irst things first. Nobody panic, but we’re changing our name. From September, The Resident Magazine will be known as Fine Sussex. We feel it reflects the magazine we offer more accurately. One that, for the last 15 issues, has brought you features and stories on the finer things in life that are available in Sussex and beyond. What started as a Christmas special turned into a bimonthly magazine in April 2011. Soon after, we went monthly - a testament to the affinity our readers and residents of this county had for the publication. Today, we’ve found our feet. And so we believe it’s time for a name that, quite simply, says it all. But if you’re a fan, there’s no need to worry. Our content will remain as informative, entertaining and delightful as always. And will continue to suit the more discerning ladies
and gentlemen in this ‘fine’ corner of the world - maybe even more so. Which leads me nicely onto the golden nuggets in this month’s issue. If you’re jetting off anywhere for a little sun soon, take a look at the swimwear we’ve got in our summer fashion feature for both men and women on page 91. And if your bathroom’s in need of an update, we are showcasing some of the most stylish showers and wet rooms money can buy in this month’s At Home section. There’s also plenty on the menu in Food & Drink. If you’ve ever attempted (and failed at) making a risotto at home, now you can try again with some advice from the head chef at the exclusive Drakes Hotel in Brighton. Plus we look at how the sandwich has gone from quick lunchtime snack to a gourmet meal, and is on the menu at some of London’s (and Horsham’s) best establishments. All in all, I hope you’ll agree, it’s a ‘fine’ issue.

James Hood talks to the owner of Bill’s and discovers he’s more passionate about beer and burgers than big business. Which could be why he’s still here, 25 years on
“I
didn’t wake up one morning and say, ‘I’m going to open a restaurant.’ The Bill’s we know today has grown slowly over 25 years - there was no game plan”, says Bill Collison, owner of the 10 Bill’s restaurants that are now spread around the south and London. The business began when Bill started selling fresh fruit and veg from the corner of what would soon become his first local produce store. That then became the first restaurant. “The idea was that the food was all fresh and used for both the produce store and the restaurant - tomatoes that didn’t sell were used to make soup the next day, and that cycle continued for years in the beginning.” More than two decades later, the concept seems to have worked. At many Bill’s sites there is also a produce store where you can buy Bill’s ownbrand goods. There’s even a cookbook so you can re-create the fantastic meals at home. And speaking of the meals. A Bill’s menu consists of some absolute classics, including a burger, fish finger sandwich as well as beers, teas, coffees and cakes. Many of the staff Bill hired 25 years ago are still with him today - a testament not only to his likeable nature, but to the ease with which you can buy-in to the Bill’s way. After all, what’s not to like about fresh food, prepared on the premises, a menu with something for everyone and the kind of service you don’t even get from five star establishments anymore? “The staff are key for me. I’d much rather hire someone who is happy, who can look after people and deal with problems that arise in a polite and gentle manner than someone who is degree-educated and super intelligent. It’s the reason we can give such great customer service. Because the people who work here really enjoy it”, Bill added. “Sometimes I’ll show up at the Lewes store on a Friday evening after it’s closed, and I’ll see a group of the younger staff members hanging out, having a drink. It’s a culture I wanted all along. And I think that customers can feel that too.”
But he says that his passion remains the same - great food, great service and giving the customer want they want. “Even with a growing number of restaurants, I still do what I do best. I have always had the knack for making things look good, and I am never afraid to ask a customer what they think or what they want and then act upon that. It’s been one of the secrets of our success - never being afraid to move the goal posts. Thankfully, I have a business partner who has complimented my skills, driving the business forward. I think of her as the Dr Watson to my Sherlock Holmes. We’ve made plenty of mistakes, we never stop learning.” Bill’s restaurants can now be found in Wimbledon, Soho and Covent Garden as well as in Lewes. And later this year, another opens in Horsham. Speaking about the latest venue, Bill told The Resident Magazine: “We’ll give the Horsham site loads of love and attention. We’ll make Horsham proud of what we do with it. Wherever we open a restaurant, we take great care to ensure it reflects the town we are in and what the customers want. Each one of our restaurants has subtle differences. In Wimbledon, we opened in an old Mexican Restaurant, in Brighton we used an old bus depot. Horsham will love the end result of their restaurant.” Bill gives back to others whenever he has the opportunity too. He says he likes to support local business wherever possible and even gives away hundreds of coconuts to school and community fetes every year. He also used Harveys, the Sussex-based brewery for his own Bill’s Beers, which is available in all restaurants. “For me, it’s all about giving. Give, give, give and it will come back to you, ten-fold. I feel very fortunate to be in this position. Sometimes I have to pinch myself. I’ve put my heart and soul into Bill’s my whole working life. But I never thought I’d have ten restaurants. All I did was focus on doing a good job”.
These days, Bill works with his business partners on the expansion of the company.

Care in the community Benjamin Coren speaks to the founder of a new non-for-profit organisation that is bringing people from his local area together for a good cause
C
ommunity Fair is a new charity with a great ambition to assist communities across a broad spectrum of social needs. Paul Rosewarne, charity founder, told The Resident Magazine: “We started Community Fair as it is becoming increasingly obvious that small groups such as local football teams and Scout groups are finding it more and more difficult to fund themselves, there is support for large organisations, and we have been involved in some already, but we are aiming for more local communities to help themselves.” Paul Rosewarne, a local business man in Petworth, founded the charity with the support of a small group of friends. Paul is a regular supporter of local charities and charitable events and was inspired by the sense of cohesion and philanthropy within the town and wanted to put together a charity supported by communities for communities. Their founding articles set out a broad scope of key objectives which enables them to get involved in a diversity of community needs, including local health issues, supporting education, financial concerns, support vulnerable groups and the improvement of local environments. Paul said: “We have been really pleased to have been involved with the charity ‘Stars in the Sky’ who fund chaperones for disadvantaged adults to socialise, this in turn builds their confidence and aims to help towards their own independence. This leads on to our partnering programme, which is designed to be directly involved with charities requiring assistance and promotion, we can offer a platform for charities to use.” Community Fair’s principle fundraising method is through the online sale of donated items and their website has already begun to attract some promising interest. The website has an imaginative approach to donating and selling, while trying to
keep the fundraising process as simple, safe and friendly as possible. Items are donated by listing them online and they are entered into a price drop auction with the prices falling on a daily basis. Interested participants can also put forward their own local campaigns and good causes to fundraise for. Paul and his colleagues are putting in a sterling effort to bring this charity together and believe with the backing of local people behind them can bring some real benefits to local communities. So if you have something you can donate online, visit their website and make a purchase, your contribution will be much appreciated and can help benefit some great causes. Community Fair’s greatest asset is you. Community Fair is currently looking to support arts for school children, with money raised being used to purchase art materials for schools. As well as fundraising through their website Community Fair is also looking for commercial sponsorship for this campaign and hope to secure some additional funding and donations. They would also like to hear from any schools or groups that would like to get involved. To help support and promote this event Community Fair are running a children’s art competition. The winning pictures will be featured online with the winning child’s school receiving a donation of art goodies. The competition is open for children up to 16 years old and runs until the end of October. Entrants should apply online and pictures can be uploaded via the website or sent through the post. There is a small charge of £1 per entrant with all receipts going to this fantastic charitable cause. Uploaded images will also be shown on their online gallery and available for all to see. t Bolney Wine Estate, spirits are high, despite the wet summer. They have recently won a gold outstanding medal for their Blanc de Blancs 2007 in the International Wine Competition and their Cuvee Rose 2008 was the champion of the Naked Wines Zero to Hero Winemaker’s Award. Harvest may be delayed until October, but last year’s small harvest turned out some fantastic quality grapes for the Vineyard. Head winemaker, Samantha Linter, is passionate about making red wine in particular and their latest vintage of Pinot Noir particularly benefited from 2011’s high quality harvest.
Samantha believes it is their best yet and is a fantastic example of a good English red wine. The wine itself is perfect for drinking with roast duck or mild cheeses. Should I chose a conservatory or an orangery?

Robert Pontet, a designer at Goodwood Orangeries & Conservatories, explains the difference between the two, so you can know which one will suit your lifestyle best if you chose to extend your home
I
n simple terms, a conservatory is a single story extension with glazed walls and fully glazed roof and is thermally separated from the house. A modern orangery is a conservatory style extension but with a more solidly built roof, having a centrally glazed section (the ‘lantern’) surrounded by an insulated flat roof and which can if required be integrated into the main house. Designs for both vary greatly according to the style of the house on which they are to be placed and their intended purpose. The answer to the question ‘which would I have?’ depends largely on what you want to use it for. If for example, if you want a light, airy room, accessed through a pair of French doors, where you can enjoy your morning coffee and a quiet read, use as an occasional study, or as a children’s playroom, or for entertaining surrounded by your garden, then a conservatory sounds just the thing. Nowadays however we increasingly find the requirement is for a conservatory style addition to the kitchen, with a large section of house wall being removed to create a substantial open plan kitchen/dining area. Unfortunately, increased legislation regarding permissible levels of heat loss makes it almost impossible to integrate a traditional fully glazed conservatory with a kitchen without falling foul of building regulations. In this case an orangery would be the advised option. The orangery is more versatile, it maintains the light, bright aspect of a conservatory whilst its sturdier structure makes it still feel part of the main house.
Also because of the increased insulation an orangery is easier to keep warm and ensures it meets with current heat loss legislation. There is a wide range of design options available for orangeries and conservatories, from the traditional to the ultra modern minimalist. And in this respect consultation with a specialist designer is crucial, not only for the shape and style of the building itself, but also to help you consider all the other aspects, such as heating, flooring, lighting, landscaping and generally ensuring a seamless blending with the existing property. Your choices may be determined by your budget; depending on materials a simple conservatory will cost probably between £1,000 - £2,000 per square metre, slightly more if there are complex building works involved. An orangery is likely to be closer to £3,000 per square metre, once again depending on the complexity of building works. In deciding how much you should spend, I would not recommend you factor any increase in value to your property. I think you will find most estate agents will tell you that in the current market, unless it makes a fundamental improvement to the footprint of the property the addition of a conservatory or an orangery is unlikely to create any significant increase in the value of your property in the short term. James Hood talks to Jules Knight, from worldfamous male vocal group, Blake, ahead of their performance at the Arundel Festival

Blake began with Jules Knight and Ollie Baines, who met as choristers at Winchester Cathedral and became friends. After talking about setting up a classical/crossover musical group, the pair used Facebook to find and then audition new members, which is how they met Stephen Bowman and Humphrey Berney - the other half of the group. Jules told The Resident Magazine: “Ollie and I always loved singing and so we had the idea to create a singing group that would be a combination of classical and more modern music. Somewhere in between Il Divo and G4, which had already been quite successful. We met and auditioned the others and it felt right. And two days later we got a £1 million record deal with Universal!” Blake haven’t looked back. They have hit the one million mark in album sales and also won Best Album at the Classical Brits in 2008. They have toured around the world, performing in Chile, Europe and Asia. “We never imagined we would have this much success. We just wanted to sing. Now we’re doing that for a living. It’s been phenomenal. We came into the music business when record sales were in decline and at a time when piracy has really de-valued music. But we’re still here five years on. We’ve been to some amazing countries and last year we did between 100 and 150 concerts”, Jules added. But it has taken a lot of hard work for the guys to get where they are. Jules added that the early mornings and late nights can take its toll. “We all spend an incredible amount of time together. There is definitely something brotherly about the relationship. But its much more extreme than family time.

lake, the world-famous singing group, is coming to Arundel this month as part of the town’s annual festival. The band was formed in London in 2007 and since then, they’ve gone global. The four-piece recently performed on the Chinese equivalent of the Oscars in front of 600 million TV viewers, and were the first western artists ever to do so.
We’re working long hours, getting home late. It’s not always easy. But we’re good friends, and Ollie and I have known each other for a long time which helps keep the group tight. We all understand each other!” Despite the grueling schedule, the members of Blake do get downtime too. All fans of polo, they play together whenever they get the opportunity. And Jules in particular enjoys football and the gym. And after five years of success does he have any highlights? “Singing at Shirley Bassey’s birthday party was a real thrill for me. She’s tells us she is a big fan of ours. The Brit was also acknowledgment for us all that we are doing the right thing and that we’re a force to be reckoned with.” Despite worldwide success, Jules is happy to come back to Sussex, where he grew up. “I spent my childhood in Robertsbridge, near Battle and went to Eastbourne College. I have such fond memories of the place, the sea, spending time at my grandmother’s who lived in Bexhill. I’m never happier than when I’m in Sussex and I definitely consider it my home.

RISOTTO It’s a favourite among foodies but notoriously hard to get right. So Andy MacKenzie, head chef at The Restaurant at Drakes Hotel in Brighton, shows us how to make a lobster risotto that’s more sublime than sloppy

What you will need

• 200g of risotto Rice • 1 large shallot, diced • 1 garlic clove • 200ml of white wine • 500ml of Lobster stock • 4 lobster claws • 200g of butter • 1 lemon, zested • 1 anchovy • 6 coriander seeds • olive oil • 1 knob of butter
Use only very good quality rice. Make sure your stock is strong and constantly stir the risotto - this will give it a creamy texture
What you need to do Sweat the diced shallot and garlic in a wide bottomed pan with a little oil. Add the risotto rice and fry for a few seconds until lightly toasted. Add all of the white wine and cook until all of the liquid has been absorbed into the rice. After a minute, start to ladle in the fish stock, wait until each ladle of stock is absorbed before adding the next. Do this until all of the fish stock has been added, the process should take around 25 minutes. Stir the contents of the pan continuously, cooking on a medium heat. Once nearly cooked, stir in a knob of butter.

About Andy MacKenzie Andy spent his childhood in the countryside of Devon where he developed his love for nature, countryside and the seaside from an early age. His interest in cooking was initially influenced by his uncle who was head chef in a large hotel in Sheffield. It was during his visits to these kitchens, at the age of just 10 that he become certain of his career path. Andy’s first experience of cooking professionally was at a local restaurant in his hometown when he was 16. He attended the College of Food in Birmingham for two years before training under Allan Hill at Gleneagles where his passion and knowledge developed. After moving to London, he spent the next two years working at the well respected Mosimann’s Belfry in Belgrave Square and the famous Chez Nico on Park Lane where his passion for cooking evolved further. A year travelling around the world and working in Australia provided further inspiration and taught him about different styles of cooking and ingredients.

Cuckfield Pantry and Tea Rooms High Street, Cuckfield “This is the way to enjoy a cup of tea” according to the new owners of the Cuckfield Pantry and Tea Rooms. The venue has been revived by John Tennant and his partner Sue, who have together created a traditional tea rooms, where you can enjoy handmade scones and cake, sandwiches and superb quality tea - all using proper china and tea pots from the 1930s. Nostalgia is a big theme here. As Sue told The Resident Magazine, drinking tea from proper crockery makes all the difference: “How much nicer does it taste when you use a proper china cup and saucer? We have worked hard to make sure we provide everything that people love about a tea room. That includes beautiful silver tea pots, also from the 30s as well as creating a friendly atmosphere where we make everyone feel welcome. It’s traditional and very English.” It’s also utterly lovely at the Cuckfield Pantry and Tea Rooms. That is probably why it is attracting a wide range of people, from the twenty-somethings, to the eighty-somethings. Whether it’s for mums or for meetings, or a casual cuppa and a cake, this is the place to come to enjoy some of the best quality produce you can find, in the most delightful setting around. Situated conveniently on the corner of Cuckfield’s high street, opposite Church Street, the tea room brings in as much of its produce as possible from Sussex suppliers. Its ice cream, honey, eggs are all from the local area.
Even the art on the wall is by Cuckfield artist Don Cranfield and is for sale. And it’s not just the paintings you can buy at the Cuckfield Pantry and Tea Rooms. Something else that sets them apart is the rest of the items they sell. There you can pick up everything from inexpensive gifts such as necklaces, candles, Brommley soaps or scarf’s to jams, chutneys and preserves. The furniture they use to decorate the shop is even available to purchase and includes a 1930s sideboard and travel trunk. Speaking of the interior John told The Resident Magazine: “We wanted to create a specific feel here. One that is warm and welcoming, to make people feel at home. It all contributes to making this a traditional tea room, because this is home to us. And people of all ages seem to love it.” John left a position as CEO of Southerly Yachts, to open the pantry and tea rooms, which he says offers the best value cream teas in Sussex. “We both wanted to work with the public more. Sue has a background in retail, which brings a lot of expertise to the tea room and we both put customer service to the top of the agenda. We are here for the customer, not the other way around. And we want to make them feel welcome and relaxed. It’s a really friendly place to be. We’ve even stayed open in the past for customers who are just having too good a time to want to leave!”

WHITE SWAN Tina and Nick Irish spent months restoring a Bosham pub and restaurant, turning it from derelict shell to the beautiful White Swan. Then, disaster struck. In the first of a three-part series we find out how the couple put their heart and soul into this community hub and why they have to do it all over again
I
t all started so well. A local husband and wife team, Tina and Nick Irish, who had previously run a freehouse in Dorset, set their sights on the derelict building, formerly the White Swan Public House, in Bosham. The pub had been closed for two years and it was Tina and Nick who believed with the right care, attention and hard work, this Grade II Listed building could once again become a focal point of their community. Tina told The Resident Magazine: “We wanted to restore it. We both saw the potential of the business, but equally what the pub had meant to those who live in North Bosham. When we held a public consultation in December 2010, it was freezing, but 120 locals showed up. The licensing departments of West Sussex Police and Chichester District Council were in support as was the Chichester Observer. And we knew it was something we wanted to do.” Tina and Nick got the premises license for the pub in early 2011 and began working on an epic refurbishment. That included the complete stripping of the pub and restaurant and starting again from scratch. A team from Oak Constructions got to work, re-wiring, re-plumbing, stripping the floors, walls and ceilings to transform the pub and restaurant all project managed by Tina and Nick personally. Tina added: “When we started, we didn’t have a single plate, knife, fork or spoon. We literally started with nothing and gutted the former building. Everything was new, the fixtures and fittings, the oak bespoke bar, the leather furniture, everything. And we did it all with three kids under the age of four!” In July 2011, a mini beer festival was held prior to opening, at which Tina and Nick had the opportunity to gauge what kind of beverages locals wanted to be served. Then, soon after, it was ready for its unveiling. The new White Swan pub opened in September 2011 to a rapturous reception, with a queue of eager customers snaking up the road. The couple decided early on that a community hub (one customer called it ‘the Hub of the World’) should utilise local services. And so they made sure that whenever possible, throughout the refurbishments
that they used local contractors and suppliers. “For us, it’s all about keeping it local. It’s been our ethos from the beginning. It was the case when we were re-building and it was still the case when we opened. The public consultation showed us that we had strong local support from the community. So this is definitely about giving them somewhere to actually be a community of people. We have largely local clientele and hire local staff.” So close to home were the tradesmen that even Nick’s family got involved. His mum designed a new sign for the White Swan and his Dad and brother Chris, from Vintage Pig, helped to make it! In addition, all types of businesses from the area were recruited to help with the re-launch, including solicitors, architects and Caroline’s Dairy, which supplied the ice cream for the restaurant. And it is the emphasis on local people that may have helped Nick, Tina and their family get through one of the toughest times they have ever faced, when in June this year, disaster struck. “In the heavy rain in June, flooding destroyed everything. All our hard work went down the drain. This was supposed to be our first summer. And now we are back to square one. But it was the local community that got us through the worst part. When it happened, in true Bosham fashion local people stopped to ask if they could help. Local van drivers would pull up and see what they could do and people helped bring sandbags and remove water. It was moving and has just made us even more determined to bring the pub back to life - again! We’ll be back and we’ll be better than ever.” Tina and Nick are refurbishing the White Swan for a second time and are currently, once again, using the services of the local community. rise of the sandwich It’s the food of earls, and the food of the gods. But what is it about the modest meal that makes it so popular with people around the world
W
e buy three billion sandwiches each year in the UK. It’s the lunchtime choice for brickies and bankers alike, and most of us will have spent our childhoods carrying them around in a rucksack or plastic box with the likes of He-Man on the front. In The Times last month, Tom Mitchelson even regaled readers with a story about a friend who claims the humble sandwich brought him back to life after an illness which struck him down in India. If you’re anything like me (a lover of the sambo) you’ll get it. The sandwich is like home. Or as Ollie Arnold told me, an elixir of life. “The sandwich is absolutely a staple. But it’s so much more. It’s an essential. I can’t think of any other food I can have that satisfies my hunger and taste buds so well while also being quick, easy, hassle-free. I honestly couldn’t imagine life without it.” And like most things that are sold these days, it was only a matter of time before those two pieces of fluffy bread were stuffed to within an inch of their life, preened and plated to such an extent that we’ll even go to a restaurant for one. That’s right, a restaurant, for a sandwich. The capitol, for example, is now becoming host to the kind of establishments that were usually reserved for what foodies might consider a posher meal. A pea and mint foam appetiser, a scallop or two to start followed by the pheasant, not forgetting the cheese board, is slowly being replaced with a more modest meal. Mishkins in Covent Garden, Burger and Lobster in Mayfair,
the Old Spot at Spitalfields - they’re all cashing in on something that Ollie, and Joey from friends, have known all along. That the sandwich is food of the gods. It’s certainly the food of Earls. It was, after all, the fourth Earl of Sandwich who is thought to be the first to put a slice of meat between two slices of bread as a quick and easy snack. After all, commanding the British navy and gambling is time-consuming stuff. And the current Earl of Sandwich is not shy about cashing in on that legacy today. The family owns a successful sandwich business. But there are many businesses doing the exact same thing - and quite right too. Imagine our high streets with out the sandwich bar. Wait, imagine our lives without the sandwich! Thank goodness for M&S, which pre-packaged the sandwich in 1980, contributing to it emerging as something to eat on the go as well as in the garden with an egg and cress filling and tea. The Artisan Patisserie and Tea Rooms in Horsham serves up perhaps the greatest example of the modern-day sandwich. A combination of convenient and decadent, its sandwiches put those from M&S to shame. As owner Simon Coulter points out, it’s all down to the right balance inside. “You have to make sure that the ingredients in your sandwich complement each other. Don’t stick to one thing. Mix it up a little. For example we have salami, Emental and fig chutney, which people absolutely love. And invest in the best quality bread you can find. Most importantly, be adventurous!”

Little touches like the wine list written in chalk and a quirky sign which politely asks for ‘children to be kept on a leash’ just add to the convivial atmosphere. There’s a place in Billingshurst that will satisfy your hunger for somewhere you can get coffee and a cake as well as take-home produce that’s fresh from the farm

s it a market? It is a coffee shop? Is it a local produce store? Well, the answer is that Burdfield’s Country Market is all of that and much more. Known as ‘Burdfields’, it’s a place where customers who are both local to Billingshurst and who are just passing through can immerse themselves in all things local and lovely. The Three Crowns I
n the heart of Wisborough Green, snaking its way across the beautiful West Sussex countryside is family run Free House, The Three Crowns, which celebrated its first year of business under new ownership in July. Tim Skinner is proud to celebrate this landmark in the history of the pub. He said: “It’s been a fantastic year re-establishing the pub back into the heart of the village community. Injecting life back into what has always been a popular hub of village life.” After searching with his family, they saw a fantastic opportunity with The Three Crowns to breathe life back into the building. This was a real opportunity and natural step for Tim to take on a business of his own after running pubs across the south for 10 years. Tim said: “It’s a fabulous place to be, in the beautiful West Sussex countryside surrounded by such fantastic produce from neighbouring farms and independent producers on our doorstep. It’s the epicentre of the village being around the green, and with the village getting younger, there’s a very active community.” The pubs birthday celebrations spanned three days. “I wanted to mark our first birthday by throwing a big do to thank the village for making this first year such a tremendous success.” There was a barbecue and Pimms on Friday night with live music, Saturday was host to a family fun day with garden games and a jazz band, and Sunday featured a popular all day garden party with local bands and a barbecue. It was much better than I ever could have anticipated. What I was really keen to do when we came here was to open the doors, trade, and work out what was important in the village. The pub belongs to the community and it’s up to us to understand and respond to them, and make it a commercial success for future generations to enjoy. The pub is a vital part of our local economy in many ways, from employment to supporting other local businesses. Our plan is to grow and sustain this business, I’m not looking into any mass development. More slow and steady organic growth, it’s important we get things right.”
When it comes to working with local businesses and supplying local produce The Three Crowns are leading the way, sourcing quality local produce where possible. They have a kitchen garden growing courgettes, marrow, squash, tomatoes, and leaks, and a herb garden. Meat comes from the Petworth butchers who source from the Leconfield estate, and free range pork and lamb comes from Downsview farm. The pub also receives fresh fish deliveries four times a week from Chapmans who source from fisherman along the coast, and shellfish comes from Selsey, where Landlord Tim grew up. He said: “We hand cut chips, everything is homemade (except the ice cream, we leave that to the experts at New Forest Ice Cream), our pub favourites, steaks and fish and chips are really popular. The Three Crowns also has a daily specials board which is constantly changing and features the freshest produce and catches of the day. “We also do fantastic burgers using all the trimmings and mince the meat ourselves with our own recipe and seasoning. We also offer a large range of local beers from a range of brewers including Langham, Darkstar, and Harvey’s as well as international craft beer Samuel Adams on draught, and award winning Japanese lager Asahi”. The pub offers a traditional atmosphere, free from the ringing of fruit machines in the background, replacing that with a buzz of conversation. The truly welcoming pub makes everyone who walks through the front door, at any time of the day, feel like a part of the village. A range of major events take place in the village throughout the year making the pub the ideal location to visit if you are enjoying local attractions or passing through. A new exhibition, which is to be held in the refurbished exhibition room at Petworth House, will display rarely seen loaned works by JMW Turner, whose love of Sussex and the surrounding landscapes is clear for all to see

T
urner’s Sussex at Petworth House is the first exhibition to celebrate the importance of Sussex to the work of JMW Turner, the nation’s greatest painter. It features around 40 carefully selected loaned exhibits, mainly drawings and watercolours that represent the wide ranging importance of Sussex to his art. Visitors will also have the rare opportunity to join a tour of the Old Library, used by Turner as a studio and not normally open to the public. The works on display are all loans, and are drawn from major national and regional collections, as well as from private owners. Highlights include the unprecedented opportunity to see the pencil sketch of Petworth House, which Turner made in the park in 1809, alongside the finished oil painting he made from it – Sussex the Seat of the Earl of Egremont, Dewy Morning (pictured above), the 3rd Earl of Egremont’s first commission from the artist. JMW Turner’s strong links with Petworth, West Sussex, are well known. During the 1820s and 30s the painter was a frequent visitor to the house as a guest of his friend and patron the 3rd Earl of Egremont. The 20 paintings bought and commissioned by the 3rd Earl continue to
be enjoyed by thousands of visitors today, and are central to the story of Petworth. Other exhibits represent both iconic and rarely seen works, and feature views of Arundel, Brighton, Chichester, Hastings, Lewes, Rye and Shoreham among many Sussex locations. There is also the chance to see a group of the famous small watercolour sketches on blue paper, now largely held at Tate Britain, which were made of the house and park in 1827. The works selected for Turner’s Sussex did not feature in Petworth’s 2002 Turner at Petworth exhibition, and some have not been exhibited for many years. Alongside Turner’s Sussex, visitors will also be able to see Petworth’s Turner paintings in their usual locations in three rooms of the main house, as part of a parallel exhibition, The Petworth Turners, featuring new interpretations of the largest collection of Turner oils housed outside Tate Britain. Chris Powell, owner of the Verite Gallery, explains why buying art for the home is a wise investment and offers advice on where to begin
C
hoosing artwork for your home can be very personal and very subjective. There are no common likes or dislikes with some well known artists attracting tremendous interest and following or an equal measure of dislike. Most people will choose art that will be on display in their homes in the same position for a long time. A few may change their pictures around from time to time. The traditional way is to decorate or re-decorate your house or room(s) and the select artwork that will suit your budget, your taste and your colour scheme(s). This can prove very difficult especially when you also add shape and size in.
Harris, Peter Wildman, Darren Baker and many other well known artists can be used very effectively when choosing art as your starting point for decoration or re-decoration. You will find that the cost of limited edition or original artwork is not necessarily going to be expensive and as an added benefit, the value of your purchase will not depreciate and may very well appreciate in value as you enjoy looking at it. Buying low-cost artwork may be cost effective, but having an original that no one else has a copy of, will only add to your enjoyment.
A simpler and more effective way could be to choose your art with the intention to make it a key component. Colour schemes can be very effective as the images here show, whilst displaying the artwork to great effect. With artwork reproductions printed on acrylics, aluminium, glass and other modern materials, the bathroom, kitchen and garden can also be included as places to make use of good artwork.
How do you source good artwork? The obvious route is to visit your local art galleries where you can gain ideas and find out more as well as looking at the artwork on offer. There are many good independent art galleries in the West Sussex area, catering for virtually every taste. So, if you are moving into a new property and want to decorate with art in mind or planning a complete revamp of a room or rooms in you house, try the art first route and see where it takes you.

e was the cover artist for The Resident Magazine’s first anniversary issue in April and now Matt Bodimeade returns to the limelight with his own exhibition at the Zimmer Strewart Gallery from 11 August to 8 September. James Stewart, gallery director, said: “It could not be more appropriate to have this exhibition on during the Arundel Festival. The compositions and Matt’s technique are current: The subject of the South Downs has been painted by many artists over the last few hundred years, including Turner, but these works bring a fresh approach encouraging the viewer to see the Downs anew, in the same way Hockney’s Yorkshire paintings inspired people to look again at the Dales”. More than most artists, Matt Bodimeade has had a direct effect on the landscape he describes in his drawings. Through early adulthood employment in agriculture he was able to change the colour, shape and texture of fields through cultivation and harvesting processes. He said: “It’s like hunting. Searching for a starting point like that line of poppies. Or that clump of trees spreading

down the hill like a fat bloke’s belly over his belt. I keep reminding myself that it’s my landscape and I can deal with it how I want.” Talking to Matt in the landscape and then seeing his work evolve in his studio, it’s clear his response to this part of West Sussex is a deep, complex and intelligent mixture of feelings and memories formed over nearly 40 years. He presents what he sees with extreme care, honesty and understanding of the landscape yet he is unsentimental about it and responsive to change. He neither wants nor expects it to remain exactly how it is. His love for the land is unconditional and that goes as much for vast sweep of the chalk downs, as for the railway to London tunnelling through them, or for the plastic cobalt blue fertilizer bags stacked in a pre-fab barn. Matt Bodimeade was born in Arundel and studied art at West Sussex College of Art and Design and Brighton Polytechnic. Toby Gillett is a young entrepreneur who’s just received a cash boost to his business. He tells Tom James about his plans for the future and why he’s shunned university to follow his own path
I
s Sussex nurturing the next Mark Zuckerberg? The Facebook founder had his Eureka moment as a university student. A student from West Sussex has gone one better, conjuring up a winning idea while still at school - one that landed him first prize at a prestigious entrepreneurial awards ceremony. Toby Gillett, 18, from Crawley Down, who attends Imberhorne School, ran away with the £50,000 prize fund at this year’s Gatwick Diamond initiative, Young Start-up Talent. His notion of an online book library, ‘Sobiblio’ topped the list of entries at the Copthorne Effingham Hotel at the end of March and since then his feet have barely touched the ground. Although they’ve had to, as he’s just taken his A Levels in politics, economics and law. He took time out to meet The Resident magazine to discuss his reaction to the award, how he plans to spend the money, and what’s next for the fledgling businessman. He said: “Winning the competition will give me access to the expertise that I need to take my idea on and hopefully fulfil it’s potential. Although it’s early days, I already have a few exciting meetings lined up, including one with a world-leading publisher (Penguin), where we’ll discuss possible content, and address issues of copyright for newer books.” So, what was his muse for his innovative idea? Well, a healthy debate at school led Toby to what now seems like a logical followon to today’s electronically driven consumerism. Like many a ground-breaking advance however, we may soon be saying `Why didn’t anyone think of it before?` “The idea’s been with me for four or five months now, beginning life in an A Level politics lesson where we were discussing the Murdock scandal and media dominance. The conservation quickly moved on to the film and music industries and how they’re increasingly dominated by Netflix, Lovefilm, Spotify, and the like. This got me thinking about book rental and the demand there would be for a similar premise as Netflix, but for ebook rental”. That night and over the next few weeks, Toby trawled the internet trying to discover whether something similar had been tried before. “To my surprise, and delight, it hadn’t.”

Applicants for the Young Start-up Talent awards have to live in the Gatwick Diamond area, be aged 16 to 21 and apply online or through their school, which is how Toby did it. The field was narrowed down to 10 semi-finalists, then five finalists, who had to present their idea to a panel of eight judges in a dramatic Dragon’s Den-style filmed scenario. Toby beat off stiff competition covering a diversity of business ideas that included a record label to T-shirt design concept, Japanese Manga fancy dress and an online academic network. His idea won the day, although other entrepreneurial skills shone through - his ease during public speaking for one (which came across in our meeting) – a vital tool in persuading others of the value of his vision. Toby believes he’s tapping into a strong consumer need. “The demand for electronic books is clearly strong right now,” he added. “The success of the Kindle has shown that people want to download books as well as buy the hard copy, while companies like Spotify and Netflix demonstrate the public appetite for renting as well as buying, so I feel it’s a natural progression for books to go the same way. Currently we’re just talking about books that have no copyright attached, so would be free from involvement of the publisher. There are currently 2.5 million titles not under copyright, which gives me a strong base to work with. It may take a while to fully explore these figures but my aim in the short to medium term is to reach the 200,000 mark but I’ll have to wait to see how these first meetings progress.” Toby will be able to focus his full attentions on launching his fledgling business, as university was an option he passed up this year, preferring to move forward his mission as quickly as he can, with the help of the £50,000 resource. “The cost attached to university is too much to shoulder just for the sake of it. If I was to go to there, I’d want it to lead on to a career. Right now, I prefer to focus on this and its development over the next few years. I need to get my website up and running and make the most of the competition win, which has enabled me to access a skills base that will help me push my idea forward, and hopefully make it a great success.”

Donna has owned La Vida for 13 years, in which she has had three different locations for the shop, the first being in The Carfax and the other two in Piries Place. Donna has tried to make her new shop accessible to all types of women. She said: “Our changing rooms offer a boudoir feel, and are also wide enough for pushchairs for the yummy mummies who come in. La Vida offers everything from fashion inspired bridal gowns to Spanx, which are said to be a best seller, “we even have them in our changing rooms. We’re quirky and unique, something a bit different and people are loving shopping on our website too.”

One of my aims is to create relationships with my customers to more understand their personalities and thereby fitting the clothes for them and their lifestyles, along with addressing any confidence issues they may have.” The Cottage offers non-seasonal clothing in pure materials such as cotton, linen and silk. Linda told us: “As we get older we learn to appreciate and value beautiful things”. The subtle tones used in the clothing also mean that they are always in trend. The boutique stocks both UK and foreign brands, such as Privatsachen, which has a one size policy so all pieces can be worn by all types of women. The brand also hand dyes each piece, meaning all garments are unique. The Cottage is also selling jeans which can drop women down two sizes, which, unsurprisingly, have been a huge hit. Similar to La Vida, The Cottage is exclusive in that it only sells select brands, meaning there are only a few of each styles. Linda has always had a passion for fashion, even though her career started out in leasing and working at stables. She told us: “I worked at Fat Face for a year and a half and just fell into fashion through a friend. But I absolutely love what I do. Clothes are my passion. If I didn’t love my product, I couldn’t sell it. I believe in everything I do.” The cottage hopes to appeal to an even wider customer base with the addition of brands such as Danish label Rosemunde, who offer a large range of cotton/silk basics in addition to a beautiful collection of classic designs, the Emu Australia Apparel range of merino wool clothing and accessories and is also eagerly awaiting the arrival of a young Dutch label which will be its first appearance in the UK. Now into her second year, Linda added: “I love my job. This shop is just an extension of my wardrobe.”

It is wonderful to be able to work from home – no traffic jams to my office, no sweaty bodies on a long train journey to endure. The first step to creating a workspace in which you can be both comfortable and productive is to think about what you want from a home office and how much space you have. It is great if you have an extra room, or can convert a garage or as I did, build a home office at the bottom of the garden. However you don’t have to have this luxury.

Work/life space balance
As always good storage is essential. A desk with plenty of room to house your keyboard and screen, somewhere for the printer, the telephone and a filing cabinet. A comfortable, supportive office chair is very very important, and this is where it might be best to spend a little more money. Try not to place your desk so that you have your back to the door, which can be very distracting.
Firstly, you have to be organised and tidy, otherwise chaos will ensue. Invest in storage and a good desk with plenty of drawers. Make the space your dedicated work space – somewhere you can claim as your own. If you want something really funky and modern then look at Dwell they have some great contemporary desks and filing cabinets along with modern desk chairs. Plan your decorating scheme It is a good idea to spend some time contemplating your colour scheme, as colours can influence the mood of a room. Pastel shades are calming and soothing, yellow is stimulating, while blue will focus the mind. Bright shades of orange or pink are great for energy and socialising. Whatever colour scheme you choose don't forget to pick one that reflects what the room is used for the majority of the time. I have just signed off a design for a client and we are combining a neutral colour scheme with bright citrus green. All the storage will be purpose-built to ensure there is a place for everything and there is no clutter around to distract you while you’re working. A Room with a view Plenty of light is good for your mood. But use too much and you might not be able to see the computer screen, and as over 97% of home based businesses require the use of a computer and broadband this is a major consideration. A room with a view will help your creativity. My office window looks out across the garden, which never fails to inspire, although it does also remind me that I haven't done any weeding in a while. Window treatment Blinds are the most practical choice for an office environment, as they can be adjusted to prevent glare and allow as much or as little light into the room as you
Let there be light Good task lighting is essential. Opt for a desk light as well as overhead lighting. This is not only practical, but will make working into the evening that little bit more comfortable. If your desk is small then why not look at using clamp lights – simply clip them where you need most light. Equipment
A little Feng Shui advice I’ve had a chat to Janine Lowe, a Feng Shui Consultant, about what she would recommend when thinking about designing a home office. Her top tips are: Your desk should be positioned so that you have your back against a solid wall if at all possible, looking out of a window or facing a door. The window should never be behind you to ensure you have the best Chi. A water feature is a good addition to the office, to be placed, this year in the South West – this changes yearly depending on which star is present. Your desk should preferably be made of wood. You should de-clutter the office regularly and desk drawers should also be clutter free. If you like to have a photo of your family or loved ones in the office then place the photo on the South West of your desk and any phone in the West – this promotes creativity. To promote good fortune place a Jade Money Plant on the South East and a bright reading lamp in the South to promote fame. T
he accepted wisdom on the subject of Sycamore trees is that they’re little better than a weed; that their timber is of little commercial use, that they’re of limited aesthetic value and that they’re a pest because of their prodigious ability to seed themselves anywhere - in any soil, in any place. The last bit’s true. They’re a mighty successful species. Maybe their very success - often seen as inconvenient because they keep coming up where they’re not wanted - is the reason for them being a bit of a PR disaster. Nobody seems to like them much. It’s not fair! Sycamore (Acer pseudoplatanus) is a type of Maple and its timber is clean, white and silky. When I made furniture, we used it for turning (nice tight grain so great for wooden platters) and when a clean modern look was required, just the job. Also - nice to work, available in good lengths and widths and cheaper than most other English hardwoods. Now I’ve moved on from using the timber for cabinet making to growing trees and planting them in gardens. And looking at them. With my interest in trees came the realisation that when mature, this is
one of the most beautiful trees in the entire world. Quite a claim and there’s a ‘but’: only in late May and early June. During this brief window, big old mature sycamores, particularly if out on their own are the greenest, most perfect and utterly shapely tree you’ll ever see. I have a friend who lives beyond Salisbury and I try to visit him every year in the third week of May. Why? Because it’s the time when they’re at their very best and because there’s a particularly fine one on the Salisbury ring road - perfectly positioned on a gentle bend so you have a lovely long lingering look at this beautiful object while coping with the endless roundabouts and traffic jams. Keep your eyes open towards the end of May next year. Look for big ones - you can’t miss them, they’re everywhere. If you don’t know what a Sycamore looks like, make it your business to find out.

As befits a seaside location, many of the varied and buzzing restaurant and cafes in Worthing offer al fresco dining, many with a view out over the sea or the River Adur, with Warwick Street a particular highlight. Worthing’s very own Highdown Vineyard also has its own restaurant and tea room. While you can dine out on the freshest fish you can imagine, from oysters to award-winning fish and chips, just caught local produce can also be purchased direct from fishermen on the beach most days. For art lovers, the fine art on display at the Verite Gallery in nearby Goring-on-Sea is well worth a look, and Worthing also boasts its own museum and art gallery, featuring costume and toy collections which are among the largest in the country, as well as theatres and cinemas. hen it comes to choosing a city break destination, Seville, located in the deep south of Spain, may not be high on your list. But I’ll let you into a little secret, and let’s keep it to ourselves; Seville is the hidden gem of Europe. And being only a two-and-a-half hour flight from Gatwick Airport, it is ideal for a long weekend break. According to legend, ‘Sevilla’ was founded by Hercules. And maybe that’s why the people of Seville are well known throughout the country and the wider world for their fierce pride in their city. And rightly so. They are, first and foremost, from Seville, secondly from the region of Andalucia and a distant third, from Spain. The goings-on in Madrid are of little interest to a Sevilliano, while Barcelona in the north may as well be another country. Sevillanos see no need to venture beyond their Sevilla, where things stay the same year after year and change is not generally welcomed. Situated on the banks of the meandering Guadalquivir River, Seville is regarded as one of the largest historical centres in Europe. It’s fair to say that Seville is a capital of culture and everywhere you walk you’ll see centuries-old buildings which are a sight to behold, as well as orange trees which are as much an integral part of the landscape as the Gothic archways. That’s why the city is loved by movie directors for its range of well-preserved buildings and has been a film location for Star Wars Episode 2, Lawrence of Arabia and Orlando Bloom’s Kingdom of Heaven.

The city can boast some of the world’s leading cultural attractions. There’s Alcazar, Europe’s oldest active Royal palace with its magnificent gardens, the Fine Arts Museum, Spain’s second largest picture gallery, the Archive of the Indies, setting out the most comprehensive documented history detailing America’s discovery and Ronda, the oldest bullfighting ring in the world. Last but by no means least, the centre piece attraction of Seville is the impressive cathedral and its Moorish Giralda tower, which dominates the skyline. Climb the 37 – yep, that’s right – 37 flights of steps of the Giralda and you’ll witness a magnificent view of the city (the journey back down is quicker and easier and you’ll be ready for a cerveza - or three!) The cathedral, the largest in the world after St Paul’s and St Peter’s in the Vatican, houses the tomb of explorer Christopher Columbus, one of the country’s most important art collections, and is also home to the second largest crown in the world and one of the largest pearls on the planet. The city’s historical options are endless and a great way to see the sights is on an authentic horse-drawn carriage which can be seen darting through the cobbled streets and alleyways day and night. In Seville, many hotels are restored as well-maintained town houses or mansions arranged around a typical Andalucian courtyard. I stayed in the fabulous147bedroom Hotel Alfonso, which has recently reopened after a multi-million pound refurbishment. Built by King Alfonso X111 in 1929 to provide his court guests a stay to remember, this splendid palace has hosted kings and
princes, heads of state, famous artists and film stars and is widely regarded as Spain’s premier 5-star hotel. I won’t go on about how beautiful the hotel is (it’s gorgeous), but the sumptuous breakfast in its central courtyard is to die for and sets you up for the day! Another hotel I’d recommend is the four star Dona Maria which has a rooftop pool and bar and a splendid view of the Giralda Tower immediately opposite. Seville is credited with inventing tapas and has more than 1000 bars where the choice of food is virtually unlimited from seafood, to ham and cheese to sausage. And talking of sausage, head for Restaurante Egana Oriza, a stone’s throw from Hotel Alfonso and the Alcazar Palace, where I enjoyed the finest chorizo sausage I’ve ever tasted, crafted by head chef Jose Mari Egana. Oriza, located in a mansion dating back to 1926, is the number one restaurant in the city (around £50 a head with wine and book in advance) where you can enjoy fine dining, meat and fish dishes or glorious tapas on the terrace with the locals. Spain is not famed for its white wines but try a bottle of Oriza’s Jose Pariente from the country’s Valladolid region and you won’t be disappointed; it’s superb. With temperatures hitting the mid 40s, Seville in the summer months is not for the faint hearted (or fair skinned!) Even the locals clear out to the coast. The best time of year to go is springtime or the autumn, when the weather is pleasant but not stifling. A much more sedate pace of life than the hustle and bustle of the more obvious European city break destinations, Seville should be added to your list of places that must be seen. But as I said earlier, let’s keep it as our little secret.

It’s time for one of the county’s best loved events, as the celebration of decades gone by returns to Goodwood
T
he Goodwood Revival is a magical step back in time, a unique chance to revel in the glamour and allure of motor racing in the romantic time capsule of the golden era of motor racing at one of the world’s most authentic circuits. As the only event of its kind to be staged entirely in the 1940s, 50s and 60s that relives the glory days of Goodwood Motor Circuit, it is the biggest and best historic motor racing party of the year. The majority of visitors go to great lengths to dress in appropriate period clothing and achieve that authentic look. No modern vehicles are allowed within the circuit perimeter throughout the weekend. There are also theatrical sets that bring the past back to life and a celebration of aviation heritage with some stunning aerial maneuvers throughout the skies above this WWII former aerodrome. You can also see a fantastic selection of rarelyseen pre-1966 aircraft on static display in the Freddie March ‘Spirit of Aviation’. This year’s event which will be held from 14 to 16 September marks the 50th anniversary of the iconic AC cobra with a dedicated race, 50 years of the Ferrari 250 GTO, a tribute to Dan Gurney on the 50th anniversary of his maiden Grand Prix victory, plus for the first time since the 1930s, the legendary pre-war ‘Silver Arrows’ Grand Prix cars will be reunited on-track, marking the 75th anniversary of their first appearance in the UK. Aside from the intoxicating entertainment on the track, there is breathtaking action in the skies as Spitfires and Hurricanes along with an American P-51 Mustang and a
P-47 Thunderbolt will perform elaborate swoops and dives over the circuit, making the Revival almost as revered for its glorious air shows as its thrilling motor racing. The Freddie March Spirit of Aviation concours d’elegance, now in its sixth year, will again take place with an ever-growing number of aeronautical beauties on show including the flying boat PBY Catalina, a flying replica of Britain’s first purposedesigned military aircraft - the BE2 and The Red Rockette Beechcraft Staggerwing. ‘Over the Road’, a popular feature of the Revival is being expanded for 2012, to include an impressive line-up of DJ’s and live acts, a Victoria Street Party, The Chap Olympiad, a delicious Revival street food market, along with many other attractions and entertainers. I
’ve lived in Chichester for 16 years and have found it a great place to live and work. Should I ever take it for granted I’m soon made aware of its advantages by visitors who are keen to get out and explore the shops and other attractions. The city is a compact area within walls dating back to Roman times, based on a simple axis of North, East, South, and West Streets (no excuse if you get lost!) with the 500 year old Market Cross at the centre. The Cathedral has an interesting interior with ancient and modern artefacts to be seen. Other attractions for visitors and residents include a lively shopping scene with many independent shops alongside the multiples, and thankfully fewer empty shops than elsewhere. Local clothes shops include Stephen Lawrence for designer mens and ladies clothing, Dartagnans for designer menswear, and for women, Urban Nature and Arabella. Interiors and homeware are well catered for with stores including Steamer Trading and Casa Fina. For these and other interesting shops you may need to stray off the main streets into the Boardwalk, Crane Street, Baffins Lane, Little London, and Little London Walk among others. The café and restaurant culture is growing all the time and as well as many of the chain restaurants, we have Amelie and Friends, Marco (recently opened by a chap who will be familiar to many as a manager of other restaurants and now has his own place!), Trents, and Field & Fork. Artisan food production is also a growth area and much of the produce can be found at
the farmers market on the first and third Friday of the month and at the Local Food Fare event, to be held 14th-16th September this year. Both markets are on North and East Streets, lending a wonderful atmosphere to the city. A favourite food shop of mine is Manuka in Little London Walk with organic fruit and veg, local ice cream from Caroline’s Dairy as featured in July’s issue, and a good range of health foods, all served with good advice from a friendly team of New Zealanders! Cultural attractions include our brand new Museum the Novium, the Pallant House Gallery (modern art including a Peter Blake exhibition on at the moment), the Festival Theatre with its renowned summer productions which often transfer to the West End, a thriving Youth Theatre and the annual Festivities with a wide programme of concerts, talks, and performances. As well as a multiplex cinema we have the Cinema at New Park showing mainstream and art house films with excellent projection and sound facilities; its film festival is 16th August – 2nd September this year and will show a huge range of overseas films that are rarely seen outside London. Within easy reach we have Chichester Harbour, a fantastic unspoilt beach at West Wittering, and the beautiful South Downs National Park. Design your own body A new method of ‘inch loss’ has made its way from Harrods to Sussex. manager of the Hypoxi Studio in Chichester, Pauline Milne, tells us why it can help change your body from flabby to fabulous
D
o you like to take care of yourself and look amazing? And are there problem areas of fat on your body that you just can’t shift no matter how many squats and crunches you do? Well, Hypoxi could be the answer. It’s a relatively new way of targeting specific areas on your body, making them tighter and toned as well as making you feel great generally. And the best bit is that the machines do half the work for you! Developed by an Austrian sports scientist, Hypoxi combines light exercise (mostly using pedaling or a treadmill) with compression chambers or suits to help stimulate fat and tone up your body. The equipment made its debut in Harrods about seven years ago and has grown gradually in popularity, with celebrities such as Cheryl Cole, Robbie Williams and Simon Cowell all endorsing the product and using it to keep their fab figures in fine form. Whereas if you exercise normally, your blood goes all around your body, Hypoxi helps stimulate blood flow to the outer body, breaking down fat.” The method is suitable for both men and women and, as Pauline points out, is something that is ideal for people who are slightly overweight or who already live very healthy lives and want help losing the last few pounds. She added: “A lot of people have realised that the gym has helped them to lose weight and get fit, but there are still areas they aren’t happy with or they want to change their shape. And those areas of fat that we just can’t shift are usually the ones we worry about the most! It’s all very well chasing the sun and lounging on that idyllic beach in the brochure. But as Bridget James explains, you’ve got to get there first

h the joys of going on a Summer Holiday. The brochures would have you believe that you just alight at your chosen destination as if by magic and settle into your sun lounger, ready to receive your Margarita, Daiquiri or a strange one which I came across called Blood and Sand. I thought, stupidly, it had some connection to the Roman Gladiator, Spartacus. But as we all know, the reality is completely different, especially if you have kids. My experience this year was challenging to say the least. There was the last minute dash into Chichester to try and eek out some semblance of a summer wardrobe for myself and my two teenagers. No it wasn’t a nice, relaxing amble round the retail outlets, it was a tense dive into one shop with the threat of “I absolutely have to be back to watch Hollyoaks.” It resulted in me landing up with two bikinis I would never have chosen otherwise and a selection of tops for my soon-to-be 15 year-old daughter that had no practical use whatsoever when it came to sun or sea but simply carried the value of looking cool. After frenetic packing which basically involved me barking at them not to forget anything – essential items such as toothbrushes and underwear quite often slip the net, while, miraculously, the mobiles and ipads always make it on to the plane. We eventually make it to that ‘Mecca’ for all travellers – Gatwick Airport. I love that huge sign they have on the way in which says “You are Here, Time to Relax..”. Yeah right. The first hurdle is the snaking queue to check in.
Then there is that nail biting moment when you hold your breath and just pray your luggage isn’t over the weight restriction, otherwise an embarrassed stuffing in of various items into an already bulging hand luggage bag ensues. Also, I don’t know whether it’s my advancing age but I seem to have developed OCD when it comes to checking whether or not I have the passports and tickets. If I check it once, I check it twenty times. Assuming all is well at check out we progress on to the security run. Even if I remove my shoes, belt, jewellery etc I still seem to get beeped, much to the children’s annoyance. Safely on the plane – oh, don’t you just love those acres of leg room? And gone are the days when you got a meal served to you. Now, if you haven’t eaten beforehand, you have to be satisfied with what can only be described as inedible, and expensive rubbish washed down by hopefully something relatively bearable. At last we reach our destination. There’s always that tenuous first few hours when we all get our bearings and I realise that it definitely is my age and hormones when I spend most of the times perspiring profusely until I acclimatise. Not exactly the bathing beauty image I was aiming for. And then, guess what? The children have found friends. The holiday during which I was hoping to spend some quality time with them becomes a quick couple of minutes when it suits them during the day. At least I have that journey home to look forward to in a week.

Man up When it comes to raising awareness or money for cancer, the ladies are pipping guys to the post. So is it time for us men to face our fears when it comes to visiting the doctor? As consultant urologist James Hicks explains, if we’re ever going to find a solution, we need to start talking about the problem first

I
t’s a common problem among men. No, it’s not cancer. It’s not man flu, stress, or diabetes necessarily. The problem is the reluctance to talk about our health and more specifically, the prostate, penis or bladder. It’s understandable really. After all, issues ‘down there’ don’t exactly do much to make us feel our most masculine and admitting we have any type of health problem is never easy. But we need to man up. Because failure to do so or to see a professional could be contributing to the 10,000 or so deaths each year that are caused by prostate cancer. As consultant urologist James Hicks points out, it might not be the easiest thing to talk to your doctor about but, like most cancers, early detection is important. “I can understand why men shy away from issues with their urinary tract, erectile dysfunction or prostate. Because it often means a finger up their backside, which is something they find uncomfortable or embarrassing. But there are also blood tests we can carry out before that is necessary that will determine whether a man has a low or high risk of something like prostate cancer. It’s called the Prostate Specific Antigen (PSA), and it’s a very helpful test. With any disease, early detection has to be the biggest advantage”, Mr Hicks told The Resident Magazine. The consultant urologist deals with problems affecting the bladder, urinary tract, prostate, kidneys and liver. He is head of his department for St Richards Hospital Chichester and Worthing Hospital for the NHS and works privately at West Sussex Urology LLP at Nuffield Hospital Chichester. He believes that raising awareness of the issues men face as well as detecting problems early is the key to seeing survival rates increase. “Like most illness or disease, we need to know more about these problems, and although the more we search for them, the more cases we find, it does help us get closer to helping people live longer with something like cancer. With the PSA test for example, we can identify who might be at risk of prostate cancer and monitor them accordingly. The earlier we spot symptoms, the greater the chance of finding curative solutions for them.”
The consultant added that symptoms don’t always mean bad news and that if men visit their doctor early on, they might save themselves a whole lot of worry. “Many of the signs that people associate with the prostate can be harmless. For example, problem urinating can be caused by the enlarging of the prostate gland, but that does not necessarily mean cancer. Also, erectile dysfunction can actually have more to do with the heart and can precede heart conditions that may present themselves in a few years time. So it’s definitely worthwhile being examined to manage, prevent or treat that. ” The research into curing such cancers is ongoing and according to Mr Hicks, this surrounds the so-called ‘tigers’ and ‘pussycats’ of the disease. He added: “We try and decipher the difference between the two and then we can treat people accordingly. Because in reality, the older you get the more likely you are to develop prostate cancer. Around 80 per cent of over 80-year-olds will have prostate cancer to some degree and it will not necessarily affect their lives. So it’s helpful for us to identify how advanced or aggressive it is to enable us to treat it effectively.” Despite more than 40,000 new cases of prostate cancer being diagnosed each year, the disease is still rarely talked about in public, compared with something like breast cancer. As Mr Hicks puts it: “Women are way ahead of us in terms of raising awareness for their own cancers such as breast or ovarian cancer. Men are lagging behind simply because of a reluctance to talk about these problems. It’s an issue that is getting better. Now, for example, we have ‘Movember’ when men are encouraged to grow a mustache for a month to help highlight male cancers. But there’s still a fair way to go. The biggest challenge is to not only to get men to spot symptoms, or to see their GP, but to talk about it openly. It’s nothing to be ashamed of.” James Hicks is lead consultant urological surgeon for Western Sussex Hospitals Trust and works in both St Richard’s Hospital in Chichester and Worthing Hospital. James is also part of West Sussex Urology, a partnership of seven consultants across West Sussex offering private treatment, and currently practices at Nuffield Having trained at the Royal London Hospital, he completed his early surgical training at St Richard’s Hospital followed by training at the cancer centers of Portsmouth, Southampton and Bournemouth, where he developed his specialist interests in urological cancer surgery. There will also be hot food available to eat on site as well as an amazing collection of locally produced arts and crafts. Also on Saturday, a demonstration kitchen namely ‘The Live Cookery Theatre’ will arrive in Horsham to take pride of place in the Carfax. The high-spec kitchen will be used on the big day by a number of chefs from local businesses, plus traders from Horsham’s weekly local produce market who will collectively form a live programme of entertainment to showcase their culinary skills, demonstrate and share their knowledge. Celebrity chef Tony Tobin has just confirmed he will be making a special appearance and cooking up something rather special at the kitchen with his findings. Tony is well known to viewers of the BBC’s Ready Steady Cook, having appeared on the show over 300 times since 1992. Also confirmed and returning to Horsham for another appearance is Matt Gillan, Head Chef of The Pass restaurant at South Lodge Hotel, which has now won its first Michelin Star. The programme is professionally compered by foodie Hilary Knight, founder of Sussex Food Network. Hilary works with chefs and food and drink producers from across Sussex and will be interacting with demonstrators and engaging the public on the day, teasing out their top tips. Whilst visitors will witness cooking at its very best, there will certainly be opportunities for free tasters together with takeaway recipe sheets for each dish, so people can practice the experience for themselves. The Big Nibble would not be the same without the Horsham Beer Trail with many of the pubs and bars across town already signed up to take part. For just £1, participants set off with a mini-tankard and programme (included in the price) to sample real ales in Horsham’s excellent and eclectic watering holes. On Sunday 2 September, as well as another opportunity to buy fabulous goods from the extensive local produce market in town, a town centre ‘Nibble Trail’ is also being organised with free taster portions from participating restaurants, pubs, cafés and market stalls. ‘Golden vouchers’ will be made available through local media, with taster cards being offered to the first one hundred people to redeem their voucher in town on the day. The local-produce-fuelled event kicks off a whole month of celebrations, as the Horsham District Food and Drink Festival, organised by Horsham District Council, runs from 1 to 30 September. Town centre businesses as well as many others across the Horsham District will also be offering their own events and special offers as part of the Big Nibble launch weekend.
