alentine’s Day isn’t just for flower shops, cupcake shops, and jewelry stores. In fact, many of today’s non-traditional consumers often reject tradition in favor of more inspired gifts, adventures, and creations.
The proof is in the chocolate pudding, or even better – in the numbers. People spend more money on Valentine’s Day than any other Saturday night – and you want them to spend it with you. As a restaurant, try to inspire great Valentine's Day dates or anti-dates (those are popular too) to capitalize on the desire for experiences.
Here are a few Valentine's Day ideas to get the ball rolling:
1. Create a Valentine’s Day Food Promotion with Aphrodisiacs
2. Drive Valentine’s Day Reservations with a Prix Fixe Menu
On Valentine’s Day, some restaurants are putting together an aphrodisiac-inspired tasting menu. The night is sure to have traditional tastes, like oysters and strawberries, along with lesser-known aphrodisiacs like asparagus and avocados.
Even if you haven’t offered a prix fixe menu in the past, it’s perfectly acceptable to use for special occasions and often appreciated if you throw in a couple glasses of wine and dessert with the meal.
Whether you believe in the power of aphrodisiacs, or just want to create a fun menu, here are some suggestions:
3. Play up the Valentine’s Day Experience

Plan a package that includes an overnight there following dinner. Incorporate extra elements for diners who purchase these packages such as a flower on each plate, or a special dessert to share. Working with your neighbors also allows for a lot of cross promoting in the lead-up to the big day.

4. Offer take-out options You can’t necessarily expand the dining room to fit more tables, but maybe you can tap into the crowd of people who like to stay in on romantic nights. Come up with a special take-out package and offer special options to go. It’ll increase your revenue for the evening, without increasing the number of tables on the floor. Just be sure the kitchen is appropriately staffed to accommodate these additional meals.
5. Offer an anti-Valentine’s Day Menu
8 Bring in Live Music to Enhance the Mood
Want to collect some food-loving singles? Theme that menu with kiss-repellent items like garlic, onions and spinach. Throw in a free drink for anyone single. Couples shouldn’t be the only ones catered to on this holiday. A traditional “ladies night” theme works just as well.
If you’re used to having live music in your venue, maybe pivot to something more romantic? A crooner singing classic love songs or a jazz ensemble is a great way to drive a unique experience and an uptick in reservations.
6. Valentine’s Day Proposal Packages Valentine’s Day is a wildly popular proposal day. Help those lovebirds along by promoting proposal packages. Think about what you can include to make someone’s proposal go smoothly and be remembered forever. Design a package that includes details such as an arrangement of special flowers, a champagne toast after the “yes!” and a photographer onsite to capture the moment.
7. Promote “Galentine’s Day” Instead Popularized by the TV show, “Parks & Recreation,” many ladies, single or not, choose to spend Valentine’s Day with their best friends – aka “Galentine’s Day.” An OpenTable survey of over 3,000 people showed that 76% of diners would go out with friends on Valentine’s Day instead of a romantic partner – it’s likely that means several people already have done that or are planning to!

10. Get the Word Out Sure you know that your spot is the best place to spend a romantic evening, but newcomers may not be aware… yet. Sharing original photos on Twitter, Facebook, and Instagram is a great way to introduce your brand to a whole new audience. Set the scene with a romantic table or a snap of each course on the menu. The idea is to do the imagining for them, so all they need to pictures is themselves relaxing the night away.

There is perhaps no ingredient more useful or versatile than the onion. Sliced and eaten raw, the root has a sharp aroma and a strong, peppery bite. Cooking onions transforms them: Their crisp texture becomes tender and yielding, with a luscious sweetness to match. Translucent sweated onions bring body to soups and sauces, while deeply caramelized onions make a heavenly topping.
This versatile vegetable can go far beyond the ubiquitous cruditĂŠ platter; we like them grated raw with honey and spices for a punchy salad, roasted with orange zest, and baked into sweet cakes and breads. Though not widely used, the leaves of the plant are edible and have a flavor similar to curly parsley; use them to garnish carrot dishes, toss into salads, or throw into soup stock to add earthy pungency.

Prized for its starchy flesh, the potato takes well to all sorts of preparations and readily absorbs flavors and seasonings. The innumerable varieties range in color, size, and starch content; potatoes higher in starch, such as russets, and purple or blue potatoes, have a fluffy texture and are great for baking or French fries. Broccoli peaks in the U.S. between October and April. The ingredient pairs well with bold and pungent flavors: Roasted broccoli, caramelized with garlic, olive oil, and a pinch of crushed red chile, adds depth to stacks of lasagna. Before serving broccoli completely raw in a salad or on a crudité plate, consider blanching it for just a minute or two and then shocking it in ice water for a brilliant green hue and a crisptender texture. Did you know... Brussels sprouts, aka cabbage’s mini-me, boasts some of the same health benefits as its big bro. Like other cruciferous veggies, Brussels sprouts have high levels of cancerfighting antioxidants that can protect DNA from oxidative damage.

Cauliflower’s mild, delicate flavor lends itself well to both raw and cooked preparations; we love it sliced raw as a crudité; roasted and tossed with pasta; fried and bathed in lemon juice; thinly sliced and marinated in a raw salad; and pickled with cabbage, carrots, and plenty of spices. Look for firm, dense heads with tight clusters and crisp leaves. Avoid cauliflower with bruises, brown spots, or other blemishes. Use it as a low carb alternative!
Peak season for Brussels sprouts in the U.S. runs from late August through March. Tender and sweet when roasted, fried, or steamed, they only release their infamous sulfur aroma when overcooked. 1. Melt the butter and olive oil in a large saute pan over medium-low heat. Add onions and stir to coat. Cook for 20 minutes, stirring occasionally. 2. Sprinkle the salt and sugar over the onions and continue to cook for another 30 minutes to 1 hour, stirring occasionally. You’re looking for a deep, rich brown color. They may start to stick to the pan a little. If they do, hit them with a little bit of water or vinegar. It’s OK if they form a bit of a crust, but don’t let them burn. Set aside to cool. 3. Preheat oven to 425 degrees. 4. Use a pastry brush to brush flatbread with olive oil and sprinkle with a bit of salt. Top flatbread with caramelized onions and crumbled goat cheese. Bake for 6-10 minutes, depending on the thickness of your bread. (The cheese should start to melt and the edges of the bread should start to brown.) 5. Remove from oven and sprinkle with basil. Cut into pieces and serve.

Directions - TOSS shrimp with 1/4 cup of the Wing Sauce. - GRILL shrimp over medium heat 2 to 3 minutes per side - MIX remaining 1/4 cup Wing Sauce and honey in medium bowl. Add grilled shrimp and toss to coat. Serve with celery, carrots and blue cheese dressing.

VEAL CALZONE
INGREDIENTS
DIRECTIONS
•
1½ pounds ground veal
1. Let the dough come to room temperature, about 30-35 minutes.
•
Salt to taste
2. Pre-heat the oven to 375°F.
•
1½ cups onions, chopped fine
•
3 tablespoons vegetable oil
3. In a large skillet add the oil. When hot, add the ground veal and brown, about 15 minutes, adding the seasoning about halfway through the browning process.
•
2 tablespoons California-style garlic pepper seasoning (with red bell and black pepper)
•
3 cups pizza sauce
•
12 ounces shredded Italian fourcheese blend
•
12 ounces Ricotta cheese
•
3 bags (1lb. each) pizza dough
•
1 egg
4. Add 1 cup of the pizza sauce to the browned veal and remove from the heat and cool. 5. Cut the pizza dough in half and roll each piece into a 6” circle. 6. Beat the egg and brush the dough circles. Divide the cooled veal mixture amongst the dough circles, placing it on one half of the dough. 7. Add 2 ounces of each cheese to the top of the veal, spreading it out evenly. 8. Fold the other half over the veal mixture. Using a fork, crimp the dough closed. Using any leftover egg, brush the top of the dough. Make one or two short slits on the top of the dough to allow steam to escape during cooking. 9. If desired, sprinkle a little seasoning or sesame seeds on top of the dough before baking. 10. Place the calzone on a cookie sheet pan that has been sprayed with cooking spray. 11. Bake in a 375°F oven for 20-25 minutes or until the calzone is golden brown and you see some bubbles in the slits. Serve the calzone with the heated leftover pizza sauce.

½ lb Fettuccine Pasta 4 oz Sweet Peppers 2 cloves Garlic 2 Scallions ¼ cup Cream 1 Tbsp Verjus Blanc 1½ tsps Calabrian Chile Paste

Heat a large pot of salted water to boiling on high. Wash and dry the fresh produce. Cut off and discard the stems of the peppers; remove and discard the cores. Halve the peppers lengthwise, then thinly slice crosswise. Peel and roughly chop the garlic. Cut off and discard the root ends of the scallions; thinly slice, separating the white bottoms and green tops. In a bowl, combine the sliced peppers, chopped garlic, and sliced white bottoms of the scallions. While the peppers cook, add the pasta to the pot of boiling water and cook 8 to 10 minutes, or until al dente (still slightly firm to the bite). Turn off the heat. Reserving 1/2 cup of the pasta cooking water, drain thoroughly and return to the pot.
Finish the pasta & serve your dish:
To the pot of cooked pasta, add the cooked shrimp and sauce, cooked peppers, and half the reserved pasta cooking water; season with salt and pepper. Cook on medium-high, stirring vigorously, 1 to 2 minutes, or until coated. If the pasta seems dry, gradually add the remaining cooking water to achieve your desired consistency. Turn off the heat; season with salt and pepper to taste. Serve the finished pasta garnished with the sliced green tops of the scallions. Enjoy!
In a medium pan (nonstick, if you have one), heat 2 teaspoons of olive oil on medium-high until hot. Reserving the bowl, add the prepared pepper mixture to the pan; season with salt and pepper. Cook, stirring occasionally, 3 to 4 minutes, or until slightly softened. Turn off the heat. Transfer to the reserved bowl. Cover with aluminum foil to keep warm. Wipe out the pan.
While the pasta cooks, pat the shrimp dry with paper towels. If desired, remove and discard the tails of the shrimp before cooking. In the same pan, heat 2 teaspoons of olive oil on mediumhigh until hot. Add the seasoned shrimp in an even layer. Cook, without stirring, 2 to 3 minutes, or until slightly opaque. Add as much of the chile paste as you’d like, depending on how spicy you’d like the dish to be. Cook, stirring frequently, 30 seconds to 1 minute, or until thoroughly coated and fragrant. Add the verjus (carefully, as the liquid may splatter) and cream (shaking the bottle before opening); season with salt and pepper. Cook, stirring frequently, 30 seconds to 1 minute, or until the shrimp are coated and cooked through. Turn off the heat.

1 lb farfalle pasta 1 tbsp olive oil 1 cup red onion , sliced 1 tbsp garlic , chopped 2 cups chicken broth , (low sodium) 1 lb asparagus 1 cup frozen green peas 2 cups roast chicken, cut into bite-sized pieces 1 tsp lemon zest , grated 3/4 cup Parmesan , grated 1/4 cup packed basil leaves salt black pepper

1. Bring a large pot of salted water to a boil and cook farfalle according to package directions. 2. Heat olive oil in a large frying pan over medium-high heat. Add onions and saute for 2 minutes or until they begin to soften. Add garlic and saute for 30 seconds or until fragrant. 3. Add chicken stock and bring to a boil; continue boiling for 6 minutes or until liquid has reduced and thickened slightly. 4. Remove tough ends from asparagus and cut into 1 inch pieces. Add to pan and cook 3 minutes or until almost tender crisp. Add peas, spinach, cooked chicken and lemon zest, and cook 2 more minutes or until peas are cooked and chicken is warmed. 5. Drain pasta and add to frying pan. Toss pasta with sauce; sprinkle in parmesan and basil, stirring until combined. Season with salt and pepper to taste.

Beyond the obvious of; Salting Sidewalks and Clearing away Snow, be sure you have added these seasonal safety tips to your employee training: • Refresh slip, trip and fall training before the cold weather hits and point out the places where snow and ice will make these accidents more likely to occur, both indoors and outdoors. • Have workers rotate during snow removal shifts, this will avoid muscle strain, overexertion, or even frostbite. • Send out a company wide e-mail and include a weather related check on those days that you anticipate there may be a footing issue. • Be sure to teach your workers to Walk like a Penguin over snow and ice!

With a little planning and some timely reminders, the changes that winter brings can be an opportunity to break your workers out of the hum drum doldrums of winter and usual routine that they are in. Slow down, take a breath and make sure that they are keeping their mind on the task at hand.
