WELCOME To the February issue of The Listing
The Listing Team: Stay in touch
Valentine’s day brings a little bit of cheer to us all in february. it’s the most romantic time of the year, when couples spend time together and romantic proposals are made. Look out for local restaurants who are offering a Valentine’s menu, and companies offering tips and treats for the perfect romantic night in. we have used the month of love and romance to publish our annual wedding special, which brings your details of local businesses who are able to help you create your perfect day, from make up, the cake, transport, the venue and photography to planning and much much more. not a fan of Valentine’s? There’s always chocolate to enjoy! why not make the divine chocolate and prune souffle cake featured on page 10. Ok, i agree it is a bit over the top for one, but you can always invite friends over to share... we’ve been hearing excellent reports about royston’s Community Cinema, the royston Picture Palace. Many of January’s performances have sold out at time of writing, so the trick seems to be to book quickly to be sure of a seat on popular films. The february schedule is on page 4. and finally, in the spirit of Make do and Mend, the inaugral royston repair Cafe opens its doors on sunday 9th february at Meridian school. The idea is you bring along a broken item, to be assessed and, if repair The is possible, you will be shown how to mend it. an ideal way Listing is online at www. to bring your items back to life! enjoy your february,
Cath

The Listing would like to say a big thank you to 16-year old Chloe Balcombe from Chloe’s Photography, who took photos at our recent 100th issue celebrations at Ad Hoc. Chloe has been interested in photography for the last 4 years and started off just taking general photographs for fun as a hobby. She then entered the Royston Photography competition and won in her age group, which inspired her to take her hobby that step further. She has since taken many photographs of friends, family, a wedding, a Christening, an 18th birthday party, 25th wedding anniversary party, children’s parties, babies, photo booths, business and charity events. CHLOE BALCOMBE Chloe volunteered for 6 months in the local photographers, FROM CHLOE’S Robert H Clark, on the High Street in Royston for her DofE and PHOTOGRAPHY also for her work experience. There, she learnt how to develop film for disposable cameras, use the equipment to print digital photos and also help assist the photographer for photo shoots in the studio. We would highly recommend Chloe - mature, professional and confident, she was a pleasure to work with and we were very pleased with the photos. Chloe is available for further events throughout the year - if you are interested, please contact The Listing directly and we will put you in touch. Contact Chloe via The Listing: info@townhousepublishing.co.uk, 01763 248447. “You ar e and will always be my dr eam come true”
what could be more romantic than cooking a delectable meal for the love of your life? Lisa Pilgrim from Cambridge wine in royston shares her tips for the perfect romantic night in.
Take time to set the table beautifully and to light a few Cambridge Wine royston candles whilst conjuring up some fabulous culinary treats. Award Winning Wine Merchant Of course, you’ll need some wonderful wines to accompany your meal! Valentine’s Day is the perfect opportunity to treat yourselves to a bottle of pink champagne; a great aperitif and just right to go along with our proposed first course. Oysters are one of the most famous aphrodisiacs, being high in zinc and holding a reputation for enhancing love and fertility. Serve with freshly squeezed lemon or a dash of shallot vinaigrette along with red Tabasco or finely chopped chilli. Chilli peppers are known to stimulate endorphins, the brain’s feel-good chemicals. Offering great value and superb quality we propose the Joseph Perrier Brut Rosé at £38.99; a chance to sample its crisp and fruity style. If oysters aren’t your thing then why not try a seafood and avocado salad? Avocado has the sensuous shape of a pear and is known for its aphrodisiacal qualities as far back as the Aztecs. Its high levels of vitamin E can promote youthful vigour! This would pair nicely with a fine white wine such as Sancerre 2012 Domaine Sautereau at £15.99, a wonderfully reserved style of Sauvignon Blanc. For the main course you might try a beautiful Boeuf en Croute, a luxurious melt-in-the-mouth option worthy of every effort in the kitchen. Take a look at our local butcher Knibbs’ special Beef Wellingtons for Valentine’s Day. Accompany this with a classic Bordeaux red such as the Bel Air de Siran 2005 Haut Medoc, an amazing buy at £16.99. Alternatively, go for a sumptuous and seductive Pinot Noir, either from its home in Burgundy (for a real treat try Chambolle-Musigny 2009, Domaine Arlaud, Morey-St-Denis, £39.99) or from New Zealand. The Mount Hector Pinot Noir 2010 offers flavours of summer fruits and a touch of spice for just £13.99. For dessert it has to be chocolate which offers such sensuality from its aroma to its taste. Dark chocolate has also been shown to cause a spike in dopamine levels which induces feelings of pleasure. Have a go at our chocolate mousse cake with prunes soaked in Cognac (see recipe) and pair it with a sweet fortified wine like Blandy’s ‘Duke of Clarence’ Rich Madeira, a perfect pairing

WHAT IS LOVE, ANYWAY?
14
“Love”. It is one of the most frequently spoken words in the English language but often the word is used to express a general enjoyment as in “I love going to the cinema”. But, if asked to define what the word means, most people would think of romantic love – the one that attracts you to another human being. But what is that love and why do we feel it? In reality what we think of as love has three distinct phases: Lust, or erotic passion Attraction, or romantic passion Attachment, or commitment Phase 1: Lust This really needs no explanation. It’s the one that starts as we hit puberty and it evolved for the purpose of mating and reproduction. It’s a rush of hormones that occurs less frequently as we age, along with the ability to reproduce. Lust drives us to find a partner and in doing so may develop into phase 2 and 3. It is exciting and addictive. The serial philander may genuinely love their partner, but is so hooked on the high that comes from phase 1 they are unable to give it up. Phase 2: Attraction or romantic passion When ‘love’ moves from lust into passion, we lose our ability to think rationally and can develop an obsession with the object of our desire. The phrase ‘love is blind’ is true in this phase, and we may be oblivious to our partner’s faults, even if they are obvious to all around. Researchers at University College London found that people in love have lower levels of serotonin. These lower levels are the same as those found in people with obsessivecompulsive disorders, possibly explaining why those in love can think of little else than their partner.Couples in this stage
weddings
spend many hours together – they really can’t get enough of each other. If this attraction remains strong and is mutual, then they usually enter the third stage: attachment. Phase 3: Attachment This is the commitment phase, the one that creates a relationship which will last. Typically the passion will be fading and although not as exciting as lust and attraction, attachment is a deeper more contented feeling. Studies have shown that the more someone idealises their partner, and turns a blind eye to their faults and less endearing personality traits, the longer the relationship will last. If however the behaviour is unforgiveable, or one person simply cannot learn to live with the other’s ‘little ways’. the foundations of the relationship are undermined. Then every difference is highlighted and the couple may reach the conclusion that they are incompatible where they were perfectly happy in the attraction phase. Of course no relationship will endure unless both parties put in the effort and Valentine’s Day is your opportunity to confirm your lust, attraction or attachment to your other half.

Professor Arthur Aron, of the State University of New York at Stonybrook, has studied what happens when people fall in love and has found that simply staring into each other’s eyes has tremendous impact. Professor Aron conducted an experiment where he put strangers of the opposite sex together for 90 minutes and had them discuss intimate details about themselves. He then had them stare into each other’s eyes for four minutes without talking. The results? Many of the subjects felt a deep attraction for their partner after the experiment, and two even ended up getting married six months later.

TIPS FOR CHOOSING YOUR VENUE
Are you considering your choice of wedding venue, this Spring? then congratulations! Having spent 16 enjoyable years hosting weddings, the team at The Secret Garden wedding marquee (Burwash Manor) would like to offer some thoughts and tips: Costs: what is included in your hire fee? are there additional charges? is the venue insured against cancellation? Flexibility: how much scope is there for you to create your own special day? can you introduce your own caterer, florist, music? Hire Period: how long do you have to prepare, decorate and enjoy the venue? Communication: do you have a good rapport with and trust the wedding team? Ceremony: can this be conducted at the venue? is there a happy alternative? Accommodation: is there good accommodation, nearby, for your guests? (and you!) Garden: do you have access to a garden/courtyard for children to let off steam, for photography and to just relax in the sunshine? Parking: is it nearby and sufficient? is it secure overnight? The Secret Garden’s pretty marquee and charming moated walled garden provide a magical setting for the perfect country wedding. With exclusive access for the whole weekend, couples have the freedom to create their own special day. Our friendly and experienced team are, of course, on hand throughout. Situated on a lovely farm with St. Peter’s church but a step away, the Secret Garden is truly a secret worth discovering. www.burwashweddings.com

SAUSAGES AND PUY LENTILS Serves 4
Ready in 40 minutes
if you fancy a change from the usual sausage and mash why not go Continental? Tasty Toulouse sausages wrapped in pancetta and served on a bed of flavoursome puy lentils make the perfect mid-week meal.
Ingredients:
• 225g puy lentils • 225g shallots, peeled and halved • 1 tbsp olive oil • 1 tsp brown sugar • 150ml vegetable stock • 2 tbsp red wine vinegar • 1 tbsp Dijon mustard • 8 Toulouse or chunky pork sausages • 8 rashers pancetta or smoked streaky bacon, stretched with the back of a knife • 2 tsp clear honey • 3 tbsp chopped fresh flat leaf parsley
Place the lentils in a pan and cover with water. Bring to the boil then reduce the heat and simmer for 10 minutes. Meanwhile, heat the olive oil in a deep frying pan and fry the shallots for 5 minutes, stirring occasionally, until just starting to soften. Sprinkle over the brown sugar and cook for a further 8-10 minutes until the shallots are golden and caramelised. Drain the lentils and add to the frying pan with the stock, vinegar and 2 tsp of the mustard. Simmer for about 15 minutes until the lentils are just tender. Stir occasionally and add a little more stock, if necessary. While the lentils are cooking, wrap each sausage with a pancetta rasher. Cook under a medium-hot grill for 8-10 minutes, turning frequently until the sausages are almost cooked through. Mix together the rest of the mustard with the honey and brush over the sausages. Cook for a further 3-4 minutes until the pancetta is crisp. Stir half the parsley into the lentils and season to taste with salt and freshly ground black pepper. Serve the lentils and sausages on warmed plates garnished with the remaining parsley.

PROUD OF OUR THATCHED PROPERTIES
Figures show, that in the UK, we have more thatched properties than any other European country, approximately 60,000. Thatch is a natural insulator and properties are usually warm in the winter months and cooler in the summer. Thatch is not as flammable as many people believe, and the vast majority of thatched property fires are in fact linked to wood burning stoves and faulty chimneys with poorly unsealed or unmaintained flues. Insurance premiums are higher than average in part because the cost of repair is higher for a thatched property. It is therefore important to manage these properties with careful consideration, and the inclusion of appropriate smoke detection systems are installed within the roof space. There are approximately 1000 Thatchers at work within the UK, working predominately in the south of the country. Thatchers tend to add a personal identification mark within the ridge line of the thatch. This is usually a decorative feature, which can take the shape of a bird as an example. Safety Features Most thatched roof insurers will require that the property must have a full electrical wiring survey, which is usually carried out every 5 to 10 years, and must be completed by a NICEIC approved electrician. Be aware of the risks The local fire brigade may also be able to visit the property, and offer advice on additional fire precautions, which may include items like smoke detectors, fire blankets and fire extinguishers. For larger thatched homes or for thatched properties that are in isolated areas, location of the mains water supply is recorded and checked to ensure the fire brigade has a sufficient supply of water to deal with a major fire. Chimney Linings – these come in different materials from clay pots, flexible lining and rigid steel and should be fitted by a qualified HEATAS engineer. Chimney Sweeping is a fundamental part of the maintenance and should be completed on an annual basis, especially when the fire is used on a regular basis. Chimney sweeps work within their local communities, and where more than one property needs the service undertaking, smaller communities may be able to negotiate a discount. Another benefit of having all neighbouring chimneys swept at the same time is that it gives peace of mind. It may also be worth knowing, that since the 1700s it is thought to be good luck if a chimney sweep attends your wedding. The Chimney Sweep would shake the hand of the groom, and give the bride a kiss of good luck! Saffron Insurance, Kneesworth Street, Royston 01799 582244

LEARN HOW TO MEND YOUR BROKEN ITEMS If you have items that need mending - bikes, clothes, jewellery, toys, tools, electrical and IT equipment including printers, small pieces of furniture - what do you do with them? Take them to the recycling centre? Of course not - you bring them along to Royston’s first Repair Café - a free event where you can learn how to mend your broken items. It’s simple - bring an item (only one per person please) that you think still has life in it. The item will be assessed and, if it can be mended there and then, you’ll be shown how to do it. Note: this is a clinic not a hospital - if it needs more attention we’ll refer you to a local repair business - we are not a replacement for the professionals! Royston’s first Repair Café is happening on Sunday 9th February at Meridian School. Join us between 10am and 2pm - the event is free but please book in advance at https://www. eventbrite.co.uk/e/royston-repair-cafe-tickets-9844376796 so we know what item you’ll be bringing.
For local updates and other information about repair and re-use go to www.facebook.com/RoystonRepairCafe
Origins of the royston repair Cafe... 2014 marks the Royston Freecycle Group’s 10th anniversary year. Since 2004 we’ve kept over 30,000 items in use and out of landfill and we’re proud to have over 5,000 members in and around Royston. Royston Freecycle Group is run by 5 volunteer moderators and troubleshooters putting in approx 2 hours each a week. The Royston Repair Cafe is an extension of that interest in keeping items in use, saving people money in hard times, and changing attitudes to consumption and waste.. The Repair Cafe idea has come over from the Netherlands. There are currently eight in the UK – Royston’s will be the 9th and the first in Hertfordshire and the first across the East of England. For most people with a broken item (unless it’s still under guarantee) it remains that way ready to be thrown out (hopefully at the recycling centre) or you promise ‘Don’t worry, I’ll get it mended’ as someone trips over it for a third time. When it comes to electrical equipment people are rightly cautious about taking a look themselves and some are even reluctant to change a fuse. But professional repairers are not always easy to find and, when you do, they need to charge a minimum fee just to take a look. It can be costly just to discover your watch is
beyond repair! The Repair Cafe works like this. The Repair Cafe is a free community event –and people bring along items that need mending – bikes, toys, clothes, jewellery, small items of furniture, tools, electrical items including IT hardware and printers. The broken items are assessed by a volunteer repairer - someone who knows what they’re talking about. If the item can be repaired there and then... the person bringing the item is shown how to mend it! That’s important – it’s about people gaining skills and confidence as well as bringing an item back into use. Obviously this wouldn’t apply to the most technical repairs or where health and safety is a major issue. Working with repair businesses... We should stress that the repair cafe is a clinic not a hospital and we are not about putting local commercial repairers out of business. This means that only relatively minor repairs can be undertaken at the Repair Cafe event. If assessment establishes that an item is repairable but is a big job, we’ll be recommending and referring to local repairer businesses. With this in mind, we’ve compiled a ‘Royston Repairers’ list which is on the Royston Repair Cafe Facebook page. Chris Lee

HE’S BEHIND YOU!
Panto season isnt over yet, with the Morden Players performing Red Riding Hoodie, a pantomime, written and directed by best-selling author Sarah Harrison. As the Morden Players explain, “In this, our new take on the old tale of Red Riding Hood, she doesn’t visit her old Gran as often as she should…” In fact, she’s a bit of a tearaway, the despair of her hard-pressed Dad, and the spirited Granny Gruntlepants, and more than a match for the Big Bad Wolf (a bit of a softie at heart). And then there’s Jedediah Toptrouser the lusty gamekeeper, posh boy Lord Peregrine Downton-Toffsides and Jemima Jugs the bighearted barmaid, to name but a few… Not to mention Mad Morris and the Minors, cutting a caper at every opportunity! The Morden Players are proud to present an original panto with all the traditional music, mirth and mayhem plus a dash of modern fun. The cast of thirty ranges in age from seven to seventy-plus, in roles ranging from the well silly to the completely bonkers.

STRATEGY YES, PLANNING NO?
A lot of business owners I meet acknowledge that strategy is important. But almost all of them find thinking about it is a bit scary, because it forces them to confront an uncertain future. And it’s even scarier to actually decide upon a strategy, because that involves making decisions and choosing one course of action over another, gambling that the outcome will be the right one. JULIAN BERRY Some managers will deal with uncomfortable ‘strategy’ by turning it into more-comfortable ‘planning’; spending hours exploring all the alternatives and preparing detailed plans and forecasts. However, mistaking planning for strategy is a very common and undesirable mistake – true strategy is not about eliminating risk, but increasing the odds of success. An article I read recently in Harvard Business Review suggested that strategy is not the perfect result of hours of research and modelling – instead it’s the result of a simple, rough and ready process of addressing ‘where you will play, and how you will win’, as well as thinking through what it would take to achieve what you want, and then assessing whether it is realistic to try. Most managers over-estimate their ability to predict the future, so they tend to plan in an overprecise way, creating what management author, Henry Mintzberg called deliberate strategy. He believes that what’s more important is emergent strategy, which consists of a company’s responses to a variety of unanticipated events. My advice is not to try and predict the future, make your best guess based on experience and move forward. Know what to look out for in order to spot circumstances changing, and when they do, fine-tune your deliberate strategy accordingly. And the more of this you do, the better at it you will get. And your strategy should focus on one key thing; the most important thing in any business, what no business can survive without, the cash-generators – customers!

JOHNSON MATTHEY STAFF HELP OUT
Staff from Johnson Matthey in Royston ensured a very happy Christmas to Home-Start families in Royston and South Cambridgeshire when they donated food hampers and presents for children. 29 hampers and 60 individually wrapped presents were donated. Present tags such as ‘boy 5, girl 3 or baby’ were hung on the Christmas tree in reception at the Johnson Matthey offices in Royston. Members of staff then bought presents, wrapped them and attached the tags. These were added to the food from donated hampers and delivered to the families in time for Christmas by Home-Start volunteers and staff. The families made a large thank you card and sent individual cards and texts to express their gratitude for the gifts. One family wrote “Thank you Johnson Matthew for my son’s present he takes his police station everywhere with him, including to bed and the hamper was lovely. Thank you again”. Home-Start supports local families with young children who are experiencing difficulties in their family life. These can include mental or physical health problems for parents or children, financial difficulties, isolation, domestic abuse, stress or crisis. Our carefully selected and trained volunteers visit families every week in the family home to offer crucial support for families in need.

LIONS SUPPORT COMMUNITY TRANSPORT
At their recent charter anniversary dinner to celebrate 19 years of community service, Royston Lions President Keith Collard presented a cheque for £1,800 to David Wherrell, Manager of Royston & District Community Transport. With the help of volunteer drivers, RDCT offers door-to-door transport for people living in Royston and the surrounding villages who are unable to use conventional public transport and do not have the use of a car. Royston Lions Club is part of the world’s largest service club organisation. In addition to hands-on community service activities, the club holds social events and raises money to support mainly local causes. For further information, please contact Keith Collard on 07890 393710 or roystonlions@gmail.com

In the garden... February
Winter is a fantastic time to appreciate bulbs and birches in the garden. Here are just a few of my favourites. Gallanthus nivalis, the common snowdrop, is very pretty planted on mass in a garden. They multiple readily over the years and can be easily divided. To begin establishing snowdrops the best way is to buy them in the green in the spring. They like well drained, fertile soil, in sun or shade. There are many named cultivars, but the common snowdrop is a great starting point. Eranthis hyemalis, winter aconite, looks great as a carpet of yellow at this time of year. Plant as tubers in the autumn under deciduous shrubs and trees in your garden. I love to use them in my garden designs under deciduous trees to create a mass of yellow flowers. They like well drained, fertile soil, in sun or shade. Cyclamen coum produces lovely white and pink flowers at this time of year. It is a tuber that is best grown in well drained, humus rich soil in partial shade. It makes a great carpet of flowers underneath deciduous trees, when planted on mass. Betula utilis ‘Jacquemontii’ is one of my favourite birches. It has fantastic white bark that jumps out at you on a cold winter day. It makes a fantastic specimen tree or is excellent in a small grouping for the larger garden. I like to use multi stem varieties in my garden designs, they grow more slowly as there are numerous stems and take up less height. They like well drained, fertile soil, in sun or partial shade. Betula albosinensis ‘Pink Champagne’ is another beautiful birch. It has a pink tinge to its bark colour as the name suggests. As it matures the bark has a lovely peeling characteristic. Good as a specimen tree for the larger garden as its mature height can be around 15metres. Betula utilis ‘Nepalese Orange’ is a good peeling barked birch. As the name suggests it has an orange tint to the bark. The peeling bark is hard to resist when you see it unravelling from the trunk. This would be most suitable as a specimen tree for a larger garden as the mature height is around 15 metres. Two great places to see bulbs and birches are the University Botanic Garden Cambridge and Anglesey Abbey. The birches at the end of the winter garden at Anglesey Abbey are a must see at this time of year. Both have good coffee shops to enjoy afterwards, so wrap up and get out into the garden!
