Fergie has become known at the Coach House for his passion in delivering quality, delicious food whether it’s for midday, evening meals or Sunday carvery.
Finding the ‘right’ dress, was probably the hardest part of the wedding for me. When I finally found my dress, from Caroline Castigliano, it took a lot of imagination to envisage what the final dress would be like. Every dress I’d tried on was always in a larger size and I’d asked the designer to make several changes to the original dress, which I didn’t see until the week before the wedding! For us, choosing the venue was a ‘no brainer’! Sheene Mill is such a beautiful venue and is more than just a venue to us – it is quite literally our home! I worked at the Sheene Mill from the age of 11 when my parents owned the business, to then come back 10 years after they left to own the business myself! I have so many lovely memories, from my childhood and from recent years… Getting married at our own venue also meant I had complete trust in my staff and that they would execute everything the way they know I’d want it to be done. It also gave me the flexibility to go ‘to town’ and enjoy the venue from the other side for once! My staff did us proud, they all went above and beyond to make sure we had the most amazing day - it literally couldn’t have been better. It was a Classic, yet Glamorous theme, consisting of beautiful deep reds, champagne golds and ivory, with a summery twist! We used crystal glass wear and décor throughout, positioning candelabras and candlesticks throughout for added romance.

We hung glass tealights from every tree and added additional mood lighting throughout the venue, which means that all of our brides now benefit from these improvements. In addition to keeping our décor and colour scheme classic, we were keen to create our own touch. Our table plan was a large blossom tree, with hanging crystals and beautiful hanging place names, our guest book was a large graffiti painting, themed to suit our colour scheme and represent both mine and Jordan’s favourite things. We had a liquid nitrogen gin bar on our deck which we purpose built, a large ice sculpture Champagne bar, and a divine 8 course tasting menu with accompanying wines and Champagnes.

Biscuits glacé de jour de Valentine Hello my Fellow foodies!
And so to February where we look forward to Valentine’s Day, Half term, Snowdrops and Shrove Tuesday. I would like to share with you this recipe for Iced Valentine’s Day biscuits. However there really is no reason they have to be heart shaped and they really are rather good with a mug of tea and a good book! If you have children off for half term you could always involve them too...although little fingers are best kept away from the food processor but, in my experience, are usually very happy to be involved with the decoration process! Biscuits glacé de jour de Valentine Makes approximately 12 regular sized biscuits. For the Biscuit 175g Plain Flour Finely grated zest of one orange, lemon or lime - your choice! 100g Butter, chilled and diced 60g Caster Sugar Approximately 2 tbsp chilled milk Approximately 6 red hard boiled sweets, finely crushed. For decoration of the biscuits 100g icing sugar Red or pink food colouring Food flavouring is optional but 1 drop of your favourite flavour should be all you need. Any decorations of your choice....go wild or go minimal! Equipment As you can see from the photo I have iced my biscuits. I used a number 2 fine icing nozzle and a piping bag. But if you haven’t got the bag and nozzle you could try folding your own from greaseproof paper and just snipping a tiny hole in the end to pipe through, or you could create more of a flooded icing design and decorate with sprinkles, silver balls, shop bought iced flowers, dried rose petals, edible glitter, coloured sugar...there are endless possibilities! I have also used 2 sizes of heart shaped cutters. Please don’t feel you have to rush out and spend money on expensive cutters. If you chill the dough after it is rolled you will be able to free hand cut the dough, (perhaps create cardboard templates to cut around) or for those of you with young children you may find that the cutters used for Playdough work perfectly... just make sure they have had a good scrub first! So, let’s begin by making the dough. Put the flour, butter, zest of choice and sugar into a food processor and blitz until you have a fine bread crumb consistency. Gradually add the milk whilst the machine is on and stop when the consistency begins to form a dough. Tip the ingredients out on to a work top and finish bringing everything together by hand as you do not want to over work the dough. Next, clingfilm the dough and place it in the fridge to chill for about half an hour- this will make it easier to
handle. The dough could be left for 2 or 3 days in the fridge or frozen for up to a month in advance. If you really want to plan ahead why not make double the amount and freeze half for later use. Pop the oven on to 180°C, and roll the dough to a thickness of approximately 3mm (it is a very short mixture and therefore tricky to handle, you may wish to roll it between two layers of greaseproof paper for ease of handling). Cut out the shapes and place them onto a non stick baking tray. Now, place a generous pinch of the crushed sweets into the “hole” of the biscuit. You are aiming to fill the entire hole when they have melted but you need to take care not to overfill or spill any on the rest of the biscuit. Next, place the biscuits in the oven for 15 minutes. You are aiming for the biscuit to be a pale golden colour and for all of the boiled sweet to have melted. When you are happy that they are cooked remove them from the oven and leave to cool on the tray for a good 5 minutes- DO NOT stick your finger into the melted sweets this will cause unimaginable pain! After the 5 minutes is up you can carefully remove the biscuit from the tray and leave to cool completely on a wire tray. When you are ready to ice the biscuits, simply mix the icing sugar with a drop of your favourite flavouring (I used a new lemon grass one I have just discovered) and colouring and then add water drop by drop until you have a runny, but still a little thick consistency necessary for piping. Simply pop it in your piping bag and let your imagination, and piping skills, run wild! If you intend to use sprinkles add these before the icing sets or they will not stick. Leave these to dry while you “de-stick” the kitchen and make yourself all pretty again before presenting the biscuits to your lucky Valentine... or eat them yourself! Until next time...

Here’s my Top Five Tips for stress-free wedding planning...

When you first start to plan, sit down as a couple and work out your budget before you book anything. Be realistic and use your budget as a reference point. Try not to go over it. You may find it useful to decide which parts of the wedding day are most important to both of you and then split your budget accordingly.

Prioritise your tasks and then allocate each job a month, giving yourself a monthly check list of things to do. Don’t do wedding planning every day. Give yourself set days in the month to do ‘wedmin’ based jobs otherwise the planning will consume you and you will begin to hate it. Consider hiring a wedding planner as they can take all the stress out of your wedding planning

Book the venue first, then choose your photographer, caterers, florist and entertainment as these are the providers that can become very busy quickly. Try and get these booked as soon as you can to avoid disappointment.

Regarding your photographer, always spend as much on photography as your budget will allow. It’s one of the only things from your wedding you will be able

to keep forever and be your lasting memory. Unless they are a professional, DON’T get a friend to do your photography. It could be a disaster and you don’t want to risk a friendship in the process.

When looking for suppliers, ask your recently married friends for their recommendations. Also ask other suppliers for people they have worked with and would recommend. Finally, a cheeky sixth suggestion from me, don’t forget to plan your First Dance lessons. Everyone should dance on their Big Day and a special dance can create a lovely surprise for your family and friends. Why not step out in style? No previous dance skills are required, and lessons can be held locally or at a location of your choice.

If you’ve been asked to be the Best Man at your friend’s wedding you are probably starting to worry already about making the speech. Fear of public speaking is one of the most common phobias and can get in the way of you enjoying the rest of the event. But there are easy techniques you can learn to build your confidence. 1. A month before the wedding, start to practice feeling confident. Close your eyes and picture an occasion when you felt really confident. Make the picture as big, bright and colourful as you can. When you are experiencing that confident feeling as strongly as possible, press the tips of your thumb and first finger together firmly. This is your confidence anchor. 2. In the week before the wedding, before you go to sleep every night, imagine yourself making a brilliant speech. See yourself standing confidently, speaking easily, the smiling faces in front of you. Hear them laughing at your jokes and clapping as you finish. Enjoy that good feeling of a job well done. Press the tips of your thumb and first finger together to ‘fire’ your confidence anchor.

3. Just before you stand up to make the speech, take a few moments to concentrate on your breathing. Breathe down into your stomach and make each out-breath slightly longer than the in-breath. This will trigger relaxation. 4. When you stand up, plant your feet firmly hip distance apart and stand in your confident posture. Fire your confidence anchor. 5. Take plenty of sips of water. This will keep your mouth moist and give you a chance to look at your notes 6. At the beginning of your speech, let your eyes go out of focus so that you can take in the whole room. Once you are feeling more confident, let your eyes focus on the people who are smiling and laughing - there will be plenty of them. 7. Enjoy yourself - this is your moment!
