MARCH- THE STORY As the flowers begin to bloom and the golden rays of the sun tickle your skin into a perfect tan, the month of March is one to adore, and here’s why! The name of March comes from Latin Martius, the first month of the earliest Roman calendar. It was named for Mars, the Roman god of war who was also regarded as a guardian of agriculture. Martius remained the first month of the Roman calendar year, perhaps as late as 153 BC, while Britain used March 25th as the start of the year until 1,752 AD. The month also celebrates remarkable days such as Mother’s Day and the Spring Equinox, marking the beginning of spring in the Northern Hemisphere, and the first of autumn in the Southern Hemisphere.
Inspired by the Huaiyang, Cantonese, Sichuan and Lu cuisines, the journey is highlighted by themes of human emotions and ancient traditions, where each emotion corresponds to the famous Beijing Opera facial masks. First comes “Abundance” in a red mask; indicating devotion, courage and bravery brought into the flavours, followed by “Generosity” in purple highlighting the sophistication of the dishes. “Inspiration” comes in yellow showing the fierceness and cool-headedness of the dishes served on the table, followed by a final dash of “Happiness” in the shape of desserts.
