It has been an odd year for restaurants in Central Oregon.

While the economy has blossomed and the population has steadily grown along with tourism, the number of new restaurants over the past year has been relatively low. “It’s about restaurants planting their roots this year,” explains Kinley Sbandati, for Trattoria Sbandati, our choice this year for Restaurant of the Year. She explains that it has been a good year, but also one when she believes restaurants have been returning to the basics and making plans for the future—and, in this year’s Restaurant Guide, we take a few snapshots of various trends in the food scene, and where it may be heading. We surveyed a panel of foodies and food experts for their opinions, and those observations are included in this issue. As well, we talked with local chefs about what foods they see trending—and those profiles are peppered throughout the guide. And then there were the trends that were impossible to miss: While there have been relatively few new restaurants in the region this past year, food carts have been popping up like mushrooms. In our 2014 Restaurant Guide, we awarded The Lot, the collection of semi-permanent carts gathered around fire pits on the city’s west side, our Rookie of the Year honor—and this year we go one step further, and acknowledge food carts' importance and staying power with an entire new section, and a Food Cart of the Year category. We also note the prevalence and relevance of crowd-sourced opinions when selecting where to eat by adding a “Readers' Choice” category.

ostly, our Advisory Board was positive about what they are seeing— and eating—in local restaurants. But, the panel members did have a few bones to pick. “One of the negative trends we are seeing is pricing,” said Alan Dietrich. “We are seeing prices that are exceeding what the town would really like to pay for going out. We have prices that rival Seattle or San Francisco. A $13 burger in Bend is more than I’d like to see.” He added, though, that it is not price—expensive or inexpensive— that matters, but that the food and dining experience matches the price. “I expect a certain level of performance out of a five-star restaurant,” he explained, “and different from a brewpub, and I’m equally happy if I get what I’m expecting.” That idea was echoed by the other panelists, who pointed out that restaurants in Central Oregon are increasingly doing a good job matching their food, service, and ambiance to customer expectations. “Although they aren’t the fanciest,” said Meiko Lunetta about Jackson’s Corner and Spork, “I think their food is delicious and for a great price.” She added, “They’re the places I want to show off when my friends come to town.” Our panel members had no trouble listing favorite restarurants, but a few nudged even their favorites to strive for a bit more. “[A lot of] restaurants [are] serving the same food....burgers, pizza, fried food,” quipped Chef Bette Fraser. “We can be so much more than that, if we tried.” Chef Thor Erickson, with the Cascade Culinary Institute, also urged local restaurants not to be too complacent. “Food service workers should take more pride in their work and what they do,” he said. “It’s a hard job: Do the best you can and make it beautiful.” But mostly, the panel offered positive observations. Nathan Boddie commented that high-quality restaurants and food carts are reaching farther into various neighborhoods, and are not only clustered around the usual locations. “The trend toward more café, sidewalk, and outdoor options is exciting and works well with our climate and outdoors-minded population,” he said. That sentiment was shared by Erickson, who pointed out that there is more accessibility within menus themselves. “[There are] more ‘small plate offerings,’” he explained. “This allows guests to order a variety of different items and have a more realistic portion on the plate.”

all us indecisive. Or, as we prefer, say we found a yin to the yang for this year’s CRookie of the Year choice. We simply could not choose between two strong entries—each is so different and stands out for different reasons—that we are selecting both the vegan “burger” joint, Next Level Burger, and the meat-centric Stihl Whiskey Bar as our Rookies of the Year. We consider the selections as representing the opposite ends of Central Oregon’s culinary spectrum and, as such, balancing each other like two very distant cousins sitting on a seesaw. Stihl is a downtown whiskey bar—dark, yet fun and friendly, and serving wonderful variations of meat-and-potato dishes. In spite of the dimly lit and dark wood paneled interior, the service is effervescent; at a recent visit, the manager talked for five minutes with some patrons about different types of

bread pudding. Although attention is most naturally drawn to the whiskey—and the venue offers dozens of different types—Stihl's food selections are serious and elegant; a sirloin (from DD Ranch) with crimini mushroom sauce, an elk shepherd's pie, and my standby, the succulent pan-seared pork chop (from Carlton Farms) served with garlicked green beans. The blackened cod with mango chutney is typical of the menu—a top-notch meat dish with just a twist of culinary cleverness, yet still unpretentious. Even the salads make certain to eclipse anything that is purely healthy, with braised kale served warm with bacon and toasted almonds, and the Boston bibb topped with a sweet bourbon vinaigrette.

Next Level Burger Rookie of the Year, Next O urLevelotherBurger, is opposite in so many regards—it is brightly lit and the menu is as far from ranches and fishing streams as possible. Reminiscent of a classic 1950s diner, but upgraded to a modern Dwell magazine design, there are blonde-wood tables and a rollup garage door. It is simple and clean. The menu gives no clue, apology, or sermon about its vegan philosophy and the hot dogs, cheeseburgers, MESSAGE HERE and milkshakes are, with no apologies, meatless and dairy-free. It is a burger joint that doesn’t serve meat—and without sacrificing one morsel of flavor. A neighbor to Backporch Roasters and near GoodLife Brewing, NLB is a great addition to the cluster of stores tucked off SW Century on the west side, and one that re-enforces Bend’s personality as a place for healthy lifestyles. While 10 Barrel can be intimidatingly crowded, there is a reason—the fire pits are downhome charming and the beer is fantastic. Award winning brewer Tonya Cornett and brewmaster Jimmy Seifrit are leading the pack with standards and rolling out experimental brews all the time. Head chef Ingrid Rohrer—originally from the Bay Area and more recently the executive chef for Bon Appetit at Intel—brings far-reaching expertise and experiences with top-notch Indian and sushi chefs, and what she calls “an ethnic twist to comfort food.” She started by wiping clean the old menu, and has updated it (although favorites like the scallops remain, just with new clever touches).

Known for top-notch sushi (Steve McQueen, IPA, and Diablo Rolls are some of the standout specialty rolls), 5 Fusion also has a less-talked-about but equally impressive menu of starters. The filet mignon lollipops please those who prefer meat and potatoes to octopus, while the wagyu beef carpaccio with wasabi goat cheese appeals to more adventurous palates. Sleek decor, innovative cocktails, and excellent service set the tone—impressive enough to keep even big city foodies happy. With one of only two chefs in Bend invited by the James Beard Foundation to present their food last year, Ariana is top-notch dining. Seasonal, organic and sustainable dishes blend Northwest cuisine with European and Mediterranean influences. (Of the husband-wife dynamic duo, Andres is from Colombia and Ariana comes from an Italian family, and those influences are evident in the food.) While proteins like duck and filet mignon are staples, this creative kitchen also ventures into the more adventurous. Family owned and operated, with a husband and wife chef combo, the 2009 Source Restaurant of the Year is on every local and tourist short list of must-experience restaurants. A full bar and an extensive wine list (curated by mom!) make it an ideal spot for special occasions.

It may look like just a 20-something watering hole from the outside—a large smoking patio and tinted windows tell that story—but beyond specialty drinks and a killer happy hour, Astro offers a full menu, with salads, sandwiches, pizzas, and burgers with beef from the nearby Imperial Stock Ranch and capitalizes on the recent bacon obsession, a bacon pie with goat cheese, caramelized onion, roasted garlic, and spinach.

The Spanish-styled neighborhood kitchen was the Source’s 2013 Rookie Restaurant of the Year. Inside the small restaurant you’ll find old bicycles above the bar; bold, brightly painted walls; and a concise menu with rotating specials. For lunch, try the chili-glazed yam with rice and beans. Come dinnertime, order a Barrio margarita and some tapas—the grilled green beans are perfect. Barrio’s chorizo and chicken paella is a house specialty. It’s also the only place in town you’ll find the mildly spiced rice, meat, and veggie dish.

Brussels Sprouts

Steven Draheim, Chef/Owner, Barrio sprouts have gotten a bad rap over the years, evoking an image of a scornful B russels mother standing over her tearful children as they finish their Brussels sprouts before going outside to play. It’s time to shake off this misconception and take a closer look at this fascinating little vegetable. “What I like about Brussels sprouts is that they are essentially small, compact cabbages with a lot of vitamin C and quite a bit of versatility,” says Barrio owner and chef Steven Draheim. Just like a regular cabbage, Brussels sprouts can be shredded and used for slaw or fermented and made into kraut or kimchi. Starchier than regular cabbage, Brussels sprouts can also be fried, the extra starch allowing them to get nice and crispy. The gorgeous dining room overlooking giraffe-like pine trees on the campus is a foodie’s dream, where prices are reasonable and technique and flavor are high. Ingredients are often locally sourced and a sustainable food philosophy is enforced.

The star of the lunch menu, the Pick Two, allows you to order two selections from the pizzetta, sandwich, salad, soup or mac and cheese lineups without feeling like a total fatso. Sandwiches are served on fresh baked focaccia bread and salads are market fresh and topped with gourmet ingredients. There’s a farmer’s plate with meats, cheeses, and veggies and Bavarian pretzel made from the brewery’s spent grains. For the more carb-conscious, there’s also Thai Lettuce Wraps with Thai peanut sauce, roasted chicken and mint slaw and Sriracha wrapped in romaine hearts. The beer is great, the dining space bright and modern (exposed timbers, roll-up garage doors, common table) and the menu is affordable. During the summer, enjoy food cart options in the beer garden.

Jackalope has called its downtown location under the Oxford Hotel home for coming up on three years. Tiny, hard-to-spot restaurants are a long-standing tradition in Japan, and Juno, a westside sushi bistro, can be tricky to find—and the spare decorations and mismatched furniture may be a surprise—but it really means they are focuses on what matters: the sushi in front of you, not the atmosphere. Rolls at Juno are carefully curated, fresh, and unique. The Yukata Roll, a generous slab of yellowtail tuna with ginger and scallions wrapped in nori, is delicious, with sharp flavors complementing and melding together in a robust medley. With a reasonably priced sake list and a rotating, creative menu, and with quality food and service at non-tourist prices, this is a great find.

The focus is on healthy food, which isn’t necessarily an oxymoron with burritos. The standard lineup has a tasty Che Guevara, which is filled with sweet potatoes and pinto beans, and the popular Bubba burrito, a standard pinto and chicken burrito; the addition of BBQ sauces brings a zest to the meal.

Global fusion sounds a little vague, but once you’ve eaten the wide ranging offerings from Level 2 overlooking the Deschutes River in the Old Mill District, you won’t be as concerned with the name as with what you’ll be ordering on your next visit. May we humbly suggest the ahi tuna poke, one of the best appetizers around, and the pork tenderloin medallions and filet mignon that top the list of delicious meaty entrees.

Homemade soups change daily and sandwiches are served on locally baked Dilusso breads. Kombucha and espresso are also available but, first and foremost, Mother’s is a juice café. Offering East Coast-style sub sandwiches named after New York City boroughs and landmarks. The Bronx, stacked with turkey and melted provolone cheese, is a tasty classic and the full-length sub could easily make three meals.

Vegetarian burgers, while still deemed oxymoronic by the meat-loving masses, have come a long way since the patties first found their way to commercial markets about two decades ago, when what had previously been “hippie food” sidestepped into the mainstream. And yet, most sit-down burger joints have just one version (if any) available. Next Level Burgers is pushing this new frontier, with eight (eight!) varieties of veggie burgers, dairy-free cheeseburgers, and “milk” shakes, all without sacrificing taste profiles. Jeff Hunt, Executive Chef & Co-owner, Spork Spork’s executive chef and co-owner, has a love for all things pickled. J eff“WeHunt, love pickles of all types at the restaurant,” affirms Hunt—and with a primary focus on fer-

mented pickles, quick pickles, and vinegar pickles, that love is evident throughout the flavorful dishes on Spork’s menu. Korean-style fermented pickles, known as kimchi, commonly uses beachu, which is made from napa cabbage. At Spork, kimchi is made by cutting up heads of napa cabbage and then salting it for about 24 hours before adding garlic, ginger, brown sugar, green onion, and a Korean chili powder called gochugaru. Spork uses its house-made kimchi as a side to its rice bowls, in soup stocks, and stir-fried with noodles or rice. Quick pickles, says Hunt, as their name implies, are easy to make, and can be enjoyed immediately, though they tend to hit their flavor sweet spot about four hours after they’re made. Quick pickles are made using any vegetable, thinly sliced, and rubbed in three parts sugar and one part salt. Spork’s jalapeno quick pickles are frequently used on their tacos or lightly breaded with rice flour, fried crispy, and served as a snack. (AM)

We don’t just trust any Italian restaurant that makes its own gnocchi, but after watching Chef Juri Sbandati meticulously groom his dough and hand-roll the individual pieces of pasta with extreme care and attention to detail at last year’s Bite of Bend, we know he’s the real deal. Sbandati specializes in authentic Italian cuisine, importing the best that Italy has to offer and using the finest local produce and meats, ensuring an incredible meal that fuses Central Oregon and Europe. Although pronunciation of this westside eatery may be a bit tricky, the authentic name is indicative of the authentic cuisine you’ll find inside. In the land of craft breweries that Bend has become, making a decent beer isn’t enough to get folks through the door of a brewery anymore. Worthy makes solid beer, American-style craft beers. The menu is pub food with a conscience. Burgers and pizza, sure, but the fresh, sometimes local and organic ingredients are a nice touch. The beet salad is also one of the best in town. The sunny and bright dining area is made so by the west-facing, floor-to-ceiling windows. Throw in the large patio and fire pits and one of Bend’s newest breweries also just became one of the best spots to enjoy a summer sunset.

Three Creeks has quickly become the place to grab a cold pint in the cowboy town. With a sectioned-off bar as well as a spacious dining room within its impressive log-cabin-style confines, Three Creeks is both a family-friendly dining option as well as a spot to meet up with friends for a pint and some live music. the burgers, sandwiches and chicken wings one would expect from a pub, but also includes gourmet entrees ranging from rib-eye steak to grilled salmon.

Hola! Sunriver Mexican 57235 River Rd. 541-593-8880. holabend.com. $$. Hola! is everywhere now—in the Old Mill, on the eastside, in Sunriver and Redmond, and in downtown Bend. Diners will find plenty of dishes to recognize on the menu, but all have been juiced with bold Peruvian flair. Ceviche, chile rellenos, and the enormous margaritas are some of the favorites. Also, all five locations boast expansive tequila selections.

At this fine dining establishment in Sunriver, chef Lars Johnson keeps his menu fresh and local, concentrating on steaks, pasta, fish, and poultry prepared with French and Italian influences. An array of specials augment the menu each night, and desserts are excellent. It’s a little hard to find, but it’s a cozy spot with a friendly atmosphere and upscale food.

Terrebonne Depot Pacific Northwest 400 NW Smith Rock Way. 541-548-5030. terrebonnedepot.com. $-$$. A favorite of Smith Rock’s climbers, the Depot is located in a 100-plus-year-old former train station and offers fresh fusion food, like the pork belly lettuce wrap ($11.50), alongside a full bar filled with spirits as well as local and imported beers. The high ceilings, bright interior, and friendly staff make dining at the Depot a pleasure.

the expansive windows that look west upon the Cascades, are wonderful. The dining area and bar inside the Central Oregon resort often features local and seasonal items, like forest mushrooms, grilled asparagus salad, and a half-pound Snake River Farms burger. Opens for the season in May.

Housed in a wooden cottage with a stone chimney and screened-in porch just yards from the Metolius River, Kokanee Café in Camp Sherman is serene and rustic. Serving primarily Northwest inspired meals focusing on fish, game, and local ingredients. Opens May 10.

Solstice Brewing Company started brewing its own beer two years ago and also offers rotating taps of microbrews. Menu is standard American fare, but with a focus on some local ingredients.

Giant portions of meaty steaks and all the fixings served family style is the name of the game at Tumalo Feed Company. Appetizers and dessert included in your meal. been a whirlwind of a year for local chef Bethlyn Rider. Since leaving the Broken Top Bottle Shop last I t’sAugust to launch her own food cart—Bethlyn’s Global Fusion—she has held down a regular spot off

Galveston Avenue, catered events, and developed a strong following. “[Customers have] responded really well,” Rider says. “I think it’s unique and exciting and fresh and a little different from what the other food carts have to offer.” In addition to popular staples like the fried avocado and black bean bowl and avocado tacos, FROM JERSEYshe TO NEW YORK offers daily specials that highlight a host of culinary roots and locally-sourced ingredients. While the bowl is a high-seller, Rider says that many of her regular customers simply rotate through the menu, trying everything once before cycling through again. Who would have thought that sticky sweet authentic Hawaiian barbecue would come out of a log cabin on wheels? Mauna Kea’s menu (named for the highest peak in the aloha state) offers Hawaiian slow-cooker’s fantasy BBQ. Shoyu chicken (marinated in the sweet Hawaiian equivalent of soy sauce), kalua pork, pulehu steak, and veggie skewers are all on the menu.

Cordes, who studied Mexican cooking for four months after graduating from culinary school, welded his cart together out of parts from Pakit Liquidators. The tacos, tamales, and enchiladas range from $3 to $7 and are so tasty that if the passing exhaust fumes hit you just right, you’ll think you’re dining in Mexico City.
