Welcome... To the 2nd summer edition of The Last Bite magazine. With the long winter finally over summer is now here to stay! It's time to gather around the table with friends and family to enjoy the healthy and delicious food that summer has to offer. In this issue we focus on produce and the great meals you can create with all New Jersey has to offer. From tomatoes to blueberries, Ferraro Foods provides the highest quality Jersey Fresh ingredients from the farm right to the table. As summer brings the warm weather, people are also starting to think about eating healthier and enjoying fresh food. What can be better than offering your customers a delicious and healthy salad! Luckily, New Jersey has a long history of producing locally grown food. The Garden State grows more than one hundred different kinds of fruits and vegetables. This makes it easy to offer customers the fresh ingredients they deserve, whether it's juicy and plump tomatoes that they can enjoy in a salad or in a sauce or strawberries that can be used in a dessert. You can be confident that you are serving the freshest produce the state has to offer! Inside you will find different recipes that showcase fresh produce. Try adding fresh produce to your favorite dishes this summer! Greens like kale, spinach, or arugala can add different flavors and nutrients to your meals. Fruit like blueberries, cranberries, and even avocado can give your salads a pop of color, different flavors and many beneficial nutrients. Instead of pasta you can try substituting healthy grains like quinoa or even vegetables like zucchini or peppers. What better to pair your fresh summer produce with than a glass of wine! With wine season almost upon us enjoy the variety of wine grapes and juices we have to offer. Many of our grapes and juices come from California and Washington State. In these areas the combination of the cool and warm climate and the rich soil allows the grapes to grow to their fullest and make delicious wine to pair with any meal. Marc is a dedicated employee and provides excellent service to our customers, always polite and courteous offering his assistance with putting away their product while ensuring the order is accurate and in good condition. Marc is always available to assist with extra routes or special deliveries even on his days off of work. Some of Marc's duties include: • Performing daily pre-trip vehicle inspections of truck, tractor and trailer before operating vehicle • Adhering to all federal, state and local traffic laws while driving. Also, adhering to all Ferraro Foods, and D.O.T. mandated policies to ensure compliance of both programs and expectations. • Delivering products through use of two-wheel cart and/ or tailgate method, bringing products into customers stores/restaurant and staging according to product temperature requirements. • Providing courteous, prompt and professional customer service to each location on route, and while operating vehicle.

Myioshi Kershaw Billing Specialist

Year of Hire: 2003 Myioshi is hard working, dependable and always available to assist with any customer service related issues that may arise. Myioshi stepped in to the position of Router in 2018 in addition to her Billing responsibilities and has been a great asset to our Transportation Dept. Some of Myioshi's duties include: • Matching order selection paperwork to the computer system • Calculating weights and enter into computer system • Confirming data entered is correct, then print invoices • Comparing invoices to route information • Assembling driver packets

Clinton is a hard worker, always making sure the pick slots are replenished and ready for 2nd shift operations. Clinton provides insight to areas where he sees a need for improvement, often working alongside the 2nd shift Managers to ensure a smooth and efficient process for the selectors. Some of Clinton's duties include: • Navigating RF based computer system to scan pallets to proper warehouse locations • Replenishing picking locations as needed throughout the course of the day to ensure product is available to be selected by night shift order pickers • Maintaining proper date rotation of products to ensure FIFO level of inventory. • Maintaining level of organization within assigned aisles so that all product is kept in proper locations to minimize mispicks by selectors. • Reporting all damaged product to immediate supervisor

They don't call New Jersey the "Garden State" for nothing. With 9,100 farms across 720,000 acres of land, the Garden State grows everything from cranberries to Christmas trees. There are a few particular crops that come to mind when thinking about summer produce in New Jersey though. Read on to find out more information on these summer staples.

The highbush blueberry is indigenous to NJ and was first cultivated in Whitesbog. The blueberry became the official state fruit of New Jersey in 2004. Hammonton, NJ is referred to as "the blueberry capital of the world". Blueberries are at their peak when they are firm, plump and dry with a dusty blue color and uniform in size. Tomatoes

New Jersey Tomatoes have received a great deal of notoriety as being the best in the nation for their flavor, tenderness, and juiciness. All of that's certainly true; however, it's not because of unique weather or soil conditions. Flavor, tenderness, and juiciness, have more to do with the selection of the variety, the special growing care, and how long they remain on the vine to ripen. Tomatoes are ready to eat when they are slightly soft. An extremely firm tomato is not yet fully ripe, even though it may be completely red. Never refrigerate Jersey tomatoes. This destroys the natural, vine-ripened taste. Avoid placing them on windowsills, which are usually too hot. Store tomatoes at room temperature in a cool dark place. A sliced tomato loses its vine-ripened flavor quickly so choose tomatoes that are small enough to consume in one meal. Nutritional Benefits Low fat; saturated fat free; very low sodium; cholesterol free; low calorie; high in vitamin A; high in vitamin C; good source of potassium.

Corn

What makes Jersey Corn so sweet? It starts with the hybrid, silver queen, with its rows of small, tight, milky white kernels. Silver queen corn loves New Jersey’s clay soil, which is fertile and well drained. When choosing corn, look for ears with bright green, snugly fitting husks, and golden brown silk. Inside, the kernels should come all the way to the ear’s tip, with tightly spaced rows, and appear plump and milky. If pricked, a kernel should spurt milky white juice. Choose ears with medium-sized kernels. Very small kernels are immature, and large kernels have a starchy taste. For best flavor, eat sweet corn as soon as possible. Leaving husks on when storing corn helps preserve the flavor. At room temperature, the glucose in corn will convert to starch in as little as 24 hours, so refrigeration is critical for maintaining freshness. Corn absorbs odors from foods such as green onions, so avoid storing corn with other produce. Keep unshucked fresh corn in the refrigerator wrapped in damp paper towels and placed in a plastic bag until you are ready to use it. Wine Grapes and Juices!

It’s that time again! Wine grapes and juices will be arriving sooner than you think and we have a lot of great options for you. We will have grapes from California and Washington State. From California our grapes will be sourced from Suisun Valley, Lodi, Paso Robles, Central Valley, King’s River Valley, Contra Costa, Amador, Sonoma, and Napa Valleys. From Washington State we will have grapes from the Rattlesnake Hills in Yakima Valley and grapes from the Columbia Valley. Our juices will be coming in from Central Valley and the Lodi region of California. Take a deeper dive into a few of these regions below.

Suisun Valley

Suisun is amongst the favorites for Napa Wineries looking to outsource grapes. The Valley's climate variances supports the production of both cool climate and warm climate grapes. Suisun Valley lies within the southern end of two ranges of the Coast Range, the Vaca Mountains to the east and the Mt George Range to the west. Suisun Valley ends in the south at the marshlands of Suisun Bay. To the north Suisun Valley rolls up into Wooden Valley at the Napa County line.

Suisun Valley lies within Coastal area climates characterized by cool moist winds blowing inland from the ocean and San Francisco/San Pablo Bay almost continuously from May through early Fall. Spring frosts often mitigated by proximity to Suisun Bay. Suisun Valley consists of a mixture of soils, zoned within the valley floor, and additional none typed soils within the undeveloped hillsides. Soil types include: Brentwood clay loam, San Ysidro sandy loam, Sycamore silty loam, Rincon clay loam Length: approximately 8 miles Width: approximately 3 miles at widest point

Amador

Steeped in Mediterranean winemaking tradition, for Wineries and Home Winemakers alike, Amador represents a territory where wine grapes reign supreme. Located in the western foothills of the Sierra Nevada mountain range in central California, Amador County boasts 2,700 acres of wine grapes - a high percentage of which are farmed organically - and 25 wineries. Vines are planted almost exclusively on rolling, oak-studded hillsides in Sierra Series soils - primarily sandy clay loam derived from decomposed granite. These friable, moderately dense soils effectively retain Amador's 36 to 38 inches of annual rainfall, enabling most growers to dry-farm their vineyards. Dry-farming, and the fact most vines are planted on their own roots or on self-regulating rootstocks results in low crop yields averaging four tons per acre. These small yields, the vines' sparse canopies, and Amador's high solar radiance insure complete maturation of the fruit. Amador's warm climate also promotes full ripening of the grapes. While Amador heats up earlier in the day than those appellations, it rarely exceeds 100 degrees. Equally important, temperatures typically drop 30-35 degrees in the evening as breezes cascade down from the Sierras. This rapid cooling helps the grapes retain the acidity essential to balanced wines.

Napa and Sonoma Valleys

Napa Valley, located north of the San Francisco Bay, is known for its outstanding grape growing regions. With a combination of Mediterranean type weather, geography, and geology it allows for premium quality grape growing. Napa Valley was really put on the map as a world class wine region when the Paris Wine Tasting of 1976 resulted in Napa Wines being the favorite in a blind tasting. Today, Napa Valley is home to almost 400 wineries. The Sonoma Valley Chalk Hill vineyard is known for it's chalky, white ash soil that consist of volcanic ash. A sub appellation of the Russian River Valley, it has warm days and cool breezes.

Grilled Fruit Basil& brie pizza crisps Ingredients 1/2 lb. pizza dough 1/4 cup olive oil 16 basil leaves, chopped + divided

Instructions 1

3/4 cup blackberries 1/2 tsp. pepper

Prepare the dough 1-2 hours ahead of time. While the dough rises make the honey balsamic glaze. Add the balsamic vinegar and honey to a small sauce pan and simmer until reduced by half. This should take about 10 to 15 minutes. Remove from the heat and set aside until ready to use.

When you're ready to grill the pizzas preheat the grill to high heat. Add the blackberries to a bowl and add about half of the basil. Lightly mash the blackberries with a fork.

Divide the pizza dough in half and roll each half as thin as you can without ripping. Cut the dough into 12 circles or squares. Add the olive oil to a small bowl and brush both sides of the pizza rounds with the olive oil and place on a baking sheet.

Carefully add the pizza rounds to the hot grill and grill for no more the 2 minutes. Remove the pizzas using tongs. When all the pizzas are grilled, turn the heat on the grill down to medium.

Top the grilled side of each of the pizzas with slices of brie. Then top with lightly mashed blackberries and the chopped strawberries. Carefully return the pizzas to the grill and grill another 3 to 5 minutes, our until the brie has melted and the pizzas are crisp. Top with the remaining fresh basil and drizzle on the honey balsamic glaze.

The Importance of Driver Safety Ferraro Foods has been in business for over 40 years and its growth and success continues. An immense factor in this success is our dedicated drivers who take pride in their work and continuously use safe practices while delivering outstanding customer service to our loyal customers. Safety habits are essential to our organization and we are dedicated to protecting our employees. For this reason, we have established an extensive Safety Training Program. Safety is and always will be our main priority. Drivers, especially, go through an intense safety program, which includes but is not limited to; Hours of Service, Pre-Trip, Safe Driving Techniques and Back Safety. The combination of proper safety and regulation training, along with the ambition and motivation of our drivers, has proven to equal success and longevity among our team. Our Safety program continues to provide the knowledge, skills and momentum needed to move forward as we grow within the industry. Over a year ago, the combined number of Drivers for both our New Jersey and North Carolina locations was a total of 86. Today, our combined number of Drivers has climbed to 120 and we continuously search for more talent to add to this safe and hardworking team. It is a privilege to say we have drivers who have been part of the Ferraro Foods Family for nearly 30 years. This speaks volumes when you consider the amount of hard, physical work and hours it takes

to accomplish the daily job of a delivery driver. For these drivers and other employees, their dedication and contribution to the success of the company has never faltered. This month, we have highlighted a number of Drivers from both our New Jersey and North Carolina locations who have not only longevity with the company, but have proven to practice safe methods of driving and delivery throughout their years of service with Ferraro Foods. It is an honor and privilege to work with these dedicated employees and show our appreciation for their hard work and outstanding work ethic. Time and time again, the drivers highlighted for their dedication and safe practices have proven to be outstanding examples for those drivers who have joined the Ferraro Foods team in recent years. It is with examples like these that the upcoming talent joining the industry are trained and sent out to excel with the upmost support and confidence. As in any industry, drivers are vital to our daily operations. We commend these exceptional drivers for their hard work and years of service, as we do to our entire Transportation Staff for their assistance in making a difference in customer experience and promoting safety in day-to-day routines. With the help from our team of drivers, we will continue to grow while carrying the mentality that safety is and will always be our main priority. With confidence and excitement, we all look forward to the continuation of training and education in this ever-growing industry!

Marc takes pride in establishing and maintaining a good relationship with the customers he sees day to day on his routes. Driving gives him the freedom of being outdoors while doing his job. He enjoys doing his job and believes Ferraro Foods is a great place to work. He speaks highly of his General Manager. Mark has been accident free during his employment with Ferraro Foods and says the best way to prevent an accident is to always have enough sleep and stay focused.

Eddie Lackey North Carolina 6 Years with Ferraro Eddie enjoys working with Ferraro Foods because the owner has created a platform for the employees to make sure everyone has a voice and receives the assistance and guidance they may need. Eddie says driving and delivering product is hard work, but the company recognizes the physical demands and endurance it takes to complete delivery routes. Eddie’s secret to being a successful, safe driver is taking care of his health and getting plenty of rest.

Zachary Tate North Carolina 9 Years with Ferraro Zach feels the best part of his job is his customers. He has established a relationship with them that is comparable to that of family. Zach enjoys working for Ferraro Foods because he has freedom as a Driver to make choices for himself He notes there is a level of trust and confidence in him to perform his job safely and efficiently that he hasn’t experienced anywhere else. Zach has been a successful driver for so many years because he monitors his surroundings at all times and takes the proper safety steps to ensure he is aware of his surroundings.

Richard Broxmeyer New Jersey 29 Years with Ferraro Richard loves being a driver because he enjoys meeting new people. He has a great sense of what it takes to deliver good customer service and he enjoys making others happy in the process. Driving and delivering allows him to move more freely rather than sitting in the office. Richard enjoys working for Ferraro Foods because he has developed a good rapport with the owner throughout his many years with the company.

Jimmy Mobley New Jersey 18 Years with Ferraro Jimmy enjoys working with Ferraro Foods because he has established a good relationship with employees and management over the years. Jimmy had always wanted to be a driver since he was a child and he is happy to be living his childhood dream. Jimmy values safety and believes that when driving, one must consider everyone on the road. There are other people to look out for and a driver has to take that responsibility seriously. He is very happy to be driving his new truck.

Seleshi Tessema New Jersey 16 Years with Ferraro Seleshi loves his job, the company and his co-workers. He enjoys that the job is physically demanding. It is the best way to stay in shape! When Seleshi first started at Ferraro Foods he was not a driver and was encouraged to move forward in obtaining his CDL. It is a decision he does not regret and appreciates all the company has done to encourage and support him over the years. He attributes his accident free record to his patience, work ethic and faith. He remains in constant observance of his surroundings to ensure all are safe while he is operating his CMV.

1. Clean and wash the basil leaves and boil in boiling water for 10 seconds. Drain and cool in water and ice.

2. Boil two cloves of garlic in a pot, drain and set aside. 3. Remove the basil leaves from the cold water, squeeze, and put into the blender's glass. Combine extra virgin olive oil and whisk, add balmy garlic, nuts, pine nuts, and continue to whip. Finish with the addition of grated grain and pecorino cheese, mix well. Salt and pepper. 4. Wash the potatoes, peel and cut into cubes, cut off the green beans by removing the ends. In a pot, bring to a boil of plenty of salt water, cook the Gemini 80 together with the potatoes and after a few minutes of cooking, combine the cut beans into pieces. 5. Drain to the tooth, leaving aside a few bowls of cooking water, season with basil pesto. If it is a bit dry, get wet with baking water. Serve by spraying everything with grain and pecorino.

Italian-sausage burgers with garlicky spinach Ingredients 10 ounces baby spinach 2 tablespoons extra-virgin olive oil, plus more for brushing 2 garlic cloves, minced 1 teaspoon anchovy paste (optional) 2 tablespoons chopped fresh rosemary, divided Salt 1 pound sweet or hot Italian sausages (or a combination of both), casings removed

In a large skillet, bring 1/4 inch of water to a boil. Add the spinach and cook, stirring, until just wilted, about 1 minute; drain and press out as much water as possible. Wipe out the skillet.

In the same skillet, heat 2 tablespoons of olive oil until shimmering. Add the garlic and anchovy paste and cook over high heat, stirring, until fragrant, 1 minute. Add the spinach, season with salt and stir just until coated, about 10 seconds.

Light a grill or preheat a grill pan. Using slightly moistened hands, form the sausage meat into four 4-inch patties, about 3/4 inch thick. Brush the burgers with oil and grill over moderate heat until browned and crusty on the bottom, about 5 minutes. Carefully flip the burgers. Top with the cheese and grill until the burgers are cooked through and the cheese is melted, about another 5 minutes. Spread the pesto on the rolls. Top with the burgers and spinach and serve.

Tri-Color Cheese Tortellini

Instructions

1/2 cup provolone (cubed)

Heat a medium skillet over medium heat. Add the olive oil, bell peppers, tomatoes, garlic, oregano, lemon zest, and a pinch of both crushed red pepper and salt. Cook until the tomatoes just begin to burst and the garlic is fragrant, about 15-20 minutes. Remove from the heat and let cool slightly.

Meanwhile, bring a large pot of salted water to a boil and cook the tortellini according to package directions until al dente. Drain and then add the tortellini to a large salad bowl.

Pour the olive oil over the tortellini. Add the red wine vinegar and mustard and toss to combine. Add the arugala, basil, provolone, mozzarella, and salami and toss.

Serve the salad warm or cold. It will keep in the fridge for up to 5 days.
