring to the boil, then turn down the heat and simmer for 4-5 mins. 2. Meanwhile, spread the baguette slices over a baking sheet and slide under the grill. Toast on one side, turn over and sprinkle the second side with the cheese. Grill for another 1-2 mins until melted and golden brown. Season the beans to taste and serve over the cheesy toasts.

Moroccan spiced mince with couscous Ingredients 2 tbsp sunflower oil 2 medium onions , roughly chopped 350g pack Quorn mince 1 tbsp ground cumin 1 tsp ground cinnamon 2 tsp ground turmeric 100g ready-to-eat dried apricots , quartered 600ml vegetable stock FOR THE COUSCOUS 280g couscous grated zest of 2 lemons 4 tbsp chopped fresh mint 50g unsalted cashews , toasted under the grill

Method 1. Heat the oil in a large nonstick pan, add the onions and cook gently for 5 minutes until they soften. Stir in the Quorn and spices (unlike meat and poultry, Quorn doesn't need to be browned), then add the apricots and stock. Bring to the boil, then turn the heat down and cook gently for 10-15 minutes. 2. Meanwhile, make up the couscous following the packet instructions - it will take about 450ml boiling water to give it a nice fluffy texture. Fork through the lemon zest and mint. Season to taste. 3. Spoon the couscous onto serving plates, pile the Quorn mixture on top and scatter with the cashews.

Spiced Ren Lentil Soup Ingredients 1 onion , chopped 1 tbsp olive oil 1-2 tbsp Thai red curry paste 300g red lentils 1,7l vegetable stock 200ml coconut milk chopped spring onions , to serve (optional)

Method 1. Fry the onion in 1 tbsp olive oil until soft. Stir in the red Thai curry paste, depending how hot you want it. 2. Add red lentils and mix to coat in the paste. Pour over vegetable stock and simmer for 20 mins until the lentils are tender. 3. Blend with coconut milk and reheat if needed. Serve scattered with chopped spring onions, if you like.

Oriental Duck Salad Method 1. Heat oven to 220C/200C fan/gas 7. Rub the duck leg all over with five-spice and seasoning, place on a baking tray and roast for 25 mins. 2. Meanwhile, cook the rice noodles following pack instructions. Drain and cool under cold running water, then drain again well and toss with the celery, carrot, cucumber and spring onions. Method 1. Cook the potatoes in boiling water until tender. Drain really well then fry in 1-2 tbsp olive oil until golden. Scoop out the pan, then add the onion and chilli and keep frying until softened. Add the chorizo and paprika and cook for a minute then add the potatoes back and cook, tossing everything together. 2. In a separate pan, fry the eggs. Serve on top of the potatoes.

Chrysanthemum The Chrysanthemum is an everlasting plant of the Astraea family, native of Asia and Europe’s north-east. In the United States they are simply known "mums". The culture of the chrysanthemums in China goes back to before 1500 B.C. A former Chinese city was called Ju-Xian " city of the chrysanthemum ". These flowers were introduced in Japan proba-

bly in the 8th century and the emperor of Japan adopted them as the official flower of the country. There is a " Festival of Happiness " in Japan that honours this flower. The flower was taken to Europe in the 17th century. The chrysanthemum is the flower of November, flowering naturally when the days are shorter in autumn and winter. This means that in the southern hemisphere it flowers in April, May, June. However, nowadays, by means of the appropriate technology it has become a plant that can flower all year round when in a controlled environment. The modern chrysanthemum is much more decorative than its wild relative. The flowers have varied forms, similar to dahlias and are very decorative like pompoms or buttons. There are many varieties of color. Besides the traditional golden colour there are flowers of white, purple and red, etc. They are used to enhance patios, balconies and and interiors. Due to the great variety of forms and colours it is one of the most popular of the cut flowers to be used in bouquets.

Gibraltar

Gibraltar may be in the press in Spain a lot for the ongoing struggle over who should rightfully be presiding over this small peninsula of land, but if you look past all this, the place offers an interesting day out, and a little taste of England on the southern tip of Spain. The last colony on mainland Europe, Gibraltar is British owned and so still has Pounds Sterling as its currency. It is a curious glimpse at an old version of England, and it has the most mischievous monkeys you’re ever likely to meet. Historically the peninsula has been inhabited since 128,000 BC, with the discovery of cave paintings proving that Gibraltar was the last known holdout of the Neanderthals. Within recorded history, the first inhabitants were the Phoenicians, around 950 BC. Subsequently, Gibraltar became known as one of the Pillars of Hercules, after the Greek legend of the creation of the Strait of Gibraltar by Heracles. The Carthaginians and Romans also established semi-permanent settlements. After the collapse of the Roman Empire, Gibraltar came briefly under the control of the Vandals. The area later formed part of the Visigothic Kingdom of Hispania until the Islamic conquest of Iberia in 711 AD. The Rock of Gibraltar is home to some Barbary Macaques, the only wild apes in Europe. Natives of Africa, no one knows how they got to Gibraltar. They're cute but can be quite ferocious, especially if you have an ice cream or a smart car. As you arrive in La Linea, you'll see the way to Gibraltar. Just head towards the huge rock, and there'll be a long line of cars waiting to go in so they can smuggle cigarettes and alcohol out. As you walk through passport control (don't forget your passport, you're leaving Spain!) you have to cross what appears to be a huge parking lot. It's actually Gibraltar aiport! Once on the other side, it's about a ten-minute walk to Grand Casemates Square, Gibaltar's main square. From there, walk along Main Street through Gibraltar's main shopping area. Walk the full length of the street, through Southport Gate. There is a cable car on Red Sands Road which will take you to Apes' Den to see the monkeys.

When to update and when not to update, that is the question.

It’s something I’m being asked time and time again and it’s a difficult one to be honest. I hope this month we can shed some light on when you should say “yes” when your computer asks you to update something and when you should be wary. Patch Tuesday… Microsoft tries to release its new updates on the second Tuesday of each month. It is generally referred to as ‘patch Tuesday’, so you can expect your computer to prompt you to install updates around this time. Sometimes there is an extraordinary ‘patch Tuesday’ 14 days after the normal event. Operating system patches are created to plug holes in the programming code that runs your computer, most of them are written for specific purposes and it’s always a good idea to install these patches and updates as they are one of the best ways to keep your computer both up to date and safe from problems. One of the best ways to check if there are any updates available for your computer is… Windows XP Users – Launch your web browser and navigate to http://windowsupdate.microsoft.com and from here you will be able to check whether your computer is up to date. Windows Vista/Windows 7 Users – Click the Start button and type Windows Update, you will then see a link to click on to launch Windows Update. From there you can check for updates and install them if necessary Note: if you have had the language of your operating system changed (as seems to be an unnervingly regular occurrence here in Spain) then you may well have trouble running windows update as one of the ways in

which Windows is ‘hacked’ to allow the language to be changed affects the use of Windows Update – this in turn of course affects your ability to protect your operating system from malware and virues. AntiVirus / AntiMalware All antivirus programs have two important dates or versions. The first is the version of the program itself (i.e. AVG 2013) and the second is the version of what are referred to as the “definitions”. These are the lists of viruses, malware and general baddies that the antivirus program is able to locate and destroy. You should always try to be on the latest version of both – the virus definitions are usually automatically updated when you turn on your computer, however the antivirus program is usually not, sometimes it will nag you to remind you that there is a new version and sometimes it does not – AVG have a habit of (if you are already on the free version) offering you an “upgrade” to the new version but only offering the “paid for” version, not the free version. Many people mistakenly take this option and find that they are then asked for their credit card in 30 days. There is always a way to move from the old free version to the new free version, ask your computer guy if you are not sure. Coffee Anyone? Java is American slang for coffee, but it also happens to be a programming language that many of us use on many web pages without even knowing it and it’s certainly essential if you want to use a website that relies on this language. From time to time Java needs to be updated and when this happens you will see a nag either on the screen or at the bottom right of the screen down near the clock.

It’s fine to update Java for the same reasons as it’s fine to update Windows; newer versions of Java protect you from more security holes. Manufacturer Updates Many computers come with manufacturer specific software (for example HP Update) that helps to keep the drivers and other hardware related software up to date. Although most of these updates are not security related, it’s usually a good idea to apply them you should become familiar with the software specific to your computer and use it to update as and when necessary. Recovery DVD’s are Important In the olden days, when you bought a new computer you were also presented with some CDs or DVDs that you were told were very important and that hopefully you would never need to use, but that you should keep them in a safe place in case of an emergency. These CDs were the recovery CDs and would be used in the event of a catastrophic failure of your computers operating system and they were important, because without them, you would not be able to restore your computer to its former glory. Nowadays computer manufacturers don’t issue DVDs when they sell you a computer but you are given the option to make them yourself – and here’s the problem; when people are given the option to create scary, important computer related disks, THEY DON’T! So, please if you don’t have any DVDs with your computer, it’s almost certain that you have not yet created your recovery DVDs, so please find out how to do it and then actually create them.
