f you’re a regular reader you might know that our aim here at The Resident Magazine is to enrich your life in Sussex one page at a time. And every now and again an article comes along that meets that brief so brilliantly it makes me want to shout about it from the rooftops. We’ve had features on finding your calling, how to stop worrying and, of course, how to update your home or wardrobe in the most stylish fashion. This month, our quest continues with ‘how to be a barbecue god’. It might not seem very high brow, but these are important life skills everyone should master. And barbecuing is just the beginning of what has turned into something of an ‘outdoors’ issue. Because we’ve also got a feature dedicated to some of the best garden furniture out there no matter how big or small your open space.

Fans of the BBC’s TV show The Apprentice will be pleased to know we have an interview with one of the finalists on page 10. Nick Holzherr may not have been ‘hired’ but he did come third and is working hard on his business idea which he hopes will ‘revolutionise home cooking’. So there, Lord Sugar, - now Nick’s the one doing the hiring and firing. Moving on to the event of the summer - the Olympic Games. To mark the occasion we have an interview with the original golden girl, Sally Gunnell, who talks about her career and life in Steyning. Plus we have dedicated a feature to some of the most stylish sportswear money can buy. Well, if you’re going to break a sweat you might as well look great doing it. James Hood meets BBC’s The Apprentice candidate Nick Holzherr, a young man with all the ingredients for a successful business and for whom getting fired was just the beginning

learly it is the taking part that counts if Nick Holzherr’s story is anything to go by. The young candidate came third in the BBC TV series The Apprentice in May, but not winning has done nothing to quash his belief in his own business acumen or ideas. At Whisk (the company is founded on the concept he took to Lord Sugar), the heat is on, and a growing team of the online industry’s heavy hitters are onboard. It’s a business model that has been two years in the making, and for which The Apprentice may have been merely a catalyst to get the name out there. But Nick is humble in his defeat and talks fondly and gratefully of his time on the show: “I always had a passion for my business idea. I understood that when you’re talking about investment of up to £1million, you need serious backing. You need stakeholders, plenty of exposure and of course, users and customers. So The Apprentice was perfect for that. And the whole experience was great. I learnt a lot.” Whisk (for those of you who didn’t see the grilling Nick got during the interviews round of the show) is based around an online tool and corresponding app (in development as we go to press)

that helps you compile shopping lists from recipes online and either print them or take them to a supermarket’s website and buy them. In addition, something which was omitted from the programme, the website can calculate the amount of ingredients you need to buy based on what you already have in your cupboards. With more and more of us concerned about what we eat, the cost of waste and using the internet for food or shopping, it is nothing short of genius. So was this 24-year-old entrepreneur and (arguably) the brightest of this year’s candidates born a genius? Having grown up in Switzerland, Nick moved with his family to Forest Row, on the edge of the Ashdown Forest here in Sussex when he was a child. He says he enjoyed the outdoors life, and never missed an opportunity to make some cash. “My friends and I would wait at the edge of a nearby golf course and collect the balls that came over. Then we’d sell them back to the golfers. I also mowed people’s lawns for money. I was quite keen to be independent and seize an opportunity.” And grabbing an opportunity is what being entrepreneurial


up is all about according to Nick, rather than having an innate ability to make millions. He added: “Being successful is not as much about the money for me as it is ambition. I like to come up with a solution to things, to find ways of doing something that nobody’s thought of. That’s where my interest in business comes from. Not just a desire to win.” And despite not hearing the words ‘you’re hired’ from Lord Sugar in the show’s final, Nick did come third out of thousands of auditionees. So what made him so special? “I think I gained the respect of people on the show. On the very first task people were reluctant to step up and be project manager and I volunteered. Plus, the show is about bravado in many cases. I was much more quietly confident and simply got on with the job at hand. I had no interest in a media career when it was over. And also, I really believed in the business plan I had brought to the table. There are others who will sell an idea to death regardless of how good it is”, Nick told The Resident Magazine.

And come on Nick, do tell, what’s Lord Sugar like? “He’s very much as you see him on the show. He’s a nice man, and

a fair man. But we didn’t all hang out with a drink when the cameras stopped rolling. We actually only see him for the briefings and then in the boardroom - a process which takes two or three hours and is edited down. But other than that what the viewers see of Lord Sugar’s character is as much as we saw.” And although Lord Sugar chose a recruitment firm over Nick’s, Whisk is whipping up quite a storm in the business world. If there was any doubt that the company was going places, they recently moved into new offices located in Birmingham where Nick attended university, sharing space in a building with other exciting start-ups. Plus Nick and co-founder Craig Edmunds (formerly of Expedia) are chomping at the bit (food pun intended) to announce “exciting new recruits” in their technology departments this month, who will join their existing marketing team and help develop their business further. How can I reduce my carbon footprint at home? Felicity Field from UKH20, which helps households save water and reduce energy consumption, explains some of the ways you can ‘do your bit’ you might not know about

W

e’re often told that we need to be conscious of our carbon footprint and that the fate of our planet depends on it. As well as the environmental concerns such as global warming, there are other benefits to reducing our energy consumption such as the cost of living and also our health. But rather than simply switching off the lights when you leave a room, there are other ways you can have an impact on the environment at home. And you might not have heard of these yet. Felicity Field from Sussex-based business UKH20 believes that there are ways you can save the environment and your money by making small changes at home. Felicity told The Resident Magazine: “A great way to lower the impact you and your family have on the environment is to install a water softener. These can help reduce the build up of limescale, which is a big drain on energy. Just a quarter of an inch of limescale can increase energy consumption by 38 per cent. You will also save money because your appliances will last longer. Plus, if you have a water softener, you can reduce the amount of detergent, dishwasher salt, or even shampoo that you use by up to 75 per cent. This is not only better for the environment because it reduces the amount of chemicals you put down the sink, but it can also be much kinder on your wallet.” And speaking of kinder, according to Felicity, installing a water softener can also mean you have softer clothes after you’ve washed them as well as softer skin. And it’s especially important

in this region. “The South Downs region is known for having quite hard water, unlike somewhere such as Devon for example, where the water is harder. The water softener is a small non-electrical machine that is usually installed under the sink. In the US, it is one of the top ten ways of reducing energy used in the home. Another way of reducing the amount of electricity you use at home is to install a drinking water system. These can be cold (with fresh filtered water) or boiling hot (reducing the need to boil the kettle time after time). Felicity added: “If you drink bottled water, there is a cost to the environment. Many of those bottles will end up in a landfill, so drinking fresh water from a tap that uses a system to filter it will reduce your impact on the environment. Plus, the cost of water which you get from a tap is around 2p a litre - compared with more than £1 in some instances when you buy it from the supermarket shelves. Equally, you could consider the boiling water taps. These are now available integrated into your kitchen mixer taps as well as stand alone taps and they reduce the amount of times you boil water throughout the day - you’d be surprised how that all adds up to a lot of energy usage.” If you do go out and about and like to drink from a bottle, consider a Vapur, known as the Anti Bottle. They are foldable, rollable and re-usable bottles that can avoid some of the harsher chemicals used to make plastic bottles. So there’s no need to stop flying, or to cycle everywhere you go. Simply by making a couple of small changes to your household, you can go about your day as always, knowing you are still doing something to keep your emissions to a minimum. he British weather is so unpredictable that it is hard to plan ahead and buy your food and wine in advance. BBQ meats never taste the same under the grill, and Shepherds Pie on the patio just feels wrong. The only vinous solution to this challenge is to take a leaf out of Baden Powell’s book. In fact, I’d be very surprised if some enterprising wine merchant has not already marketed the perfect mixed case for a British Summer called “Be Prepared”. My latest mixed case was delivered to my door recently, so I can enjoy these wines however wet the great drought of 2012 becomes. The white in my fridge is a spectacular Tio Pepe Fino En Rama (The Wine Society, £13.95), not your usual white and not your usual Fino Sherry either. The En Rama is a special bottling of this dry, fragrant and deliciously complex wine, specially selected and bottled unfiltered for a purer taste. It is a great aperitif in the sun, and an entertaining partner to

salty snacks if you’re stuck inside with the sport on telly. The red is my preferred wine for all occasions - a Rioja Crianza, whose classic red fruit character matches lots of dishes, but also has enough ageing in barrels and bottle to smooth it out and make it tasty on its own. This one’s a recent discovery, the Fincas de Landaluce Crianza 2007 (Mountain Valley Wines, £17.99) which comes from older vines in the higher hills of Rioja Alavesa, giving it an extra peppery edge to the red berry character. I try to keep a stock of sparkling wines for those unexpected, or forgotten-until-too-late special events, including Champagne, Cava and tasty Franciacorta (Italy). However, my standby everyday sparkling is the affordable Lindauer Special Reserve NV (Majestic, £10.99 for 2+) from New Zealand, whose slight pink tinge reflects the higher percentage of Pinot Noir used to make it, and adds the hints of tropical fruit flavours that emerge through the bubbles. barbecue god Richard Macadam from the Angel Hotel in Midhurst passes on life skills that will separate the men from the boys when it comes to cooking outdoors

R

ichard Macadam grew up on the east coast of America, just 25 miles from New York. The neighbourhoods were small, the gardens large and the parties - great. Families practically lived outside during the summer and the barbecue was dad’s job. Richard told The Resident Magazine: “We used to have parties for the neighbourhood with up to 40 people popping round, so the art of barbecuing was instilled in me from an early age. My love of cooking developed as I grew up and a career in catering and hospitality followed when I left school. After moving back to England, where I was born, I started as a trainee manager at the Grand Hotel in Brighton and after four years I graduated, eventually working my way up to being general manager of Michelin starred West Stoke House restaurant with rooms.” Richard’s now at the helm of the Angel Hotel in Midhurst, working very closely with the head chef and his team to source and serve the most tasty meals and juicy steaks in the county. A few years ago, Richard took a sabbatical and, along with his wife, travelled the world spending a year In Australia another place where the barbecue is big. It was his eighth visit down under - a country and a culture he loves, adding: “On our travels we drove 17,000 miles in eight months driving from Brisbane on the east coast to Perth on the west

coast, visiting 200 vineyards on the way. We had a lovely little camper van and stayed on some fantastic campsites around the country. The Aussies really know how to camp in style with great facilities and barbecue kitchens to cook in the outdoors. My best experience of cooking was on our trip to Ayers Rock. We had taken a two-day tour with 35 people from Alice Springs as although it looks close on the map it is actually a 12-hour drive to the rock. We finally arrived at the campsite at 9pm having started our trip at 5am, and were starving. We unpacked our kit and went to the camp kitchen to find the barbecue and an ice box full of food ready and waiting for me! Cooking for 35 strangers in the middle of the outback of Australia with the crackle of the camp fire and the guitar playing in the background was a moment I will remember always.” Since returning Richard has continued his love affair with the barbecue, cooking for up to 200 guests at corporate events and weddings. Techniques Barbecue is a great way of cooking tender cuts of beef, chicken, fish and vegetables. Make sure whatever you are cooking isn’t too thick or it will burn on the exterior by the time the inside is done.

Although grilling is considered a healthy way of cooking because much of the fat will drip into the fire, be careful to avoid flare-ups from the fat. Not only will you potentially burn what you are cooking and give it an acrid flavor; you can also create a nasty fire hazard. When I was growing up my father only used charcoal as a fuel source. (I’m not even sure they had gas barbecues back then.) He made the common mistake of not using enough charcoal at the start or replacing it when it burned down. Result? The food never seared properly so the juices were released and the meat dried out. He also used the self-starting charcoal briquettes that gave the food a funky chemical taste. I’ve been told you can buy real lump charcoal with no additives and it makes a big difference, but I’ve never been able to find it so I opted for a gas grill. Easy to control the heat and even easier to maintain. I’ve even experimented with adding some presoaked chunks of Hickory wood to give an additional boost of flavor.

Clean that grill It’s critical you start with a clean grill. There’s nothing worse than grilling a beautiful piece of steak and having it taste of fish. The time to remove all the residue with a wire brush is right after you finish cooking while the grate is still hot. If you wait until it’s time to start cooking, some of the scrapings can fall into the flames and cause a flare-up. Before you begin heating the grill, brush it or spray it with a little vegetable oil to prevent food from sticking. This is especially important if you are using a sugary basting sauce.

Use a hot grill It’s vital that your grill is hot well before you start. Many of us, especially with gas grills, wait until right before we start cooking before we crank up the heat mistake. Preheat the grill 15 to 30 minutes before you intend to start cooking.

Have your tools at the ready Have all your cooking tools ready and standing by. This not only includes apron and utensils, but seasonings and basting sauces as well. And be sure to have a spray water bottle on hand in case of flare-ups.

Know thy grill Every grill is different and will have different hot and cool spots. It’s important you learn where they are and use them to your advantage.

How long should you cook for? I guess the most frequent questions I’m asked are “how long do you cook it for?” and “how can you tell when it’s done?” Although every cookbook you pick up has guidelines for each ingredient, it once again comes back to experience and touch. I would suggest you follow your favorite cookbook guides on grilling but start touching the foods at different intervals to get a feel for firmness and texture. For example, as a general rule, I like to cook a six oz sirloin steak for a total of six minutes to cook it medium. I start by grilling for two minutes to really seal some flavour and colour then turning it over and cooking for another two minutes. Then turn every 30 seconds to hot parts of the barbecue to get the classic grill marks. At the same time I test the steak with my finger to feel for various degrees of firmness. Medium cooked feels like touching your cheek. If you really want to get specific, you can use an instant thermometer. Then remove the steak to rest for at least ten minutes before eating. Don’t forget, the meat will continue to cook once you remove it from the grill to rest, so you may want to remove it before hitting your target temperature so you don’t overcook it. Chicken is the meat most people worry about cooking especially if it is on the bone. You should cook the chicken on the main part of the grill for 10 - 15 minutes, turning every couple of minutes then move the chicken up to the higher rack on the barbecue and continue to cook for another 10 - 15 minutes. To check, pierce with a knife and press the meat to see of the juice run clear. If so it is cooked. If blood runs through then continue to cook until the juices are clear. We’ve discovered a place in West Sussex where the most natural and delicious ice cream is made with ingredients that are literally fresh from the farm


I

t’s not always easy to know what’s going in our food these days. The supermarket shelves are packed high with processed and packaged food and many of the ingredients are unrecognisable. So imagine our delight at stumbling on a place in West Sussex making the freshest, yummiest ice cream money can buy. And how do we know it’s fresh and yummy? Because it’s made on a dairy farm using milk from their own cows that graze the watermeadows at Chalder Farm and fruit from nearby suppliers. It’s the brainwave of Caroline Spiby, a farmer’s wife who, back in 2008, had the urge to make delicious homemade ice cream that was as natural as can be. Caroline told The Resident Magazine: “You just have a feeling when something is the right thing to do. My dream was to make the best ice cream I possibly could. One that was simple, honest and delicious! With real ingredients. I have children too and I care about what they eat. This way, they can have a sweet treat, but I know it is 100% real food.” In the beginning, Caroline started experimenting with fresh fruit and the milk from the farm. She learnt how to make ice cream with the Italian ice cream connoisseur, Josef Boni, who taught her how to mix fruit and flavours and to develop the base ice cream which is known as Double Dairy. Caroline started with Double Dairy, Royal Bourbon Vanilla, Fresh Strawberry and Belgian Chocolate but by the end of 2008 another four flavours had been created. Today, Caroline has twenty flavours available, having developed some more adventurous options including Toffee and Honeycomb, Banoffee, Lemon Meringue and a range of sorbets. You can buy tubs or eat Caroline’s ice cream all over the county in village and farm shops, pubs and restaurants, and also in National Trust properties as far as West Kent such as Scotney Castle, Petworth House and Nymans Gardens. But it’s not only about the ice cream and sorbets at Caroline’s Dairy. The sweet treat

they make is part of a much bigger plan to support the surrounding eco-system and wildlife. Caroline supports and uses as much local produce as she can. And everywhere you look, the wonder of nature is evident. From the barking dogs to the children playing in the garden - even down to Matilda the duck. If you wanted to buy wholesome ice cream, this is where it should come from. Caroline added: “What we’re doing is more than just making ice cream. It’s about conserving the countryside and looking after the habitat for an amazing variety of wildlife we have here on the farm. You get to look out across the fields and see the cows grazing before they are milked and use that along with natural foods to create something delicious. It is as natural as making food gets. We encourage wildlife to thrive.” The process is simple. Their cows milk is pasteurised with cream and the other ice cream ingredients, then it is frozen to make the Double Dairy unflavoured ice cream or local fruit, flavourings and inclusions are added to create a variety of mouth watering flavours. No need for vast amounts of added sugar as the milk and cream have their own sweetness and none of the ice creams are bright in colour, just the way it should be. Then it’s frozen and packaged in special Caroline’s Dairy tubs (available in 120ml, 500ml for retail and 2litre sorbet tubs and 4litre tubs for catering purposes). And as if there was any doubt about the quality, the dairy has just been shortlisted in the Sussex Food and Drink Awards as one of the top ten food producers in the region. A West Sussex film maker has just shown his latest creation at the Cannes Film Festival. Charlotte Schroeter met up with him to find out what it was like presenting his work at the world famous event

A

Horsham-based film production company, Fact Not Fiction Films, has taken its latest creation to Cannes for the world-renowned film festival. ‘Shady Lady’ was shot in three continents and tells the story of a hero on board a plane in World War Two. Its star, Rob Wainwright, accompanied producer/director (and CEO of Fact Not Fiction Films) Tristan Loraine to the festival and said: “The film looks amazing. I am proud to have been part of it. Just being at the festival was quite surreal but to be in a film that was screening there took the experience to a whole new level – it was great!”. Rob is from London but was born in Australia, which meant he could pull off a cracking Aussie accent to play an Australian in Shady Lady and could even help the other English actors master the dialect.

The movie has also received a warm welcome from the industry - having been watched by the head of the British Film Institute (BFI) and even making it on to the cover of the Hollywood Reporter, one of show business’ most respected journals. Tristan said: “We felt very honoured that the head of the BFI was there, it meant a lot to us and we were quite nervous about her watching the film. Then when the Hollywood reporter heard our plot and the story behind the film they said they were interested in running an article. It was magical sitting having a hot chocolate for breakfast seeing our film on the front page of what is surely one of the top film industry magazines that exists.” Tristan is a former airline captain and has a keen interest in aviation but says this is the most amazing aviation story he has ever heard. Shady Lady took off from Darwin, Australia and was the last of a number of planes to invade Japan. Due to the weather the plane ended up miles off course. The crew were exhausted and alone in enemy territory. To top that off, they ran out of fuel over an ocean and crash landed in on the North West Coast of Australia. In a heart-warming display of human kindness, the Aboriginals helped them rebuild the plane and fly back to base. Amazingly, the crew all survived

to tell the tale. Bravery is a term Tristan used to describe the mission and says: “The term ‘hero’ is often used lightly in day to day life. The Shady Lady crew were real heroes and the commander was a real aviator, who deserved the Distinguished Flying Cross that he was awarded. Seeing the finished film up on the big screen at the most prestigious film festival was incredible. The story is told really well and you really connect with the pilot, First Lieutenant Doug Craig. I was gripped by the story and enjoyed seeing it unfold.” Tristan is also very impressed with the actors and says although many were young, they delivered wonderful performances. And the actors also worked in quite bizarre surroundings. The briefing scenes were filmed at Gatwick Aviation Museum in December in very cold conditions, there was even snow one day. Rob added: “I really had to pull out all the stops with my acting and pretend it was an Australian summer while putting on a coat and a heater in between takes!” Local young men were hired in for a day to play extras in the briefing scene so it was a real local affair. Other scenes were filmed a little further from home in America and Australia. In Australia, they flew the wife of the Shady Lady commander from Texas to the most remote part of Australia to discuss the story. Tristan told The Resident Magazine: “To make a film like Shady Lady, on three continents, requires exceptional support and help. We are very grateful for all the support we have been given by individuals and corporations who were blown away by the Shady Lady story and who wanted to play a part in getting the film made.” Fact Not Fiction Films has recently completed a documentary called Pilot Fatigue which will premiere at the Chichester International Film Festival in August. Wolf Hall and Bring Up The Bodies by Hilary Mantel (published by Fourth Estate) If you missed the 2009 booker prize winner when it came out, now is the time to catch up. Bring Up The Bodies, the hotly anticipated sequel (and middle book of a planned trilogy), is just out and went straight to the top of the New York Times bestseller list. The books give a detailed look inside the court of one of England’s most controversial and interesting monarchs, Henry VIII. Told from the point of view of Thomas Cromwell, a lowly blacksmiths son who became a lawyer, one of the King’s most trusted advisors and the architect of the break from Rome and the reformation, these books are superbly written, rich in detail and compulsive reads. Dig in for the first 60 pages of Wolf Hall and you will be rewarded by the remaining 600.

Before I go to sleep by S. J. Watson (published by Black Swan) Watson’s debut novel is a dark thriller about a woman who has short term memory loss. Every morning she wakes up and has to be reminded that she is approaching 50, married and living with a husband who she doesn’t recognise. As Christine starts seeing a doctor and recording her story each day it becomes clear that the pieces of the puzzle don’t quite fit together. But can Christine figure it all out in time? A quick read that will keep you hooked from the start. Nicole Kidman is set to star in the film adaptation.

The New Republic by Lionel Shriver (published by Harper Collins) When I heard that a new Lionel Shriver book was coming out just in time for this feature, I got seriously excited. The award winning author of We Need To Talk About Kevin has an extraordinary way of describing human nature and writing compelling stories that leave the reader strangely exhausted while longing for more. Her latest novel is a political satire about a wannabe journalist posted abroad to investigate a Portuguese terrorist cell. Perhaps only Shriver could write about terrorism with a tongue-in-cheek touch, but she manages to do that while looking at what makes some people so magnetic.

The Red House by Mark Haddon (published by Jonathan Cape) Through his bestselling debut novel, The Curious Incident of the Dog in the Night Time and follow-up A Spot of Bother, Mark Haddon has marked himself as a sensitive, observant writer with a knack for writing about human relationships. The Red House takes this skill even further as he describes that all too familiar experience – the family holiday. An estranged brother and sister and their respective families come together after the death of their mother in a bid to reconcile. The tale is told from the eight different perspectives of the eight characters. We stay with the family for the week that they are away.

If Walls Could Talk by Lucy Worsley (published by Faber and Faber) A move away from fiction for this fascinating history of the home, the things we have in it and the things we do in it. Lucy Worsley is the Chief Curator of the Historic Royal Palaces and has stepped away from palaces and into homes from Norman times to now. With delightful details like the order in which family members should get into a bed (girls against the wall, visitors on the edge). As part of her research, she spent some time living in a medieval cottage comprising just one room. For fascinating tales about how your home came to be the way it is, If Walls Could Talk is a summer must-read.

What you should know about buying a listed property In this part of the country, older properties are everywhere. So Holly Armstrong from Anderson Longmore & Higham answers your questions about those that are listed by English Heritage

C

hances are if you are looking to buy an old property somewhere like Petworth that it is a listed building. There are just under 500,000 properties in the UK which are listed by English Heritage as being of special architectural value. There are several listing categories, Grade I, Grade II* and Grade II. The majority of listed buildings fall within the Grade II listing. A property does not need to be old to be listed and properties continue to be listed. If you are looking to buy a listed building, the first thing you, or indeed your solicitor, should do is obtain a copy of a property’s listing. Property listings can be downloaded from English Heritage’s website. The listing will set out which elements of a property are listed as well as show on what date a property was listed.

As well as requiring planning permission, any alterations to a listed building will require listed building consent. Any consent granted is likely to contain specific proposals regarding the type of materials that are used, colours and even building techniques. What you should bear in mind is that it is not just the “usual suspects” which would require listed building consent such as an extension or replacement windows; re-painting your house may require consent as may replacing the guttering. As well as considering the listing in light of any works you may want to carry out to the property, your solicitor will be keen

to ensure that the seller of a listed building has not carried out works to the property in breach of the listed building regulations. You should consider having a full structural survey carried out of the property because your survey report may highlight potential problem areas which can then be investigated by your solicitor at an early stage. A failure to comply with listed building rules is a criminal offence and a local authority is not time limited as to when it can take enforcement action. A local authority is likely to insist that the unauthorised works are dismantled or redone to comply with the property’s listing. This would have cost implications for you but would also cause a great deal of stress. Do also bear in mind that a local authority could decide to prosecute you for the breach. If your solicitor has any doubts about works that have been carried out, it would be prudent to ask the seller to contact the local authority to provide confirmation that there has been no breach. Similarly, if you intend to carry out works to a listed property and if you have any doubts about whether the works require listed building consent, it is always worth checking with the local authority at an early stage. secret She’s the original golden girl. Storming to victory at the Barcelona Olympics in 1992, Steyning-based Sally Gunnell won both Gold and the heart of the nation. But then came Atlanta, defeat at the hands of injury and as Liz Trundle discovers, a new path to fitness

S

ally has secured her place in sporting history. She remains the only woman ever to hold the coveted four titles - World, European, Commonwealth and Olympic Games concurrently. But these days you’re just as likely to find Sally sharing a cuppa with friends in her local Sussex Produce Company. Pulling out of the 400m hurdles in Atlanta in 1996 was a cruel blow. The turning point came a year later when recurrent injury forced Sally to retire from professional athletics. Did retirement come easily? Sally is pragmatic in her response. Now living in Steyning, but born and bred in Essex, she retains her down-toearth approach to life. “I’d achieved all the goals – four majors – and I wanted other things, like going skiing with friends, being home with the kids, normal things! And you’ve got to realise that you can’t go on forever. My body had had enough.” In 2001 Sally published Be your Best – how anyone can become fit, healthy and confident in which she encapsulated her new definition of fitness based on a healthy balance of exercise, diet, work and relaxation. This holistic approach to well-being has been at the heart of Sally’s work in supporting others ever since. “I have to admit that, I’ve never been particularly happy with my body,” says Sally with astounding honesty. “Especially now when I’m not as toned as I was. I get cross with my stomach and wish my torso wasn’t so short. I’m my number one critic!But I know that to be your personal best you have to rise above it and look with confidence on your strengths instead. Nobody’s perfect – we all have good days and bad days – we

just need to accept we can’t do it all, all the time and to set achievable goals.” As an Olympic gold medallist, with a career portfolio of 16 gold medals to her name, I was tempted to think that Sally might be ‘dumbing down’ the schedule a little for the average couch potato. But her own current exercise routine reflects someone who has really moved on from the driven environment of elite athletics. “I might exercise four times a week – maybe go for a run or cycle in the Downs – but then sometimes if I’m busy do nothing at all. But what I do know is that if I do exercise it makes me feel and perform better in all areas of my life– and I always feel so much better when I’m back!” It’s a measure of how passionately Sally feels about health and well-being - and helping others to achieve that in their daily lives – that she has carved out a flourishing career as a motivational speaker since her retirement. “Sally is such an inspiration. She is down to earth and a brilliant speaker... she had everyone on the edge

of their seats, you could even hear a pin drop!” reports a company delegate who heard Sally speak at the recent Women in Construction Awards 2012. Her entry into the business world secured, Sally set up Be Your Best – a consultant company offering tailor-made programmes for workplace well-being. Pulling together a core team of experts (including the UK national athlete Sarah Tomlin) Sally provides innovative solutions to improving employee health and fitness. From ‘come and try’ away days, workplace healthy living rooms and snack and smoothie bars, Sally and her team design and deliver workplace plans to meet the specific needs and HR requirements of individual companies. Reflecting Sally’s own belief in holistic well-being, the approach is intentionally comprehensive covering strength, conditioning, rehabilitation, nutritional therapy, and alternative forms of exercise such as yoga and pilates. A self-confessed yogi myself, I was duly impressed. But with

the current economic downturn, did smoothie bars and chill-out zones really meet the financial brief? Sally was quick to reassure me that takeup continues to be brisk. “Companies want to be more pro-active as they’re demanding so much more from their employees. They’re looking at ways they can support staff to be happier and more productive with less absenteeism. They’re no longer doing the luxury conferences; they want to offer smaller scale support, and we suit programmes to fit in with budgets.”

to nurture the next generation of potential sports stars. She puts her own ascent to stardom down to “growing up on a farm, charging up and down the field and the opportunities her parents gave me”. She’s hopes that today’s children will have the same access to the range of activities she had. Her tone is gently encouraging. “You can’t force them – it’s just about being available and supportive. There are many young people with talent, but who have to be prepared to put in training three times a week - most kids wouldn’t want to do that.”

Sally reports that employees themselves are also really keen to take on board the healthy changes she suggests. “Quite often people want to change but they don’t how to - there are so many mixed messages. We offer personal practical solutions, whether that’s simple exercises to do in Prêt a Manger or something you can do on the way to work.” With a client base embracing the likes of Virgin Atlantic, HSBC and John Lewis, it could be said that Sally has traded track for trade. But she is quick to reinforce her priorities; family and home remain firmly at the centre of Sally’s life. Married to ex-professional athlete Jon Bigg, Sally loves nothing better than enjoying “good food, nice friends and a barbie” in her back garden in Steyning. And as a mum of three she is also keen

London 2012 - and this rather reluctant celebrity is enjoying a little renewed limelight. Recently pictured in full red-carpet glamour alongside Denise Lewis for the Sport Industry Awards and set to run post-race commentary when the games kick off on 27 July, Sally is upbeat. “It’s gone mad!” she enthuses. “It’s great and a massive window of opportunity. For the next six months I’ll be working flat out and will make the most of it. In the second part of our series on how to run, The Resident Magazine’s personal trainer, Dan Forster, steps it up a notch with an easy plan that will take you from a brisk walk to a 5k run

T

he height of summer is slowly creeping upon us and even though the weather may not always be up to scratch, this is the time to get outside and get running. Having mastered all the basics that we touched on in Learn to Run Part One, this month’s handy running program will help you follow a clear structure, so you can take your running to the next level. The program is designed to build slowly from a brisk walk up to 30 minutes continuous running or roughly five kilometres. I’ve opted for a three day a week schedule leaving one day intervals so your body can recover and repair. You can choose your own days to suit your lifestyle following this format and allowing an extended period after the third run of the week for a full recovery. After you’ve scheduled your workouts put them in your phone/work diary and keep to it. You won’t find time for them unless you make time for them. Once you’ve decided what days to take your runs, try and stick to the program as strictly as possible unless you are experiencing difficulties. If you are finding it too hard don’t advance at the pace I have scheduled, maybe try repeating certain weeks to enable progression at a slower rate. If you are not accustomed to any exercise, or you are more than two stone overweight, consult with your doctor before commencing my intermediate program. Unless you have a known health risk your doctor will probably encourage you to begin a runwalk program, but it’s wise to check. As always, make sure to do a five minute warm-up before you begin. This can consist of walking slowly building into a brisker pace and standard stretching exercises. After this you are ready but try not to go off too fast and don’t rush. In the running world, rushing leads to injuries and discouragement so be patient and go slow. The goal is to reach 30 minutes of continuous running so forget about speed. Once you have successfully reached the week nine target you can decide your next goal. You may want to continue running five kilometres at a time three days a week. Research has shown this is enough to lose or maintain weight, improve overall health, cholesterol levels, blood pressure and insulin response. Once you have reached this level it’s very easy to go for longer and further. It’s the first 30 minutes that are the hardest. Don’t be put off if you have a bad day, everyone has them, they pass quickly and the next workout is often better than the previous one so stick with the program. Jess Archer, The Resident Magazine’s fashion expert, meets Richard Talman, one of the leading goldsmiths and jewellery designers in Sussex

R

ichard Talman is charmingly polite, incredibly chatty and completely unassuming. I meet the 33-year-old in his Haywards Heath-based studio and witnessed him in action, struck by how delicate his hands are; hands that define his craft for making award-winning bespoke jewellery. But those same hands (and feet!) are quite dangerous too! That’s because he’s fast becoming an expert in the martial art of Taekwondo. Starting it only three years ago “simply to keep fit”, says Richard, he’s now a red belt and only two grades away from becoming a top of the grade black belt. It’s designing and crafting unique pieces of sparkling jewellery though that gives Talman his biggest kick. He was always destined to be a diamond geezer, given he began his goldsmith studies in London’s East End at the Sir John Cass Faculty of Art. But what attracted him to a life of carats, rings, bracelets and necklaces? “My fascination started when I was a little boy. Aged five, I used to use my pocket money to buy rocks and minerals and my Dad said I was always toying with sparkly little trinkets”. That love affair became his profession 17 years ago. After studying, he began an apprenticeship in London’s Hatton Garden, the capital of the jewellery trade, working there until, three years ago, he decided to branch out and set up on his own. And at the turn of the new millennium, Richard’s hard work was rewarded when he was named the UK’s Fine Jeweller of the Year in 2000 and then a year later one of our top 10 goldsmiths in the World

Skills competition in South Korea. “They were great honours to receive”, he says with typical understatement, “and it was always an ambition of mine to build my own business and be my own boss”. And what makes him tick? “I just love what I do and I’m always in search of perfection. Without happy customers I am nothing and it’s great when I am recommended to family and friends by someone I’ve created a piece for. I don’t necessarily see myself just as a jeweller. I’m lucky enough to have been blessed with a skill for creating bespoke designs that, hopefully, exceed my customers’ expectations. For me, it’s very much a one-to-one service between the customer and me and I always want to create something a little different and individual”. It’s not surprising that Richard, who married Jennie two years ago (he obviously made the rings!), classes the diamond as his “timeless favourite”, followed closely by the Pink Sapphire and the rarely-seen Pariba Tourmaline, a semi-precious stone with turquoise and blue colours. “I love them all but it’s not what I like; it’s what my customer wants. At the end of the day, it’s about personal taste”. Away from work, the personable Talman lists other pastimes as rock climbing, mountain biking, eating out and a nice glass of red wine of any region, as well as his martial art. As we finish the interview, he rubs those delicate hands and gets back to his sparklers. For the personable Richard Talman, given this lifetime love affair, I suspect diamonds really will be forever.

very now and again, a European town or city makes it ‘onto the map’, metaphorically speaking, obviously. Over the course of a year or two, it becomes a buzz word - the place to be or be seen flying to and where we are all talking about spending a long weekend. It happened years ago with the likes of Nice and Cannes. The same could also be said of Santorini after a certain Abba-themed Hollywood movie was filmed there, and more recently Seville has become a hot spot. But now there’s a new place that is fast becoming a go-to destination and one to add to your list of places that simply must be seen. It’s called Angers (pronounced onjay with a very French sounding ‘J’) and it’s at the heart of the Loire Valley in France. Remember its name. It’s a fitting location for a city that really couldn’t be more French. The capital to Anjou, Angers (sorry, OnJay!) is adorned by vineyards, castles and offers a combination of culture and contemporary restaurants for those who enjoy fine wining and dining. At the centre, the stunning architecture, one of the many things that the French do so well, is awe-inspiring and has been conserved with great care - to such an extent that when a modern building was constructed to house clothes shop H&M, it had to be built using mirrored glass so the reflection of the surrounding buildings could be seen. It’s clean. Spotless in fact and the city clearly cares about the quality of life for residents and visitors - an electric tram system reduces emissions from traffic and 80 per cent of the track is on grass rather that concrete. The city is built around the main attraction - a castle and fortress that dates back to the 13th century, with a moat! Make it across (imagining the bow and arrows that would have followed you over in the 1200s) and you will find walled gardens, steps leading to lookout points and the main attraction, the Apocalypse tapestry - the world’s largest. Created more than 600 years ago the masterpiece is thought to tell a story from start to finish, a battle of good Vs evil. It’s highly recommended but avoid flash photography as the light can discolour the fabric. And moving on to what the region is known for; its wine. Take your pick from a number of vineyards which produce wine that is exported around the world. The Domaine du Closel - Château des Vaults is managed by the fourth generation of female vintners, Viscountess Evelyne de Jesse Pontbriand. There you can take a

tour of the vineyards, a short walk away from the main château, and taste the wine they produce. You can visit by car, or even cycle a route that takes you along the Loire River and into the countryside, weaving your way through quaint villages and lanes. Bikes can be rented from the Loire a Velo bike shop in the centre of Angers and the city is safe to cycle around with allocated lanes on most roads. If you’re interested in ecology, plantlife or the miracle of life in general (or if you are taking children) then a day at Terra Botanica, Europe’s first theme part devoted to the understanding and discovery of plant life, is a must. There you will be able to see some of the world’s most exotic plants. Educational elements include a movie on the journey of a rain drop and the restaurant serves up impressive lunches using 100 per cent natural ingredients. But you would be hard pressed to find any food that was sub-standard in Angers. There are a number of restaurants to choose from. Namely the Brasserie Du Theatre at the centre of the city, which overlooks the main square, is opposite a grand theatre (hence the name) and has three floors of contemporary dining and really great food. Try the oysters. If alcohol is more interesting to you, you should know that Angers is the base for Cointreau, the world famous orange liquor. Take a tour of the factory and learn about how the company fended off the competition with quality and clever marketing to become the apperitif of choice for millions around the globe. If you have the time after all the wining, dining and wandering, there is one big château that must be seen. Château Brissac is the hightest castle in France, with seven floors, and has been the home of the Dukes of Brissac since 1502. You will be shown around the drawing rooms, galleries, bedrooms, theatre, hidden bathrooms and if you’re very lucky, the current owner, (Mr Brissac presumably) will even come out and say hi. Much like the destinations mentioned earlier, it’s the kind of place you can whizz to for a weekend, but make no mistake, if you want to go for longer, you won’t be short of a thing or two to do. It’s beautiful, clean, friendly, has an incredible fresh food market on Saturdays and it’s just an hour from London by plane. Time to get that map out. magine a town where you can shop, enjoy quality food and wine, browse some of the world’s most beautiful furniture, take in an equally stunning view and where the parking only costs £1 for a day! Sound too good to be true? Well at Petworth that dream is a reality. It’s the little known place at the heart of the South Downs National Park that is quickly becoming THE destination for leisure time, whether it’s clothes, bags, contemporary food shops, restaurants, antiques or a country walk that floats your boat. The town dates back to Medieval times, surrounded by the wall of 17th century Petworth House. Its cobbled streets are adorned by some of the most exquisite Listed buildings anywhere, which add to the atmosphere of this peaceful, tranquil little town - the centre of which spans just a half a mile. But don’t let appearances deceive you. This quaint village-like place is a haven for shoppers and those who enjoy the finer produce in life. And despite crumbling, ancient walls, there’s nothing fussy and old fashioned about Petworth. It is attracting some seriously contemporary purveyors of all things ‘cool.’ That is thanks to the arrival of businesses like The Hungry Guest Food Shop and its sister cafe, both of which offer fresh food and drink in a modern but welcoming setting. As the manager of The Hungry Guest Food Shop, Andy Gould, told The Resident Magazine: “Our aim has been to offer excellent quality seasonal and, where possible, local produce. We sell our own range of things like pestos, soups and salad dressings. And it’s all available in a stylish, well-designed space. It’s London quality here in West Sussex.” And there are other nods to our stylish capital city. Kiki Design has relocatd from fashionable Notting Hill to Petworth. But although having the cool and contemporary is all well and good, there is something to be said for the quality and service you can expect from a business that has been around for 200 years. Cue Austens Home Hardware, a family run business that was established in 1812. Its owner Adrian Winnicott said: “We take great pride in providing a modern yet traditional retail outlet. We place a great importance on service as well as on our team’s knowledge of our 15,000 product lines. I believe that’s how we’ve been running for two centuries and I’m really proud to be in charge of such an historic and well-respected business.” Austens Home Hardware sells Stellar 4000 Cookware, Twist & Lock, HG Cleaners, Paton Calvert Bakeware and more and has stores across Sussex. Other goods that can be found in Petworth include books, luxury natural skincare, wine, flowers, ladies’ fashion and gentleman’s clothing and more than 37 arts and antiques dealers. It is the kind of place you can spend a whole day. Rather than a town you need to drive through to get somewhere else, Petworth has everything one could need or want from a day out in Sussex. The National Trust property, Petworth House has a rolling season of events and the most beautiful grounds for a walk or a picnic. Then it’s just a stone’s throw (literally!) away from Petworth’s streets for shopping and dining. A lunchtime or evening at The Leconfield restaurant could be the cherry on the cake for those who enjoy fine food and drink. There are also a range of other restaurants including an Indian, Chinese and numerous nearby pubs for a wholesome country meal, an ale or a juice. In addition, The Leconfield Hall, built in 1793, is available for hire and an ideal venue for events. It includes a large auditorium with theatre lighting, gallery, stage, double

windows giving good insulation from traffic noise and a sprung dance floor upstairs. A grand piano is available and there is an electronic projector. Allans Menswear reported its most successful Christmas trading period in 40 years in 2011, it also has an active business community which has organised its own ‘Independents Day’ this July, something which Jackie Tudor, Chairman for the Petworth Business Association says is a testament to the area’s growth in retail. Jackie told The Resident Magazine: “This is a really unique place to visit, shop or enjoy. Whichever way you look at it, Petworth really is a remarkable place. It has a great feeling of life, buoyancy and creativity, taking your mind away from the more mundane concerns of these challenging times.” But it’s not only shopping that is attracting people to the town. Other attractions include the Petworth Festival and Cottage Museum, a home that once belonged to Mrs Cummings, a seamstress at Petworth House. Furnished as it would be in 1910, the cottage has a walled garden, a ground floor scullery and a sitting room, with a kettle boiling on the coalfired range. Upstairs there is a sewing-room and a bedroom, and on the top floor an attic bedroom. The property and museum gives a fascinating insight into life in a small-town home in the early 1900s. It really is a hidden gem in the Sussex crown. A town where you can explore, shop and enjoy your leisure time. It marries 21st century amenities within an archetypal English area. Where else could you go and wander the streets among Lord and Ladies (Lord Egremont who owns much of the surrounding estates still lives in the town). With parking either free in some car parks or just £1 for a day, it’s a small price to pay to escape everyday life to somewhere modern and magical.

Classical music still remains at the heart of the Festival and this year’s programme welcomes artists from home and abroad. The 2011 Proms Opening Recitalist Benjamin Grosvenor launches the first festival weekend with a programme that reflects the versatility of this extraordinary young pianist, ranging from Bach to Chopin and including Scriabin and Ravel.

Fresh from outstanding performances across Europe, Czechoslovakia’s Skampa Quartet perform a delightful programme which centres largely on their homeland while closer to home, world class choral group The Hilliard Ensemble bring vocal virtuosity to a programme of songs that begin in the reign of Elizabeth I and move through to the present day. Solo recitals are a particular strong suit this year. Pianists Cristina Ortiz and Martin Roscoe, clarinet supremo Michael Collins, and winner of Cardiff Singer of the World Valentina Nafornita all come to Petworth pre-eminent in their field, adding an international lustre to an already packed programme.

Festivals are as much about place as programme and many Festival events reflect the lovely surroundings in which the Festival takes place. Lady Caroline Egremont will talk about the gardens at Petworth House while a superb line-up of jazz artists create an unforgettable evening of open air music in the Petworth House Stable Yard. Award winning theatre company Ilyria will bring their special magic to the grounds of Bignor Park in two performances, the first of Shakespeare’s Henry V and the second of Roald Dahl’s The Twits.

The festival also includes literary, comedy and children’s events – often blended together to create performances unique to Petworth. The opening concert brings together leading choral conductor David Hill with members of the Bach Choir, together with more

If you have the space and want to create a truly luxurious bedroom the starting point must be the bed. A lovely canopied bed will look amazing, whether a four-poster or a half tester. Referred to as ‘the King of Beds’ and the ‘Bed of Kings’ a fourposter makes a dramatic statement in any room. A canopy will make a bed look grand and imposing, particularly if the bed is in a central position in the room, with beautiful luxurious fabrics such as silks or taffetas. If you have opted for a grand canopied bed, then elegant pieces of antique furniture will work best in the room. A wool wall-to-wall carpet will add warmth and magnify the space and make the room feel more cosy at the same time. If you still want a luxurious feel, but prefer something a little more contemporary, a modern four-poster bed will make a grand statement in any room. Leather upholstered beds look very at home in a contemporary setting. I particularly love the Italian four-poster beds – these have four posts, but do not have canopies, and again will look great in a large contemporary space. Bedroom lighting can be divided into three areas: To add a touch of grandeur, adorn your bedroom with a beautiful crystal chandelier. It will add sparkle and sophistication to the room. The bedside area will need reading lights – crystal lights with silk chandeliers will add a touch of glamour. And then for practical reasons good task lighting situated near wardrobes and dressings tables is a must. Seating is essential in a luxury bedroom, so add a comfortable curved back armchair or chaise longue in the room, or if your space is limited, an upholstered bench. Seating in the room gives you a place to relax before bed, read a book or to sip your glass of bubbly and simply sit back and admire your beautiful bedroom.

Drape your windows in beautiful fabrics to compliment the room. Silks, velvets and chenilles add a rich luxurious look and to add that extra bit of opulence let the curtains puddle on the ground. Large chunky tassel tiebacks complete the look. For an even more sumptuous look ensure your curtains are interlined, this not only makes them more luxurious, but will also keep much of the light out, rather than going for the option of total blackout lining. When designing a room, there is one important element that shouldn’t be overlooked - and you can’t even see it. Interior designer Mark Lewis discusses why what you can hear is as important as the armchairs for a comfortable home

T

he most crucial element of the interiors I refurbish is, ironically, the least conspicuous part of my interior design work. In fact, it is totally invisible. It is the acoustics. Together with the furniture, it will determine the subliminal nature of how our experience will be at home or anywhere else. It reminds me of an occasion in a restaurant on which my mother, oblivious to the ongoing banter, politely smiled after some comment that had been made at the table. You may have thought she didn’t hear a word because she is old and deaf. But looking down, and around you may notice stone floors, wood or even laminate, and stripped brick walls and wooden beams. All of which means the more likely explanation for her lack of appropriate response is due to corrupt acoustics! The crashing noise of everything filling the area and reverberates incessantly because there is no absorbent material in the room. Fortunately I have had the opportunity to design for restaurant owners who have been very sensitive to the comfort and wellbeing of their customers and every detail of the dining experience is given equal significance within the scheme. One such client, the owner of the Scott’s Group hired me to refurbish Scott’s restaurant on Mount Street, Mayfair, and subsequently the others in the group such as the fish restaurant J.Sheekey, Drones, the Mirabelle on Curzon Street and Overton’s in Victoria during the 80’s. This was the first time Scott’s had been done up after the infamous bombing by the IRA in the 70s. The most memorable issue for me with the refurbishment brief was that the owner and his wife would not notice that their favourite restaurant had been completely gutted and rebuilt. The works were planned during the preceding year and implemented during the Christmas close-down period, re-opening the first week of January. Running site operations for such an intensive explosion of work was quite exciting; a 24hour programme determined that demolitions, removals and deliveries of stuff happened in the night, preparing the areas for the trades to start in the morning with uninterrupted progress until the evening all supported by an army of labour. The kitchens and the dining areas, oyster bar and private rooms were rebuilt incorporating every modern convenience whilst maintaining its classic ambiance and the display of the largest collection of English primitive paintings in the world. We also added six extra covers within the dining area that were included with such finesse that the Maitre D’, Louie, had a hard time working out how we did it even though he spent a few mornings counting seats. Needless to say, they were not old church pews. On to more recent projects and another spectacular kitchen dining area I designed and built on the back of a large house in Muswell Hill a few years ago. This turned out to be a travesty. Whilst attending to the fashionable

edicts of stone slab, hard wood floors and huge panels of glass separating the illuminated garden from the monumental if not tomb-like minimal interior, I had included under floor heating, a majestic robotic island extractor, an inset plasma screen, two dish washers and an inbuilt American fridge as well as the client’s own classic glass topped dining table and the now requisite ‘soft closing’ everything. In the proposal, I had also included the crucial elements that would make the scheme work, large contemporary paintings, the back of each of which would be filled with acoustic panels, quilted fabric drops formed as vertical concertinas of stiff vibrant coloured fabric to compliment the art works and a large acoustic boarded panelled bulkhead in the ceiling over the central counter which also incorporated some of the lighting. But unfortunately I was not able to persuade my client to invest in these elements. As a result, so dreadful were the acoustics that on one occasion I had to call her on an alternative phone to avoid the shrieking clatter of kitchen sounds.

So dreadful were the acoustics that on one occasion I had to call my client on an alternative phone So to remind you of the merits of a mock fitted Persian carpet on the pub floor, the rather naff printed curtains in the alcove window and for that matter the flock wall paper and velvet banquette seating of the popular curry house you will be able to get my point that far too many interiors have sacrificed comfort for the image of the minimal, the modern and the functional and what is clearly the cheap. You may have been blessed with an opportunity to dine at the Savoy Grill or Petrus not to mention any of the other classic contemporary restaurants. Each has its trade off in that their choice of finish tends to be either carpet on the floor and hard walls or hard stone or wood on the floor and plenty of fabric on the walls. For some there is no trade off and it is fabric everywhere. It’s not difficult really but quite extraordinary how may establishments and now increasingly domestic interiors have abandoned the universal common courtesy of comforting our minds and souls for the convenience of wiping a floor clean, washing down a wall or swiping a squeegee over a glass panel. Never mind them only providing a hideously uncomfortable seat in case we, god forbid, want to have a relaxed moment to digest and enjoy the company of others after dinner. It’s outdoor entertaining season, which means rain is inevitable. Bridget James talks barbecues, those sickening ads where no one drops their ice lolly and men and their tongs

W

ell it’s gone beyond a joke now. British summer, dicey at the best of times, is in danger of sliding off the calendar altogether. We had soaring Caribbean temperatures earlier in the year but there are still grave doubts about ‘summer’. So how can we plan anything, let alone outdoor events? I bumped into a woman this morning, while we were both out walking our dogs, and the first thing we mentioned after “Hello” was the weather. We spent a good ten minutes discussing the inclement conditions as if it was second nature to us. We British are obsessed with the weather, and for good reason. It’s because it really affects our lives. Everything we do, what we wear and even what we eat. In winter we opt for warming casseroles and soups, while in summer we turn to the salad option with the trusty barbecue or BBQ – which ever camp you prefer. However, brave are those trusty guardians of the tongs who run the gauntlet of the English summer. We set out armed with confidence and the Buy one, Get one Free Supermarket vouchers. We feel our spirits soar when we see the rows of already marinated lamb kebabs, spicey sausages and chicken with a hint of chilli sauce. We muster up even more courage when we come across the ready to light charcoal bags and then – yes – the piece de resistance, the disposable barbecue/BBQ! There is a slight

downward spiral when we arrive at the beach to find we cannot actually light it. But we can still imagine that we will one day enjoy the outdoors like they do on the TV advert. The one where the girls all look fabulous in their designer swimwear with diaphanous, colourful shifts. The guys are cool in their white shirts, actually look attractive in shorts, absolutely NO sandals and in total control of their tongs and chicken thighs. The kids all look like they’ve stepped out of a Jack Wills catalogue – not a dribbly ice lolly in sight. But it really does come to a grinding halt when we find we’ve forgotten the matches and it starts to rain. So let’s cheer ourselves up with a slice of history instead of that nice marinated lamb. Traditionally the barbecue, as we know it, is thought to have originated from the language of the Taino people of the Caribbean. Literally it means ‘sacred fire pit’ and was introduced into European languages as ‘barbacoa’. Historically the event involved digging a hole in the ground and placing some meat, usually a whole goat, with a pot underneath it so that the dropping juices could go to make a hearty broth. This was then covered in maguey leaves and the coals set alight. The whole cooking process would take several hours. Much like it does today then? Maguey leaves aside, when you’re up against the British summer, just make sure you have a back up plan, a raincoat and waterproof tongs.

If you’ve escaped any broken bones or hip and knee problems thus far, you might not know much about orthopaedic s. So The Resident Magazine interviewed Michael Moss, consultant orthopaedic surgeon at the Nuffield Hospital in Chichester to find out more

What is orthopaedic surgery? Orthopaedic Surgery is the treatment of broken bones and is concerned with conditions that affect the bones, joints and muscles. I am a knee and hip specialist and my main responsibility is to consult with patients who have been referred to me and perform surgery. I also provide non-surgical advice and can recommend physiotherapy to some people as well as the use of certain medication.

What should I do if I think I need to see an orthopaedic surgeon? The first step is to see your GP. They will be able to direct you to the correct place. If anyone is unsure or nervous about seeing an orthopaedic surgeon I would tell them that the consultation is nothing to worry about, and they still have the option to turn down surgery if they don’t want to go through with it. Ultimately patients make the decision as to whether anything gets done, but if you are experiencing pain and discomfort, it is sensible to have someone take a look and see if anything can be done.

Is orthopaedic surgery painful? Any surgery can be painful. And although there is pain involved in the surgery I perform, many people are already in a lot of discomfort when they come to see me. If anything, it is one of the few physical problems you can have that can be completely healed and pain will therefore improve once the surgery has been carried out. Orthopaedic surgery is definitely a wise option for people who are experiencing a lot of pain in their joints, knees and hips for example.

Do you see positive results from the work you do? The work I do changes people’s lives enormously. In fact, it has even been

scored very highly in an official survey on treatments that affect quality of life. Problems with the bones and joints can have a significant impact on a patient’s lifestyle, work and leisure time. It is the reason that I am in this particular speciality - because I like to help people who are in pain.

Do you enjoy your job? I absolutely love what I do. When I started medical school I wasn’t sure what specialism I wanted to go into. But within the first few months, I knew I wanted to go into orthopaedics. I love the impact it has on people. It’s all about making people better. And I like to be very involved in the work as well. I enjoy surgery and dealing with or talking to patients. I’d rather be doing that than helping manage the hospital, which many surgeons with my level of experience get involved in. I’d take surgery over writing reports any day.

How much experience do you have in orthopaedics? I qualified about 29 years ago and have 18 years’ experience as a consultant orthopaedic surgeon. I also have an additional degree in Physiology.

This year the festival celebrates its rather impressive 35th year and is supported by the local residents and thriving business community. There is an Olympic theme and highlights include world-class musical group Blake, who are performing. Not forgetting some of the traditions.
