ALIAS: AVOCADO TOAST WITH EGG. TRUE IDENTITY: PERFECTION JACKSON’S CORNER By Hilary Corrigan It’s deceiving. The small dish doesn’t take up much space on a plate, but don’t let it fool you. The thick slab of toasted house pullman bread made at the in-house bakery. The filling, smashed avocado with lemon juice and chile lime salt. A little olive oil. Those sweet late-summer heirloom tomatoes sliced on top of that. And the option of adding an egg, any way you like it, to crown it all. This is a meal that will sustain you for a quite a while. Even its simple name, “Avocado Toast,” belies its strength and flavor. You’ll find it at Jackson’s Corner in Bend. “Everybody loves avocados,” Cameron de Alicante, kitchen manager for the restaurant’s westside location, said of the meal’s origin. It changes slightly with the seasons, switching sliced radishes for the tomatoes in fall and winter. De Alicante called the dish a light but filling one, and a “healthy option to get the day started.” It’s also happiness on a plate. And pure power.

By Nancy Patterson CHOW is known for its griddle pancakes, breakfast cocktails and personalized benedicts. But the most impressive and tastiest dish on the menu may just be the Eggs Ala Caesar. I use the word “benedict” in the loosest of terms, as poached eggs and hollandaise are the only common denominators amongst the two dishes. It starts off with a cheesy, herbed cornmeal pancake and tops it off with two perfectly poached eggs. The eggs are dressed in chilis rojas and verdes, similar to the Mexican classic, Huevos Divorciados. The entirety of the dish is then covered in a chili hollandaise that delivers a subtle heat, enhanced by the acidity in the roasted chili sauces. All of these spices and heat are balanced out with freshly sliced avocado, crumbled cotija cheese, house-pickled onions and fresh sprigs of cilantro. Getting hungry yet? You’ll still need to choose a side! The hand-cut roasted sweet potatoes are almost always my go-to side order. They’re tossed in garlic and fresh herbs and quickly drizzled with balsamic vinegar. Other options include cornmeal-crusted tomatoes, bacon and cheddar grits, and cumin-and-fennel fried cauliflower, to name a few. This breakfast dish is available every day and goes best, in my humble opinion, with the Kombucha 1110 NW Newport Ave., Bend Cooler—a blend of Crater Lake vodka, 541-728-0256 Townshend’s kombucha, blueberries, bendinspoon.com/chow-menu mint and lime.

By Nancy Patterson So, you’re looking over the menu at brunch. You spot a few classics like chicken and waffles, a hearty breakfast sandwich, a savory egg skillet—but then you see it: The John Denver. All of your go-tos seem to drift out of mind as you read about this Denver omelette and eggs Benedict hybrid at Drake. They start with a slice of grilled miche, a rustic whole wheat and rye bread from Sparrow Bakery. It’s then loaded, and I mean loaded, with smoked diced ham, green chiles, sautéed curly kale and caramelized onions. The benny is topped off with two sunny-side eggs and a generous serving of chipotle hollandaise sauce. Now, there’s nothing I love more than a smoky, spicy hollandaise sauce on just about anything. And I’ll admit—I was initially disinterested after reading that the Benedict is served over sliced bread. I can now confidently attest to the fact that that’s no longer the consensus. How better to soak up the bits of caramelized onions and leftover hollandaise? While the weather is tolerable, I suggest enjoying this plate on their 801 NW Wall St., Bend outdoor patio. Second, watching the yolk of the egg run out so delicately when broken was like seeing an Oscar film. Do yourself a favor and order it with the potatoes. A BASIC STEAMED EGG SHELLING THAT QUICK BREAKFAST AS QUICK AS POSSIBLE WITH THE INSTANT POT
By Nicole Vulcan Around the office, I’m known as the “egg eater,” found every day around 10 am, shelling a hard-boiled egg in the workplace kitchen. It’s a handy go-to breakfast for busy office workers, students on the go or hard-grinding outdoors enthusiasts alike—easy to make, easy to store and packed with goodness. But if you have access to ultra-fresh eggs, then you know how tough it can be to wrest the shells from the inner goodness. Dousing hard-boiled eggs in cold water right after cooking is supposed to be the best way to get the shell off easily—that is, until the advent of the Instant Pot. Recently, a fellow morning egg-eater raved about using her Instant Pot to cook eggs. It takes roughly the same time as hard-boiling, give or take a few minutes, but with the Instant Pot, the eggs are steamed, not boiled, meaning it’s far easier to remove the shells. As in, melt-off-the-shell easy. Since you can cook up to eight eggs in the average Instant Pot, there’s plenty to prep for a busy week ahead… while still reserving some time throughout the week to check out one of the fine establishments mentioned in this guide, of course.

A hash of sweet potatoes, kale, caramelized onions, roasted tomatoes, avocado, micro-greens and a cilantro-mint pesto topped with two organic sunny-side up eggs. It’s a hearty but not heavy dish that will sustain you forever. Or close to it. It’s also insanely tasty. “Just a play on different flavors,” Mother’s Executive Chef Renee Raymond said of the “Perfectly Sunny,” as if she didn’t create a life-sustaining work of art. The pesto’s also got some pumpkin seeds and golden raisins for sweetness. “I was kind of going for a play on a pesto that was vegan,” Raymond said. But there’s more to it than that. Dubbed “The Big Country” at Broken Angel food cart, the meal itself showcases biscuits and wild mushroom gravy combined with a super-delicious vegan house scramble, along with some peppers, onions and zucchini (I added avocado to mine). Looking at it, you would never tell that it wasn’t actually eggs. If this seems too hearty of a meal, you can get the house scramble in a burrito, by itself, with rice or on an English muffin—it’s versatile and delicious. By Nicole Vulcan When it comes to leftovers, almost anything is better with a fried egg popped on top. Last night’s steak? Chop it up and add that fried egg. Beans and a tortilla? Get a huevo on it. At The Lemon Tree—our Rookie of the Year in 2019’s Source Restaurant Guide—the egg is already an integral part of the Nasi Goreng. It’s the national dish of Indonesia; essentially spicy fried rice with an egg on top. Whether it’s breakfast or lunch time, it’s always a good time to enjoy baby shrimp, chicken and vegetables, all swimming in that lovely egg yolk. Stir in some of the Sriracha sauce served on the side and you’ve got a great combination.
