LETTER FROM PAULA BADOSA Professional Tennis Player Stayed from 20th to 25th November 2021
“ The Maldives is a dream destination, and the villas, restaurants and service here at The Ritz-Carlton Maldives, Fari Islands are above and beyond, but it is expected of the brand and destination. But what made this holiday experience special was the people. Throughout my stay, from my Aris Meeha to the Chefs personalised every single experience. And the management team even organised a tennis clinic for young local talents, who visited all the way from the capital city, Malé. It is these moments I cherish most and will stay with me forever!

CULINARY LANDSCAPE
OCEAN TO PLATE, TASTE OF THE MALDIVES This geographical archipelago is not just a visual feast; its culinary creations are quite unique. Straight from the ocean to your plates, seasoned with common spices and tropical ingredients, Maldivian cuisine is simple yet exotic. Influenced by neighbouring countries, you will find creamy curries, rice dishes, and fried savoury snacks, but tuna takes centre stage. More traditional dishes include root vegetables such as sweet potatoes, cassava, yam and breadfruit. Even today, breadfruit porridge or yam dishes are comfort food in some households. Guests can taste the local flavours throughout the island, from afternoon tea to a romantic dinner set on the beach. AFTERNOON TEA Afternoon tea is famous around the world, with different variations; the British enjoy scones and cream with strong black tea grown in India or Ceylon, while the Japanese tea ceremonies are an expression of hospitality with a step-by-step brewing ritual. Similarly, afternoon tea is a tradition much-loved by the Maldivians, an integral part of the food culture, often bringing generations together. Typical Maldivian afternoon tea consists of black tea and bite-sized sweet or savoury pastries made of tuna, coconut, banana, or various tropical ingredients. Afternoon tea at The Ritz-Carlton Maldives, Fari Islands is a fusion of international and local favourites such as scones and cream, sandwiches and a selection of Hedhika from Gulha, savoury round-shaped tuna balls to Dhonkeyo Kajuru, banana fritters. Afternoon tea is available daily, and it is complimentary for our Marriott Bonvoy members.
MALDIVIAN NIGHTS Beach, the sound of the sea and under a blanket of million stars, Beach Shack, sets the scene for the perfect evening in the Maldives. Now guests can embark on a culinary journey from south to north of the country on Maldivian nights held every week with live stations whipping delicious curries from reef fish to mixed seafood, an array of chilli salsas, chips and condiments. The evening is completed with exotic desserts like screwpine mousse, pandan pudding and young coconut cake. DINE BY DESIGN - MALDIVIAN FLAVOURS For a more intimate dining experience, our Dine by Design menu presents guests a three-course Maldivian menu and a choice of venues from the beach to dining under the 30-ft Banyan tree in the Mystique Garden. With a live cooking station, guests can enjoy course-by-course served from a traditional lacquered wooden dish. Starters include Garudhiya, tuna broth, followed by Hawaadhulee Boava, devilled octopus and Dhivehi Ihi, Maldivian baked lobster and finished with Huni Hakuru, a southern favourite, a steamed patty filled with sweet young coconut paste. The menu also features vegetarian dishes such as Dal curry, tempered potatoes and even sauteed banana blossom salad, a delicacy enjoyed in the royal courts of the Maldives in the ancient days. MALDIVIAN COOKING CLASS Wish to discover more about the delicious local ingredients and flavours? Guests can join our weekly Maldivian cooking classes to prepare a three-course menu with our local chefs. Starting with Mashuni, a breakfast favourite made with poached tuna, coconut and spices, eaten with flatbread. Followed by Kukulhu Riha, chicken curry prepared with curry leaves, pandan leaves and spices found locally and finished with Dhonkeyo Kajuru, addictive bite-sized banana fritters. Chefs tailor the classes based on the dietary requirements and preferences of the guests.

CULINARY LANDSCAPE
SUSTAINABLE COCKTAILS Immerse in a cocktail journey through the archipelagos seven restaurants and bars, exploring various cultures balanced with wellness and sustainability. Guests can sip on Aperol spritz at the resort’s Southern Italian restaurant - La Locanda, sample sake-infused cocktails at IWAU with carefully curated dishes from Japanese Chef’s Table, embark on a tea ritual at Summer Pavilion – modern Chinese restaurant and taste the island’s signature cocktails mixed with five spices of the archipelago evoking the country’s maritime spice route stories of the past. Marco Barsotti, Master Mixologists crafts inspiring cocktail menus tailored to each restaurant, focusing on a star ingredient for each cocktail with an intriguing story to tell, such as Rosewater, a cocktail prepared with rose petals honouring the national flower of the country. Or even going as bold with the islander’s favourite ingredient, tuna, transforming it into a daring cocktail made with Ceylon arrack, coconut milk,
and pineapple. Whether guests are seeking a low-calorie holiday cocktail or a healthy beverage, we have it covered. Our cocktails are low in ABV, not just keeping your calorie count in check but also complementing the country’s warm climate. An array of healthy elixirs and detox cocktails are available, made from superfoods such as Goji berries and Baobab. We even personalise based on the diet plans of our guests. Plastic straws are replaced with stainless-steel straws, and even the ingredients found in the cocktails take an eco-friendly approach, such as Banana. This nutrient-rich cocktail from the Eau Bar menu is made with discarded banana peels used in banana bread production for breakfast. Whilst Fresco from La Locanda menu uses bergamot and soda made with whithered basil leaves, and Ole Tonic from Beach Shack takes a 360 approach by using the whole citrus fruit from its juice to the peel. Breathtakingly beautiful settings paired with thoughtfully-curated exotic cocktails with a zero-waste beverage concept certainly appeal even the most sought-after travellers.

ART OF BODU BERU WITH JIMO The clear blue waters, sugar-like sandy beaches and tropical palms have been attracting visitors from different corners of the world for years, but its culture is little known to the world. We are proud of the cultural elements from the Sangu shell blown on arrival to the elegant Bodu Beru procession at the Defining Moment in our resort. Most importantly, it is the Ladies and Gentlemen from the Maldives that tell our guests the story of their country. Meet, Jimo, our Naturalist at Ritz Kids and also our Bodu Beru Master. Bodu Beru is the oldest surviving tradition in the Maldives, dating back to the 11th century, believed to be brought by African shipwrecked sailors. Maldivians instantly embraced the beauty of the rhythms and the art of crafting Bodu Beru, like their own. This tradition passed through generations adapting to the influences brought by traders from Africa, India and parts of the Arab world. Likewise, Jimo grew up dancing to Bodu Beru at a very young age, He professionally began playing at the age of 16 years after receiving praises for his outstanding performance during a parade on his island. After all, his father is a carpenter who made drums using coconut timber, a craft that is slowly fading into the pages of history. In the olden days, coconut timber and dried stingray skin were used to make drums, but nowadays, we use tanned goatskin to save the population of these nearly endangered sea animals. Discover more about this beautiful tradition at Ritz Kids, as Jimo takes adults and children alike on a journey through the history of Bodu Beru, the art of crafting and basic rhythms.

Apart from diving with the beautiful marine life, Cousteau was most impressed by the hospitality of the Maldivians.
