SUNSET RESTAURANT, ISLIP BEACH Rave Reviews of Hidden Gem, for a Summer by the Bay. BY MARY DONNELLY
“The food is amazing.” “Hidden gem…” “Great place to bring the kids and relax on the beach…” That’s what some honest, unsolicited social media reviews say about Sunset Restaurant at Islip Town Beach, and Sal Cataldo, a Bay Shore resident at the helm of this bay front kitchen, couldn’t be more pleased with the feedback.
Having been in the restaurant business for decades, Cataldo learned about the unique opportunity on a tip from a friend. His vision was to open a family friendly, full-service restaurant serving delicious highquality food at reasonable prices. With his partner, Christine Kim, a small kitchen crew and a wait staff of about 8, he is making it happen. After two successful years, rave reviews through word-of-mouth and social media now bring people to Sunset from near and far. This “vacation-feel, beachfront hideaway” is ready for the spotlight. “This location is what drew me back into the food business,” he said. “When I came down and saw it, I was pretty much taken back by the view.” And as far as views go, you really can’t beat it. Islip Town Beach occupies the southernmost point of the Islip peninsula just east of the Seatuck preserve. Sunset’s guests are treated to sensory experiences that capture the essence of an endless summer: scenery that includes unobstructed views of the Causeway bridges, passing ferries, the Fire Island Lighthouse, the smell of fresh salt air, the call of gulls, and even the sounds of palm tree leaves lapping in the breeze. Palm trees? On Long Island? That’s correct! Cataldo has them imported each season to complement the tropical beach décor. On a warm day, one can sit on the deck and cool off with a deliciously healthy Acai bowl, close their eyes, and feel as if they were on an exotic island far away. The best part about that? Islip Beach is a much shorter drive. Open seasonally from May to late September, Sunset welcomes patrons that arrive in their Sunday best as well as those who come straight from the beach.
On any given evening, you might see a couple enjoying a lobster roll, or their immensely popular “Baked Crab" appetizer; or locals who cruised down on their bikes to sip cocktails and watch the sunset on the deck. The Baked Crab is one of Cataldo’s own kitchen creations. Think about what you love about baked clams and crab cakes, and try to imagine putting those delicious flavors together: warm crabmeat, red bell pepper, diced onions, and mozzarella cheese dusted with savory crumbs and a light pink sauce. “It’s one of the most popular items at the beach restaurant and possibly the only place to get it,” said Cataldo. This menu item is so popular that he brought it to his off-shore restaurant, Long Island Beach Bowls Acai Café on Main Street in Islip, which opened last fall as a result of Sunset’s amazing success and requests to enjoy Cataldo’s delicious cooking in the off-season. While the downtown location also serves up all that’s known and loved about Sunset, nothing beats dining al fresco at the beach. It reminds me of some of my favorite restaurants on Fire Island: causal, al fresco dining at the shoreline with incredible water views and all of the sights, sounds, and smells of summer. What it’s missing; however, is that hit to the wallet that comes with a
round trip ticket across the Great South Bay. Sunset’s menu is filled with a wide range of recipes that Cataldo has created and perfected over time. For you breakfast lovers, their extensive morning menu is quite impressive. Favorites include their famous blueberry pancakes, egg omlettes, and unique “breakfast pizzas”. Afternoon and evening guests can choose from the popular lobster roll, gourmet pizzas, panini sandwiches, salads, burrito wraps, burgers, seafood, even hot chowders and bisques. Those seeking sweet relief from the heat might opt for a cannoli cream and frozen yogurt combo or a cold frosty beverage. Cataldo states that guests rave about the lobster roll. “Customers tell me they’re even better than those they get in Maine.” Great food, friendly service, a vacation-like atmosphere, now that’s what I call a perfect summer by the bay.

Drone Photography over the Great South Bay BY MICHAEL BUSCH Besides some negative press for irresponsible flying, drone technology has opened up a new world of opportunities to see things from a whole new perspective. I am a local photographer and boater who lives in Brookhaven. I shoot everything from wildlife to aviation, but my favorite subject has always been the Great South Bay. I recently purchased a drone and became a licensed drone pilot, which allows me to legally market and sell aerial photography services with safety as the #1 priority. That means knowing where it is safe to fly, respecting privacy, and never flying over people. I initially resisted getting a drone because I felt the image quality was poor. That has changed with the latest drone technology. For example, my Phantom 4 Pro has a built in 20 megapixel camera that has all the same features as my full frame Nikon: adjustable aperture, shutter speed, and the ability to shoot 4k video. I have shot from planes and helicopters before, but to be honest, the drone gives me more flexibility and the resulting images are far superior. One of the issues I am most passionate about is water quality on Long Island. Nitrogen loading and the resulting brown and rust tides threaten our quality of life here. I have been using the drone to
monitor water quality in the bay and raise awareness regarding the importance of creeks to the overall health of the bay. Working with Save the Great South Bay, we have a new initiative called Creek Defender, where we are mapping and photographing each of the 31 creeks that feed into the bay. The drone has been very useful for monitoring water clarity, which has improved all over the eastern bay as a result of the new wilderness breach created by Superstorm Sandy. This is always evident in early spring before the algae starts growing. You can see this from ground level, but once you get the camera 50 or 100 feet above the water it changes the whole perspective. During April and most of May, Bellport Bay looked absolutely tropical with every piece of bottom visible on both sides of the bay. I was also able to capture some remarkable images in the vicinity of the new inlet which show how much sand has been flushed into the bay. As the temperature warms up, it will be interesting to monitor any potential outbreaks of brown tide. Let’s hope that will be the rarity, not the norm, this season so we can enjoy a wonderful summer both on and in the Great South Bay.

6 Tips to Keep Hydrangeas from Wilting 1. Choose to cut mature blooms that are fully opened, very colorful and have a papery feel to them. 2. Cut hydrangea stems on an angle at desired length early in the morning. Have a bucket with a few inches of tepid water with you and place stems immediately into bucket after cutting. 3. Before arranging, place very bottom of stems (about an inch) in boiling water for 30 seconds, then immediately place in vase with tepid water. 4. Keep hydrangea bouquet out of direct sunlight and in a cool room. If the temperature’s on the rise, add ice to vase water. 5. Dipping the bottom of cut stem in alum powder (found in the baking ingredients aisle of your grocery store) will encourage water uptake. 6. If blooms wilt, try submerging entire flower in tub of tepid water for 45 minutes to revive them.

Beholding Eye-Catching Beauty IT’S ALL ABOUT THE EYES AT BABYLON’S LITTLE LASH BOUTIQUE AND LITTLE BROW BOUTIQUE BY MARY DONNELLY
F
or centuries, artists have admired the simple magnificence of the human face. Long before “the selfie” revolutionized portraiture, Warhol, Vermeer and Van Gough studied curves, shadows and symmetry of the face to create some of society’s most treasured works of art. In the 1940s film Gilda, when Rita Hayworth tossed back her hair to reveal that she was indeed, “decent,” her long, perfectly-curled eyelashes and subtly-arched, shapely and symmetrical eyebrows instantly became distinguishing features of that iconic femme fatale “look.” Since then, millions of women have desired to recreate that look for themselves. Truth is, if I’m ever to look half as decent as Rita Hayworth in that classic scene, it’s going to take a lot of work! Joann Donnelly of Babylon Village knows something about the face as an art form, and just how important the lashes and brows are for enhancing the unique features of every face. She developed a particular interest in eyelash extensions and how that Rita Hayworth-esque beauty can be achieved by those of us who were not so, um… “ocularly blessed.” What was first a personal interest became a passion, and that passion led to a successful career, but she got into the business in a roundabout way. “One day I overheard a woman in Toys R’ Us talking about having eyelash extensions applied,” she said, indicating that she was intrigued by the idea because she had never heard of it before. “I went home, did a Google search, and found someone locally.” After Donnelly began receiving her own eyelash extensions, she learned more about the products and the process. It was her passion for continual learning that prompted her to seek education specifically
related to facial beauty. “I was actually a psychology major in college,” she said. Donnelly is now the proprietor of two extremely successful shops in Babylon Village: the four-years young Little Lash Boutique on Deer Park Avenue, and its sister store, Little Brow Boutique, which opened just a few steps away earlier this year Donnelly’s own perfectly-framed eyes sparkle as she recalls memories of opening Little Lash Boutique. “My landlord was really concerned for me,” she said with a chuckle, indicating that the idea of using of prime commercial real estate in Babylon to service eyelashes was a bizarre concept to him. “He was nervous, but hopeful,” she said. But Donnelly was onto something special, and she knew it. At the time she opened Little Lash Boutique in 2013, not too many people in the area offered the services she aimed to provide, and those that did were not up to Donnelly’s strict standards for education, safety, and proper technique. Truth is, anyone can step into one of the dozens of nail salons on the south shore and get a $11 eyebrow wax, and as the demand for eyelash extensions grows, many of the same salons offer eyelash applications for a seemingly-low price. But you pay for what you get. Donnelly acknowledges that while her services may seem pricey to some, they are definitely honest. She only hires employees who exhibit the utmost professionalism and passion for learning. She refers to her staff as a team of “artists,” as each are duly licensed cosmetologists and estheticians, specifically trained and certified in various services for eyelashes and brows. Donnelly’s clients, many of whom began as curious passersby, seem to agree that
there is no substitute for quality, especially when it comes to the beauty and safety of the eyes. News of the innovative services offered by Little Lash Boutique spread fast, and unstoppable growth necessitated expansion. The recently-opened Little Brow Boutique, Donnelly’s second Babylon Village storefront, occupies the space that was Gaspare Mannina’s shoe repair shop for over fifty years. So why two separate shops? I’ll get to that in a bit… As a professional woman in my late 30s, I enjoy treating myself to little indulgences for the mind and spirit. One thing I had not previously considered, however, was spending money on my eyelashes and brows. My mother, who has exceptional natural beauty, never wore a lot of makeup. As I grew up learning by her example, I kept my own cosmetic rituals fairly simple and conservative. Some of my more daring girlfriends had experimented with stickon eyelash extensions or “falsies,” as they called them, in the past. While they often looked great, sometimes the extensions seemed garish and overdone. I opted to stay well within my comfort zone, sticking with my trusty mascara wand and eyebrow pencil to get the job done each morning. That was until I learned about an innovative procedure known as the “keratin lash lift.” “This is a great option for people who want more of a natural look,” said Brittany Accardi of Little Lash Boutique and Little Brow Boutique, who is double-certified in the procedure. She explained that she would take each of my individual eyelashes and apply a gentle protein-based solution and tint to provide a prettier frame for my dark brown eyes. “People don’t often realize this, but an eyelash curler can be really damaging,”

My only regret is that I waited so long to have this done. “You’ll wake up every morning like that,” said Brittany with a smile. “At least for the next few months or so until it’s time to come back for another lift.” I will definitely be back, but a little sooner, so Donnelly can work her magic on my brows. Each client at The Little Last Boutique and Little Brow Boutique receives a personal consultation to make an informed decision about available services for the lashes and brows, because what looks great on one person might not look so good on another. Donnelly’s suggestions are tailored to each client’s unique features and natural beauty. My own brows are fairly neat, but also fairly unremarkable when it comes to shape. She recommended a shaping, sculpting and tinting service, which will offer depth and shape without making me look overdone. Brittany said, citing a number of clients who had come to her with short, sparse, or damaged lashes. She went on to explain that the keratin lift provides the look of a curl without the need for the appliance. “You don’t even have to wear mascara if you don’t want to,” she said, explaining that many clients opt to use a keratin-based last fortifier or a clear mascara instead. I felt completely comfortable in Brittany’s care from start to finish. In fact, I was so comfortable during the approximately hour-long procedure that I might have fallen asleep. That’s not unusual, according to her. “I don’t mind when people fall asleep,” she said. “It means they’re relaxed, and that’s good.” So this explains the two separate shops. “The Brow Boutique is a much more social atmosphere,” said Donnelly. “We play music, we chat with our clients, it’s a different vibe.” The Little Lash Boutique next door has more of a spa-like atmosphere, with music playing softly to promote comfort and relaxation. As clients keep their eyes closed during the procedures, many take advantage of the time to catch a nap. As I opened my own eyes and saw for myself how

LIST: Hi Trisha. To get started, please define coaching for our readers. Trisha: Coaching, as defined by The International Coach Federation or ICF, is partnering with clients in a thoughtprovoking and creative process that inspires them to maximize their personal and professional potential. As a Certified Professional Career & Corporate Coach, I coach clients specifically on navigating the various challenges in their careers with greater clarity and confidence. LIST: It sounds as though there are similarities between coaching and more traditional forms of therapy. How does someone choose between the two? Trisha: While there are some similarities, understanding key differences between the two will help someone choose what they need. For starters, in therapy, the purpose is often to “heal” something that has happened in the past, whereas coaching focuses on the present and moving forward. For example, my clients often come to me for help with identifying and reaching a specific career goal, or other work-related concerns that they would not normally bring to a therapist. Some people find that coaching is preferable to therapy because the process tends to be quicker, while others benefit from working with both a coach and a therapist simultaneously. It is also important to note that a certified coach is trained to identify, and obligated to disclose to a client, if they would benefit more from traditional therapy than from the coaching relationship.
LIST: What are some typical
situations your clients come to you for help with? Trisha: Clients come to me for
many different reasons related to their work lives, including dealing with a difficult boss/challenging work environment, becoming a more effective leader, gaining confidence as a new manager, seeking a new job or promotion, and also for help with successfully managing employment terminations or making other significant career transitions. LIST: What should a client expect to gain from engaging in a coaching program with you? Trisha: Coaching will help achieve a better quality of life overall. My clients are able to remove obstacles, find their voice, and own their power. They gain confidence and a command of the direction in which they’re moving. Positive changes are seen rather quickly and are sustainable, resulting in clients that generally feel happier and more fulfilled both professionally and personally. LIST: You have an extensive background in Human Resources. How does this factor in? Trisha: I have more than15 years of Corporate HR experience. Over that time, I've helped thousands of people on a myriad of work-related topics. My clients appreciate and benefit from the insight I have regarding their employment
questions and concerns from an insider, HR perspective. They also like knowing that I’ve successfully helped many others in similar situations. The companies that hire me find that my HR knowledge and expertise is instrumental in the success of their coaching endeavors. LIST: Your process includes Energy Leadership. Can you tell me more about that? Trisha: The process I use with my clients is based on Core Energy Coaching, which was developed by Bruce D. Schneider, founder of iPEC (the program through which I received my certification). This process helps people tap into their true desires, passions, and purpose through selfassessment, gaining awareness of their strengths and/or gaps within the 7 Levels of Leadership, and teaching them how to make appropriate energy shifts to get the results they want. LIST: How does someone get started with you? Trisha: First, I like to have a conversation with a prospective client to see if they would benefit from coaching and whether we are a good fit to work together. If we mutually agree to move forward, we will collaborate on an individualized package/program that meets their needs both in terms of time and money. One of the best and most popular ways to experience Long Island this summer is by bicycle. Over the past several years, cycling has grown tremendously in popularity. Everyone from adults to grandparents, and toddlers to teenagers are looking to get back on a bicycle. For good reasons too; it’s beneficial to your health and to the environment. If you’re riding with a team of children this summer, keeping an eye on the kids, while keeping your own wheels straight, is no easy task. However, there are places for you to ride safely. Good locations for families to ride are Heckscher State Park, Belmont State Park and Connetquot. Miles of paths with no cars, and plenty of rest areas to stop for a snack (or a nap!) make these parks prime riding locations. You can safely help your kids sharpen their skills and still enjoy a ride yourself. For a more advanced road ride, the Jones Beach Bikeway, recently built after Sandy, is a perfect place to get some saddle time in safely. It is roughly 5.5 miles, stretching from Cedar Creek Park in Seaford to Jones Beach State Park. This asphalt paved, car-free bike path is as flat as it is long, and as easy as it gets through beautiful surroundings. A great path to ride for all skill levels. Just be prepared for the wind! For the skilled rider that prefers some dirt, there is no shortage of trails on Long Island. Hundreds of miles of groomed ridable single track trails are available and maintained by C.L.I.M.B. (Concerned Long Island Mountain Bikers), an organization dedicated to the preservation of mountain biking. Eastport has over 8 miles of beginner to intermediate trails; Rocky Point Pine Barrens Preserve offers over 13 miles of intermediate and expert, as well as beginner trails. Helpful information and tips can be found on their website climbonline.org. Many preserve trails require a DEC permit to access them. Permit applications are available online. The Healing Touch By Anthony Cerabino, BM, LMT, MSLAC I have often wondered about the healing power of touch and intention when working with patients. At the initial consult, when I am orientating a new patient about my approach to healing or getting well, I tell them that I help heal the “whole person”, not just the symptoms they are suffering from. Many times symptoms are just an expression of some other imbalance in the body. The body is a “healing machine”. It is constantly trying to remain balanced or achieve homeostasis. Acupuncture (acupressure) meridians or pathways cover every portion of the body. They access the subtle electrical impulses that travel throughout our body. If the body is 80% water, and water is a conductor of electricity, this makes us “electrical beings”. If you remember back in Chemistry class, every chemical reaction in the body
has negative and positive ions that interact with each other to create a magnetized motion. Many times I give the following example to patients: a person walks into your office and you think to yourself, “Oh no, this is not going to be a good experience”. Conversely, a person may walk into your office and you think to yourself, “Yes, this is going to be a pleasant experience.” These two experiences are more of an electrical vibration and sensation of positive and negative energy. Often the nervous system has to be “reset” to a more relaxed state of being. Transitioning a patient out of sympathetic mode, which is the “fight or flight” mode, (ie: The tiger is chasing me!), to a more serene, parasympathetic mode of calmness and well-being is one of the most fundamental aspects needed to start the healing process.
Patient care is our absolute priority when administering treatment. Does the patient feel some sort of connection to what the treatment is doing for them? Is the practitioner “present” while providing a therapy, acupuncture, or any other type of bodywork treatment? Is the practitioner listening to the patient’s request or complaint without interrupting them? Does the practitioner care? These questions have always resonated very strongly with my intentions as a healthcare practitioner. Consistency of treatment is mandatory for any healing process. I continually encourage patients to show up regularly in order to help achieve a comfort level with their practitioner’s approach and style of touch. The body has a “muscle memory” for touch, and upon each consecutive treatment, the body becomes more familiar and at ease with the healing techniques and approach of the practitioner. When the patient is able to relax upon the start of treatment, the
healing effects of the massage or other bodywork will be much more effective. Having compassion is another important aspect for a speedy recovery process. If a practitioner is too aggressive in their approach and treatment of an injury, the body will respond with increased inflammation because insult is added to the injury. I always use the analogy of the child who is curled up in a corner crying. The caring parent does not go over and reprimand or scold them; they approach the child with a caring touch and comfort them. This is precisely how a body-worker should perform their techniques while working with soft tissue. “Do no harm” is still one of the most important treatment protocols for any healthcare practitioner. Pushing Limits Together By Bay Shore Resident, Dean Rothman
5 years ago, I ventured into the world of triathlon endurance races... 1 race: 3 different events; Swim, Bike, Run. Triathlons are endurance races that vary in length. Beginner triathlons, called "sprints", typically consist of a 500 meter swim, 12 mile bike, and a 3.3 mile run. The longest distance, The Ironman, is a grueling 2.6 mile swim, 112 mile bike, and a full marathon (26.2 mile run). When I began this journey, my first race was a “sprint”. I remember training for the race with everything I had. After I finished, I was so proud of my accomplishment, but I wasn’t satisfied. I knew I could continue to push my limits to places I never thought were imaginable. With that in mind, I set my sights on building up to complete my first Ironman. I knew that completing an Ironman wasn’t something I could do on my own. I joined South Shore Tri Coach, a local triathlon club. Being surrounded daily by other triathletes that were experienced in longer endurance races, as well as other beginner triathletes, I knew I had the perfect group to guide and encourage me to meet my goals. 2 ½ years later, I took the start of my first Ironman race
held upstate in beautiful Lake Placid. Completing the Ironman, something that only a few months prior seemed impossible, was one of the greatest days of my life. 14 hours from swim start to marathon finish, I was greeted at the finish line by my family, friends, and my South Shore Tri Coach teammates. Since that time, I have already completed my 2nd Ironman in 2016 and am on schedule to complete my 3rd Ironman in the summer of 2018. In the meantime, I love doing other triathlons with my South Shore Tri Coach team. Each one uniquely tests our inner limits and pushes us to limits that we never thought we could endure. At our most recent triathlon just 2 weeks ago, the 1 mile ocean swim began on the Cape May Ferry, where we jumped OFF THE FERRY from a 12 foot platform!! Just another example of testing your limits to do extraordinary things. I look forward to sharing more stories with you and invite you to get out there and test your limits!!

Little Shelter Animal and Adoption Center Little Shelter Animal Rescue and Adoption Center is a nonprofit, no-kill animal shelter nestled on six wooded acres in Huntington, Long Island. One of Long Island's oldest no-kill shelters, it is dedicated to saving all companion animals whose lives are in jeopardy. Grilled Corn and Mango Salad with Cilantro Lime Dressing Serve it with tortilla chips for snacking, make it for a side dish with your barbecue, or use it to top grilled fish or chicken. Ingredients • 3 tablespoons mayonnaise
• 2 teaspoons vegetable oil
• 2 limes, zested and juiced
• 1 red bell pepper, finely diced
• 1 small serrano chili, ribs and seeds removed and minced • 1/2 teaspoon chili powder • 4 ears corn, husks removed • 3 mangos (about 2 pounds) peeled, pitted, and diced
• 1/4 cup crumbled queso fresco, cotija, or feta cheese • 2 tablespoons chopped cilantro • Salt and pepper
Directions In a large bowl, whisk mayonnaise, lime juice and zest, serrano, chili powder and ½ teaspoon salt. Preheat outdoor grill or indoor grill pan over medium-high heat. Brush corn with vegetable oil and season with salt and pepper. Grill corn, turning occasionally to char all sides, for 5 to 6 minutes. Remove from grill and using chef’s knife, cut corn from cob directly into large bowl containing dressing. Fold in bell pepper and diced mango; top with mango, cheese and cilantro. Serve at room temperature or chilled in individual mango cheek bowls.
Charbroiled Oysters Ingredients • 8 ounces (2 sticks) softened butter • 2 tablespoons finely chopped garlic • 1 teaspoon black pepper
• 1 ½ dozen large, freshly shucked oysters on the half shell • ¼ cup grated Parmesan and Romano cheeses, mixed • 2 teaspoons fresh chopped flat-leaf parsley
• Pinch dried oregano

1. Heat gas or charcoal grill. In a medium bowl, mix butter with garlic, pepper, and oregano. 2. Place oysters on the half shell right over the hottest part of grill or use a cast iron oyster pan. Spoon seasoned butter over the oysters so that some of it will fill the shell. 3. When the oysters puff up and get curly on the sides (after about 5 minutes) they are ready. Sprinkle the grated Parmesan and Romano cheese along with the parsley on top. Serve on the half shells immediately with hot French bread.

Marinated Grilled Shrimp Ingredients • 3 pounds large shrimp, peeled, deveined with tails intact
• 2 tablespoons fresh lemon juice
• 1 cup olive oil
• 1 teaspoon salt
• 2 cloves garlic, crushed
• 1⁄3 cup chopped fresh parsley
Directions 1. Combine all ingredients in bowl. Cover and marinate in refrigerator for at least 8 hours, stirring occasionally. 2. Remove shrimp from marinade, using a slotted spoon, and reserve marinade. Place shrimp on water-soaked wooden skewers. 3. Grill over hot coals for 3 to 4 minutes on each side, basting frequently with marinade. Do not over-cook.
