Holiday Events Begin Along Route 16! By Sarah Wright It’s that time of year when the holidays are upon us! Families can look forward to warming up by the fire, and thinking about how fortunate we are to celebrate the holiday season along picturesque Route 16 in New Hampshire. Here are some options this month to kick off the fun of the season. In Milton, the holidays begin with activities on November 23 with a Liberty Music Gathering. The acoustic music jam will take place from 6 to 9:30 pm and is open to all. Admission is free and musicians are invited to share their talents. The gathering will take place at Liberty Hall, 5 Highland Avenue in Milton Mills. Another Liberty Music Gathering will take place on December 7 from 6 to 9:30 pm. On November 30, the Milton Mills Holiday Stroll will ring in the season from 1 to 5 pm. Visitors can shop in more than 10 open spaces with refreshments served; stop by the vendors and artisans in the holiday market, then join in the beauty of the tree lighting at 5 pm and decorate an ornament as well! Take part in the Annual Gingerbread House Contest on December 7 from 10 am to 1:30 pm at the Emma Ramsey Community Center located at 424 White Mt. Highway in Milton. You can pick up entry contest forms at the Community Center as well. In Wakefield, there are many holi-
day events happening for all ages. On December 6, kick off the season with a Christmas Tree Lighting and Flashlight Candy Cane Hunt with the Wakefield Parks and Recreation. The festivities include the lighting of the community tree in Turntable Park at 6:30 pm, with caroling, hot cocoa and a flashlight candy cane hunt. A special visitor from the North Pole will be there as well! Don’t forget to bring your flashlights. On December 7, have Breakfast with Santa at the Paul School in Wakefield from 9 am to 1 pm. There will be breakfast, pictures with Santa, children’s crafts and activities, local crafters and vendors, raffle baskets and more. For information, call Wakefield Parks and Recreation at 522-9977. The White Mountain Waldorf School will host their 33rd Annual Winter Craft Faire on Saturday, November 16 from 10 am to 2 pm at the North Conway Community Center, located at 78 Norcross Circle in North Conway. Local artisans and vendors will be selling beautiful crafts and goods, and faculty and students will be running crafting tables for children to make a craft for themselves or to give as a gift. Children will also enjoy the puppet shows and King Winter, along with the Pocket Lady who will make an appearance. Don’t miss this wonderful event! If you like local history, an upcoming event is your chance to meet the folks at the Conway Historical Society and to
also think about becoming a member. On December 10, the Society will hold its Annual Christmas Party and Yankee Swap at the Old Firehouse in Conway (located at 111 Main Street). A pot luck dinner starts at 6 pm, followed by the party at 7 pm. Each attendee should bring a small gift to swap and a dish to share. The Rochester Performance & Arts Center will host a Holiday Craft and Vendor Fair on Saturday, November 23 from 9 am to 2 pm at 32 North Main Street in Rochester. If you’re looking for a one-of-a-kind gift this year, you’ll surely find it among the dozens of local vendors at this craft fair.
Also, on Saturday, November 23, from 10 am to 3 pm, celebrate The First Official Thanksgiving of 1863 with the New Hampshire Farm Museum in Milton. In 1863, Lincoln proclaimed the first national Thanksgiving Day in the midst of the Civil War. The Farm will recreate that first holiday experience with costumed actors in the roles of family members to show what Thanksgiving at the time would have been like. Enjoy light refreshments and hands-on activities; ride a horsedrawn sleigh or wagon (depending on snow); learn about Sarah Josepha Hale, the New Hampshire resident most responsible for making the day a nation• Holiday Events Continued on page 3

cal businesses and designers to reflect their most nostalgic Christmas memories. The event will truly usher in the season and fill you with the holiday spirit! On Saturday, November 23 from 9 am to 2 pm, you won’t want to miss the New Durham Holiday Craft Fair. Find
the perfect holiday gift at this fair at the elementary school that will be full of local crafters with unique items to sell. There will also be food, kids’ crafts, raffles, and the “Wish Upon A Star” program pick-up. The New Durham Elementary School is located at 7 Old Bay Road in New Durham. If you’d rather “get crafty” yourself, you can join the Chocorua Lake Conservancy on Sunday, November 24 from 1 to 4 pm to make your own Winter Ecology Lantern. This workshop will take place at the Cook Memorial Library on Main Street in Tamworth. Create a beautiful, colorful lantern to celebrate winter ecology, and chase away the blues on dark, winter nights. Write, draw, or paint images onto vellum, which will become a unique lantern. The church is open for the weekend on Friday from 6 to 9 pm, and on Saturday from 9 am to 3 pm. All are welcome to the South Eaton Meeting House on the corner of Towle Hill and Burnham Road on Sunday at 3 pm for the Annual Thanksgiving Service. Light refreshments will be served. soon as this classic tradition sells out early! The journey runs on select dates: November 29 and 30, December 1, December 6 to 8, December 12 to 15, December 19 to 23, and December 27 to 29. Most people think of shopping when they think about the day after Thanksgiving, also known as Black Friday. However, locals and visitors to the White Mountains know it is all about the start of Journey to the North Pole™. Journey to the North Pole™ is the cherished fundraiser of Believe in Books Literacy Foundation in Intervale. It transports guests of all ages aboard the Conway Scenic Railroad in North Conway, NH and the Hobo Railroad in Lincoln, NH magically to the North Pole throughout the holiday season where you actually enter Santa’s workshop! The fundraiser began in 1995 and has been supporting Believe in Books Literacy Foundation and their literacy programs since that first “Journey.” Many families have not only brought children on this holiday adventure, but are now bringing their grandchildren!
Over the past 25 years, Believe in Books Literacy Foundation has enhanced the magical experience to make the event even more memorable with keepsakes, gifts for children, and colorful ribbons on the magic Christmas bells each guest will receive on their return voyage. Every year there have been added ambience features, improved facilities, and engaging surprises for the children. The North Country community plays a large role bringing this adventure to life. From local students tying ribbons on bells, and volunteers helping before and during the event, Believe in Books Literacy Foundation enjoys seeing the community come together for such an important cause. The unique exhibit spotlights the journeys of three remarkable artists: Peg Scully, Nancy Marsden and John Watkins who show us what over 100 years of artistic experience can create...it is sure to impress all show see the exhibit. Celebrate Christmas Memories during Christmas at the Castle During the weekends immediately before and after Thanksgiving, Castle in the Clouds will host its popular annual Christmas at the Castle program – a festive event that brings the community together at the historic mountaintop estate. Working with the theme of “Christmas Memories,” local businesses and designers will showcase their design aesthetic by adopting a room in the mansion or area of the estate grounds and decorating it to the nines. This year’s decorators include Balanced Interiors of Center Harbor, Branch and Bloom of Wolfeboro, Center Harbor Inn of Center Harbor, Event Builders of Moultonborough, Lake Life Realty of Moultonborough, Linda’s Flowers of Wolfeboro, Mari’s Treasures of Wolfeboro, Moulton Farm of Meredith, The Preserve at Chocorua of Tamworth, Riverstone Florals and Design of Gilford, Spider Web Gardens of Tuftonboro, and Tamworth Distilling of Tamworth. The holiday festivities begin with the Christmas at the Castle Preview Party on Friday, November 22 from 4 to 7 pm. Tickets are $50 for non-members and $40 for members, and include an evening tour of the Castle, artisan fair, live holiday carols by Eric Grant, appetizers, cash bar, and a “spirits” tasting by Tamworth Distilling. When asked what sets the Preview Party apart from the other days of Christmas at the Castle, Development
Coordinator Jill Cromwell explains, “This is a special time to watch the sun set over the lake, and see the Castle lit with twinkling holiday lights at night.” The Preview Party is a fundraising event, with all proceeds supporting the preservation and interpretation of the Lucknow estate, listed on the United States National Register of Historic Places with national significance. Christmas at the Castle will take place from 10 am to 4 pm the weekends of November 23 and 24 and November 29 and 30 and also on December 1. “Christmas at the Castle is one of the best events of the year for families and children,” says Stephanie Poole, Programs and Volunteer Coordinator. “In addition to touring the Castle decorated for the holidays, guests can enjoy free activities in the Carriage House including children’s holiday crafts, a visit with Santa Claus, cookies and hot cocoa, and the artisan fair.” While the Castle closes at 4 pm each day, activities in the Carriage House are offered until 4:30 pm and do not require an admission ticket. Visitors can also enjoy lunch at the Carriage House Restaurant from 11 am to 3:30 pm, and browse local products in the gift shop, which will be offering 10 percent off all apparel items. Delicious Thanksgiving Side Dishes By Chef Kelly Ross This month’s theme is Thanksgiving side dishes, and there are so many to choose from. Most everyone has the cooking of a turkey down to a science, as well as taters, butternut squash, and gravy. Today we’ll focus on some of the more obscure recipes, which to me, however, are main stream. I’m going to give you a soup, some dinner side dishes and a few fun desserts. Let’s start with soup. It’s almost impossible to think Thanksgiving without thinking butternut squash. We will use this theme a few times today as butternut squash is truly a classic. This recipe is a Turkey Day prelim: a delicious Butternut Squash Soup. It is delicious simple to prepare, and you can’t lose with those factors. Butternut Squash Soup 8 cups peeled and cubed butternut squash, roasted 1 tsp cinnamon and ½ tsp salt for roasting the squash 2 tbsp coconut oil 2 large apples of choice, peeled, cored, seeded and cubed 1 large sweet onion, sliced ¼ -½ tsp curry depending on your taste 7 cups vegetable broth 1 cup coconut milk 2 tbsp salt, plus a little more if desired For starters, put the cubed squash in a bowl and toss with the cinnamon and salt, put on a greased pan, and put into a preheated 425-degree oven for 30-40 minutes. While the squash is baking, set up a large skillet over a medium-high heat and add the coconut oil, onion slices, apple cubes, curry and a few shakes of salt and sauté for about 10 minutes until the apples and onions are well softened. Add the vegetable broth, milk and squash from the
oven and bring to a boil. Reduce the heat to simmer and continue to cook, uncovered, for about ½ an hour. Add the salt in small doses, taste and add more as needed. Put the contents in a blender, food processor or use a handheld immersion blender until the soup is completely smooth. Put back into the pot and over low heat let simmer until ready to serve. This is great for a few days, or if preferred, it freezes very well. Let’s move onto some fun side dishes to accompany the big bird. I will admit when I have done the big meal with family over the years, usually with 20-30 of us, there have been 7-8 side dishes. Kind of overkill, but with all the eaters we had, most of the bowls of side dishes were eaten up pretty well. Obviously, if you only have less than a dozen or so at the table, you definitely don’t need that many side dishes, but it is important to utilize some great options. First on my hit list is a great blend of veggies that are roasted with maple and cinnamon. This contains butternut squash, sweet potatoes, Brussels sprouts, as well as walnuts and cranberries. Maple Cinnamon Roasted Vegetables ½ cup olive oil 1 tsp ground cinnamon 1 ½ tsp salt ½ tsp fresh ground black pepper 1 ½ lbs butternut squash, peeled, seeded, and cut into ½ inch cubes 1 ½ lbs sweet potatoes, peeled and cubed into ½ inch cubes 1 lb. of fresh Brussels sprouts, trimmed and cut in half ¾ cups walnut halves ¾ cup dried cranberries 1 ½-2 cups maple syrup Preheat the oven to 400 degrees. sonings and mix well. Add the cubed squash and sweet potatoes, as well as the Brussels sprouts and toss well so all is thoroughly coated with the seasoned oil. Pour the oiled veggies on a greased baking sheet or 2 and bake for 35-40 minutes, or until the veggies are browned and tender. Pour the veggies on a platter, sprinkle the top with walnuts and cranberries and drizzle with the maple syrup. Sprinkle with additional cinnamon if desired and serve immediately. The next great side dish for the big dinner combines 2 of my favorites, although both are as simple as they come, and those are taters and corn. When I am hungry and don’t feel much like cooking, I often just toss a tater or 2 in the oven and cook a can of corn and inhale them. This combo dish is always a popular one with any crowd considering everyone loves corn and potatoes. I think your crowd will love this dish in a big way. Sweet Corn and Potato Au Gratin 1 large sweet onion, thinly sliced 2 tbsp butter 2 tbsp flour 2 cloves garlic, minced 1 tsp sea salt 1 tsp fresh grind black pepper
1 cup whole milk 2 lbs red potatoes, cut into 1/8 inch slices, skin on 2 cups fresh corn off the cob, or frozen corn 1 can creamed corn, 8 oz 2 cups sharp cheddar, shredded 1 cup panko bread crumbs 2 tbsp butter, melted 1/3 cup grated parmesan In a large saucepan, sauté the onion in the butter over a medium heat until tender. Stir in the flour, garlic, salt and pepper until well blended. Add the milk gradually while stirring well. Stir in the potatoes and bring to a boil. Reduce the heat and cook for an additional 10 minutes or so until the spuds become somewhat tender. Stir in the corn and creamed corn and combine well, then do the same with the cheddar. Grab a 9-inch square pan and grease the bottom and sides well. Pour the concoction into the dish very carefully. In a small bowl, combine the panko, melted butter and parmesan and top the potato mixture with it. Put it in a preheated 350-degree oven for 45-50 minutes or until golden brown and the taters are tender. • Side Dishes Continued on page 14

I have seen it served many ways, by others and myself, and I can’t say I have ever been disappointed, but this recipe is by far my all-time favorite. It is chock full of deliciousness and has an outstanding crunchy topping, which makes it unique compared to any other squash dish I have ever had. This is a guaranteed success story at the Thanksgiving Day table. Butternut Squash ½ cup honey 1 tsp dried thyme, divided 5 lb butternut squash, peeled, halved, seeded, and thinly sliced 3 tbsp water ¼ cup olive oil, plus 2 tbsp, divided 1 ½ tsp of both sea salt and fresh grind black pepper ¾ cup panko In a large saucepan, heat the honey and ½ tsp of the thyme, stirring frequently over a low heat for 4-5 minutes. It should be very fragrant. In a large microwave safe dish, combine the squash and water. Cover and zap in the wave for 6-8 minutes until squash is tender. Drain. Add ¼ cup of the olive oil and 1 tsp each of the salt and pepper
and toss well to coat the squash. On a flat surface, stack the squash slices. Set a 9-inch square baking dish on its side and fill with the squash stacks. Once the pan is full, put the dish back in its regular position. Drizzle 3 tbsp of the honey mix over the squash. Bake for 45-50 minutes. In a small skillet, heat the remaining oil over a medium heat. Add the bread crumbs, as well as the remaining salt and pepper. Cook and stir over a medium heat for about 5 minutes just before the squash will be coming out of the oven. It should become golden brown. Once the squash is out of the oven, pour the panko mix over the top and drizzle the remaining honey mix over the top of the crumbs and serve. Let’s move on to a couple of desserts. One is a definite dessert and the other is more of a sweet snack, but regardless, these are great additions to have on Thanksgiving. Let’s start with the dessert. I LOVE a good bread pudding, although I know some who don’t, usually complaining about the texture/consistency. I never quite understood that angle, but to each their own. I make a few mean bread puddings, but admittedly, I’m not much of a baker. However, when it comes to bread pudding, I am a pro. This version is a Turkey Day winner and is done in a slow cooker, which is kind of key on Thanksgiving since the oven is usually crammed full

Butterscotch and Caramel Pecan Bread Pudding 9 cups fresh homemade bread, such as an Italian or English bread, cut into ½ cubes 1 cup chopped pecans 1 cup caramel chips 4 large eggs 2 cups half and half ½ cup brown sugar, packed ½ cup melted butter 1 tsp vanilla extract 1 tsp of a mix of white sugar and ground cinnamon Butterscotch sauce Vanilla ice cream and/or whipped cream Grease a 4-quart slow cooker. Plop in the bread and ½ the pecans. In a bowl, whisk the eggs, cream, brown sugar, butter and vanilla until well blended. Pour over the bread and pecans and press down gently so the bread absorbs the liquid. Sprinkle the sugar/cinnamon mix over it. Microwave the caramel chips in 15 second increments and stir until melted. Pour over the top and sprinkle the rest of the pecans over the top. Cook covered on low for 3-4 hours or until a knife inserted in the middle comes out clean. Serve warm, top with ice cream and/or whipped cream and finish with butterscotch sauce. Lastly, as I said, this is more of a treat to have around the house this time of year than it is a dessert, and that is a classic fudge. The holiday seasons have always been popular fudge seasons in our house when I was growing up. Generally, it was always a traditional chocolate fudge with nuts and a peanut butter fudge, which I have always been a big fan of. Well, this one
screams Thanksgiving, as it’s Pumpkin Fudge, if you haven’t had or heard of it before. It combines the flavor of cinnamon and caramel as well to create an outstanding blend of flavors. It goes together pretty easy and the only thing difficult or frustrating thing about it is waiting a few hours for it to cool and set, and more importantly, eat. Creamy Pumpkin Fudge 3 cups sugar ¾ cups butter 5 oz can evaporated milk ½ can canned pumpkin 10 oz package of caramel chips 2 tsp ground cinnamon 7 oz marshmallow fluff Spray a 9 x 13 glass baking pan with pan spray. Line the pan with foil and spray that generously as well. In a heavy saucepan, combine the sugar, butter, evaporated milk and pumpkin. Cook over a medium-high heat, stirring frequently until it boils. Reduce the heat to medium-low and continue to boil, still stirring, at a moderate rate until a digital thermometer reaches 234 degrees. I know it’s a weird number, but trust me. This will likely take 15-20 minutes, so be patient. Remove from the heat immediately. Stir in the caramel chips and cinnamon and stir until the chips have melted completely. Add the marshmallow and continue to stir until well melted and smooth. Pour the mixture into the foiled pan and let it sit for 2-3 hours until completely cooled. Do so at room temp. Do not rush the cooling process. Once cooled, pull out the foil from the pan, cut into squares and enjoy. Happy Thanksgiving! Until next time, ciao my friends!

Lions Club 2019 Poinsettia Sale is Underway! The Wolfeboro Lions Club’s popular annual Poinsettia Sale is offering some beautiful plants for the holiday season. The Club is using the same NH supplier that has consistently delivered superior poinsettias, drawing rave reviews. The poinsettias come in three colors: red, white, or pink and in three sizes: six-inch, eight-inch and 10-inch. The six-inch plant is only $12, the eightinch plant is $24, and the 10-inch plant is $36. Plants ordered by November 15 will be available for delivery by the Lions Club for commercial customers on November 19. Others whose orders are received by November 26 may pick up
