As we move into the second half of 2024, it's time to reflect on the trends that were predicted at the close of last year. Which ones are fading due to shifting consumer preferences? Here's a look at what's out for 2024 and what’s stepping in to take their place.
TRADITIONAL CHARCUTERIE AND SHAREABLE BOARDS
Shareable boards have taken social media by storm, but restaurant chefs are now exploring new directions. While traditional boards remain popular, the basic versions are being replaced by more specialized and diverse options. Chefs are experimenting with lesser-known Italian deli meats for charcuterie boards, like mortadella. Try a board using fresh and dried fruits or a 'Seacuterie' board with seafood for summer. Another example is a Mediterranean charcuterie board with hummus, olives, feta, roasted red peppers, and pita bread.
CLASSIC SPICY-SWEET COMBINATIONS
Despite the trend towards bolder flavors, consumers are seeking fresh and unexpected flavor experiences today. While honey BBQ or sweet chili flavors will always be popular, new combinations like maple sriracha or cinnamon chipotle are emerging as exciting alternatives.
YOUR AVERAGE CAESAR SALAD
In line with the desire for more complex flavors, restaurants are reinventing the classic Caesar salad. Keeping it on the menu
but with a twist, we are seeing options like Blackened Salmon Caesar Salad and Caesar Salad with Grilled Shrimp, offering a new take on an old favorite.
OVERLY SWEET FLAVORS
At the start of 2024, it was predicted that nostalgic desserts like cotton candy and s’mores would make a comeback. However, there is a growing preference for flavors that feel authentic and less manufactured. Artificially sweet flavors are being surpassed by more natural and nuanced tastes.
HIGHLY CAFFEINATED BEVERAGES
With a greater focus on health and wellness, consumers are shifting towards natural energyboosting beverages. Herbal teas with ginger or hibiscus, as well as coconut water and matcha green tea, are becoming more popular alternatives to highly caffeinated drinks.
Overall, there's a movement toward more complex flavors, authenticity, and healthconscious choices. As some trends fade away, they open the door to an array of fresh, innovative flavors that will redefine dining experiences for the rest of 2024 and beyond.

As we reach the midpoint of 2024, the restaurant industry, particularly the pizza sector, continues to evolve rapidly. From technological advancements to sustainability initiatives, several key trends are shaping how pizzerias operate and engage with customers.
Experiential Dining
To attract and retain customers, pizzerias are focusing on creating unique dining experiences. This includes live pizza-making demonstrations, interactive cooking classes, and themed dining events. These experiences not only draw customers but also foster a sense of community and brand loyalty. A report by Eventbrite notes that 78% of millennials prefer spending on experiences rather than material goods, driving demand for experiential dining.
Community Engagement
Many pizzerias are increasing their involvement in community-centric initiatives. From hosting local events to participating in charity drives, these efforts help build strong community ties and enhance brand reputation. Foods of New Jersey Winter Wonderland Showcase Springtime in Italy Taste of the Tides
February 19th, 2024
The Winter Wonderland Show held on 2/19 was a huge success, marking a significant milestone for our Long Island division, New York East. Guests were treated to an exciting pre-show party the night before, held in our impressive new warehouse. They enjoyed guided tours, delicious vendorsponsored food and drinks, as well as engaging games and prizes. The following day, customers were wowed by a spectacular display of new and classic offerings from vendors at the food show. This event not only showcased our commitment to excellence but also highlighted the strong partnerships and innovative spirit driving our division forward.
April 8th, 2024
In another first, we held our "Springtime in Italy" themed food show in Raleigh for our North Carolina division on April 8th. Customers delighted in sampling new products such as cheese steaks and arancini balls, alongside old favorites like mozzarella cheese and cauliflower crusts. The venture to the South was a huge success all around, highlighting our ability to create memorable and impactful events that resonate with our customers. This event not only introduced exciting new offerings but also reinforced our commitment to quality and innovation within the food industry

May 6th, 2024
We ventured to Atlantic City again this May for our NJ division food show, Taste of the Tides, held on May 6th. This year's highlights included over 150 vendors presenting to customers in the area with the highest per capita number of pizzerias in the country. The event featured exciting giveaways and even a Fiat converted to serve gelato. How Italian! The Taste of the Tides show continues to grow in popularity, showcasing our dedication to supporting and celebrating the vibrant pizzeria community. This successful event once again demonstrated our commitment to innovation, quality, and engaging experiences for our customers.

Whipped Ricotta with Herbs and Honey
Ingredients
• 1 cup whole milk ricotta
• 2 Tbsp fresh mint, roughly chopped
• 1 tsp fresh parsley, finely chopped
• 1/2 tsp lemon zest
• 1 Tbsp olive oil
• 3 tsp honey
• Generous pinch of sea salt
• Freshly ground black pepper
Directions
1. Place the ricotta in a small mixing bowl. Using a hand mixer with a whisk attachment or beaters, whisk ricotta for 2 minutes until it's smooth and creamy; you may still see tiny bumps of ricotta, this is ok. Place the whipped ricotta in a serving bowl or spread on a plate.
2. In a separate bowl, stir together the mint, parsley, lemon zest, olive oil, honey, and salt. Pour the herb and honey mixture on top of the whipped ricotta. Top with freshly ground black pepper as desired. Serve with grilled baguette slices, crackers, or vegetables.
Cannoli Dip
Ingredients
• 1/6 cup whipping cream
• 5 oz whole milk ricotta cheese
• 2 ⅔ oz cream cheese
• 1/2 cups powdered sugar
• 1/3 tsp pure vanilla extract
• 1/6 tsp grated orange zest
• 1/3 cup mini chocolate chips
Directions
1. In a medium bowl beat the whipped cream on high speed until stiff peaks form, and then set aside. In a large bowl beat together the ricotta cheese and cream cheese on mediumhigh speed until combined, about 30 seconds. On low speed beat in the sugar, vanilla, and orange zest until combined.
2. Fold in the whipped cream and chocolate chips. Cover with plastic wrap and chill for at least 30 minutes.

Vendor Spotlight Sopra Cheese
Interviewed: Angela Russo, President
How did Sopra begin? How have you evolved?
Our family arrived in the early 1900’s from Sorrento, Italy to craft cheese. It only made sense for my father and I to continue in the cheese-making industry using our original family recipes. We are constantly engaging our customers for feedback. Based on this direction our product line is constantly evolving and expanding to meet their needs for authentic products.
What is your favorite product that you sell and why?
My favorite product is our Ricotta Amalfi. It’s a unique ricotta that is smooth and creamy, with a clean flavor profile. I love that you can push it savory with pasta and pizza or sweet with desserts.
What is different about your cheese company?
Although we may be the new kids on the block - we know cheese. We are proud of our long family heritage of cheese-making. By remaining family owned and operated, we can continue the tradition. All cheese we produce needs to meet our standard of excellence and create the perfect melt. Our passion for Italian cheese is really what sets us apart from other companies.
What would you be doing if you weren’t working in the food business?
Based on my family history of cheese making, it only made sense for me to follow my passion and continue my family legacy. Although I couldn’t imagine doing anything else, if I weren’t working in the food business I would love to be a professional organizer.
Best thing about working at Sopra? Getting to work with family (and the customers that have become family to us!) The food-service industry is exciting and full of camaraderie, that’s what I love most about being at Sopra.
What is your ideal pizza?
My ideal pizza has Sopra Mozzarella, cup and char pepperoni, Sopra Ricotta Amalfi dollops, and Mike’s Hot Honey drizzled over top! The perfect sweet and spicy combination.
