It’s safe to say that most people enjoy dining out; the ability to try new exciting foods, being in a well decorated place that’s different than your home, being able tosocializewithyourpartyinacomfortableenvironmentandhonestlynothaving to worry about what are you going to cook? Though after exploring the menus at many of my favorite restaurants I have discovered that there are tons of dishes that are not only within my dietary restrictions but also delicious. Now, my outlook has changed completely. These restrictions are helping me find amazing dishes that I’d never had before and even helping me push out of my comfort zone and try new foods and ingredients. Now that October has begun, it is truly starting to feel like Fall, and with that weather change a lot of dishes are beginning to roll out that don’t always work the best for those that are Dining Out with Dietary Restrictions. They are open weekends in October through October 23rd, from 11 am to 6 pm. Free admission, free parking, and free hayrides!
The first time we found this place we fell in love with their Fall Fest. There's so much fun stuff for the kids to do, and it's enjoyable and relaxing for adults, too! If you have children aged 15 or younger, they can check out the Farm Fun Zone which includes a giant bounce pad, bubble station, tire mountain, and obstacle course complete with a zip-line. There's also a free playground area with a tube slide, large tractor, corn table, and more! Hayrides are free and will take you out to the corn maze and don't forget to pick your own pumpkins with a beautiful scenic view. Multiple food trucks will be on site and for $60 you can reserve a three hour picnic area rental with four picnic tables, a 6-foot table, a fire ring and firewood. There's also a gift shop with farm grown mums and gourds, seasonal decor, candles, and more.

INGREDIENTS

One large onion, diced 4 garlic cloves, rough chopped (2 4 mo for garnish, sliced)
1 lb Cremini mushrooms or mushroom of your choice, sliced 1/2 tsp salt
1 Tbsp fresh rosemary, chopped
1/4 cup red wine for cooking 5 Tbsp flour
3 cups chicken stock
3/4 cup sour cream
Pepper to taste
Optional garnish: Drizzle of truffle oil, garlic crisps, croutons, or crusty bread!
DIRECTIONS SERVES 4-6
What kind of room has no doors or windows?
Heat oil in a dutch oven. Sauté diced onion on medium-high heat, stirring until golden and fragrant. Lower heat and add garlic, cook for 2 minutes. Add mushrooms, salt, and rosemary. Sauté, stirring occasionally, Make sure to cook out all of the liquid from the mushrooms. Add cooking red wine. Turn heat to high, and cook this completely off. Stir until most or all the liquid in the pan has reduced out, about 3-4 minutes, and mushrooms glisten.
Turn the heat back down to medium, sprinkle the flour over top, stir constantly, toasting it for 1-2 minutes. Slowly add in your stock, making sure to scrape up any mixture built up on the bottom of the pot. Stir until thickened. If the soup is too thick for your liking, slowly add additional stock to thin it.
Stir in the sour cream until fully incorporated. Season to taste with pepper and salt.
To serve: Ladle into bowls and top with a few slices of mushrooms and garlic chips, and a drizzle of truffle oil. Serve with crusty bread.
Set aside 1/4 cup mushrooms for garnish. For crispy garlic to garnish with: Add 2 Tbsp olive oil to a pan and add thin sliced garlic. Fry until golden brown and crispy.

His customers are extremely important to him, so he wants to highlight them. In honor of Giacomo's grandmother, Nonna Sulina's name was inspired by her. She is his greatest source of inspiration when it comes to his love of food. Just a few days before the pandemic began, they opened their doors. His customers helped the new business stay open. They supported him by making this a very popular spot for takeout. With that being said, this restaurant made it through and is still a thriving establishment. Using recipes that date back hundreds of years, Giacomo prides himself on the freshness of his food. Everything that leaves the kitchen is fresh and homemade. Giacomo's parents spend the entire day rolling and making the Gnocchi from scratch. Married 50 years, Giacomo's Mother taught his Father how to cook and from that point on they've made a great impact on Nonna Sulina's. Coming from Sicily, Giacomo truly enjoys making his customers happy through his delicious food. He was so happy to bring these recipes back to life and make his country happy. Nonna Sulina's gets fresh products from Fossil Farms in New Jersey. He makes sure everything that is brought into his restaurant meets each one of his standards. Healthy Pumpkin Muffins
2 Tbsp melted & cooled coconut oil
1/2 c pure maple syrup or honey
1/3 c non fat plain Greek yogurt room temp
1 large egg
1 tsp vanilla extract
1 15 oz can pure pumpkin
1 tsp baking soda
1 1/2 tsp ground cinnamon
1/4 tsp of:
ground nutmeg, ground ginger, ground allspice & kosher salt
1 1/4 c whole wheat flour
3/4 c plus 2 Tbsp rolled oats
Preheat your oven to 325 degrees F. Light coat a 12-inch standard muffin tin with nonstick spray.
In a large mixing bowl, whisk together the oil, honey, and Greek yogurt Once blended, whisk in the egg and vanilla Make sure the ingredients are smooth and well blended Whisk in the pumpkin purée Sprinkle the baking soda, cinnamon, nutmeg, ginger, allspice, and salt over the top Whisk or use a rubber spatula to stir gently to combine. Sprinkle the flour and oats over the top, then with a rubber spatula, gently incorporate, just until the flour disappears. Scoop the batter into the prepared muffin cups, dividing it evenly (I like to use a batter or ice cream scoop for this). The cups will be very full. If desired, sprinkle on a few oats on top for decoration Bake for 24 to 29 minutes, or until a toothpick inserted in the center of a muffin comes out clean Place the pan on a wire rack and let cool in the pan for 5 minutes, then with a butter knife, gently loosen the muffins and transfer them to the rack to finishing cooling (or for as long as you can resist devouring them) The muffins will be very delicate while still warm, but will firm up more as they cool.
