From the Fire Hearth: Beers and Bocas! It’s October and that means conch season has opened. Belize has a long tradition of using this big, tough but tasty snail to make some delicious bocas. The word, Spanish for “mouthfuls”, refers to snacks to be consumed while drinking. But these treats start on the flat bottoms of sea grass beds across Belize where this precious snail slowly grazes.
Conch Fritters
The queen conch, Lobatus Gigas (formerly Strombus Gigas), is found across the Caribbean Sea and as far south as Brazil. Our neighbors both in the islands and on the Central American coast also indulge in this mollusk, which has the texture of octopus and the slightly sweet flavor of a scallop. It’s easy to over-harvest this gentle creature which lives a slow life on the sea floor, where snorkelers can easily gather them, and for that reason in Belize the beautiful Queen Conch may not be harvested between the July 1st and October 1st. This rest allows the conch to reproduce itself so generations of Belizeans and visitors to Belize will have a chance to enjoy conch into the future.

Protecting this prized seafood from overfishing is a tough job as offseason poaching and harvesting of undersize conch continues to be an issue across the Caribbean and within Belize. Please make sure you don’t eat conch out of season and remember they must have a shell 7 inches or longer to be harvested. Conch season is now open and that means across Placencia you can easily find the most famous bocas of Belize: conch ceviche and conch fritters. Both of these are made from the cleaned muscle of the foot of the conch. The perfect accompaniment to an ice cold Belikin, conch ceviche is by far the

most popular kind of ceviche made in Belize. For those not in the know, a ceviche is a preparation of seafood where the seafood is cut into small pieces and “cooked” by marinating it in lime juice. A classic Belizean conch ceviche consists of tender pieces of pounded conch meat marinated in lime juice along with habanero pepper, onion, tomato and cilantro. Some like to add carrots or cucumbers to this mixture, but I am a purist when it comes to my ceviche. Too many vegetables and not enough conch and you have a salad instead of a ceviche. This mouth-watering treat is served cold with tortilla, plantain or cassava chips for dipping. Almost every restaurant in Placencia offers their own version of conch ceviche during the season-try them all and discover your own favorite!

If you rather something hot and crispy to soak up the alcohol, look no further than conch fritters. Conch meat is typically pounded or ground to tenderize it as it can be quite tough fresh out of the shell. For fritters people grind the conch meat in a meat grinder or finely chop it and combine this with minced onion, sweet pepper, garlic, and seasonings, flour and a touch of baking powder. The quality of a conch fritter is judged by how

• 1 med sweet pepper finely chopped • ½ seeded habanero finely chopped (optional but delicious if you like some heat) • 1 tsp Salt and 1 tsp Ground Black Pepper (jerk seasoning, a touch of smoked chili pepper or curry powder are also good) • Coconut Oil / Vegetable Oil for frying 1. In a bowl combine chopped onions, green peppers, garlic, cilantro and finely minced or ground conch. 2. Sift dry ingredients (baking powder, flour, salt, pepper, jerk seasoning) together and add to the conch mixture. Stir while adding coconut milk as needed to create a firm batter.

3. Heat oil (ideally in a cast iron pan) until it reaches 350 degrees Fahrenheit or a fleck of batter dropped into the pan immediately rises to the top. Fry small spoonfuls of the batter, turning as needed, and drain immediately on paper towels. Make an easy and delicious dipping sauce by combining mayonnaise, lime juice, minced cilantro and a few shakes of Marie Sharps Habanero sauce.

Croc Corner Although crocodiles and their habitat are the primary focus of the Crocodile Research Coalition’s (CRC) work, we often see our work overlap with that of other species. In particular, we sometimes respond to cases where concerned citizens encounter wildlife that are displaced or wounded. So then, what exactly does one do when they find wildlife in distress? Well, here’s some information on what to do when you think you’ve found an animal in need.

The Tipsy Tuna came to life on October 20, 2000 in Placencia Village. It all started out as an indoor sports bar & late-night spot offering cold drinks, dancing, karaoke and pool tables. In February 2009, the Tipsy Tuna Seaside Bar became a colourful addition to the sports bar offering a variety of tropical frozen drinks & cocktails, food and entertainment.
Tipsy Tuna is also a big supporter of the community, hosting fundraisers such as Rotary’s Ladies’ Night, Rotary’s Live & Silent Auction, live performances for the Placencia Players Theatre and the Peninsula’s Volunteer Fire Department’s Flaming Heart Ball as well as other events for different organizations from time to time. Seine Bight News St. Alphonsus and the Police
program with the schools, they are conducting sessions on bullying, pep talks, and lectures about stealing and sexual offenses. The police on the peninsula are dedicated to the youth here and are doing their best to make sure the kids get the guidance that is needed. They also run a cadet program that is open to all youth on the peninsula.
Every time I go to the school recently it seems I am always seeing at least three officers there. I know that children sometimes do not behave as well as they should in school but I thought the police had to be there for more than that! With the beginning of the school year our Seine Bight activities have resumed. Many thanks to the instructors that are providing Zumba, Capoeira and kids yoga for free in Seine Bight each week. Tuesdays 6-7 PM Marisa Tellez teaches a Capoeira class at the
Seine Bight Girls Running Club The girls are still getting up to be at the field by 6:00AM every Saturday. Each week there are more and more boys that join in. The kids are working hard, training for the next Young Runners for Life Race being held on October 7 and the teens are training for the half marathon in December as well.

Imagine spending an entire day documenting PHS’ Seine Bight Outreach Program-traveling with the other volunteers, clicking over 800 photos in the field and in the clinic, viewing them all, then editing, cropping, perfecting the best 200 photos. Wait. That is just the beginning. Now add another fifteen hours of your time to create a four minute video, empowering it with the most carefully selected piece of music. Hilary Wilcher (aka Loco Caballo and StormBird.me) is this artist. She is a treasured PHS volunteer, gifting many days of her time, so that you--the public and PHS’ supporters--can witness how this volunteer based non-profit group fulfils its mission of service to the community.
(devoted PHS volunteer) Idaly Wilcher, and young son, Tru, lived in Australia for six years. Hilary rescued horses and rehabilitated them, channeling them from abused animals into tools for healing troubled youth.
Four years ago, Michael gave her a camera. Hilary admits that initially she was not interested in it, but says: “I had never taken photos before. But I began shooting sunsets, birds, horses, silhouettes—those were my very first photos. My art evolved. My camera is my tool to stop the time that I see, and to capture the spiritual beings and feelings of children and animals. This is my calling.”

I was using every aspect of my camera, and by the end of the day, the battery was dead, and the camera felt hot in my hands. I knew I had to nail the energy of that day. I did. On Saturday September, 30th (Oceana World Wide Coastal and River Clean Up) SEA staff, PIA and Police Cadet Group participated in a beach clean-up collecting 20 bags of garbage on north end of Placencia Beach.
Conch Soup Ingredients 4 lg. Conchs 3 medium size coco (diced) 1 clove garlic (chopped & smashed) 1 large carrot (diced) 2 tbsp. Oil 1 green plantain (thickly sliced) 1 green plantain (grated) 1 tsp. Thyme 3 potatoes 1 medium onion 2 tbsp. green pepper 2 tbsp. Flour 1 tsp. Shortening 1 cup coconut milk Method Clean conch. set on cutting board and pound with a meat mallet. In a saucepan, boil conch for just a minute. Discard water. Heat oil, add flour and stir until flour is brown, making a roux. Add 3 cups of water a little at a time, stirring constantly. Add conch, salt, pepper, thyme, diced coco, carrots & sliced plantain. As soon as soup comes to a boil (30 mins.) turn heat down to medium. Cover pot & let simmer. Meanwhile prepare dumplings of plantains. After grating the plantains, add a teaspoon of shortening and a pinch of salt. Form into little balls and drop into soup. Stir pot occasionally! As soon as conch and vegetables and plantains are just about tender, add coconut milk, Cook and simmer for 15 mins longer. Serve hot.! In Belize, we like to use 1/2 tsp of recado or paprika added for a little colour. Tip Green plantains tend to blacken around nails. Do not wet the plantain before peeling and rub a little lime or lemon juice all over fingers before preparing.
This month our CROCtober cleanup is in partnership with The Belize Zoo along the George Price Highway on Oct 14th. Crocs have been seen here- a friend of mine just saw one crossing the road the other
night. The picture isn't the best, but you can definitely see the croc! There are a lot of bodies of water in the area so the crocs will travel from one waterhole to the next.
Conch Season Now Open October 1st marks the opening of the fishing season for Queen Conch throughout Belize. The Belize Fisheries Department advises Restaurateurs and the General Public to use, consume and dispose of all Queen Conch meat in their possession on or before June 24th, 2018. Shrimp & Conch Ceviche Chaa Creek’s Belizean Shrimp & Conch Ceviche Recipe - Perfect for a weekend get together with family or friends. Enjoy! :) Ingredients ½ lb conch, cubed ½ lb shrimp, whole 5 limes, juiced 2 ripe tomatoes, diced 2 medium red or green onions, minced 1 carrot, minced 1 habanero, deseeded and minced A handful of fresh cilantro, minced Add salt and pepper to taste Directions Start off with cleaning and preparing the shrimp and conch. Leave the shrimp whole and chop the conch into cubes. Now soak it in some lime juice for approximately an hour or until it gets “cooked” by the acidity of the lime. Combine all the ingredients and let it marinate for a few minutes. This goes perfect with fresh corn tortilla chips & an ice-cold beer! Visit www.placencia.com

Placencia Rotary News District Governor showing the projects Rotary has completed in both communities. The Rotary board members along with District Governor Grazioso met for lunch at Cozy Corner then, visited District Governor, Julio Grazioso, the Community Center for Seniors visited the Rotary Club of Placencia Day. In the evening, all Rotary on Wed Aug 30th. President, members attended a presentation by Ron Fell, escorted him around District Governor Grazioso, hosted Seine Bight & Placencia Villages; by Paradise Resort.

Dictionaries distributed to local schools On September 13th & 14th, The Rotary Club of Placencia handed out Webster's Dictionaries they purchased. A total of 184 dictionaries were distributed to standard 3 students in Placencia, Seine Bight, Independence & Monkey River Schools.
