Spotlight On... Essex & Herts Air Ambulance

It costs £6.5 million every year to cover all charitable costs and aircraft operations. Without access to National Lottery funding and with only limited support from Government, the Charity relies upon the generosity and goodwill of the people and businesses of Essex and Hertfordshire to remain operational and keep saving lives.

Essex & Herts Air Ambulance invite supporters to share their 20 year milestone with A Year of Celebrations! Are you celebrating a special birthday, anniversary, wedding or a personal milestone before June 30th 2018? If so, then why not ask your guests to make a donation to your local life-saving Charity? This year Essex & Herts Air Ambulance celebrate 20 Years of Saving Lives and they are calling upon everyone across the counties who has something to celebrate to share this special milestone with them.

posters, balloons and a collection box to encourage donations from your guests throughout your event, go to www.ehaat. org or call 03 5 2 17 690

Sabi Stafford, Fundraising Manager said “We are very grateful to supporters who have already requested donations in lieu of gifts. People are getting behind this campaign and have so far raised £15,464 towards the £20,000 target for their local Air Ambulance.”

Essex & Herts Air Ambulance unlike NHS emergency services, is a Charity providing a free life-saving Helicopter Emergency Medical Service (HEMS) for the critically ill and injured of Essex, Hertfordshire and surrounding areas.

Whether it be pounds or pennies, every donation counts at Essex & Herts Air Ambulance. Even £5 can buy disposable head blocks to help maintain spinal immobilisation in patients and £8 can buy a blood pressure cuff to monitor the status of a patient. Everyone’s contributions really add together to make a massive difference.

Each HEMS Team consists of a Pilot and Co-pilot, a Pre-hospital Care Doctor and a Critical Care Paramedic who can be rushed to the scene of an incident with life-saving support equipment to deliver advanced clinical care that is normally only found in the hospital emergency department. Once stabilised, the patient will be conveyed by air or land to the most appropriate hospital for their needs.

Equine Car Boot Sale

Pet of the Month

The Shetland Pony Welfare Trust is a small registered charity based just outside of Cambridge. Originally set up to rescue and rehabilitate Shetland ponies. However, due to the current economic climate we have now found it necessary to open our doors to all breeds of equines. Ponies come into our care for many reasons, sometimes due to neglect or abandonment. We currently have over 30 horses and ponies in our care and a further twenty ponies have been rehomed on our foster care scheme. We receive no government funding and rely on public donations. All our staff and Trustees are volunteers, so a car boot sale has been organised to help raise funds for the charity. Entry is ÂŁ1 per person and tables are ÂŁ10 each.

Lily is young, bouncy and full of fun. She ideally would love to be homed with a furry friend as she loves to play. Lily is friendly with all dogs and people. Lily would need to be homed with children over 7 as she can be quite boisterous at times, but she is extremely affectionate.

keep your pets in shape We all love our pets and we like to give them little treats, but this does not help with their weight (and just like us they can put it on easily). Being overweight can have lasting consequences and in some cases can be fatal. There are studies that show overweight dogs do not live as long and are more prone to illnesses. Being overweight changes your pet’s quality of life and they can be affected by conditions such as arthritis, heart problems, breathing difficulties and diabetes.

My Local Life Nigel and Tracy Reader own and run Borders and Bows, whose showroom in Green Drift is full of beautiful fabrics, wallpapers and lighting. They are both heavily involved in the local community – Tracy sings in the Church Choir along with their daughter Zoe and helps with theatre productions by CADS and Nigel is a member of the Advisory Council to Royston First, a season ticket holder at Royston Town FC and helps manage Royston Cricket Club’s 3rd XI with their son Owen as well as assisting the youth coaches during Sunday morning coaching sessions at Therfield in the summer. Where do you live? Royston, where Nigel has lived for 37 Years and Tracy since we married in 1989. What’s your favourite local place to eat and drink? There are so many great places to eat locally, but if pushed for favourites it would have to be The Pig and Abbot for a family meal – great homely food and convivial atmosphere and The Royal Bengal for a takeaway. We also enjoy drinks at Cambridge Wine Bar – just a short walk out in the evening for a drink in pleasant surroundings. Where do you each like to shop locally? Nigel – Dysons who have a great range of brands and are ever helpful Tracy – Andersons Hair and Eden Beauty. I can’t get enough pampering!

What are each of your guilty pleasures? Nigel – Cricket – watching, playing, organising and facilitating for Royston Cricket Club as well as sneaking off and watching Middlesex CCC at Lords or watching international cricket on TV. Tracy – Spin Classes and white chocolate (not at the same time!) What was the last film you watched together? Paddington 2 at Royston Picture Palace, which is a great local asset and, if you haven’t been, is much better than you think will be. How do you celebrate? With a good bottle of wine How do you each like to spend your days off work? Nigel – I refer you to my ‘Guilty Pleasures’ answer, as well as watching Royston Town FC at Garden Walk with friends.

Tracy – Flexibility – when you work for yourself, you only have to work half days and sometimes you can even choose which twelve hours it is. Nigel – Seeing projects through from a bare room to a completed vision and seeing inside so many beautiful homes. Are either of you scared of anything? Tracy – Snakes Nigel – Landing … that is to say, I’m not really scared of heights, nor am I especially scared of falling but it’s the bit that comes after that which worries me! What are you most looking forward to this February? Nigel – Going away to Sharm El Sheikh in Egypt for a week of R and R and warm sunshine Tracy – Nigel being away for a week!

Tracy – Singing in the Church Choir at St John the Baptist Church and helping out with CADS whose current pantomime ‘Mother Goose’ has seen me working behind the scenes on ‘props’. Both of us like to relax in one of the town’s coffee bars with a Cappuccino and a cake and just watch the world go by. What are your favourite books? Tracy – anything by James Herbert Nigel – ‘A Short History of Tractors in Ukrainian’ by Marina Lewycka. What did you each have for your lunch today? A quick coffee and a sandwich. Sometimes, with a combination of our work and our other interests, lunchtime is just a blur. What is the best thing about your work?

Home & Garden

Think Garden, Think Richard Garden Focus... Plan for the Year Ahead Melbourn garden designer, Richard Arnott To continue my series of articles for 2018, designing with plants, this month I am going to look at starting at ground level. Our eyes are often drawn to planting such as trees and shrubs that give a permanence to the garden, but there is lots happening at ground level as we head toward spring. New life is emerging from the soil as well as ground cover planting that is ever present. It is important to appreciate the smaller plants at this early time in the growing season, their shape, form and texture is just as relevant at ground level as it is higher up. Ground covering shrubs help to fill the space in mixed borders and have a range of shapes and forms. Cotoneaster dammeri is known for its studded white flowers in the summer and its red berries in the winter, but I like its trailing habit and evergreen stems that create a flow of horizontal growth through the border. Euonymus fortunei ‘Emerald Gaiety’ and ‘Emerald and Gold’ are more mound forming, variegated shrubs, but cover the ground well. Both would contrast well with Cornus alba ‘Sibirica’ that has a vertical form

and beautiful red coloured stems at this time of year. The trailing habit of Periwinkle offers good, evergreen ground cover too. The dark green leaves are a good contrasting colour for brightly coloured foliage such as the Euonymus ‘Emerald and Gold’. Spring bulbs are just starting to show themselves. We have been enjoying the snowdrops for many weeks now, but the feeling of spring is on the way has its greatest resonance with the daffodil. In my gardening life the daffodil and Forsythia remind me that the sunshine, longer days and warmth are coming as the yellow flowers suggest heat. This is a strong linkage to colour, but the flowing form of swathes of daffodils naturalised in grass helps add vertical interest to a flat grass form. Be bold with your planting. Nature does not produce uniformity and straight lines. I like to broadcast daffodils by the handful and plant them where they fall during early autumn. Emerging hardy perennial shoots are a great sign of regeneration in the garden. There is a tipping point when it seems that everything is growing all at

once as the ground has reached the optimum temperature. It is a lovely time to look into the borders and notice the shape, form and texture of the stems that appear. We become very impatient waiting for the finished article, but the real pleasure is in appreciating the journey of growth on a micro level. It is a time of anticipation and excitement. I love to visit the gardens I have designed and planted the previous autumn to observe this transition. Take a little time to look in your borders each week to see this in action. Ground covering perennials play a key role in filling bare earth in the garden. The dead nettle Lamium is a great genus of ground covering plants. Lamium maculatum ‘Pink Nancy’ or ‘White Nancy’ give good value. I also like the semi evergreen Waldsteinia ternata that has strawberry-like foliage with open yellow flowers in late spring. It likes to spread in shady parts of the garden. Think also about hardy perennial habit too for filling space. Geranium ‘Brookside’, Nepeta ‘Walkers Low’ and Alchemilla mollis are all what I describe as filler hardy

perennials. They don’t grow as ground cover but planted in groups or swathes they behave in a similar way. Also they are the contrast to the taller hardy perennials. The juxtaposition of shape, form and texture should always be in your thoughts when creating a new planting scheme. Floor materials help to complement or contrast with planting. Minimalistic planting of grasses and perennials in cobbles or gravel gives a stylised look compared to mulching with organic compost or bark chips. The floor material is a key consideration to new planting. Suppression of weeds is a must, but migration of materials at the transition points such as grass meeting border is frustrating. Slate pieces seemed to dominate the urban front garden, but pebbles and cobbles are fighting back and metal edging is a must!

MUSEUM MUSINGS: Joining Up History We carry out research for visitors and exhibitions. I often come across a business called Nash, Rowley & Son. They were auctioneers and surveyors in Royston in the 1800s. Many of their auctions were held at the Bull Inn on the High Street. As part of a project to catalogue our research documents, I uncovered some details about the business. In particular, I found links between Nash and important buildings in Royston. Another part of the town’s history was starting to join up and tell more of a story! The business was set up in the 1820s by Thomas Cockett and William Thomas Nash, who would later become Cockett’s son-inlaw. When Cockett died, William continued the business with his son, Edward.

Meanwhile, we’ve also been researching Royston Workhouse for an exhibition. So, how delighted I was to discover that Nash was the person who designed it! I also found out that he designed the Royston Institute building (now the Town Hall) and the Corn Exchange. History can sometimes easily be seen as a timeline, one straight line going backwards. However, when you can start joining up different events and people, it really fills out the story and helps build up a picture of our town and the people who have lived and worked here over the years.

William Thomas Nash started his career working for John Wallen, an experienced architect and quantity surveyor. Nash picked up www.roystonmuseum.org.uk a lot from his time working there.

In describing the inspiration for her work Helen notes “I had a single moment circling in my head: a strange, faint, sense of recognition between a man and a woman. This was the seed that would grow to be Waking, a brief second of déjà vu that felt a bit like attraction, and a bit like memory.”

The book is about the least known part of the mind – dreams. It takes you on a journey with someone who can’t trust their head when they’re asleep. The fear instilled in the characters is transmitted to the reader too. The story moves forward like a psychological thriller, but is mostly about love and relationships. The sense of not knowing who to trust fills the plot and Anna feels she

Top Tips for all things Matrimonial Your wedding is one of the best days of your life. However it involves a great amount of planning which can take away some of the magic during the run up to the ‘Big Day’.

Make sure the responsibilities of planning are shared around. If you are a ‘control freak’ you may find this awfully difficult but have faith in the people around you to help out.

Early planning helps to minimise the stress close to the wedding. It’s always good to have Plan Bs Cs and Ds in case Plan A doesn’t work out. If you are aiming for a big wedding, don’t stray too far away from where your guests live. If you do, expect some guests may be unable to make it. If you are planning to have your wedding in the UK make sure your wedding venue can be flexible in the event of any unexpected weather.

Next, slightly more beauty related, if you are going to tan remember not to go too dark and get it done properly. Allow plenty of time in advance before the day for the initial ‘stain everything you touch’ phase to be over. The last thing you want is to ruin a gorgeous dress / outfit with tan stains. The same rule goes for lipstick, makeup etc, don’t over do it. Focus on contouring cheekbones, and natural colours on the eyes and lips. Lipstick can sometimes smudge and can tend to get everywhere. Try different smudge proof gloss/ lipstick so that on the day you aren’t worrying.

Saturday 24th February, 11am– 3.30pm

Another tip is to get the best photographer you can. The photographs will provide you with a lasting memory of the day so you want to make sure you have the best quality photos possible.

Saturday 18th March, 11am - 3pm

Finally don’t get too caught up in it all, relax, remember what the day is really about and most importantly have fun!

Business Profile

Perched alongside one of Britain’s most ancient roads, Templar Antiquities seems perfectly placed for its purpose...but what is that exactly? Well, we have come to find out and after passing through one of Cambridgeshire’s tallest, Gothicarched entrances, it is immediately apparent that this is no ordinary antique shop! No, it’s more alike to a page out of some fantastical novel or period drama, a film set, a museum and an art gallery...or all of the above. “Well, this is what we do!” exclaimed the long haired entrepreneur as he spread his arms wide and waved his hands all round. “A gathering of art, arms and artefacts, home furniture and furnishings carved straight out of history, made by the artisans of time whose craft and articulation shine through in every item! That’s not all; we even design and build bespoke furniture out of reclaimed and ageold timbers ourselves...have a look at the Templar Built section of our website,” states Benjy Reid. “And,” he continues energetically, “check these out! Hands down the most detailed, pre-aged, stone statuary I have yet to come across in the UK. We are now a major stockist in the region.”

Wow! Everywhere we look we espy something new, or old rather; something different and totally unique. We find ourselves walking in with one notion and leaving, hands full, with another. We didn’t even feel the need to haggle! “Yes,” nods our most informative, unlikely host, “We are a collector of many things, but dust isn’t one of them.” Among the treasures lies the perfect, unique wedding present for a very lucky couple.

From Tallulah’s Kitchen pancake cake

Hello my fellow foodies... and welcome to February. This month I would like to share with you a new recipe in my collection combining two of my most favourite desserts...pancakes and chocolate. Whilst this recipe is a little on the time consuming side, it can be completed in stages so you don’t have to find a huge chunk of time in your busy day to make the cake. So let’s begin... For the Ganache 375g double cream 115g caster sugar 500g dark chocolate (70% cocoa solids) For the Pancakes 300g plain flour 4tbsp caster sugar 3 eggs (from happy free range hens!) 3 egg yolks (as above!) 750g semi skimmed milk 2 tbsp oil & a little extra for the pan For the Glaze 75g dark chocolate (70% cocoa solids) 115g double cream 3 tbsp golden syrup 25g butter Let’s start by making the ganache. Pour the cream and sugar into

saucepan, and slowly heat until the sugar is dissolved. Take care not to boil the cream as this will cause the ganache to split. Now add the chocolate and stir on a very low heat until all the chocolate has melted and you have a lump free molten liquid. Pour into a heat proof bowl, cover and pop into the fridge to cool and set for at least 2 hours. Now we can make the pancake batter. Into your large mixing bowl put the flour and sugar. Make a well in the centre and pour in the eggs and the egg yolks, then beat in the milk and whisk until you have a smooth, lump free mixture. Add the oil, whisk, then cover and leave this to rest in the fridge too - for half an hour. Now let’s make the pancakes. I used a small non stick crepe pan about 15cms in diameter. Heat up the pan and wipe a thin layer of oil over the base of the pan. The heat of the pan is correct when a drop of the batter “sizzles” on contact with it. When you are ready, swirl approximately 1/2 a ladle of batter around the pan as you pour taking care to get right to the edges whilst aiming for uniform sides. If you are quick you can scrape down the excess to form a nice tidy edge before it cooks fully. As the batter drys out and forms “blisters” it will no longer be stuck to the base of the pan and it is now ready to

be flipped. So, toss, flip or turn over your pancake and cook for a approximately 20 seconds on this side before turning out onto grease proof paper. Repeat until all the batter is gone and you are standing next to a pile of pancakes! Cover then pop them in the fridge to chill. Ideally you are looking for 30 pancakes to layer up, however the very first pancake made is usually “not quiet right” and gobbled up by the chef in the interests of “quality control”!

layers with nice straight edged with even layers of ganache in between. The top layer should be a face up naked pancake. Pop the “cake” into the fridge to chill, while you clear down and make the chocolate glaze.

Now for the construction! Remove the ganache from the fridge and very gently warm over a pan of hot water until you are able to move the mixture enough to pour it in a mixer. Beat until smooth, creamy in texture, and lighter in colour. You need the mixture to be spreadable but not too loose as this will compromise the structure of the cake. I also find that leaving the ganache in the mixing bowl helped as the mixture seems to firm up whilst you are busy making the layers but a quick minute in the mixer loosens it all up and makes it easy to work with! So, spread a spoon full of the ganache on to the first pancake taking care to go all the way to the edges and the layer is flat and even. Place onto your serving plate, top with another ganache layered pancake and repeat until you have the height you need or have used up all the pancakes. You are aiming for tidy

Simply pop all the ingredients into a heat proof bowl and place this above a pan of simmering water (take care not to let the bottom of the bowl touch the water) and let all the ingredients melt together, stir until lump free. Leave to cool off slightly before using. To finish the cake, carefully pour 2/3 of the glaze onto the top and “encourage” it to drip down the sides. You are looking to show the edges and layers so we won’t be covering it completely. Then pour the remaining glaze over the top for a smooth finish. Leave for the glaze to set 20 minutes or so, then slice and serve to your delighted guests! This is not a light dessert and the dark chocolate is very rich so small portions to start may be wise! Anyway, until next time my fellow

Arts Festival 2018 Creative Royston is bidding to bag a massive cash boost from the Tesco Bags of Help initiative for Royston Arts Festival 2018.

Kirsten Grimmer, Chairperson, Creative Royston, said:

Three groups in every Tesco region have been shortlisted to receive the cash award and shoppers are being invited to head along to Tesco stores to vote for who they think should take away the top grant of £4,000.

“The Tesco Bags of Help funding will help boost the festival and enable us to bring new talent and experiences to the people of Royston. We are always excited to promote arts for all and thrive on delivering something new each year, which is just not possible without the help of local businesses, big and small.”

Royston Arts Festival is one of the groups on the shortlist. Creative Royston manages and delivers a range of arts activities throughout the year, as well as an annual arts festival in September. Royston Arts Festival 2018 is a community event and will carry the theme “Voyages of Discovery”. This funding will enable them to deliver an increased programme of arts activities and events for the local community to experience.

All that is reliably known of the saint commemorated on 14th February is his name and that he was martyred and buried at a cemetery on the Via Flaminia close to the Ponte Milvio to the north of Rome on that day. It is could be that the little we know actually relates to two saints of the same name. The name “Valentine” is derived from valens (worthy, strong, powerful). According to the official biography of the Diocese of Terni (Saint Valentine is officially Saint Valentine of Terni), Bishop Valentine was born and lived in Interamna (now Terni) and while on a temporary stay in Rome he was imprisoned, tortured, and martyred there on 14th February 269. His body was hastily buried at a nearby cemetery and a few nights later his disciples retrieved his body and returned him home. However, In the Nuremberg Chronicle (1493), alongside a woodcut portrait of Valentine, the text states that he was a Roman priest martyred during the reign of Claudius Gothicus. He was arrested and imprisoned upon

being caught marrying Christian couples who were at the time being persecuted by Claudius in Rome. Helping Christians at this time was considered a crime. Valentinus tried to convert the Emperor to Christianity and was condemned to death for his efforts. He was beaten with clubs and stones; when that failed to kill him, he was beheaded! The traditions associated with Valentine’s Day were documented in the 14th century by Geoffrey Chaucer in his poem Parlement of Foules and some hold that they did not exist before then. The traditions, whether originated by Chaucer or otherwise, may have arisen as, during the Middle Ages, it was believed that birds paired in midFebruary. This was then associated with the romance of Valentine. Although all these legends may differ in ways, Valentine’s day is widely recognized as a day for romance and devotion..

Personal Training Studio Meldreth

FREE TRIAL SESSION

This month marks an exciting landmark for personal training experts Gymbo’s – it’s their 10 year anniversary! Having witnessed a growing demand from customers wanting personal training in a more private setting away from the intimidating environment of a larger gym; owner James Rivers left his role as a freelance personal trainer at a Cambridge gym chain and set up his first personal training studio in Harston in 2008. The state of the art facility and friendly approach proved so popular that in 2013 Gymbo’s moved to bigger premises in Meldreth; followed by the opening of a second facility in Sawston in 2017.

Business lessons from Disney How and why are Disney’s theme parks so successful? According to former Exec Vice President, Lee Cockerell, ‘Disney is just like every business: It has to make a profit, it has to deal with serious business issues.’ Cockerell also says that attention to detail is practically a religion at Disney. He points out that the company regards its interactions with guests as like staging an epic performance. And one thing out of place could end up spoiling the whole thing for a visitor. So staff are told that they don’t have to be happy to work at Disney, but they do have to act happy for eight hours! As well as relentlessly cheerful staff, the corporation wanted an immaculate, litter-free environment. They did not want to see a single piece of paper on the ground to spoil the intricately planned entertainment experience. But how do you stop people dropping litter and make sure they put it in a bin?

found out that people drop litter more often when there is already litter about – so if it starts clean, it should stay clean.

There’s more to Disney’s success than this, but they are convinced that it is these little things that most customers may not consciously notice, that keeps everyone coming back again and again. And that’s no fairy story!

They also found out that generally adults will walk seven paces to a litter bin – much more than that, and the temptation to drop, rather than bin becomes harder to resist. So at Euro Disney, you will see no litter on the ground – and you should never be more than seven paces from a bin.

As there was no obvious answer, the corporation organised its own extensive research – with the same attention to detail that we have come to expect! It
