A Tradition Of Excellence View in Oakdale recently made its debut for another season of seaside dining and entertainment after more than three months of repairs and renovations post-Hurricane Sandy. The storm hit the restaurant hard in November 2012, causing devastation at the popular spot that has always been known for its spectacular waterfront dining with a view, and the Lessing family vowed to return the landmark to its former glory. Lessing’s Hospitality, a sixth generation, family-owned and operated business founded in 1890, is one of the most recognizable names in food, service and catering on Long Island. In keeping with the legacy of Lessing’s, View continues to offer exquisite cuisine, professional presentation and excellent service, with a devotion to creating a memorable event for clients and their guests.

The restaurant originally garnered two and a half stars from Newsday’s Peter Gianotti, who wrote, “In addition to losing two syllables, View has dropped the kitsch, streamlined the look – and upped the ante.” Joanne Starkey of The New York Times rated it “Worth It” (equivalent to the former three-star rating) saying, “Besides the water vistas that made its predecessor popular, View now has the food and interior to match its location.” Richard Scholem, reviewer for Long Island Pulse and former food critic for The New York Times, called View, “An innovative, sophisticated eating place with a heavyweight chef.” The waterfront destination was once a part of William K. Vanderbilt’s 900acre “Idle Hour” Estate, and panoramic water views of the Connetquot River and Great South Bay remain a mainstay. The original Riverview Restaurant was the Vanderbilt’s old “Tea House,” built in 1888. This part of the restaurant is now known as the Tea Room, marked by fireplaces on each end, and housing a raw sushi bar. View’s main dining room pairs nautical elements, including modern artwork, with an antique wooden boat. White china, sleek beige leather chairs and sand-wash walls complement mahogany tables and matching columns against hardwood floors. The Grill Room provides more casual dining and boasts a lively bar scene, with French doors leading to the outdoor patio, which offers al fresco dining. Dockside dining also allows guests to dock their boat in one of 20 transient boat slips while being served lunch, dinner or cocktails. View’s seafood menu, created by Executive Chef William Muzio, offers new dishes and incorporates innovative techniques with old favorites. Since the cuisine focuses on local and fresh resources, the menu changes with each season. Guests enjoy events such as “Tropical Thursdays” with live island music and $4.50 Heineken and Heineken Light bottles, in addition to Bacardi rum specials. View also hosts $5 Fridays every week from 4 to 7 p.m. Select appetizers, cocktails, beer and wine are available for $5 each at the bar. The appetizer menu features Thai calamari, duck tacos, baked clams and popcorn shrimp. Guests can nibble and sip while watching the sunset over the Great South Bay, followed by live music from a guest DJ.

Creating raised beds for vegetables is not a bad idea, nor are large planters. But this doesn’t mean you don’t need to condition the soil under the raised bed! First, you must mix new, fresh soil with conditioned soil. An ideal mix would be a topsoil and sweet peet mixture. After the vegetables are planted, you will still need to feed them regularly every two weeks with organic food. The Impatiens Epidemic Impatiens (walleriana), better known as bedding impatiens, have been under attack by a disease called Downey Mildew, though New Guinea Impatiens have proven to be resistant. This deadly disease, which is airborne, moves from plant to plant, killing off Impatiens and leaving its spores in the soil for many years after. Even if you buy healthy Long Islandgrown Impatiens, you will have to get yourself on a spraying schedule to ensure your plants’ health. Green Cure fungicide can help keep this problem in check, but you must be diligent with your spraying. Continuing to plant Impatiens leaves them the potential to become infected, thus prolonging the problem. Some alternative plants which can be used in shaded areas include Begonias, New Guinea Impatiens, Coleus, Lobelia, Torenia and Caladiums. In partial to full sun, try using Salvia, Geraniums, Flowering Vinca and New Guinea Impatiens. Flowering vinca looks very similar to an Impatiens plant and is also deer resistant. If you are committed to Impatiens walleriana, be sure to purchase only those locally grown and use Green Cure fungicide to treat both the soil and the plants every two weeks. As the weather gets warmer, summertime transforms this perfect hideaway into a vacation-like getaway. The picturesque view from White Cap’s waterside outdoor patio is a prime spot to kick back and relax. Enjoy a beer or a glass of wine, along with fresh cooked seafood, wonderful chowders or a selection from their raw bar. Commercial fishing vessels on the East Coast unload their catch here, so you can be sure everything on the menu is as fresh as it comes!

1 lb cooked shrimp 8 to 10 limes 1 medium-sized red onion, chopped 1 bunch of cilantro, finely chopped 3 tablespoons of ketchup 3 tablespoons of mayonnaise 1 small can of hearts of palm (optional) Salt & Pepper to taste Directions: Rinse shrimp and remove tails. Cut shrimp into pieces. (If they are large shrimp, you can cut in three pieces. If not, cut in half.) Put shrimp in a deep medium-sized bowl and squeeze all the limes to cover. Add chopped onions, cilantro, hearts of palm, ketchup and mayo, and mix all ingredients. Add salt and pepper to taste. Refrigerate for at least 3 hours. Serve cold with crackers.


Crab, Shrimp Avocado & Pink Grapefruit Salad w/ Citrus Dressing Compliments, Piers Stringer, Executive Chef, Shandon Court

Ingredients: (Family Style: Serves 4-6) 10 oz jumbo lump crabmeat 12 cooked, deveined, butterflied shrimp (size 21/25 per lb) 1 small red onion juice and zest of 1 lime 3 avocados 1 jalapeno (finely diced) 2 medium-sized pink grapefruit 1 small bunch of cilantro, roughly chopped 3 plum tomatoes 3 cups of mixed salad greens 1 large red pepper 2 tablespoons of sugar 1/4 cup of olive oil Salt and Pepper for seasoning

Directions: Peel and segment the pink grapefruit, then lay on a baking sheet and sprinkle with half the sugar under a hot grill or with a blowtorch to caramelize. Set aside and allow to cool. Slice the tomatoes into fours, then season with salt and pepper and broil just enough to put color on. Do not overcook; keep them firm. Allow to cool. In a bowl, mix the lime juice and zest with the jalapeno and the remainder of the sugar and olive oil. Season with salt and pepper. Peel, de-pit and slice the avocado lengthwise and slice the red onion and pepper thinly. To combine, use a large serving platter, place the salad greens on the bottom of the plate, then start to layer. Sprinkle with red onion and pepper, then layer the avocado and half of the crab. At this point, season with fresh ground pepper and sea salt, then add the tomato and the remainder of the crab. Place the shrimp and pink grapefruit around the top. What To Look For When Checking Yourself For Skin Cancer Marina Peredo, M.D., F.A.A.D.

What are the signs to look out for? The American Academy of Dermatology (AAD), as well as many other cancer resources, recommends using the “ABCDE’s of Melanoma” when checking yourself for signs of danger: A is for Asymmetry: One half is different than the other half. B is for Border: The borders of the mole can be scalloped, jagged, uneven or poorly defined. C is for Color: Dr. Peredo explains that melanomas are usually dark in pigment, but they can be lighter; basal and squamous cell cancers are usually pinkish. D is for Diameter: Melanomas usually are greater than 6mm. “They can be smaller, but a general rule is to look for something greater than a pencil eraser,” says Dr. Peredo. Also look for something with an uneven color, usually different shades of brown or black, when it comes to melanomas. E is for Evolving: Warning signs include a mole that’s different from all your other moles, or is changing in size, shape or color. “Look for anything that’s new or that has changed,” says Dr. Peredo. “For example, if you have a mole that was always there, and suddenly it starts bleeding or itching or bubbling up.” Also, keep in mind that skin cancers aren’t always raised. “Basal and squamous cell carcinomas in particular can be flat, smooth or scaly; they rarely have pigment and can even 22 | The LIst Magazine

look like dry patches of skin in the early stages,” says Dr. Peredo. “Melanoma can be flat or raised.” “Have a full body exam at least once a year as cancer does not discriminate. Early detection saves lives.” How To Soak Up The Sun While Sparing Your Skin • Wear a high-SPF sunscreen every day, applying frequently. (preferably every two hours) • Avoid tanning beds, wear protective clothing, a broad brimmed hat and get a spray tan. • Sunbathe only before 10 a.m. or after 3 p.m., limited to 15 minutes a day, for Vitamin D consumption. • Seek the shade when possible, especially between 10 a.m. and 4 p.m. If you are worried about your child’s waterproof sunscreen washing away, an SPF rash guard is a fun, easy way to add extra protection while they play in the water. When I first received the alert to evacuate my Bay Shore home as hurricane Sandy was bearing down on Long Island’s South Shore, little did I know of the journey my wife, Anne and I would be taking. On October 30, 2012, I opened my FEMA disaster account and the education started there. Through it all, I kept thinking, How can I just rebuild my home as the question looms: When, not if, will this happen again?

When all was said and done, we viewed the devastation of nearly 41 inches of Bay water through our one-level home. Many who saw it called it devastating! I called it 38 years of lost memories, as we had boxes of pictures, videos and memorabilia from all over the world (where we had extensively traveled) lost.

Like many other Long Islanders, I saw the construction trucks buzzing, with the entire home rebuilding industry working from dawn to dusk; but I continued to ask the question, Should I just rebuild or take a more aggressive position like raising my home? I was frozen in time, not moving forward or backward on dozens of big decisions. If it was not for a tremendous act of kindness, I would still be thinking about all the decisions in front of me. That act of kindness came from a true angel, Patty Poulin, wife of FDNY Battalion Chief Frank Poulin and the driving force behind a very special volunteer group made up of our neighbors and North Carolina firefighters, called TaskForce 17. A special shout out to Jeffrey Clark, Rescue 10 Special Operations Dept, for his tremendous effort and the effort of his entire Charlotte Fire Dept team. Mark Arnold and Lisa Gallucio, thank you for showing me what volunteer work is all

about. After that kick in the butt and more extensive research, it was determined that my home, built on a slab and out of cinderblock, could not be raised at an economical cost. The option of tearing down and rebuilding a traditional home became a potentially very long process, with most Long Island contractors having work backed up for months. I was convinced by a good friend of mine in the home building industry who said, “You might want to look into manufactured homes, as their construction methods have come a long, long way and can be produced in a third the time.” My choice became, replace 100% of everything in my home except the four outside walls and stay at the same elevation, or raise and rebuild! Working with a local architect, Michael Dunn, the decision was made to raise the foundation and get out of the water table once and for all. Now I needed to start the process of researching manufactured homes. Thank goodness for the internet, as I simply googled “Manufactured Homes” and found a dozen that offered free consulting services. After speaking with most of them and spending quite a bit of research time on their websites, I selected Bill Lake Modular Homes, as they offered the best video presentation on what goes into a manufactured home for free on their website, as well as lots of one-toone consulting. When I toured their manufacturing facility, I saw things like automatic glue guns, which glued every piece of wood that touched another piece of wood. This adds tremendous strength and can only happen in a factory manufactured environment. I saw 2x6 studs in the walls, unlike the 2x4 studs used in traditional home building. Simply put, this decision is not for the faint of heart, as lots and lots of decisions go into a new manufactured home process. But for me, it was the only way to go. Some important questions to ask: 1. Are homes built in a factory better than homes built out in the elements? 2. How long will it take to build this home? 3. Are quality building products used? 4. Can it be custom designed to my liking? 5. Will our town inspectors approve a manufactured home? 6. Are manufactured homes built “Green”? 7. What are my costs as compared to a traditionally built home?

In addition, we have been told that the value of our home will increase and the flood-related insurances we carry will actually decrease. When was the last time you heard that? E-mail me, and I will do my best to answer your questions.
