STRONGER TOGETHER Ferraro Foods Announces Partnership with C & F Foods C & F Foods Co., Inc. was originally founded as C & F Dairy in 1958 by Clement Vicari Sr. and Frank DeBenedittis. They learned the art of making fresh Italian cheeses from spending their teenage years working in a small Italian deli and latticini named DeBenedittis Bros. in East New York, Brooklyn. After serving in the U.S. Army during WWII they returned to their jobs at the deli. They began to see an opportunity to supply the growing pizza and Italian restaurant trade with the mozzarella and ricotta they were making at DeBenedittis Bros. They started making deliveries to pizzerias and restaurants. In 1958 they incorporated and C&F Dairy Inc. was born. They began working out of small walk-in refrigerators built in their garages. Soon after they moved into a small store front in East New York. In order to accommodate their growing business they bought their first warehouse in Queens, NY which was later expanded to a 5000 sq. ft. facility. It was in this building that the Papa Moozzi brand came to life. In 1980 Clement became the sole owner of the business. Clement Sr.’s son Clement Jr. had already been working for the company. In 1981 his other son Anthony joined his brother and father at C & F. By 1987 it became obvious that they have outgrown their warehouse in Queens. A year later they moved into their present day 25,000 sq. ft. home in Syosset, NY. With their product line now expanding beyond dairy items the company’s name was changed to C & F Foods Co., Inc. Along with a dedicated staff of longtime employees the Vicarai family and the iconic Papa Moozzi brand have always worked hard to provide their customers with the best quality products, dependable service and value. “We are very excited to start the next chapter of C & F’s long heritage of supporting independent pizzerias, restaurants and food retailers throughout Long Island. This combination will enhance C&F’s ability to meet the growing needs of their customers with a wider array of products and offerings, while continuing to provide the same quality service and personal attention they have come to expect from C & F,” said Michael Giammarino, CEO of Ferraro Foods.

STARTING A SAFETY PROGRAM E
ach year, more than 4 million workers suffer serious jobrelated injuries or illnesses. These incidents don't just hurt workers and their families, but can hurt businesses in a variety of ways. Companies spend $1 billion per week on workers' compensation, which is money that could be better invested in growing small businesses, creating jobs, and keeping workers safe on the job. Setting up a safety and health program can be overwhelming but should be a priority. Safety and health programs impact small-businesses and medium-sized businesses in three important ways: •
Improve safety and health performance

Save money through reduced accident costs and insurance premiums

Improve competitiveness in their industry
Over 30 years ago, OSHA released the “Guidelines for Safety and Health Programs” document. Recently they have given the entire document an overhaul that takes into account all the changes workplaces have seen in the last three decades. OSHA’s “Recommended Practices for Safety and Health Programs” is a free downloadable document, but OSHA has really made it as easy by providing an interactive website. Establishing a safety and health program in your workplace is one of the most effective ways of protecting your most valuable asset: your workers. Losing workers to injury or illness can cause significant disruption and cost—to you as well as the workers and their families. It can also damage workplace morale, productivity, turnover, and your company’s reputation. The recommended guidelines for establishing and maintaining a safety and health program may be implemented in any workplace, but are particularly helpful for small and medium-sized workplaces. The guidelines are general enough that they can be applied in any workplace from restaurants, distribution, manufacturing, healthcare or even an office-based work environment. The concept of continuous improvement is central to the recommended practices. As with any journey, the first step is often the most challenging. The idea is to begin with a

basic program and grow from there. By initially focusing on achieving modest goals, monitoring performance, and evaluating outcomes, you can help your workplace progress, over time, along the path to higher levels of safety and health. Each action item is an example of steps that employers and workers can take to establish, implement, maintain, and improve your safety and health program. One size does not fit all! The process described in the recommended practices can, and should, be tailored to the needs of each workplace. Likewise, your safety and health program can and should evolve. Experimentation, evaluation, and program modification are all part of the process. You may also experience setbacks from time to time. What is important is that you learn from setbacks, remain committed to finding out what works best for you and your organization, and continue to try different approaches. Injuries and illnesses occur in all types of workplace settings. Workers can even be injured or become ill outside physical facilities, such as when driving a vehicle as part of a delivery or service job. The preventive approaches described in the recommended practices works equally well across all sectors of the economy; for all different kinds of hazards; in both mobile and fixed work environments; and for small, medium-sized, and even large scale organizations. Small employers may find that they can best accomplish the actions outlined in the recommended practices using procedures communicated through informal meetings such as monthly safety or weekly safety e-mails, tailgate safety topics, or toolbox talks. Adding regular safety meetings to your company’s safety and health program is guaranteed to improve workplace safety, boost team morale, lower insurance premiums, strengthen safety compliance and lower the risk of safety violations. Holding regular safety meetings with your crews, teams and staff is also the best way to ensure that your company is off to a great start meeting and exceeding OSHA’s compliance standards. In season: April - June Asparagus is extremely versatile and can be prepared in a variety of ways, from sautéed to steamed and grilled to roasted. These crisp and sweet stalks are sure to be a springtime favorite.
What to make: Asparagus can be so much more than a side.Try a springtime quiche with asparagus, mushrooms and mozzarella.

In season: May - September Also called rocket, arugula is a peppery, nutty-tasting member of the mustard family. This versatile leafy green can be served raw, but is just as often used in cooked dishes. We love it ground into pesto, tossed with lemon and shaved parmesan as a pizza topping, or simply sautéed with garlic and olive oil.
In season: April - June While spinach is available year-round, it’s especially flavorful in spring and summer, when the vibrant green leaves are delightfully delicate and tender. Served raw in salads, spinach boasts a sweet, slightly bitter taste. But the leafy green, celebrated for its high iron, calcium and vitamin content, takes on a more complex, mildly acidic, flavor when cooked.
What to make: Grilled Pizza with Peaches, Prosciutto, and Arugula What to make: Spring Minestrone with leeks, fennel, sugar snap peas, and English peas, this soup is perfect for ushering in spring.
strawberries In season: May - June One of the most popular berries, strawberries are an excellent source of vitamin C, and are heavenly in both sweet and savory dishes. The berries are frequently eaten fresh, either out of hand, as part of a mixed fruit salad, topping a dessert like a fruit tart or cake, or in a savory salad. They can also be cooked into jams and compotes or baked into cakes and breads. What to make: Strawberry Spinach Salad Start with a tangy and lightly sweet strawberry vinaigrette salad dressing. Mix spinach, strawberries, and thin sliced red onion.Top it off with chopped pecans and a bit of salty feta, and you’ve got one extremely delicious side salad.
Scallions In season: May - September A distinct and milder variety of the common onion, scallions are available year-round, but are at their peak in spring and summer. While many types of immature onions are often referred to as scallions, true scallions will tend to have straight sides where the stem meets the root, rather than the curved beginnings of a bulb. Both the green and white parts of the scallion are edible; chop them and add them to stir-fries, or use them to top salads or soups. What to make: Fettuccine with Corn Crema and Charred Scallions
fava beans In season: May - June These large, flat legumes, which resemble lima beans, grow in pods that are usually discarded unless the beans are especially young. They are in season in the spring, but you can find them well into the summer in cooler climates. Pistachio Crusted Rack of Lamb Directions:
1. Position a rack in the center of the oven and preheat oven to 400 F.
Ingredients
For the Lamb:
2. If there’s more than a thin layer of fat on the rack, use a sharp knife to trim, leaving a thin layer.
2 (1 1/2 pound) racks of lamb (trimmed or Frenched)
3. Season the lamb generously with salt and pepper. Sprinkle the dried herbs over the lamb and gently press to adhere.
Kosher salt (to taste)
4. In a large, heavy skillet, heat the vegetable oil over medium-high heat. Brown the lamb racks, one at a time, for about 2 minutes per side, or until nicely browned. 5. Arrange the racks, bone side down, in a roasting pan. Use a spoon to spread the Dijon mustard over the surface of the lamb. Spread some over the sides and ends, but most of the mustard should remain on the top surface. 6. In a small bowl, combine the pistachios, breadcrumbs, melted butter, olive oil, and salt and pepper to taste. 7. Sprinkle half of the mixture over each rack of lamb. Once evenly distributed, press gently with your fingers to make sure it adheres to the mustard. 8. Roast the lamb for 18 to 25 minutes, or until a meat thermometer registers 120 F to 125 F for rare or 130 to 135 F for medium-rare. 9. Remove the lamb from the oven, tent with foil, and let rest for 10 minutes. 10. To serve, carve the racks between the bones to cut into chops.

Ingredients
1. Cut goat cheese into 8-10 discs. Set aside.
8 oz goat cheese
2. Heat a small pan to medium heat and melt your butter.
1/2 cup pecans
3. Once butter starts to bubble, add your pecans, brown sugar, and salt.
1/2 tbsp unsalted butter
4. Cook for 5 minutes, stirring often to prevent sugar from burning, and pour over a large sheet of parchment paper in a thin layer. Allow to cool for several minutes until the candy coating hardens.
2 tbsp brown sugar
5. Fold the parchment paper in half, trapping the cooled pecans, and crush with hard object of choice and then roughly chop with a knife until minced. 6. Finely chop cranberries and add to the pecans.
Pinch of salt 1/4-1/2 cup dried cranberries 1/4 tsp ground cinnamon 1 Tbsp fresh chopped parsley
7. Combine pecans, cranberries, and parsley on a plate or cutting board. Mix well. 8. Take a goat cheese disc and press into the pecan coating on each side, then roll into a ball. Coat again as needed by rolling the completed ball in the mixture once more and transferring to an appetizer plate. Repeat for each disc until you have a perfect plate of goat cheese balls.

Flavor Combinations Making a meal shouldn’t be complicated, and with these perfect food pairings you’ll discover how easy it is to turn a few basic ingredients into amazing soups, salads, sandwiches, and more.
Browned Butter + Sage + Squash/Pumpkin/Yams Side: Cube squash, pumpkin, or
Tomato + Basil + Mozzarella
Salad: Layer 1/4-inch slices of tomato with 1/4-inch slices of bufala mozzarella and chiffonade basil. Drizzle with olive oil and balsamic vinegar, and sprinkle with kosher salt and freshly cracked pepper. Sandwich: Layer the same ingredients from above between 2 slices of crusty sourdough bread. Drizzle bread with a little olive oil and cook in a sautĂŠ pan over medium heat, pressing down, until golden brown. Flip and press down again.
yams. Season with salt, pepper, and oil, and roast until caramelized. Melt butter in a small pot over medium heat, add sage, and cook until butter is golden brown and smelling nutty. Immediately pour brown butter and crispy sage over roasted vegetables.
Salad: Take the side from above
and combine it with equal parts quinoa or farro, half as much arugula, and some chopped pecans. For a fresh pop of flavor, add pomegranate seeds.
Balsamic Vinegar + Black Pepper + Strawberries
Dessert: Hull and slice
strawberries, and top with a drizzle of balsamic vinegar and a sprinkle of black pepper. (Add a little sugar if strawberries are naturally tart.) Let sit for about 15 minutes until quite juicy. Serve over Greek yogurt, ice cream, or panna cotta.
Sauce: Prepare strawberries as for
the dessert above. Cook in a pot over medium heat until a thin syrup forms. Let cool and use (strained or unstrained) as desired, or try as the base of barbecue sauce for a sweet and piquant twist.
Beets + Creamy Cheese + Balsamic Vinegar
Salad: Wash, dry, and remove greens from beets. Coat in olive oil,
season with salt and pepper, wrap in foil, and roast in a baking pan at 400 degrees for about 45 minutes until fork-tender. Let cool, then peel off skin. Thinly peel and then shave a second set of fresh beets crosswise into circles. Combine fresh and roasted beets with mint, goat cheese, and balsamic vinaigrette.
Side: Serve roasted beets from above mounded over burrata or
ricotta cheese with balsamic drizzled on top. Garnish with walnuts for a bit of texture.

Citrus + Arugula + Fennel
Sandwich: Roast thinly sliced
fennel until caramelized. Sandwich between 2 slices toasted sourdough with roasted chicken or fish marinated in the citrus vinaigrette from above, arugula, and a touch of olive oil.
Spinach + Pine Nuts + Parmigiano
Side: Toast pine nuts and set aside. Heat a little olive oil in a sauté pan and add a little minced garlic and lots of spinach. Sauté until spinach is completely wilted and excess liquid has mostly cooked off; season with salt and pepper. Add grated Parmigiano and stir to combine. Serve hot.
Onion + Corn + Cilantro
Pizza: Preheat oven at top temperature with a pizza stone in the center for at least 1 hour. Roll out dough, rub with olive oil, and top with feta and mozzarella cheese. Add sautéed corn and onion. Bake for about 10 minutes until pizza is bubbly on top and dark on bottom. Sprinkle with finely chopped cilantro.
Walnuts + Honey + Cheese Pizza: Preheat oven at top
temperature. Make walnut pesto by combining walnuts, milk, Parmigiano, garlic, and a touch of nutmeg in a food processor until creamy. Roll out dough, rub with olive oil, and spread with 2 to 3 tablespoons walnut pesto. Top with Taleggio or another gooey, slightly strong cheese. Bake for about 10 minutes until pizza is bubbly on top and dark on bottom. Drizzle with honey.
Garlic + Chili + Tomato + Lemon
Pizza: Preheat oven at top
temperature Roll out dough, rub with olive oil, spread a little minced garlic on top, and layer with shredded mozzarella. Top with thinly sliced tomato, thinly sliced chilies, small peeled and deveined raw shrimp, if desired. Bake for about 10 minutes until pizza is bubbly on top and dark on bottom. Squeeze lemon juice over top.
Carrots + Ginger + Cumin Soup: Peel carrots (halve if they’re
large), and coat in olive oil, grated ginger, and ground cumin. Season with a little salt and pepper. Roast at 425 degrees for 25 minutes. Then roughly chop. In a large pot, sauté 1 chopped onion, some minced garlic cloves, and chopped celery in olive oil until golden brown. Add a little extra cumin, salt, pepper, and some smoked paprika. Add roasted carrots, chicken stock, and some coconut milk. Purée and keep adding liquid until soup reaches desired consistency.

History:
Maurizio Piccolo was born in Milazzo, Sicily. His family immigrated to Brooklyn, New York when Maurizio was 7 years of age. Maurizio never lost his Italian heritage and to this day uses both the Italian and English language. As a young teen Maurizio worked in a family owned pizza shop and learned how to make his very first pizza as well as learning the pizzeria/restaurant trade. He had dreams of opening up his own pizzeria and at the age of 18 opened up his first shop in North Jersey. After quite a few years he decided to broaden his education and horizons and worked in the telecommunications industry in Manhattan for 11 years. At this time he still worked nights moonlighting as a pizza man not to lose what he truly loved to do most. He always knew he would once again open up another pizzeria/restaurant. While working in Manhattan he met the love of his life, Diane, born and raised in New York, who coincidentally had also worked all her life in the pizza business. From the age of 15 through her college years she worked 6 days a week after her studies learning and loving what she too had dreamed one day to do...open up her own pizzeria/ restaurant.

In 2002, Diane and Maurizio were married and in 2003 after putting their family recipes together along with their knowledge of the trade opened their very 1st Maurizio's Pizzeria & Italian Grille, located in Neptune, New Jersey. After much hard work and determination success followed the twosome who went on to win the Culinary Classics of Ocean
and Monmouth County for best appetizer and entrée. In 2006 Diane and Maurizio opened up their Mays Landing location where they continued to make great pizza and Italian delights winning best pizza of Atlantic County 4 years in a row. Maurizio’s also has their own line of jarred sauces which include classic Tomato Basil, Marinara, Vodka Sauce and Fra Diavolo. Maurizio and Diane always take pride in family and good food. They feel their success is not only due to the delicious pizza and food they produce but because they treat each and every customer as if they were family. On the subject of family, Diane and Maurizio were happy to welcome Giuseppe Pugliese and Domenico Costigliola to the Maurizio's family in 2015. Giuseppe works tirelessly to make Maurizio's grow to new heights with his innovative ideas and dedication to growing with the times. Domenico brought his great efforts and ideas to their southern New Jersey location. Together, Maurizio's Pizzeria & Italian Grille has continued to thrive. They are happy to announce that together they recently opened up a third location in Egg Harbor Township in January of 2020.
