FEBRUARY 14 • ISSUE 102 The Listing would like to say a big thank you to 16-year old Chloe Balcombe from Chloe’s Photography, who took photos at our recent 100th issue celebrations at Ad Hoc. Chloe has been interested in photography for the last 4 years and started off just taking general photographs for fun as a hobby. She then entered the Royston Photography competition and won CHLOE BALCOMBE in her age group, which inspired her to FROM CHLOE’S take her hobby that step further. She has PHOTOGRAPHY since taken many photographs of friends, family, a wedding, a Christening, an 18th birthday party, 25th wedding anniversary party, children’s parties, babies, photo booths, business and charity events. Chloe volunteered for 6 months in the local photographers, Robert H Clark, on the High Street in Royston for her DofE and also for her work experience. There, she learnt how to develop film for disposable cameras, use the equipment to print digital photos and also help assist the photographer for photo shoots in the studio. We would highly recommend Chloe - mature, professional and confident, she was a pleasure to work with and we were very pleased with the photos. WELCOME To the February issue of The Listing Valentine’s Day brings a little bit of cheer to us all in February. It’s the most romantic time of the year, when couples spend time together and romantic proposals are made. Look out for local restaurants who are offering a Valentine’s menu, and companies offering tips and treats for the perfect romantic night in. We have used the month of love and romance to publish our annual Wedding Special, which brings your details of local businesses who are able to help you create your perfect day, from make up, the cake, transport, the venue and photography to planning and much much more. Not a fan of Valentine’s? There’s always chocolate to enjoy! Why not make the divine chocolate and prune souffle cake featured on page 10. Ok, I agree it is a bit over the top for one, but you can always invite friends over to share... We’ve been hearing excellent reports about Royston’s Community Cinema, the Royston Picture Palace. Many of January’s performances have sold out at time of writing, so the trick seems to be to book quickly to be sure of a seat on popular films. The February schedule is on page 4.

And finally, in the spirit of Make Do and Mend, the inaugral Royston Repair Cafe opens its doors on Sunday 9th February at Meridian School. The idea is you bring along a broken item, to be assessed and, if repair is possible, you will be shown how to mend it. An ideal way to bring your items back to life!

Figures show, that in the UK, we have more thatched properties than any other European country, approximately 60,000. Thatch is a natural insulator and properties are usually warm in the winter months and cooler in the summer. Thatch is not as flammable as many people believe, and the vast majority of thatched property fires are in fact linked to wood burning stoves and faulty chimneys with poorly unsealed or unmaintained flues. Insurance premiums are higher than average in part because the cost of repair is higher for a thatched property. It is therefore important to manage these properties with careful consideration, and the inclusion of appropriate smoke detection systems are installed within the roof space. There are approximately 1000 Thatchers at work within the UK, working predominately in the south of the country. Thatchers tend to add a personal identification mark within the ridge line of the thatch. This is usually a decorative feature, which can take the shape of a bird as an example. Safety Features Most thatched roof insurers will require that the property must have a full electrical wiring survey, which is usually carried out every 5 to 10 years, and must be completed by a NICEIC approved electrician. Be aware of the risks The local fire brigade may also be able to visit the property, and offer advice on additional fire precautions, which may include items like smoke detectors, fire blankets and fire extinguishers. For larger thatched homes or for thatched properties that are in isolated areas, location of the mains water supply is recorded and checked to ensure the fire brigade has a sufficient supply of water to deal with a major fire. Chimney Linings – these come in different materials from clay pots, flexible lining and rigid steel and should be fitted by a qualified HEATAS engineer. Chimney Sweeping is a fundamental part of the maintenance and should be completed on an annual basis, especially when the fire is used on a regular basis. Chimney sweeps work within their local communities, and where more than one property needs the service undertaking, smaller communities may be able to negotiate a discount. Another benefit of having all neighbouring chimneys swept at the same time is that it gives peace of mind. It may also be worth knowing, that since the 1700s it is thought to be good luck if a chimney sweep attends your wedding. LEARN HOW TO MEND YOUR BROKEN ITEMS If you have items that need mending - bikes, clothes, jewellery, toys, tools, electrical and IT equipment including printers, small pieces of furniture - what do you do with them? Take them to the recycling centre? Of course not - you bring them along to Royston’s first Repair Café - a free event where you can learn how to mend your broken items.

Origins of the Royston Repair Cafe...

2014 marks the Royston Freecycle Group’s 10th anniversary year. Since 2004 we’ve kept over 30,000 items in use and out of landfill and we’re proud to have over 5,000 members in and around Royston. Royston Freecycle Group is run by 5 volunteer moderators and trouble-shooters putting in approx 2 hours each a week. The Royston Repair Cafe is an extension of that interest in keeping items It’s simple - bring an item (only one per person in use, saving people money in hard times, please) that you think still has life in it. The Repair Cafe is a free community event –and people bring along items that need mending – bikes, toys, clothes, jewellery, small items of furniture, tools, electrical items including IT hardware and printers. The broken items are assessed by a volunteer repairer - someone who knows what they’re talking about. If the item can be repaired there and then... the person bringing the item is shown how to mend it! That’s important – it’s about people gaining skills and confidence as well as bringing an item back into use. Obviously this wouldn’t apply to the most technical repairs or where health and safety is a major issue. Working with repair businesses... We should stress that the repair cafe is a clinic not a hospital and we are not about putting local commercial repairers out of business. This means that only relatively minor repairs can be undertaken at the Repair Cafe event. If assessment establishes that an item is repairable but is a big job, we’ll be recommending and referring to local repairer businesses. With this in mind, we’ve compiled a ‘Royston Repairers’ list which is on the Royston Repair Cafe Facebook page. Chris Lee

DIVINE CHOCOLATE AND PRUNE SOUFFLE CAKE

This recipe gives you a rich moist dessert, serve with whipped cream, quick and easy. (Tried and Tested by Lisa Pilgrim for many dinner parties - and will be perfect for a romantic night in too) 8 - 10 Prunes 100g Unsalted Butter 2 Tablespoons of Brandy 4 eggs, separated 225g Dark plain Chocolate 100g Caster Sugar • Pre- heat oven to 180 C / 350 F / Gas 4. You will need a 15-20cm loose bottomed cake tin lined and dusted with flour. • Soak the prunes in warmed brandy until plump and soft. Melt the butter and chocolate over a pan of bubbling water, then allow to cool • Whisk egg yolks and sugar together until pale and thickened • Fold in egg yolk mixture, making sure both are at room temperature • Whisk the egg whites until they form soft peaks and fold into the mixture • Pour into your cake tin and bake for 30 minutes until risen Once removed from the oven the cake will sink a little but be deliciously gooey inside. Leave to cool for a few minutes then serve whilst still warm. Accompany with whipped cream and dust with icing sugar.

BIG BAND CONCERT

A BIG Band concert to raise money for victims of the Philippines disaster is being organised by the Rotary Club of Royston and the Royston Methodist Church. The Blue Skies Big Band will be playing a range of music from the Glen Miller era to Benny Goodman and Count Basie. Rotary president Ray Munden said: “The Philippines disaster may not now be in the news but there is still much to be done. “People in the Philippines are still struggling for food, clean water and shelter and it will take a long time to sort out all the problems caused by the disaster. “The Rotary Club of Royston has already donated more than £2,000 to the Philippines Disaster Fund, but it is aware that more needs to be done over the coming months and years,” said Mr Munden.

Try your local butcher or deli or visit a farmers’ market to find the best quality Continentalstyle sausages. If you can’t find Toulouse sausages, Lincolnshire, Cumberland or pork and leek varieties will work just as well.

Place the lentils in a pan and cover with water. Bring to the boil then reduce the heat and simmer for 10 minutes. Meanwhile, heat the olive oil in a deep frying pan and fry the shallots for 5 minutes, stirring occasionally, until just starting to soften. Sprinkle over the brown sugar and cook for a further 810 minutes until the shallots are golden and caramelised. Drain the lentils and add to the frying pan with the stock, vinegar and 2 tsp of the mustard. Simmer for about 15 minutes until the lentils are just tender. While the lentils are cooking, wrap each sausage with a pancetta rasher. Cook under a medium-hot grill for 8-10 minutes, turning frequently until the sausages are almost cooked through. Mix together the rest of the mustard with the honey and brush over the sausages. Cook for a further 3-4 minutes until the pancetta is crisp and browned. Stir half the parsley into the lentils and season to taste with salt and freshly ground black pepper. Serve the lentils and sausages on warmed plates garnished with the remaining parsley.

Few of us could have envisaged the dedication and sacrifices made by the Games Makers – family, work and financial matters were all involved. Alison felt it was all worthwhile greeting visitors, athletes and famous personalities. She was particularly proud of having her photograph taken with Philip Schofield. The legacy of the Olympics continues with the Games Maker choir of which she is a member. The evening closed with a demonstration of the song ‘I wish for you the world’, sung by the Choir. The topic for our February speaker, Carolyn Moelwyn Hughes, is ‘Life as a Ballet dancer’. At their recent charter anniversary dinner to celebrate 19 years of community service, Royston Lions President Keith Collard presented a cheque for £1,800 to David Wherrell, Manager of Royston & District Community Transport. With the help of volunteer drivers, RDCT offers door-to-door transport for people living in Royston and the surrounding villages who are unable to use conventional public transport and do not have the use of a car. Royston Lions Club is part of the world’s largest service club organisation. In addition to hands-on community service activities, the club holds social events and raises money to support mainly local causes. Often, you can cope with the start of winter. It may be dark, cold and wet, but the early months are full of celebrations to lift your spirits until the New Year and its ‘fresh start’. A few weeks later, your resolutions are in tatters. The days are still dark, meaning you drag yourself out of bed and then feel like the day is over by dinner time. You may be just fed up, but you could be suffering from ‘Winter Blues’. So here’s how to survive the winter.

Let There Be Light! Lack of sunlight can increase melatonin levels (making you sleepy and lethargic) and reduce serotonin levels (affecting mood and appetite). It’s also thought to influence your ‘body clock’ (your circadian rhythm that controls body functions). So spend time outside. When indoors, try to work or relax near a window. A sunrise clock may help you wake up; they aim to bring your body out of sleep gently, by gradually increasing the light they emit. Stay Warm If your body is fighting to keep you warm, you’ll feel sluggish and struggle to concentrate. Keep yourself as warm as possible; wear layers and heat your home adequately. What about spending time somewhere else warm and cosy - a pub or library? Eat and Drink Healthily Warm, stodgy food and extra tea and coffee seem tempting when we’re chilly and low, but resist – think hot but healthy. Eat plenty of fruits and vegetables of different colours and choose low sugar, low fat alternatives to stodgy puddings. Healthy soups are a great winter warmer, as are fruit teas, orange juice with cinnamon, honey and lemon, or malted drinks made with skimmed milk or hot water (but beware versions loaded with fat and sugar). Socialise There’s scientific proof that the company of others, particularly if laughing and hugging is involved, is great for our wellbeing. So invite friends round, go visiting and attend sociable gatherings wherever possible. Exercise Exercise will warm you up, increase your immunity and alertness and make you feel good too. So bundle yourself up for a walk outdoors on brighter days, and find an indoor activity you enjoy – perhaps an exercise or dance DVD or video game. Whatever you do, your mind and body will feel better for it. When you’re not just blue, but SAD Over 2 million people in the UK suffer from SAD (Seasonal Affective Disorder), a more severe form of Winter Blues. SAD is at its worst from December to February when days are shortest, and causes either depression, or mood swings between depression and hyper-energy. Sometimes stress or trauma such as bereavement or a new baby seems to be a trigger, and it’s most prevalent in 18-30 year olds. If you are a sufferer, you can help yourself by: • Following the Winter Blues advice above • Trying a light box Therapeutic light boxes, available to buy or rent, produce light that’s at least ten times as intense as normal daylight. Rent one first to see if it works for you. • Seeing your GP. They may suggest counselling or CBT (Cognitive Behaviour Therapy) or in some circumstances, antidepressants or a structured course of light therapy. ROYSTON LADIES CIRCLE

Royston Ladies Circle were been out and about over Christmas supporting the Royston Round Table with the Santa Float Runs, raising over £1,000 over the two nights they were out. This year with the support of Royston Round Table they also ran our own run in Litlington for the first time. It was an amazing evening with a super turnout and very generous residents, raising £294. The money raised goes to local causes throughout the year. Some of last year’s money raised was donated to Home Start, VIP charity and we also bought Christmas gifts for children who would be in care over the festive season in South Cambridgeshire. Furthermore they provided gifts and food for families locally who were ‘in need’ and couldn’t afford presents for their children this Christmas. Ladies Circle isn’t just fundraising, though it’s a big part that that the team love! They are also a ladies social group, meeting twice a month on a Thursday for social events such as wine tasting, bread making, a theatre trip, walking, social evening in a pub, craft making and a street dance class to name a few! “Following a successful year, Royston and District Round Table would like to invite applications from the local communities of Royston and the surrounding villages for funds from our community account. Round Table, which consists of local lads raises money within the local area for the local area. They would like to hear from local clubs, community groups and people who could do with a financial boost. This month Royston AM enjoyed an entertaining and informative talk from Keith Trueman who was a Games Maker at the Olympics in 2012. He talked about the procedures he had to go through over two years until he was finally appointed as an official driver. He then shared some of the experiences he most enjoyed and the celebrities he met. Our next meeting will be on Wednesday 12th February at the Market Hill Rooms, Royston. We begin with refreshments at 10.00am and then our speaker this month is Steve Jones whose talk is titled ‘ Eccentric Gardening’. Visitors are welcome. Staff from Johnson Matthey in Royston ensured a very happy Christmas to Home-Start families in Royston and South Cambridgeshire when they donated food hampers and presents for children. 29 hampers and 60 individually wrapped presents were donated. Present tags such as ‘boy 5, girl 3 or baby’ were hung on the Christmas tree in reception at the Johnson Matthey offices in Royston. Members of staff then bought presents, wrapped them and attached the tags. These were added to the food from donated hampers and delivered to the families in time for Christmas by Home-Start volunteers and staff. The families made a large thank you card and sent individual cards and texts to express their gratitude for the gifts. One family wrote “Thank you Johnson Matthew for my son’s present he takes his police station everywhere with him, including to bed and the hamper was lovely. Thank you again�. Home-Start supports local families with young children who are experiencing difficulties in their family life. These can include mental or physical health problems for parents or children, financial difficulties, isolation, domestic abuse, stress or crisis. Our carefully selected and trained volunteers visit families every week in the family home to offer crucial support for families in need.

STRATEGY YES, PLANNING NO?

A lot of business owners I meet acknowledge that strategy is important. But almost all of them find thinking about it is a bit scary, because it forces them to confront an uncertain future. And it’s even scarier to actually decide upon a strategy, because that involves making decisions and JULIAN BERRY choosing one course of action over another, gambling that the outcome will be the right one. Some managers will deal with uncomfortable ‘strategy’ by turning it into more-comfortable ‘planning’; spending hours exploring all the alternatives and preparing detailed plans and forecasts. However, mistaking planning for strategy is a very common and undesirable mistake – true strategy is not about eliminating risk, but increasing the odds of success. An article I read recently in Harvard Business Review suggested that strategy is not the perfect result of hours of research and modelling – instead it’s the result of a simple, rough and ready process of addressing ‘where you will play, and how you will win’, as well as thinking through what it would take to achieve what you want, and then assessing whether it is realistic to try. Most managers over-estimate their ability to predict the future, so they tend to plan in an over-precise way, creating what management author, Henry Mintzberg called deliberate strategy. He believes that what’s more important is emergent strategy, which consists of a company’s responses to a variety of unanticipated events. My advice is not to try and predict the future, make your best guess based on experience and move forward. Know what to look out for in order to spot circumstances changing, and when they do, fine-tune your deliberate strategy accordingly. And the more of this you do, the better at it you will get. And your strategy should focus on one key thing; the most important thing in any business, what no business can survive without, the cashgenerators – customers! www.julianberry.co.uk

Martin Copping gave an interesting talk on “St. Paul’s Cathedral� at our January meeting. It is the most important Cathedral after Canterbury and York. It was first built in 1604 and burnt down several times. Christopher Wren was the architect asked to submit plans. After having them thrown out twice he received a warrant from the King who was known to him and so the building began. It took 35 years before it was finished, mainly financed by the coal tax. Wren was quite old by this time and the workmen would hoist him up in a basket so that he could see the progress that was being made. His son wrote “ If you seek his Epitaph look all around you “. It holds 2500 people and survived the blitz. The Competition was won by Jean Casey and the Raffle by Rita Turner. Our next meeting is on 13th. ROYSIA’S MUSICAL FANFARE

The largest audience in the school’s history were present to witness a Christmas Concert first at Roysia Middle School when a whole year group took to the stage to create their first ever massed wind ensemble. The performance was the result of the ‘First Access Scheme’ in which all 50 children from Year 6 have been learning the clarinet and trumpet. Lessons on the instruments have been taking place each week since the start of term in September and the one year project, jointly funded by the School and Hertfordshire Music Service has enabled all children to have a go at learning an instrument for free. The response to the scheme has been incredible with the majority of children now wishing to continue their learning into 2014. Headteacher, Zoe Linington said, “We have been amazed at the response to this project. Our Year 6 children have loved it! Music is a huge part of our school and the wider Royston community and it is wonderful to be giving this opportunity to our children”. Music Subject Leader, Amanda Mitchell said, “The value of children learning an instrument is one which cannot be underestimated. It develops children’s confidence, builds valuable life skills, improves learning and fosters team working. It is my firm belief that all children should have the opportunity to learn an instrument”. The School has now set up a Musicians Fund to raise money to enable these and future pupils to continue learning beyond the one year First Access programme. “There was a Viking day at Tannery Drift First School before Christmas. All of the key stage 2 students dressed up as Vikings and did Viking things. They made food, bracelets, board games and clay tablets with their names written on them in Old Norse. In the afternoon they went into the big wooden gazebo outside and pretended it was a Viking longhouse. They ate the Viking food they had made and told the Viking stories they had written. In the garden... February

Winter is a fantastic time to appreciate bulbs and birches in the garden. Here are just a few of my favourites. Gallanthus nivalis, the common snowdrop, is very pretty planted on mass in a garden. They multiple readily over the years and can be easily divided. To begin establishing snowdrops the best way is to buy them in the green in the spring. They like well drained, fertile soil, in sun or shade. There are many named cultivars, but the common snowdrop is a great starting point. Eranthis hyemalis,, winter aconite, looks great as a carpet of yellow at this time of year. Plant as tubers in the autumn under deciduous shrubs and trees in your garden. I love to use them in my garden designs under deciduous trees to create a mass of yellow flowers. They like well drained, fertile soil, in sun or shade. Cyclamen coum produces lovely white and pink flowers at this time of year. It is a tuber that is best grown in well drained, humus rich soil in partial shade. It makes a great carpet of flowers underneath deciduous trees, when planted on mass. Betula utilis ‘Jacquemontii’ is one of my favourite birches. A TOUCH OF THE ORIENT

As you look out the windows onto your garden this month, is it time to embark on a new era in your garden? It can be really refreshing to have a change of style, not necessarily in your whole garden but perhaps you could create a different and contrasting feel in a small part of your plot to the rest of your wellloved garden? The Japanese style is largely very simplistic and aims to create a relaxed, calm environment. In any garden you’re going to need walls, fences, pathways and so forth, and if you use natural materials such as wood or of course bamboo, they blend in better with the surroundings of an existing or a newly planned garden and instantly help to create that oriental feel. Provided the surface is made relatively slip-proof, a small bridge can be created quite easily using a simple plank of wood, allowing you to cross over an existing or new pond or other water feature. Stain the wood an interesting colour: perhaps even bright Japanese-style red if you’re feeling daring. Thinking of water, why not create your own ‘deer chase’? All you need to set up is a source of water powered by a pump, then allow the water to pour out from a bamboo spout and then into another hollowed out piece of bamboo. As the weight of the water increases in the hollowed out bamboo it

causes it to tip and to swivel around slightly. Once filled up it then tilts downwards and pours its water into the basin or bowl beneath. When empty it clunks back into position. If you want something even simpler, then buy some wide diameter bamboo canes, hollow one out, cut the end at an angle and simply create a trickling water spout. Provided you fix everything up with a pump, the water can then be recycled around from the bowl or basin and back into the trickling pipe. Gravelled areas raked into simple patterns resembling waves or entire circles also help to create a Japanese feel. These can take up the majority of the garden space, be a relatively small area or perhaps link your existing garden into the Japanese ‘room’ that you have created. Concentric rings of raked gravel or sand look particularly dramatic if you place a sizeable, interestingly shaped boulder, stone or specimen plant in the centre of the middle circle. When it comes to plants there are several which instantly help to evoke that Japanese effect. The so-called Japanese maples with their intricately divided leaves epitomise Japanese gardens and many will turn

brilliant shades in the autumn. Japanese azaleas too can be used to great effect and can bring in some of those really bright colours which look so good for the relatively simple garden surrounding them. Pine trees may be too large for most gardens, but you can gradually bend the stems of a smaller one to create a bonsai effect. Of course, if you’re a collector of bonsai then most of these trees actually enjoy spending the summer outside in a garden and provided they are kept adequately maintained, will look great in your Japanese garden. A trip down to your local garden centre is bound to supply you with a few orientalthemed containers. Plant one or two of these up with a small acer, camellia, miniature azalea or miniature bamboo and you will really help to complete that oriental touch.
