(HARLINGEN, Texas) - Diego Ramirez, of Harlingen, is a graduate of Texas State Technical College’s Culinary Arts program. When a job opportunity to teach Culinary Arts arose at La Feria High School, he applied for it. He is now in his fifth year of teaching. He recalled thinking in his first year there, “It’s time to get down to business because we are going to cook many dishes.” “I was ready to focus on different recipes, styles and cooking methods,” he said Ramirez realized that many of his students had never cooked a meal on their own. So he turned to fundamentals: chopping, mincing,

dicing and following a recipe. “One lesson was to have them bake cookies in the kitchen,” he said. “I took a step back because I realized many of them had never turned on an oven. I decided to slow it down -- break down the recipe and go step by step so they know what to do.” An important rule that he emphasizes is sanitation safety, especially regarding COVID-19 protocols. “How many of you sanitize your cell phone?” he routinely asks his students. Ramirez said SkillsUSA competitions are his students’ favorite events. He said it is amazing to see their transition from the beginning and not

knowing anything to advancing to the final round. “Parents actually thank me for introducing kitchen etiquette and cooking meals to their child,” he said. “I do have one (former) student who is attending the Auguste Escoffier School of Culinary Arts in Austin.” The yearly median salary in Texas for chefs and head cooks is over $56,000, with more than 7,700 chefs needed by 2028, according to the U.S. Department of Labor’s CareerOneStop website. TSTC’s Culinary Arts program offers an Associate of Applied Science degree and several certificates of completion.

Diego Ramirez, a Culinary Arts teacher at La Feria High School, stands in the culinary kitchen, waiting for his next class to arrive.

La Feria News’ Boss Shaves "Covid Hair" Landon Jennings, Known for his Outlandish Hair, has Decided to go for a New Look Emilio Flores La Feria News

Many that know Landon Jennings, the owner of the La Feria Newspaper, will recognize him for his big curly hair and beard. Two weeks prior though, he was still rocking that long puffy hair and beard but that all changed because, on October 22nd, 2021, our boss at La Feria News decided it was time for a cut. He says he thinks it’s been just a little over a year now, and honestly, the look has seem to have grown on us all, pun intended. Like all decent things though,

they must be shaved… and as he promised Miss Betsy at the Hair Center before, she would have the honor of cutting his hair, though later, Ryan Ortiz, a barber that has been working at the hair center for several months now, took over cleaning things up. Being the good family man he is, Mr. Jennings saved a bit of his hair for his daughters so they can remember that they loved playing with his hair and would be saddened to see it all gone. We love our boss with or without all that hair, and we’re not just saying that because he pays us.

Recall on Walmart's Room Spray

Walmart Takes Immediate Steps for Customer Safety Following Voluntary Recall of Better Homes & Gardens Essential Oil Infused Aromatherapy Room Spray with Gemstones BENTONVILLE, Ark., Oct. 26, 2021 — Walmart continues to assist the Consumer Product Safety Commission (CPSC) and Centers for Disease Control and Prevention in their investigation and on Oct. 22 voluntarily recalled about 3,900 bottles of Better Homes & Gardens-brandedEssential Oil Infused Aromatherapy Room Spray with Gemstones in six different scents due to the possible presence of a rare and dangerous bacteria. Walmart quickly enacted plans on behalf of its customers after federal agencies alerted the company of concerns with an aromatherapy room spray manufactured by Flora Classique Inc. and sold under the Better Homes & Gardens brand. “We are committed to providing safe, high-quality products

to our customers. Our sympathies go out to the four families that have been impacted by this situation. Customer safety is always a top priority and as part of the recall we proactively put plans in action to notify customers and prevent further product sales while federal agencies continue their investigation.” As soon as Walmart was alerted to the issue, the company pulled the product from the shelves of about 55 stores in 18 states that were part of a pilot program and put a register block in place at stores and online to prevent any further sales. The CPSC issued its recall on Oct. 22. The company has listed each of the stores on its website. For customers who purchased the product online, Walmart emailed

each of them letters on Friday, Oct. 22, alerting them of the recall and indicating company records reflected they may have purchased one of six scents since February 2021 that were recalled. On Monday, after extensive research to identify contact information, Walmart also emailed more than 2,000 customers who purchased the product at one of its approximately 55 stores that sold it as part of the pilot program. In addition, the company is sending letters to another 263 customers with no email address on record and placing calls to a small number of other customers with no available email or physical address. Walmart is telling customers who purchased the Better Homes & Gardens Essential Oil Infused Aromatherapy

Room Spray with Gemstones since February they should stop using it immediately and follow recommendations in the voluntary Recall Notice for securing and returning the product to a Walmart store. This includes double bagging the bottle in clean, clear zip-top resealable bags and placing it in a small cardboard box. It is important that these products be handled correctly and returned to Walmart. Walmart will provide a full refund and offer a $20 gift card for any inconvenience. Customers with questions may contact the Walmart Customer Care Center at 800-9256278 from 7 a.m. through 9 p.m. CDT any day or online at Walmart.com and click on "Product Recalls" for more information.

First Baptist Church, La Feria Two shootings just occurred within days of each other. Both ended in fatalities and serious injuries. That is where the similarities end. One shooting was accidental, on a movie set. The other was no accident, happening in a Boise shopping mall. One has gotten a lot more attention than the other. Since an actor discharged a prop weapon killing one and wounding another member of the movie’s production team, the public cannot get enough of the story. Yet, not long after a shooter killed two people in a Boise Idaho mall, the story was already becoming back page news. Why? Maybe we are fascinated with Hollywood, even when it involves an accident. Maybe we consider the mall shooting just another tragedy in the all too familiar scenario of angry men with too many guns. A more frightening thought is that we have begun to see guns more as props than real weapons. As absurd as it sounds, some actually believe that the Sandy Hook shooting was a hoax and conspiracy. “Thou shalt not kill.” Ironically, we want to find a place for the commandment in our courthouses. But we really do not want the same commandment cluttering our movies or crimping our freedoms. -Mark S. Ross DMin.

The Next Chapter Poem Unknown Soldiers’ Salute

The tomb that’s unknown rests beneath a blue sky, A symbol of loss for many who die, For many who go to fight foreign wars May never return after living such horrors, Yet as years do pass, as the hour in a glass, The number do grow, whom only God can know.

Known only to God, the cost is not free, For the symbol of death is there that we see Throughout mankind’s history, When death rings a bell, Such tombs do remind us that war is hell. Oh, say can you see by the dawn’s early light What horror can be throughout war’s darkest night, When medals are given and salutes are all made, Nothing brings back the lost in the tomb who is laid. The highest of honors, and the greatest by far, Is to sow seeds of peace, where once there was war. Twenty-one gun salutes, passing fighter planes above, Are really not as great as the call of a dove. God’s truth, we already know, For what we now reap comes from what we did sow. The lives are all precious, of soldiers unknown, For none but God can bring them Home. -James Arnold

Ribbon Cutting Officially Opens UTRGV Institute of Neuroscience in Harlingen By Dimitra Trejo

RIO GRANDE VALLEY, TEXAS – OCT. 26, 2021 – The UTRGV School of Medicine, together with its clinical arm UT Health RGV, officially opened its Institute of Neuroscience (ION) with a ribbon-cutting event on Tuesday. The institute, which broke ground in 2019, is an all-encompassing research, education, clinical care and community partnership facility with the goal of transforming brain health for the Rio Grande Valley community. ION will bring advanced care and training in specialized neurological medical treatments and research to the Valley. UTRGV President Guy Bailey said partnerships with the South Texas Medical Foundation – which gifted the 35 acres on which the institute is being built – the City of Harlingen, and the Valley Baptist Legacy Foundation, which contributed $15 million to support the operations of the institute, have made it possible to

bring ION to fruition. “The Institute of Neuroscience is really transformative, for the UTRGV School of Medicine and for the Valley,” Bailey said. “This building is going to house a lot of folks who are going to transform the lives of the people of the Valley. “We thank our partners – including the City of Harlingen, the Valley Baptist Legacy Foundation, and the South Texas Medical Foundation – for helping us take this bold step in fulfilling our commitment of improving healthcare in South Texas,” he said. RESEARCH & EDUCATION The more than 30,000-square-foot facility houses medical services and research that will serve as critical learning experiences for the university’s medical students, and there are plans to start a residency program to train neurologists in the future. Dr. Ihsan Salloum, UTRGV School of Medicine director for the

Institute of Neuroscience, said at the ceremony that those interested in learning and conducting research in neurology will have plenty of unique opportunities. “We are so excited about training the next generation of neuroscientists here in the Valley,” he said. “As a HispanicServing Institution, we will place particular emphasis on working with underrepresented minorities and expanding on an already strong research program, with particular focus on brain diseases that affect our communities.” “We are building a team of multidisciplinary researchers that will bring together biomedical engineers, cognitive neuroscientists, geneticists and computational neuroscientists, along with neuropsychiatrists and neurologists. This will provide the foundation for scientific discoveries to advance brain health. There’s so much to look forward to,” Salloum said. SERVICES Dr. Michael B. Hocker,

dean of the UTRGV School of Medicine, said ION fulfills the School of Medicine’s mission to provide innovative, highquality medical resources for the people of South Texas. “This Institute of Neuroscience is a concrete example of UTRGV’s mission to provide leadingedge research, as well as educational and clinical care opportunities to this area of the country,” he said. “This is a state-of-the-art facility in South Texas, and we are going to have top-notch researchers and clinicians taking care of patients right here in the Valley.” Dr. Michael R. Dobbs, chair of the Department of Neurology and chief medical officer for UT Health Rio Grande Valley, said the institute’s medical providers and the services they will offer through the facility will be top-tier. “The technology at ION will allow physicians to provide leading-edge specialty services and procedures, including advanced magnetic resonance imaging

(MRI), high-resolution CT scanning, and positron emission tomography (PET),” he said. “Brain health just got a huge boost in our region, and we should celebrate that. The Institute of Neuroscience (ION) officially opened on Tuesday in Harlingen. The institute is an all-encompassing research, education, clinical care, and community partnership facility that provides dedicated space to the treatment and research of brain, spinal and nerve diseases – like epilepsy, Parkinson’s disease, Alzheimer’s Disease and multiple sclerosis – for individuals of all ages (UTRGV Photo by David Pike) EXCELLENCE Judy Quisenberry, executive director of the Valley Baptist Legacy Foundation, said ION is yet another example of UTRGV’s efforts to bring excellence to the region. “While none of us could have pictured what the UTRGV medical school would become, the reality

is much bigger and better than any of us could have dreamt,” she said. “To be the only distributed campus across a broad geography that we all call home is the most inclusive and provides the most access to its students, and that’s something to be really proud of.” Attending the ribboncutting were Texas Sen. Eddie Lucio Jr. (District 27); Robert and Anne Shepard, Shepard Walton King Insurance Group, and Randy Whittington, president of the South Texas Medical Foundation, for whom the Shepard Whittington Lobby is named; Harlingen Mayor Chris Boswell; and UT System Regent Dr. Nolan Perez. The Institute of Neuroscience is expected to receive its first patients in November. With market growth comes the attraction of new businesses and people to the area. In turn, the availability of hotels, recreation, technology, entertainment, and essential services for well-being are critical to sustainable growth. All of these elements are incorporated in the RGV Epicenter concept. Charles Johnson, Johnson Consulting and RGV Epicenter partner explained, “It is important to create a healthy lifestyle by blending work and play. This
