Appetizers Snacks and Mezzas

Brushcetta with Olives and Tuna

Classic Hummus 1 16 oz can of chickpeas or garbanzo 1/4 cup liquid from can of chickpeas 3-5 tablespoons lemon juice (depending on taste)

1 1/2 tablespoons tahini 2 or more cloves garlic, crushed 1/2 teaspoon salt 2 tablespoons olive oil

Strain the beans (while keeping the liquid in a bowl) into a food processor. Add the tahini to the chickpeas and pulse for 3 seconds. Crush two ore more garlic cloves into the mixture. Add the rest of the ingredients and blend until thick and creamy constancy. Garnish with parsley when serving. For flavored hummus: add roasted peppers or roasted garlic.

Parmesan and Garlic Pita Chips 3 Slices of Pita Bread 1 Tbs Garlic Powder 1 Tsp Salt (or more)

1 Tsp Dried Oregano ¼ Cup of Olive Oil ½ Cup of Parmesan Cheese

Slice the pita breads into tortilla chip size, or 3 square inches. Combine all dry ingredients in a small bowl. Brush the sliced pita chips with olive oil and sprinkle liberally with dry mixture. Repeat for other side. Bake in the oven for 400 degrees for ~7 minutes.

Olive and Tuna Bruschetta 6 - 1” Slices of French or Italian Bread 1 Tbsp Oregano 1 Clove Garlic 1 Tsp Salt

½ Stick Butter 1/3 Cup Chopped Olives 1/3 Cup Sundried Tomatoes 5 oz Tuna Can

Cut the bread roll in 1 inch slices and spread butter on liberally. Bake in the oven for ~7 minutes on 400 degrees or until golden brown. In a sauce pan, toast the garlic with the olive oil and add drained tuna. Cook for 3 minutes and add the oregano and salt. Then add the sundried tomatoes, and cook for 2 more minutes on high heat, constantly stirring. Heap a table spoon on each bruschetta and serve warm.

Baked Mac’n Cheese Poppers 1 box of Kraft Mac’n Cheese (or other brand) Grated Parmesan Bread Crumbs Cook the Macaroni and Cheese according to the directions on the box/label. Then, spray vegetable oil in a cupcake/muffin tin. Scoop one tablespoon into each well, and bake at 350 for 15 minutes or until golden brown. Sprinkle parmesan cheese on top and serve warm.

Fried Lentil Fritters 1 ½ Cup of Split Yellow Lentils 1 Medium Onion 2 Chili Peppers

¼ Tsp Turmeric 2 Tsp Salt 3 Tbs Cilantro

Soften the lentils by soaking it 3 hours in water. Dice on medium onion, finely chop the chili peppers and cilantro. Mix these ingredients in a bowl with turmeric and salt. You may also add Garam Masala (an Indian spice) for extra flavor. Next, drain the lentils and blend them until it’s a rough paste. Add the paste to the bowl and mix thoroughly. Heat up oil to high heat and scoop 2 teaspoon sized fritters into the oil. Lower the heat if it browns too fast. Serve warm.

Cauliflower Poppers ½ Lb Cauliflower Florets 1 ½ Cup of Chickpea Flouer ½ Cup Corn Starch

2 Tsp Salt 1 Tsp Turmeric ½ Water

Combine spices, flour and starch in a bowl and whisk together. Add water (may need more than recipe) until it becomes a thick batter. Batter then cauliflower thoroughly and fry on medium heat.

Spicy Lamb Wonton Rolls 1 Lb Ground Lamb 1 Large Onion 1 Tsp Dried Chili Flakes

2 Cloves Garlic 2 Tsp Curry Powder 2 Tsp Salt 1 Pk of Spring Roll/Wonton Paper

SautĂŠ the onion with the garlic until golden brown . Add the chili flakes, salt and curry powder. 2 minutes later, add the ground meat (can also use beef or chicken), and cook through until meat is brown and all juices have been evaporated. Stuff 1Tbs of the mixture in each roll and seal with egg wash. Fry on high heat until golden brown. Best when served with Sriracha or Sahawaq Salsa.

Recees and Cherry Poppers 1 Pk Recess Mini Cups 8 oz White Chocolate Bar

1 Tube Red Icing 1 Jar Whole Cherry in Syrup

Chill the mini Recees cups in the fridge . Melt the white chocolate in a double boiler and keep warm. Once ready, take a long toothpicks and attach them to each mini cup. Dip all the mini cups in the white chocolate and chill in the fridge immediately. Once the white chocolate has hardened, drizzle red icing on all the mini cups and top off with a cherry by sliding it down the toothpick. Serve cold.

Parmesan Chicken Bites 2 Chicken Breasts (1’ Cubes) Salt and Pepper Garlic and Herb Seasoning (or similar)

Grated Parmesan Cheese Corn Starch and Flour Eggs

Season the chicken with salt, pepper, and seasoning. Dredge in flour and dip in eggs. Coat evenly with corn starch and then fry on medium heat. Transfer chicken onto paper towel and sprinkle parmesan cheese.

Fried Ramen Fritters 1 Pk of Ramen Noodles 1 Medium Onion 2 Chili Peppers 3 Tbs Flour

Âź Tsp Turmeric 2 Tsp Salt 3 Tbs Cilantro 1 Tsp Coriander

Break the Ramen noodles into many pieces and boil in accordance to the package. Drain and keep aside. Dice the onion, chili, and finely chop the cilantro. Saute these ingredients together for 3 minutes on high heat to give them a quick start. Then add it to a bowl with the noodles. Add the remaining ingredients and mix thoroughly. The flour should bind these ingredients together. You may need more flour or some water. Create mini patties and frythem on medium-high heat. Serve with Sriracha or Sahawaq Salsa.

Cheesey Rice Quiche 1 Medium Onion 1 Tbsp Vegetable Oil 2 cups Cooked Rice 1 Medium Tomato Salt and Pepper 1 cup chopped cooked spinach 1/2 cup diced cooked meat (any) 1/2 cup Swiss cheese 1/2 cup Mozzarella Cheese 5 Eggs 2/3 cup Half and Half Cream 1/2 tsp. seasoned salt 1/8 tsp. Chili Powder 1/4 cup grated Parmesan cheese

Cook onion in oil in large skillet over medium heat. Stir in rice, all but 1/4 cup tomato, salt and pepper; cook 2-3 more minutes. Then, press rice mixture into greased 8-inch baking dish. Spread spinach over rice mixture; top with meat, Swiss cheese and mozzarella cheese. Combine eggs, cream, seasoned salt, nutmeg and red pepper in small bowl; pour over cheese layer. Sprinkle reserved 1/4 cup tomato, then Parmesan cheese on top. Bake at 350F 30-35 minutes, or until firm and golden brown.

Hamburger Rice and Beans 1 lb. ground beef 1 small onion, chopped 1/2 cup chopped green pepper 1 tsp. salt 1 can (16 oz.) Refried Beans 1/2 cup ketchup 1 tsp. Worcestershire sauce 2 cups cooked Rice

Saute the onions and green pepper in a pan. Once the onions are golden, add the ground beef, Worcestershire sauce, and cook until all liquid is evaporated. Mix with rice and turn off heat. Transfer the mixture into a casserole dish and bake 20 minutes at 350F. Top with cheese if desired.
