nce you enter the Caribbean basin, whether you are on the mainland or our neighboring island nations, you have arrived in the homeland of rum. This spirit is inextricably tied to the sugar industry and a colonial history of slavery and exploitation. In fact, it is likely that the earliest alcoholic beverage derived from the sugar industry was a fermented molasses “wine” consumed by sugar cane field workers to dull the pain of slavery. Europeans discovered that this fermented molasses mix could be distilled, creating what is now known as rum. The origin of the name rum is contested but some argue that it is simply short for Saccharum Officinarum, the Latin/scientific name for sugarcane. The sugar industry came late to Belize as compared to other British colonies in the region. In the 17th and 18th centuries sugar and rum were both imported commodities in British

Honduras, brought from the sugarcane growing islands of the Caribbean and southern Mexico. British Honduras, as Belize was known in the colonial era, was administered by the British as a timber production site and large scale agriculture was actively discouraged for centuries. It was not until the 1850s that sugar cane planters from the Yucatec state of Mexico fled the Caste War and set up shop in northern Belize, Orange Walk and Corozal districts, where they began to grow cane for sugar production. American Confederate sugar cane planters followed on their heels in the 1860s and 1870s and Belize’s sugar industry was born. In Belize large scale rum distillation did not begin until the 20th century, though some small stills were in operation in the 1800s. Today our big rum distilleries are L&R Liquors, Travelers Liquors and Cuellos, all located in the northern half of the country where the sugarcane industry is concentrated. This wasn’t always the case-in the 1860s a group of Confederate Americans settled in Toledo District, our southernmost region, and began producing sugar. One family decided not to waste the byproduct, molasses, and so built a still. Thus was born Rocky Run Rum, a famous little rum maker that survived for almost a hundred years before shutting down

in the late 1970s. Today southern Belize is building on that tradition to introduce some new and exciting rums. Where Rocky Run Rum once stood is Copal Tree Lodge and Belize’s newest distillery, Copalli Rum. Copalli Rum is a unique distillery in Belize for a number of reasons. They use only organic sugar cane, red and purple varieties that they grow on their property, and they produce what is called an “agricole style” rum that is certified organic. Instead of using molasses, agricole style rum is produced by fermenting and distilling sugar cane juice. Copalli uses both column and pot stills to make a white rum, a “barrel rested” (6 months in an oak bourbon barrel) rum and a cacao rum, all in the agricole style. These have already garnered some prestigious awards in the 18 months since they opened their doors. In 2019 the Copalli Barrel Rested received the double gold at the International Rum Conference and the Copallli White received a single gold as well as the gold medal at the New York International Spirits Competition. The cacao rum, their newest product, is receiving rave reviews for its clean, bold chocolate flavor. Copalli is not the only new name in the rum game. Another, completely different, brand is Big Titty Rum. Big Titty Rum, the creation of restaurateur Frankie Galiano, calls Afrodite Bar its home base. s everyone began celebrating the holidays this past weekend, the Next Gen Croc kids in Seine Bight began their holiday season learning about Man's Best Friend, dogs. Melanie Wilcher and Mr. Steve from Placencia Humane Society brought their dogs Dulce and Paisley. Dulce was a street dog found skinny with no fur, yet now because of the love and treatment given to her, she is healthy and happy. Paisley is a service dog and a playful one. The kids got to see Paisley do tricks, and they even got to learn how important service dogs are. During the Dog Talk the kids learned that dogs should be treated with care, feeding them, giving them water and showing them love.

Additionally, the kids learned how to act towards dogs, the do's and don't having a dog as a pet, and empathy towards dogs and other animals. After some play time with the dogs, the crew from NGC did a trash

U.S.-Based CrocFest Raises Over BZ$24K

n December 7, Executive Director of the Crocodile Research Coalition (CRC) Dr. Marisa Tellez and her daughter Maia traveled to St. Augustine, Florida, USA to participate in the internationally recognized CrocFest at the St. Augustine Alligator Farm as the CRC was one of the recipients of the fundraiser (money raised was going towards researchers or organizations working on projects to mitigate human-crocodile conflict).

he Belize Barrier Reef System is a UNESCO World Heritage Site and one of Belize’s most prized natural treasures. The second largest reef in the world, the Belize Barrier Reef System is the healthiest in the world. And that’s something we take seriously!

The CRC is currently working on building a satellite tracker program focusing on the American crocodile. The American crocodile is currently listed as Critically Endangered in Belize as it’s prime habitat (the cayes and the coast) is being rapidly developed for tourism. With the satellite trackers, the CRC hopes to learn how the crocodiles move among habitat, identifying key habitat and working with local and national government to conserve habitat to ensure the survival of this species. Additionally, by understanding the crocodile’s dispersal patterns, the CRC can better inform communities when crocodiles may be on the move in urban areas in order to prevent conflict (such research was done in Australia and decreased human-crocodile conflict significantly). Although conflict between human and crocs in southern Belize is practically zero, and very rare in the rest of the country, the CRC anticipates that our research can continue to mitigate conflict as the human population grows and as we help the American crocodile population to stabilize.

Although the National Oceanic and Atmospheric Administration (NOAA)’s Coral Reef Watch Daily Bleaching Alert shows Belize under ‘no stress’, because both sea and air temperatures have dropped, mid-December surveys at south Silk Caye still showed bleaching at almost 50% of 200 corals surveyed. Because of this phenomenon, FoH will NOT be out-planting or conducting their regular restoration training until affected corals have successfully recovered. Instead, the team will continue to monitor the corals in hopes that they recover.

By all accounts, the runners thoroughly enjoyed their experience and praised the beautiful course, the high level First in full marathon race, Francisco of organization, and the enthusiastic Lima, Guatemala. In addition to cash prizes, the winners of the full marathon won two nights in a beach house donated by Naia Resort and Spa. Thanks to our many water stations volunteers who provided hydration, cheers, and encouragement for the runners at 21 locations along the 13.1-mile course. Thanks especially to the medical team, the photographers, and the masseuses all who donated their time and professional expertise. Additional thanks to Capt Jak’s Golf Carts for their course carts, and Rick Salazar with his Total Time Chip Timing Service for seamlessly providing accurate timing for our runners.
