Welcome... To our eleventh issue of The Last Bite! You may have already noticed a different cover theme than our past two summer issues. While we would have loved to plaster the front of this magazine with bright and beautiful produce we wanted to take this opportunity to draw attention to some exciting Ferraro news: We’ve Expanded. Since issue ten was released we’ve completed not one, but two major expansions. First, we announced a strategic combination with Napoli Foods. Napoli, a specialty food service importer and distributor based in Cheshire Connecticut, shares in Ferraro’s mission to provide the finest foods possible at the lowest cost, along with unparalleled customer service. You can read more about this alliance on page 4. At the end of June 2019 we opened our fourth distribution facility in Aberdeen, Maryland. In addition to providing new market focused items and suppliers, the opening of this center will help us cater to our independent pizzeria owners and operators in the Mid-Atlantic region. You can read more about the opening on page 5. Our customer reach isn’t the only thing that has expanded, our item list has also! Read through this issue to find some great new items, including additions to our fresh seafood program (page 14). Of course, this being our summer issue we have to highlight the great Garden State and its Jersey Fresh Produce (page 8). Today, Ferraro’s state of the art fleet has grown to over 250 tractor trailers which span the eastern United States. The Blueberry Capital The days are warmer, longer and brighter. If you’re not barbecuing on the weekends then you are headed to the shore. This can only mean one thing; it’s summer time in New Jersey. Another tell tale sign that we’re in the middle of another New Jersey summer; the abundance of Jersey Fresh Produce. As summer heats up, so does the sweetness of New Jersey — with many vegetables and herbs but especially with the supply peak of its blueberries and peaches. Hammonton, NJ is widely referred to as the “blueberry capital of the world”. They even have a festival dedicated to the fruit every summer. 80% of New Jersey’s blueberries come from Atlantic County’s 56 farms which are all located directly in or around Hammonton. All Hammonton farmers will give the same answer when they are asked what makes this area such a prime location to grow blueberries: the soil, the weather and the geographic location. New Jersey’s Outer Coastal Plain makes up nearly all of southern New Jersey. Its soils are more fine, sandy and acidic compared to regions to the north due to its relatively young geographic age. These soil conditions allow the berries to thrive. Elizabeth Coleman White was credited with developing and marketing the first cultivated highbush blueberry plant with the help of an United States Department of Agriculture botanist named Frederick Coville. Thanks to White and Coville, paired with a geographic location in between multiple metropolitan areas and a hot and humid climate perfect for the fruit, New Jersey’s blueberry industry has continued to flourish. But is Hammonton truly the blueberry capital of the world? It’s hard to say. Cherryfield, Maine and South Haven, Michigan claim to be the blueberry capitals of the world also. Big blueberry states like Michigan, Oregon, Georgia and Washington are often process-oriented where as New Jersey farms are all about fresh berries. While Hammonton may not be producing more blueberries than any other town in the country they very well may be the “fresh blueberry capital of the world,” but that doesn’t have as nice of a ring to it. Blueberries were the No. 1 crop in New Jersey for 2017 with a production value of almost $84 million. New Jersey annually ranks in the top six in the U.S. in the production of blueberries. Farmers in the Garden State harvested 43.4 million pounds of blueberries on 10,000 acres last year.

Jersey peaches Growing peaches in New Jersey is nothing new. Colonists began importing peaches from Europe in the 1600s. They soon learned that fruit thrives better in the coastal areas of the U.S. than it does in Europe. By 1680, peaches were grown in abundance with extensive orchards from Trenton to New Brunswick. The area of production spread north to Morris County and around Hackettstown. The peach was the first fruit to receive attention commercially and it is reported in 1683 that peaches were available in New York by the wagon loads from New Jersey Orchards. Today, New Jersey ranks 4th nationally in peach production, after California, South Carolina and Georgia. The fresh peach season is from late June to September. These hand picked peaches are shipped all over the eastern United States and Canada. To be labeled “Jersey Fresh,” peaches must be US Extra No. 1 grade, sized at least 2.25” diameter.
Why Jersey Fresh? 1. Locally grown food tastes better Produce harvested locally and more recently is fresher and has better flavor than produce that travels across the country. 2. Local produce is better for you Studies show that fresh produce loses nutrients quickly. Locally grown food, purchased soon after harvest, retains its nutrients. 3. Eating local is better for the environment When your food doesn’t travel long distances, you’re promoting better air quality and reducing pollution. 4. Local food supports local farm families When you buy local, you support family owned farms and as a result those families can afford to stay on the farm, doing the work they love. 5. Local food preserves open space Open farming lands will survive only as long as farms are financially viable. When you buy locally grown food, you are doing something proactive about preserving the agricultural landscape.
Roasted peach lemonade Ingredients
Instructions
3 medium Jersey Fresh peaches, pitted and sliced in half
1. Preheat oven to 400.
1 TB sugar 4 cups lemonade, homemade or store bought lemon, cut into slices for garnish
2. Place peach halves skin side down on a baking sheet and sprinkle with sugar. Roast for 25 minutes. Remove skins. 5. Add peaches and enough lemonade to cover into a blender. Puree until foamy. 6. Pour pureed mixture into a pitcher. Top with rest of the lemonade. Chill completely. 7. Stir before pouring over ice. Garnish with lemon slice.

How To Choose the Best Fish for Grilling The best fish fillets or steaks for grilling are at least 1-inch thick. The fish should appear unblemished, the flesh firm, and the smell fresh and briny like the sea. If you can, grill fish the same day you buy it. And always keep fish cold and in the fridge before grilling.
Quick Tips for Grilling Fish When fish cooks on a grill, it loses moisture fast -- faster than most meats. And over an open grill, the juice drips straight onto sizzling coals. To preserve moisture, coat the fish with oil, which will seal some of the moisture inside. And follow these steps: • Designate a cool area on the grill. Pile hot coals on just one side of the grill. • Start with clean grill grates.
• Use tongs to rub the grate with a cloth or paper towel coated with vegetable oil. • For firm fleshed fish like salmon, halibut, and tuna steaks: brush the fish with vegetable oil and season with salt.

• Most fish can grill directly on the grate, at high heat.
• Flip as soon as the fish is cooked at least ½ way through.
• For every 1-inch of thickness, expect about 10 minutes of cooking time (over medium-hot coals).
• Wrap thin fillets or delicate fish in cornhusks, banana leaves, grape leaves, or aluminum foil -- or place the fish on top of the foil. Place parchment paper between fish and foil to help prevent sticking.
Cook salmon skin-side down, without disturbing it for 3 to 5 minutes. Then gently turn it over with a wide metal spatula. It’s done when it easily flakes apart with a fork.

Grilled Scallops with Nori, Ginger, and Lime Instructions
Ingredients •
1/3 cup mayonnaise
•
2 tsp. fresh lime juice
•
Kosher salt
•
1 toasted nori sheet
•
1 tsp. ground coriander
•
1/2 tsp. ground ginger
•
2 Tbsp. vegetable oil, plus more for grill
•
12 large dry sea scallops, side muscles removed, patted dry
•
1/2 lime
•
3 scallions, dark green parts only, very thinly sliced
•
1 tsp. Aleppo-style or other mild red pepper flakes or gochugaru (coarse Korean red pepper powder)

Prepare a grill for medium-high heat. Mix mayonnaise, lime juice, a pinch of salt, and 1 Tbsp. water in a small bowl; set lime mayo aside.

Finely grind nori in spice mill. Transfer half to a small bowl; set aside for serving. Transfer remaining nori to a large bowl and mix in coriander, ginger, and 2 Tbsp. oil. Add scallops and toss to coat.

Thread 3 scallops onto 2 skewers. (This will keep scallops in place and make them easy to turn. You can also use this method for shrimp and small peppers like shishito and Padrón.) Repeat with remaining scallops and skewers. Season both sides with salt.

Clean and oil grate, then immediately place scallops on the outside edge of the grill so that the skewers are hanging off the side. Grill, turning scallops with handles of skewers, until grill marks appear and scallops are just cooked through, about 3 minutes per side, depending on their size.

Spread lime mayo on a platter and place skewers with scallops on top. Finely grate zest from lime half over, then squeeze juice over. Top with scallions and sprinkle with Aleppo-style pepper and reserved nori.
Grilled Salmon with Pineapple Salsa Instructions

Make sauce: In a large bowl, whisk together juice of 2 limes, olive oil and honey.

Heat grill to high. Add salmon, brushing with honey-lime sauce, and grill until cooked through, 5 to 6 minutes per side.

Meanwhile, make pineapple salsa: In a medium bowl, combine pineapple, onion, remaining lime juice and cilantro and season with salt and pepper.

Serve salmon warm with salsa.

D’Agostino cannoli shells are carefully hand crafted from all natural ingredients. My name is Jeff Haas and I am the Safety Manager at Ferraro Foods, I sign every e-mail with the statement above, never truer words were spoken. I come to work every day with one goal in mind, that goal is to make sure that every employee comes to work safely, works the entire day safely and then returns home safely. If this happens every day, I have done my job, if not I need to learn from whatever happened, find a solution to the issue and make sure that the issue never happens again. Think for a moment about your best employee, you know the one where he/she comes to work every day, is never late, will stay past their scheduled time, will even come in early when you call them or maybe even work on their day off. Now think what the impact to your business would be if this employee were to be injured, maybe they twisted their knee or ankle, or strained this wrist or even worse broke their arm and will now be out of work for 6 to 8 weeks. Your busy season is just about to start; the monetary effects on your business could be devastating. Could you have prevented the accident, the answer is probably yes, it may have been some simple training or making sure that whatever was spilled on the floor was immediately cleaned up rather than waiting to “Do It Later� because we are busy. The cost of just one

In a medium sized bowl, mix the veal, chopped mushrooms, bread crumbs, garlic powder, onion powder, salt, black pepper and chopped parsley.

Form the meat mixture in 6 sliders, about 3 oz. per patty.

To make the topping, heat canola oil in a medium sauté pan. Add the sliced onion and stir until they brown, about 2-3 minutes. Add the mushrooms salt and pepper and continue to brown this mixture until completely caramelized, about 10-15 minutes. Add chopped parsley and stir. Reserve warm.

Grill each slider for 2-3 minutes each side, add the Gouda cheese to the slider, after you flip the slider and allow the cheese to melt while cooking on the other side. Cook the slider until it has reached a final internal temperature of 160°F.

Serve on toasted potato rolls and top with 2 Tbsp. of caramelized onions/mushroom mixture.

Always looking an opportunity, we partnered with Anthony Sottasante to expand the Parma chain (2006) we then developed our private food label “Fig Leaf Foods” to control costs and quality for our units. Anthony was and still is an instrumental part of our growth in the YorkLancaster markets. In all we have opened over 70 locations to date with more on the horizon. We have most recently grown the very successful Mama’s pizza chain in the greater Reading PA area, with help from partners Ramon Collado and Brent Sharp. The culmination of our whole teams’ efforts is to launch our second franchise “Mamas Famous Pizza and Grill” in 2020 and we expect 100 units in 10 years. Most Popular Item on the Menu: PIZZA! Pizza is one of the most popular foods in the world! Today it’s all about convenience. Parents (our biggest customer) both work and the kids are on the run. It’s easy to grab a few pizzas or have them delivered. Pizza is baked not fried, has 3 of the 4 food groups, I’ve heard it considered a Typical Counter Display health food, and where can you feed a family of 4 for $13.00?! Picky eaters, diets, new trends, bad economy - we always thrive and always will. Philly cheese steaks, hoagies, salads and sides are also always popular and easy too! INGREDIENTS • 1 red tomato, cut into 8 wedges • 2 roasted garlic naan breads
DIRECTIONS 1. Heat a stainless steel pan over medium-high heat large enough to accommodate the tomato wedges side by side.
• 1 package (150 g) sliced white ham
2. Pour in a good slug of olive oil and fry tomatoes just until they start to pale at the edges. Remove from pan and set aside on a plate.
• 2 artichokes marinated in oil, cut into 4

BUSINESS NAME: Alfredo Pizza LOCATION: 397 Baltimore Rd, Shippensburg, PA 17257 NAME OF PERSON INTERVIEWED: Sal Mannino WEBSITE: www.alfredopizza.net HISTORY: Owner of Alfredo Pizza, Sal Mannino, started in the restaurant bussines at the young age of 18. He opened his first location in Hanover, PA. He purchased a business that had recently shut down after cycling through many different owners, none of which lasted very long. His friends and family were doubtful of his sucess due to his young age and the turnover rate at that location but Sal rose to the challenge and within 18 months he turned the business into a thriving establishment. It grew so quickly in fact Sal needed to enlist the help of his family. He employed his brother, mother and father to help run the business. Proving everyone’s doubts to be wrong was no easy feat. It took a lot of hard work and dedication. Sal worked 7 days a week for over 3 and a half years. He worked on holidays, weekends and missed out on family events over the years to ensure the success of his business. In 2003 Sal met his wife and moved to Shippensburg, PA. Two years later, in 2005, they purchased Alfredo Pizza. WHAT IS THE MOST POPULAR ITEM ON THE MENU? Alfredo’s has a large menu of many very popular items. A few of the favorites are cheesesteaks, chicken parmesan dinners, and sea food dinners. If an item ISN’T popular it doesn’t stay on the menu too long! WHAT IS ALFREDO’S KEY TO SUCCESS?: Quality. When you go out to eat you usually have a choice of quality, quantity or price. Sal gives his customers all three. The best quality, high quanitity and all at the best price. Sal stated, “If you’re not serving your customer quality products then it makes your job alot harder. You have to make up for it with added ingredients and quanitity. I start with high quality meats, cheeses and sauces. Anyone can make up a slogan and call their food high quality, but you can’t trick taste buds, people can tell”. That’s why Sal’s customers come back time and time again. At Alfredo’s every customer is treated like a new friend and everyone is considered a part of the family. Sal’s Grandma always said “There are no strangers at the dinner table”. Sal and the Alfredo’s staff truly cares about every customer’s satisfaction. It makes all the long, hard days of work worth it when they hear customers say it was “the best meal they’ve ever had” or even better, when a patron compares Alfredo’s food to that of their grandmother’s cooking. It’s the little compliments that make it all worth it. WHY WORK WITH FERRARO?: Sal started working with Ferraro back when he was a teenager. He wanted a company that was familar with the Italian recipes.
