Los Fresnos CISD’s CTE Department continues to educate young kids on the different career opportunities available do the teacher for DECA, Arminda Quiroz responded, “This organization helps teach our students new skills that will help them succeed in business and mold them into mature and responsible adults through activities that also incorporate community service.” She explained their visit at the Dora Romero Elementary and working with the kids there, “Our students on(sic) CTE tour shared various activities such as tips for creating a resume, a sample balance sheet for managing expenses and deposits, and a fun activity that challenged their knowledge about the different careers and what each entails.” She says that the game mirrored something like Jeopardy, and says, “(it) really got the students involved and excited." In an interview with Karina Lucio, the Principle at Dora Romero Elementary, she told Los Fresnos News that during Covid, restrictions didn’t allow the elementary school to participate in this experience. Mrs. Lucio says they were very excited when the opportunity finally arose, “It was a huge

The CTE Director at LFCISD, Rolando Guerra shared that something that touched him, was seeing ALL the students involved. Having something for all different levels including those who might have special needs were still included and had a blast Mr. Guerra says “These are careers that they can go into… There are no limits…” He continued by sharing how it stood out to him what a wonderful staff Dora Romero Elementary had, and how they give all their students an equal opportunity to learn and grow. “Every student can accomplish what they want, and that’s something I really like on that campus and with their staff”

Chili is a staple of Texas cuisine. Many of us know it as a warm bowl of joy on a crisp fall evening and a great way to gather family and friends around the dinner table. In fact, on May 11, 1977, chili was adopted as the state dish of Texas by the Legislature. Will Rogers may have said it best when he described Texas chili as “the bowl of blessedness.” This timeless Texas classic is known for many things, including annual competitions sure to cook up delicious entries. From Flatonia to Galveston to Pflugerville, the Lone Star State is known for hosting some of the best annual chili cook-offs. While there are several theories on where the true origin of Texas chili began, many historians trace the famous dish back to San Antonio in the 18th century. Immigrants from the Canary Islands had been recruited to settle in the area, and many women began cooking up the earliest forms of chili to sell to people in the city's Military Square, at the grounds of the Alamo. Our state’s love for chili heated up during the cattle

drives of the mid-late 19th century. When traveling from town to town, cowboys would cook chili straight out of their chuck wagons. Ingredients for their chili, such as onions and peppers, could be found while they were working the cattle drive trails. Today, Texans heading north up I-35 from San Antonio know another chili-loving city. Austin is home to the Texas Chili Parlor, a fan-favorite for a great bowl of chili with good company. Just a few blocks from the Texas State Capitol, this local favorite opened the same year that chili became our state dish. Aside from their many well-known recipes, this establishment is also familiar to movie lovers: scenes from Death Proof with Quentin Tarantino were filmed there. Traveling back down to southwest Texas, we hit the self-proclaimed chili capital of not just Texas, but the world: Terlingua. This West Texas town is known for its chili cook-offs which started back in 1967. The first recorded chili cook-off in Terlingua consisted of two cooks: a New Yorker

named Allen Smith, and a Texan named Wick Fowler. In a battle between the Empire State and the Lone Star State, the competition resulted in a draw when one of the judges scorched his taste buds. The next year, the ballot box was stolen by masked bandits who threw it down a mine shaft, setting the tone for this spicy annual event. Every year during the first week of November, thousands of chiliheads gather for the annual chili competitions in Terlingua. Our final stop takes us to Snook, Texas, which is known for hosting the annual Chilifest Music Festival. What first started in a Walmart parking lot, Chilifest has grown into a Texas-sized gathering that attracts thousands of people who come to listen to Texas' best country music and enjoy a bowl of reds. Over the course of 30 years, this red-hot event has raised more than $3.5 million for local charities. No matter where you get your bowl of blessedness, be sure to make the most of the cooler weather by cooking up a batch of our state dish.

Los Fresnos defeats Brownsville Hanna in a defensive battle By Ruben Rodriguez Los Fresnos News Week 10’s Friday Night action kicked off at Sams Stadium with a 32-6A matchup as The Los Fresnos Falcons defeated the Brownsville Hanna Golden Eagles 32-13. The Offenses got off to a slow start as both defenses shared the spotlight with a scoreless 1st quarter. However it was a very productive quarter that included multiple big 3rd down stops and 4 turnovers. The defensive shootout carried over into the second quarter until Jose Contreras drilled a 26 yd field goal to make it Falcons 3, Eagles 0 going into the half The 3rd Quarter saw the Falcons punch in the game’s first touchdown as QB Matthew Padilla connected a 35 yd pass to WR Cody Taylor. Later on in the quarter,

Padilla tacks on 6 more as he runs one into the endzone. The Hanna Eagles responded with secondary QB Joshua Villafranco finding star WR Ethan Pena for a 19 yd TD Pass. Villafranco would later find Pena in the endzone once again for a 24 yd pass in the 4th quarter. Meanwhile for the Falcons Jose Contreras tacks on 2 more field goals from 25+ yds out. The Last touchdown for the Falcons came from Sophomore RB Gael Palestina as he rushed one to the house for 19yds in the 4th. Defense continued throughout the game as there was a total of 7 turnovers, 3 towards the Falcons and 4 towards the Eagles.Getting it done on defense for the Falcons were Rex Halford and Gregory Jones, who made multiple tackles. The Falcons later forced

a safety with two minutes left in the ball game to capture their 5th district win. “Adjustments were just finding run schemes that worked, as well as how we communicated our plays. Rotating plays by receivers.” Falcons HC David Cantu on how the offense sparked up in the 3rd quarter. Next week the Falcons host the Red Hot Harlingen South Hawks to wrap up district play. A Blockbuster matchup for the District 32-6A Title. David Cantu on next week’s battle: “It’s so exciting, it gives me goosebumps. To go into week 11 against Harlingen South for the District Championship. About 5 weeks ago, nobody thought that this team here would be in that position but our kids have stayed the course and they deserve it.”

TSC gives local nurse a head start, makes childhood dream come true So, amid juggling school, work, a case of COVID and living in an RV to keep her family safe, she managed to excel in the program. Pizana credits her success to her instructors, peers and the hands-on skills training she received using TSC’s simulation lab and resources. “When I stop and

realize that I’ve achieved my childhood dream, it still feels so surreal,” said Pizana. “I’ve grown up a lot since starting the program and it was great to get to do this close to home. Now I get to serve my community in ways I only imagined.” With one dream down, Pizana said there are still many to go. “I will continue my

education,” she said. “A bachelor’s degree and master’s degree are in the works. With an associate degree in nursing thanks to TSC, I now have so many paths I can follow.” For more information about TSC’s Associate Degree in Nursing program, visit tsc.edu.
