Welcome... To our sixteenth edition of The Last Bite! To say this has been a crazy year would be an understatement. We hope everyone is healthy and starting to bounce back from what has been a very difficult year, mentally, emotionally and certainly financially. As always Ferraro is here to help our customers in anyway possible. Let’s make this holiday season one for the books! Ferraro recently expanded its lamb and veal offerings. We specifically chose products that are easy to prepare in case you’re working with a reduced staff or busy from the holiday rush. Also, you’ll find the new lamb and veal products to be a very profitable addition to your menu. Learn more about our new lamb and veal products on page 38 and don’t hesitate to ask your sales representative about how adding lamb and veal to your menu can increase your profits. In this issue you’ll also find some highlighted customers. These are just a few of the many that fought tooth and nail to keep their businesses open and servicing their communities during COVID-19. Match product description with label description. Build pallet according to customer guidelines. Maintain production standards, while minimizing errors. Renato “Ray” has proven to be a durable and reliable employee for the Napoli OpCo. Ray is listed as a selector on the day shift with special concentration to take care of walk in picking orders for our cash/carry customers. That’s not all of what Ray does. He is actively involved in our on-board orientation procedures as a picker trainer. During the height of the Covid pandemic Ray was willing to work double shifts in order to cover absences during that period. Personally he has three kids, he is a very involved father, and he recently moved himself during the busy work period.

Navigating RF based computer system to scan pallets to proper warehouse locations. • Replenishing picking locations as needed throughout the course of the day to ensure freezer product is available to be selected by night shift order pickers. • Maintaining proper date rotation of freezer products to ensure FIFO level of inventory. • Maintaining level of organization within assigned aisles so that all product is kept in proper locations to minimize mispicks by selectors. • Reporting all damaged freezer product to immediate supervisor. John’s title is Freezer Operator but he is also responsible for all operations on the dock. John can always be counted on to cover routes or extra stops when needed.

History: Current Calda owner, Chris, grew up in the pizzeria business. Chris’ parents migrated to the United State from Greece. They found work in a family member’s pizzeria, Frankie’s Pizza located in Harlem, NY. They went on to open the first Calda location in Hicksville, NY in 1972. Chris attended Hofstra University while working full time in the Hicksville location. When it was time for Chris’ parents to retire he rose to the challenge of taking over as owner, it was an opportunity he could not pass up. Chris became the owner of the Hicksville location in 2002, five years later in 2007 Chris decided to expand the business. He then opened the Levittown location with the help of his partners Rigo and Joe who now run the Massapequa location that opened in 2014. Elvis is currently running the Hicksville location while Selvin is in charge of Levittown.

What is the most popular item on the menu?

Spinach & Artichoke pie

Plain cheese pizza is the most popular. Our Artichoke Pizza is also a favorite. In our Levittown location we offer both a keto friendly and a vegan menu.

How has your business adapted during the Covid-19 crisis? We offered curbside pickup and contactless delivery. We had our servers work as delivery drivers. We also sold pizza kits and family specials. We are very happy to have our customers back in our restaurants.

In what way do you give back to the community? Calda runs the “Calda Geek” program. They reward students that receive good grades with free pizza. What’s a better incentive to work hard than free pizza?!

Why work with Ferraro Foods? Calda was working with LaRosa Brothers previously. We love our sales rep Angelo LaRosa he has always gone above and beyond for us. Ferraro Foods has made the transition seamless after LaRosa merged with Ferraro.

Beef & Pork Cooked Italian Meatballs Meatball Sliders

Serves: 4 Cook Time: 20-25 minutes Ingredients: 8 - 2 oz Domenico Vitale Meatballs (Item# 4010014) 24 oz Favorite Marinara Sauce 8 Slider Rolls 4 Slices Mozzarella Cheese, Cut in Half

BBQ Bacon Wrapped Meatballs Serves: 9 Cook Time: 35-40 minutes

Cooking instructions:

Ingredients: 36 - 1.5 oz Domenico Vitale Meatballs (Item# 4010004) 12 Bacon Strips 1 Bottle of Honey BBQ Sauce Skewers or Toothpicks

Preheat the oven to 400°. Thaw meatballs in the microwave for 2 minutes. Cut bacon in thirds to obtain approximately 3 - 3 ½ inch pieces per strip of bacon. Line a 17 x ll baking sheet with parchment paper. Wrap each meatball with 1/3 of a bacon slice, and secure with either a toothpick or a skewer. Place the wrapped meatballs on the parchment paper in a single layer and heat in the oven for 30 minutes, or until the bacon is cooked. Take the pan out of the oven and brush the meatballs with the honey BBQ sauce. Return the meatballs to the oven for an additional 5 minutes to caramelize the BBQ sauce.

Cooking instructions: Heat meatballs in sauce to 160°F. Place meatballs on bottom half of roll and top with cheese. Cover meatball with top half of roll and serve.

Directions: • Preheat your oven to 325 degrees. • In a large bowl, beat together the sugar, goat cheese and cream cheese using an electric hand mixer until very smooth and well combined. • Add the Greek yogurt, eggs, vanilla and cinnamon and beat until JUST combined. • Pour the cheesecake into the crust and smooth out evenly. Transfer to the middle rack of oven.

• Bake until the outside is set, and a small circle in the center is jiggly, about 55 mins to 1 hour. Turn the oven off and crack the door slightly, letting the cheesecake sit in the oven for 15 minutes. Then, transfer to the counter to cool completely. • Once cooled, cover and refrigerate for at least 8 hours, but best if overnight.

Directions for Apples: • Toss the sliced apples in lemon juice.

Pistachio Crusted Salmon with Glazed Carrots INGREDIENTS

DIRECTIONS

3 salmon fillets (4 oz each)

1. Preheat oven to 400F.

1/4 cup olive oil

3 tbsp maple syrup

2. Clean salmon and place on plate in fridge until ready to cook.

1/2 tsp chili powder or paprika

1/2 tbsp ginger root, grated

1 tsp garlic minced

1 tbsp apple cider vinegar

Sea salt and pepper

1 lb baby carrots

5. Brush half the maple ginger glaze over the carrots. Bake at 400F for 10 minutes. Remove from oven and toss with tongs.

Shallot

6. Turn oven temp up to 425F.

7. Place your cleaned salmon sheet pan. Add sliced peeled shallot and a few slices of lemon between the carrots and salmon.

Sea salt and pepper

1/2 cup ground pistachios

3. In a small bowl, whisk together olive oil, maple syrup, spices, ginger, garlic, balsamic vinegar and salt/pepper to taste. 4. Place carrots on sheet pan.

8. Squeeze the juice from other half of the lemon over salmon and vegetables. Sprinkle with dash of salt and pepper, then brush the rest of your glaze on top of salmon and carrots. 9. Place in oven for another 7 minutes. 10. Remove pan from oven and rub ground pistachios on top of the salmon fillets, coating evenly. 11. Place back in oven and broil for another 2-3 minutes or until salmon is cooked and vegetables are roasted, but no longer than 4 minutes.

INGREDIENTS 1 lb mild Italian sausage, casings removed 1/2 cup sliced pepperoni, divided 1/2 green bell pepper, diced 1/2 yellow onion, diced 4 cloves garlic, minced 24 oz marinara sauce 1/2 tsp dried oregano 1/4 tsp dried basil 3 cups water 1 lb dry, uncooked short cut pasta 2 cups mozzarella cheese, divided salt and pepper, to taste fresh minced parsley or basil, for garnish

INSTRUCTIONS 1. Cut 1/2 the pepperoni slices into 4 pieces, set aside. 2. Heat a deep pot over MED HIGH heat. Add drizzle of olive oil and brown Italian sausage, crumbling it with a wooden spoon or potato masher as it cooks, about 4-5 minutes. Drain excess grease and return to pan. 3. Add cut pepperoni pieces, diced onion, and diced green pepper, and cook until softened, about 3 minutes. Add garlic and cook another 30 seconds, or until fragrant. 4. Stir in marinara sauce, oregano and basil. Add water, stir and bring to a boil over HIGH heat. When boiling, add pasta, stir, reduce to a simmer, cover with lid and simmer about 12-15 minutes, until pasta is tender and most of the liquid is gone. 5. Stir in 1 cup of mozzarella cheese, remove from heat. Taste and add salt and pepper as needed. Sprinkle top with remaining mozzarella, and lay remaining slices of pepperoni on top. 6. Broil on HIGH for 1-3 minutes, until cheese is bubbly, melted and slightly golden. Serve garnished with minced parsley or basil.

In the vast culinary world of edible mushrooms, only one can be called king. What Italians affectionately call porcini (piglets) is the ruling class of mushrooms. The meat-like texture of porcini, along with their earthy and somewhat nutty flavor, is unequaled among mushrooms and lends itself to countless dishes. Porcini can be found the world over, however American consumers have yet to fully utilize them in all their forms, being mostly seen in the US dried.

Dried Porcini Mushrooms Dried porcini have a concentrated flavor and mushroom aroma that is excellent in risotto, soups, and sauces. To prepare dried porcini, cover them in boiling water and let them steep until they are reconstituted. After draining them, keep the steeping liquid. This liquid adds even more concentrated flavor to your recipe: just make sure you strain it first. When buying dried porcini look them over carefully. A bag of old, crumbly pieces and dust will be worthless. A strong mushroom aroma should greet you once opening the package: if the mushrooms have no smell, then they have no flavor either. Like fresh porcini, look over the package for signs of worms and do not buy them if there are pinholes in the mushrooms. How to Cook with Dried Porcini Mushrooms These dried mushrooms add a meaty richness and an earthy note to all kinds of dishes. Try them in both forms to get a huge umami punch. Whole Soften whole dried mushrooms in hot water for at least 15 minutes before adding to a dish. You can use the flavorful soaking liquid as all or part of a recipe’s cooking liquid (as for a mushroom risotto). Or add dried porcini to a pot of braised short ribs or lamb shanks. Ground Love the flavor of mushrooms but not the texture? Go with ground. Simply blitz dried porcini in a food mill until a fine powder forms. Dissolve into thicker soups and sauces to deepen flavor. The powder can also be sprinkled on steaks before searing or blended with spices and salt to make a dry rub for meats or full-flavored fish.


Porcini Mushrooms with Cream and Parmesan

This elegant sauce showcases the earthy flavor of dried porcini mushrooms in the simplest manner possible. The reconstituted mushrooms and their soaking liquid are cooked down into a sauce that concentrates their flavor. Yield: Serves 4

Ingredients 2 ounces Dried Porcini Mushrooms 3 tablespoons Unsalted Butter 1 Medium Onion, minced 1 teaspoon Salt 1/4 teaspoon Freshly Ground Black Pepper 1/4 cup Heavy Cream 1 pound Pasta 1/2 cup Freshly Grated Parmesan Cheese, plus more to taste

Preparation Instructions: 1. Bring 4 quarts of salted water to boil in a large pot for cooking the pasta. 2. Place the porcini mushrooms in a small bowl and cover them with 2 cups of hot water. Soak for 20 minutes. Carefully lift the mushrooms from the liquid and pick through them to remove any foreign debris. Chop the mushrooms. Strain the soaking liquid through a colander lined with paper towels. Reserve the porcini mushrooms and the strained soaking liquid separately. 3. Melt the butter in a large skillet. When the butter foams, add the onions and saute over medium heat until they are just beginning to brown around the edges, about 7 minutes. 4. Add the chopped porcini mushrooms, salt, and pepper to the pan and cook for 2 minutes. Add the porcini soaking liquid and simmer briskly until the liquid has been reduced by half, about 10 minutes. The sauce should no longer be soupy, but don't reduce the sauce so much that the pan becomes dry. 5. Stir the cream into the pan and simmer just until the sauce thickens, about 2 minutes. Taste for salt and pepper and adjust the seasonings if necessary. 6. While preparing the sauce, cook and drain the pasta. Toss the hot pasta with the mushroom sauce and 1/2 cup grated Parmesan. Mix well and transfer portions to warm pasta bowls. Serve immediately with more grated cheese.

Barbecued Veal Short Ribs Servings: 10 Cook Time: 4 hrs. Prep Time: 30 mins. Ingredients: 10 pounds veal short ribs item# 4000562

1 diced sweet yellow onion 2 tablespoons minced garlic 3 tablespoons olive oil 12 ounces beer 1/2 cup guava nectar

Preparation:

1/2 tablespoon hickory liquid smoke

1. Preheat oven to 300°.

1/4 cup crushed tomatoes 1 whole canned chipotle pepper, with 1 tablespoon adobo sauce from can 1/4 cup distilled white vinegar 1 tablespoon ground cumin 1/4 cup molasses 1/3 cup guava jelly, or 1/4 cup guava paste Salt and pepper

2. Generously salt and pepper ribs. Lay ribs in a single layer, in roasting pan. Cook for 3 hours, turning once midway through cooking time. Remove from oven and cool slightly. Pour off any fat from bottom of pan. When meat is cool enough to handle, cut into individual ribs. 3. While ribs are cooking, sautĂŠ onion and garlic in olive oil in large stockpot, until soft. Add remaining ingredients, except molasses and guava paste/jelly and bring to a boil. Reduce heat and simmer, stirring occasionally, reducing liquid by half, approximately 1 hour. Sauce should be thick, but still loose enough to pour. 4. Add molasses and guava to sauce and continue reducing for 10 to 15 minutes until thick enough to coat the back of a spoon. If sauce becomes too thick, thin with extra guava nectar and/or beer. Season with salt and pepper. 5. Coat ribs generously with sauce. Continue cooking ribs for 1 hour more, or until rib meat is tender and easily pulled from bone. Sauce will thicken and darken on ribs, so turn darker ribs over. Before serving, brush ribs with additional sauce. Serve extra sauce on the side.

Lemon-Braised Lamb Shanks Servings: 4 Ingredients: 4 lamb hind shanks, approximately 3 pounds item# 4000563 1 tablespoon olive oil 3 cups sliced onions 1/3 cup garlic cloves 3 tablespoons fresh lemon thyme leaves, or 1 tablespoon dry thyme 1 teaspoon toasted, crushed cumin seeds 1 1/4 cups Riesling wine 3 cups lamb or veal stock 1 lemon, juice and zest 1 teaspoon ground black pepper 4 cups Lemon-Spinach Fettuccine 1/4 cup chopped fresh chives Lemon-Spinach Fettuccine (makes approximately 4 cups) 1 quart cooked fettuccine 1 quart baby spinach or arugula 1 1/2 tablespoons lemon olive oil or plain olive oil

Preparation: 1. In a large, heavy, deep lidded pot, heat oil over medium-high heat; add shanks in batches and brown on all sides. Remove shanks; hold. 2. Add onions and garlic to pan; continue to cook, stirring often, until slightly caramelized, about 6 minutes. Mix in thyme and cumin; continue cooking 2 minutes. 3. Add wine and bring to a boil; reduce mixture by half. Stir in stock, lemon juice and pepper; bring to a boil. 4. Return browned shanks to pot in an even layer; cover and simmer over very low heat 3 hours or until very tender. 5. Remove shanks from braising liquid, keep covered and warm. 6. Chill pot with braising liquid. Remove layer of fat from top of cooking liquid and discard. Return pot to stovetop and bring to a boil; reduce mixture by half. Adjust seasonings. Stir in lemon zest; keep warm. 7. Cook fettuccine according to package directions. 8. In a bowl, toss together hot fettuccine, spinach, oil, lemon zest, and pepper until mixed. Cover; keep warm. 9. To serve, mound 1 cup of Lemon-Spinach Fettuccine in plate or bowl and top with 1 hot lamb shank. Ladle 1/2 cup braising liquid over top and sprinkle top with 1 tablespoon chives.

They are all very good but our signature dishes are our veal offerings, we use only the very best veal, enhanced with our house made sauces, finished to perfection. Our signature veal entree is our 32 oz Stuffed Veal Chop, stuffed with amazing cheeses and other secret ingredients. Adriana’s is also well known for its pasta dishes especially the dishes finished in a Parmigiano-Reggiano Bowl. Another popular dish is the John Dory Seafood Delicacy. When visiting Antonio’s, you need to taste their signature homemade paninis.

How has your business adapted during the COVID-19 crisis?

The safety of our customers and staff is our top priority. We have complied with all of the required Covid 19 protocols issued by the state of CT. There are sanitizer stations located at each of our restaurants, masks are required by our staff, and we are sanitizing all touch points on a regular frequency. Our goal was to create a comfortable and enjoyable dining experience for our customers that either choose to dine in or take a meal home. We created beautifully appointed patios at both Adriana’s and La Lupa. For our customers who choose to enjoy our delicious meals at home, it is very easy to order and pick up at each of our locations.

Time after time she would visit the local Walmart or Food Lion only to return home disappointed because they were lacking the quality ingredients she was in search of. Instead of settling for the subpar selection in the area Linda decided to take action by opening a gourmet Italian food market. Starting her own business had been a life long dream for the horticulturist so when the concept and opportunity presented itself Linda jumped right in. Maria Bella Cucina opened its doors June 1st of 2020, right in the midst of the COVID-19 crisis. While many businesses were shutting their doors Linda saw a unique opportunity. While most of the big chain stores were running out of products Linda was there to support the community. Opening a business during a global pandemic is definitely not easy but for Linda it has proven worthwhile.

What is your most popular product(s)? Our top sellers are our fresh pastas and sauces. Customers love the Napoli brand sauce that we buy from Ferraro. Italian cheeses and meats are also very popular.

HOW has your business handled the covid-19 crisis? We actually did very well. We were in a unique position because people couldn’t really go out to eat but they still wanted quality Italian products so that is where Maria’s Bella Cucina stepped in. We were able to provide our customers the quality ingredients they needed while many of the larger supermarkets were selling out of products.

Why work with ferraro foods? We really like the quality and variety of products Ferraro offers. We plan to open up a deli next to the market so we believe that Ferraro will be a great partner to have in that. Also, our sales representative Eddie has gone above and beyond. He has even personally delivered us products when we needed it. He has worked very closely with us in getting our business up and running and we really appreciate it.

WORKER BURNOUT

You have probably seen it in the news – the World Health Organization (WHO) now classifies “burn-out” as an occupational phenomenon. Not to be confused with general stress, which is temporary and less debilitating – burnout includes “feelings of energy depletion or exhaustion; increased mental distance from one’s job, or feelings of negativism or cynicism related to one's job; and reduced professional efficacy.” A 2018 Gallup study found that a surprising two-thirds of workers reported experiencing symptoms of burnout. While that is bad news in any profession, it is particularly alarming for safety managers with workers doing dangerous jobs. A disengaged accountant might lose a decimal point. A disengaged restaurant worker might lose a limb.

WHAT CAUSES WORKER BURNOUT? Lack of autonomy or control – feeling no ability to influence how the job is done or feeling that work is unimportant or monotonous Unclear job expectations – vague lines of authority or murky measures of success Negative or dysfunctional work environment – including everything from general low morale to discrimination or bullying Lack of social support and/or rewards – isolation at work or feeling unfairly compensated or unrecognized for efforts Poor work/life balance – working too many hours or too many hours spent worrying about the job while at home Dealing with personal stress in addition to work – coming to work already depleted so on-the-job issues are harder to handle

HOW TO AVOID WORKER BURNOUT If you feel that your workers may be at risk, there are changes you can make to boost your safety culture and help to energize your people. Find Your Leaders Rotate your safety committee members so everyone who wants to participate gets a chance at some point. This creates a larger sense of responsibility, increases buy-in and motivation, and helps you to identify future leaders. Encourage Communication Have smaller safety meetings or toolbox talks so your workers that are more introverted, will feel comfortable speaking up with ideas or concerns. Recognize Contributions Start rewarding your workers for spotting safety hazards or for speaking up with a better way to do the job. This kind of empowerment makes people feel they are in control of what they do and that their opinions matter. You benefit by getting observations from the front lines and by keeping safety top-of-mind for everyone. Provide Enrichment Plan optional team-building activities like donating time to Habitat for Humanity or organizing a night for your team to volunteer at a local soup kitchen. Increasing a sense of community and belonging solidifies relationships and encourages communication. Promote Good Physical and Mental Health Use toolbox talks and every day or weekly reminders to encourage workers to get their rest, eat and drink healthier, and take small breaks throughout the day. If all employees get e-mail send out a weekly safety message, or print out a weekly sheet of “What’s News” If you have a worker struggling with personal problems, refer them to any counseling services; your HR Department may be able to provide assistance in this area. All of these ideas add up to the same general attitude – letting your workers know that you care and that their contributions matter. Bacoff is an E.P.A. registered ready-to-use, multifunctional disinfectant-cleaner for hard non-porous surfaces. Bacoff meets the EPA’s criteria for use against the novel coronavirus which makes it one of our most relevant products to handle what we are experiencing in this new environment.
