Hemisphere, as a definition, is half of a sphere, or in this case applies to a dinner venue that caters to those who seek that upper stratum in a refined dining experience. The owner, Christopher Cox, was raised on the south shore of Long Island, and felt there was a need for a new restaurant where the locals could go and enjoy a chef’s inspired menu and a true cocktail lounge, while enjoying live music. Mr. Cox remarked to The List, “Living locally, it seemed there was always a void when it came time to go out for the evening. Working in Manhattan for many years, and having enjoyed the cocktail lounges and restaurants, I wanted to bring that type of venue to the Great South Bay area. There is a need for this part of the island to have an incredible place to dine, host a private party or listen to live music, all while enjoying a quality cocktail.” And the space is indeed impressive. Upon entering, it is immediately apparent that meticulous attention was given to even the smallest of interior design and visual details. A beautiful custom-crafted, globe-shaped chandelier gently illuminates and provides a warm welcome. Framed by fine woodwork, fabrics and fixtures, the large contemporary dining room offers a variety of seating areas: comfortable high back leather booths in intimate arrangements; traditional dining tables; and walls of banquettes. Warm color tones, a wall fireplace and a changing roster of live musical performances further enhance the unique and welcoming atmosphere of Hemisphere, where even non-visual details have been carefully considered - a high-tech sound system is enhanced by acoustical panels, engineered to ensure patrons can dine, relax and enjoy the live entertainment in comfort. I Shrink Wrapped My Home And Saved It From Storm Sandy! By: Dr. William Marletta, Ph.D., CSP (Following is an excerpt from the original article, published: January 2013)
We all knew that Storm Sandy was coming, but I don’t think anyone anticipated the severity of the wind and tide. An idea came to me in the middle of the storm. I called my good friend and trusted boat maintenance man, Dennis McCann: “What if we shrink wrap the house?” I asked. Dennis had white shrink wrap boat material leftover from his boat-wrap business. He laid the 18’ wide material in my garage, cutting it into three strips, each 6 feet wide. He then used his “flame thrower” to melt the plastic and attached the 6’ wide strips end-to-end to create one long strip. We then rolled up the single 6’ wide plastic strip and brought it to the back of the house for installation. Dennis and I worked together, placing the strip along the back of the house about 3 feet above the ground along the side of the home, as well as 3 feet along the ground. We secured the Work plastic with wood furring strips (approximately Exterior Finishing 1-1/2” wide) along the side of the house, screwed it into the siding with wood screws. We secured the plastic to the ground with the use of some leftover paver bricks. How well did this this shrink wrap method work? Incredibly, the tide was estimated to be about 10” to 15” above the ground level – and yet not a drop of water entered my home! This has since been presented to Fema for review and consideration for the protection of homeowners for future storms. Cheers To Craft Beers Spotlight On Long Island Brews Long Island’s Craft Beer scene has emerged in the past decade as one of the most vibrant in the country, with award-winning breweries, top-notch brew pubs and beer bars, an active home brewing community and numerous festivals. Donnavan Hall, of Rocky Point Artisan Brewers, said it perfectly: “Craft Beer isn’t just a mildly intoxicating beverage - it isn’t just a product to be sold for money. Craft beer is food; it nourishes the body and the soul. Craft breweries have to be small. Smallness is essential to maintaining the human contact with the food. Large-scale industrial manufacturing of food and all the packaging that goes with that system severs the connection between nature and humans. This isn’t just some mystical credo propped up by a neolocalist ideology - you can taste it. Food from a small farm, close to your home, tastes better than ‘industrial food.’ Anyone who’s part of a CSA knows this, experiences viscerally, with the senses - not just the taste, but the look and the aroma. It’s the same with the liquid food: beer. When humans make something with their hands, they imprint themselves on what they make - soul, humanity, beauty, connection. Machines can’t impart what the body needs.”

Organic Pumpkin Soup
with Crème Fraiche
2 oz. Butter 1 ea. Spanish Onion Sliced Thin 1 ½ lbs. Roughly Chopped & Seeded Pumpkin 2 fl. oz. Pure Honey
1 Tbs. Curry Powder 3 cups Water to Cover Pumpkin ½ tsp. Fine Sea Salt ½ cup Crème Fraiche
Sweat onion in 1 lb. butter with salt until translucent. Add curry powder and continue cooking for a few minutes. Add pumpkin and cook until lightly caramelized. Add honey and mix well. Add enough water to cover the pumpkin. Bring to a slow simmer for 25-30 minutes until pumpkin is tender. Remove from heat, add remaining butter, then puree with large hand blender until smooth. Add salt and pepper to taste. Once in bowl, add one dollop crème fraiche, then serve. Creates 8 servings of 8 oz. soup.

2 lbs. Butternut Squash 3 qts. Chicken Stock 8 oz. Heavy Cream 1 tsp. Salt and Pepper
Heat the ginger and wine until it comes to a boil. Remove from heat, steep until cooled. Strain and reserve wine. Heat oil and sweat onion, celery and garlic. Peel, seed and dice squash. Add to pot with infused wine and chicken stock. Simmer until the vegetables become soft. Puree and strain through a sieve. Add heavy cream. Return the soup to just below a simmer. Add salt and pepper and adjust if necessary.

For soffrito: 2 Carrots peeled, 1 Fennel, 2 Shallots, 5 Garlic Cloves peeled. Finely chop all vegetables and cook in olive oil over low heat for 10 minutes or until tender. Cook flour and butter together over low heat, stirring often for 10 minutes, forming a golden colored rue. Add clam juice and cream and bring to simmer for 20 minutes. Add remainder of ingredients and return to simmer. Divide chowder with 2 steamed clams in each of 4 large soup bowls. Season with black pepper. Serve and enjoy.

Most people think of apples, peaches, pears, pumpkin and cinnamon when they think of fall flavors. Many start to drink darker and heavier spirits like bourbon and scotch, and beers like ambers and stouts. Red wine begins to dominate palates again in place of Rosé and light white wines like Sauvignon Blanc. When it comes to creating cocktails in the colder months, many bartenders look to darker spirits, exchanging whisky or whiskey and aged rum for vodka, gin and tequila. When using darker spirits, which have a very strong taste profile, you most remember to make sure that your drinks remain balanced. Drinks that are too strong, too sour or too sweet usually just need a little ingredient tweaking to turn them into balanced, delicious drinks. Bartenders also utilize infusions and homemade syrups to capture flavors like thyme, ginger, pears, lavender and pomegranate. Chris Cardone has been tending bar and creating cocktails for over 14 years. Since 1999, he has received awards in both mixology and the art of flair bartending. He has appeared on NBC, ABC, CBS, USA, Spike TV, E-television and The Jimmy Fallon Show, and in Newsday, New York Magazine, FHM Magazine and Chilled Magazine, among others. Cardone is currently a full-time bartender in New York City, as well as a cocktail consultant on Long Island. In each upcoming issue, Chris Cardone will be offering up seasonal cocktail recipes as well as education on how spirits are made and how they differ from one another, and answer any questions our readers may have.

Peach Smash
Ingredients: 2 oz. Knob Creek Bourbon 1/4 oz. combier creme de peche liqueur 3/4 oz. maple syrup 1/2 oz. lemon juice 4 peach slices (roughly half of a peach) 4 mint sprigs ..
Method: Muddle peach slices, mint sprigs and maple syrup in a mixing glass. Add lemon juice, peach liqueur, bourbon and ice. Shake hard for 20 seconds. Fine strain into an ice-filled rocks glass. Garnish with fresh mint.

Swept Away... A New Beginning For A Wonderful Seafood Bar & Grill
When Hurricane Sandy severely damaged the Cool Water Grill in Bay Shore, the owners of the restaurant decided to rebuild a brand new, casual/chic establishment in its place. Once construction was completed, the name “Swept Away” was chosen by a vote of students and faculty from a neighboring elementary school. The new moniker implies a fresh start, as well as explaining the reason for it. Stairclimbing engages all of the large muscle groups of the lower body, primarily the quadriceps, with secondary assistance of the hip flexors, glutes, hamstrings and calf muscles. The hip flexion motion is in a vertical, weight-bearing plane, which requires a significantly greater expenditure of energy than other traditional cardio exercises. This greater energy expenditure translates into peak exertion being attained faster, resulting in a greater number of calories being burned. Various studies have concluded that, depending upon body weight and an individual’s metabolic rate, some exercisers can burn up to 300 calories in a 30-minute workout. Those who are heavier, who have a higher metabolic rate or who are exercising at higher intensities, can burn even more. Because the movement has the potential for high intensity in a short time span, it is generally not recommended for beginners; as conditioning improves, it can be slowly added at low intensities for short durations. Using a StairMaster StepMill, even on a periodic basis, can be a great cross training alternative to conventional cardio activities. We hate having to cut back on food after the summer or holidays! Is it possible to stay in shape throughout the year without dieting? We asked Jonathan Sorto, Certified Personal Fitness Trainer of World Gym, his thoughts, and he offered the following advice...
Change one simple thing. That should be your mind set. It all starts by changing your attitude and slowly changing your lifestyle. Staying in shape throughout the year is simple. For starters, change your eating habits. Don’t look at it as a diet, because then you tend to push away from it; but, rather, as a change in your eating habits that will help you reach your goals and provide more natural energy. It’s important to fuel our bodies at all times, or at least every two hours, with a small portion-sized meal. It is best to eat six small-portioned meals a day. Why? Well, it will speed up your metabolism, help burn fat and avoid starvation, which, in turn, results in “stuffing your face” the moment you get the chance to eat. Aside from eating right, it’s important to go to the gym at least 4-5 times a week for no more than one hour each time. For beginners, this may seem like a little too much. Well that’s ok! Beginners, I would recommend you go for at least 30-45 minutes a day for 3-4 times a week. Slowly but surely, your body will begin to adapt, and your muscular and cardiovascular endurance will increase. Always remember to pace yourself. Getting in shape is not a race. Just take the first step and change your mindset, and the rest will fall into place.

The parade has evolved throughout the years, and the history of the parade is both interesting and informational. Historians believe the parade was instituted by European immigrants who made up the majority of employees at the retail giant Macy’s. In the 1920s, employees who were now proud Americans wanted to celebrate with traditions that were similar to traditions in Europe. This included a parade down the streets. Animals were borrowed from the Central Park Zoo, bands played and marchers wore different costumes. In 1927, concern for children lining the parade route led parade officials to replace live animals with the signature helium balloons people now know and love. A dragon and Felix the Cat were some of the first balloons. The festivities continued to grow during the 1930s, when Santa was added to the parade’s growing list of participants. 1933 was the only year that Santa led the parade rather than closed it. During World War II, the parade was put on hiatus, as the rubber for the balloons and the helium was donated to the war effort. The parade resumed in 1945 and was televised only in New York. The 1947 film Miracle On 34th Street made the parade even more popular. NBC televised the parade nationwide the following year, drawing viewers from all over the country. 917.559.7821

Giving Back Local Salon Revives The Inner Beauty Of Women With Cancer
Though each story is unique, for the thousands of women each year whose lives are changed by a cancer diagnosis, the struggles and sacrifices that follow are a shared journey. Meeting their medical and physical needs is a community of healthcare providers who treat the disease, as well as a community of doctors and researchers who work to eradicate it, and then of course the myriad fundraisers whose tireless efforts keep the latter funded. But for these brave women, and they are women first, managing the disease on a daily basis becomes a way of life, and it takes an unimaginable toll in so many ways. So much is compromised during their course of treatment, including a sense of comfort, certainty and normalcy. Many suffer a loss of strength, dignity, confidence and the sense of
self they knew before. Perhaps, sometimes the spirit needs more healing than the body... Perhaps, sometimes, what’s more important than feeling better, is feeling better about yourself... And what can a community of a different kind do to help them feel beautiful again? When two sisters from Long Island asked these questions, after watching their mother suffer the ravaging effects of her battle with cancer, they realized that they had the ability to provide an answer as well. So for the last several years, at the East Islip salon they own and operate, Rachel DeMolfetto and Cynthia Sansone have turned the traditionally slow third Monday of each month into what they call Mondays At Racine. With the help of its staff, Racine devotes an entire day to the styling and pampering
of women undergoing treatment, providing services that mitigate their sense of loss and help to revive and replenish instead. This day is more than just a distraction for them. This one, lovely day offers a respite from the day-to-day suffering and challenges they face. On this day, they are not cancer patients, but just girls… gossiping, giggling, primping, sharing… transforming a bit. On this day, the loss of their hair is defined by something other than disease. A renewed outer beauty helps to rediscover an essential inner beauty that has been diminished or lost to them. They emerge from the experience a little lighter, with a little more grace and confidence and a noticeable bounce in their step. It is the business of beauty making these woman feel beautiful again. It is the intent and hope that, from these efforts, will
come more. Perhaps this can be a template, Long Island - for ways to speak loudly, passionately and collectively about making an invaluable difference in the lives of sisters and friends who can benefit so profoundly from even the simplest of gestures. With a protocol in place that offers a blueprint to others hoping to launch their own versions of this initiative, and a unified willingness to assist those salons and spas offering their time and resources to that end, there is a real opportunity to take the expansive, thriving beauty industry and turn it into a generous, community of support. Fighting Cancer With Food
Cancer may strike even the healthiest of persons; there are ways men, women and even children can reduce their risk. One such way is to consume certain foods that researchers feel can reduce cancer risk. Though precisely how these foods fight cancer remains a mystery, cancer researchers feel they can effectively lower an individual’s cancer risk when combined to form a healthy diet. Beans boast numerous healthy attributes, and their potential to reduce cancer risk is one such attribute. Beans contain many phytochemicals that researchers feel protect the cells from the type of damage that can ultimately make a person susceptible to cancer. Beans also have been shown to decelerate tumor growth and prevent tumors from releasing potentially harmful substances that can damage nearby cells. It may seem odd that a food’s color can have an impact on cancer risk, but colorful fruits and vegetables contain more cancerfighting nutrients than fruits and vegetables that aren’t as flashy. Consuming such fruits and vegetables also helps men and women maintain a healthy body weight, an important benefit when considering being overweight and obese increases a person’s risk for multiple cancers. Folate is a B vitamin that can reduce a person’s risk of developing several cancers, including those of the colon, rectum and breast.
Those who are fond of a healthy breakfast to begin their day may already be getting healthy doses of folate, which can be found in eggs, fortified breakfast cereals, orange juice and strawberries, among other foods. If toast is your breakfast of choice; opt for whole wheat toast, as whole wheat products are a good source of folate. Tomatoes are widely beloved, and perhaps that love affair stems from the tomato’s role in fighting cancer. Though the reasons are unknown, tomatoes have been linked to lowering men’s risk for prostate cancer. One such study, a 1995 study from researchers at the Harvard Medical School, found that men who ate 10 or more servings of tomatoes per week reduced their risk of developing aggressive prostate tumors by nearly 50 percent. Later research from the author of the 1995 study found that processed tomatoes, such as those found in tomato paste and tomato sauce, were even more effective at reducing cancer risk than fresh tomatoes. Tomatoes have also been linked to lowering a person’s risk for lung and stomach cancers. Many foods can help individuals in the fight against cancer. Though one food alone may not be potent enough to do the job, when several cancer-fighting foods are included in a person’s diet, the effects may be significant.

Spotlight On The Beehive Salon What’s All The Buzz About? With roots originating in Williamsburg, Brooklyn, The Beehive Salon has been touted as one of NYC’s top hair salons by the Village Voice, Lucky Magazine and The New York Times. Jeanine Longo, better known as “Bean,” founder and artistic director of Beehive, brought Beehive’s newest outpost to LI’s south shore three years ago when she moved back from the city to her hometown on Long Island. The List found this gem when the salon first opened its doors, and we love what they are doing for hair and for the community. The word on the street is that Bean and her team bring a fresh and modern approach to the salon experience by creating complete looks that are both trendy and wearable. The most recent buzz surrounding the salon and its staff is that it was chosen by TV personality and fashion stylist Clinton Kelly for the Macy’s Grand Reopening Showcase and Clinton’s “What To Wear” Fashion event. Bean and her team created the hair styles worn by the models from the infamous Wilhelmina Agency in NYC and helped to create the hair looks for Clinton’s model makeovers. While working as a stylist in NYC, Bean’s artistic talent and passion for hair earned her a celebrity clientele of TV personalities, musicians, models and actors. Her skill set also earned her backstage invites to Fashion Week. Bean’s passion and reputation as one
of the best in the business keeps her tapped in to the fashion world and very busy with the new client list she is rapidly building on the Island. Bean not only knows hair, she knows how to create a cool vibe and welcoming atmosphere in her salons. “A salon is a place where you should feel special, a place that makes you feel relaxed and welcome and, most importantly, beautiful!” She says, “Nothing feels better than having a client want to hug you when you show them the finished product - and we get a lot of hugs!” The salon’s buzz factor has increased due to its dedication to providing eco-friendly solutions to beauty. I had to pinch myself!” exclaimed Bean. “Partnering with a group like Macy’s on the O’Beehave Re*Fill Project was a dream come true!” We say Beehive is a “Must Go”… and The Beehive says “It’s The Place to Bee.”

Techie Tips To Clean Up Your Computer Few computer users have not experienced the rotating hourglass icon or the spinning rainbow ball that signifies that the system is working or bogged down by something. Over time, computers can collect bits of information, fragmented files and other data that might wreak havoc on the inner workings that make a computer tick. While some people are tech wizards, much of the general public is not so knowledgeable when it comes to understanding computer language or even moving beyond basic tasks. However, taking the time to run maintenance on the machine or asking an IT professional to assess your computer and make recommendations can improve the function of the computer and reduce stress over the slowing down or freezing of applications. Depending on the platform you use (PC or Mac), there will be certain procedures exclusive to that platform. But in general, there are strategies anyone can take to clean out their computers and keep them running optimally. Free Disk Space. One of the first steps is to take inventory of what you
have saved on the computer and delete extraneous or unused program files and other items. Delete optional factoryinstalled components that you don’t use as well. Before the holidays bring family celebrations and visiting friends to your home, give your home a new look and improve its comfort level. Check out the suggestions below, make your project list, and then head to the store for the tools and accessories to get the job done. Entrance, Windows & Floors - Give your entrance an easy update with a new door, or add color and new hardware to your existing one. Install new windows that are attractive, reduce heating and cooling costs, and are easy to maintain. And consider installing a hardwood floor in at least one of your rooms - possibly the entryway and/or the living/family room. Kitchen & Dining Areas - Apply stain or color to your kitchen cabinets and replace hinges and pulls or knobs to brighten your “home cafe.” If your cabinets have seen better days, install new ones - either store-bought or ones you build. For a wood table and chairs, consider using a stain or topcoat to enhance the wood’s appearance or to match the color of your cabinets.
