sian Mint’s Chef Nikky Phinyawatana dazzled guests at the James Beard House in NYC . The James Beard Foundation invited Nikky to celebrate Loy Krathong, Thailand’s lunar festival. The perfectly plated dishes were exquisite for a celebration known for breathtaking floating baskets. “I was truly honored to have the opportunity to showcase Thailand and Texas at the James Beard House in NYC,” stated Chef Nikky Phinyawatana. The Hors d ’Oeuvre menu included Kratong Tong, Tom Kha, and Plah Goong paired perfectly with Pascal Jolivet Sancerre 2016, Domaine Faiveley Mercurey Rouge 2015 and
Singha Lager Beer. Guests then enjoyed a dinner menu of Miang Khum; Nam Prik Ong; Pla Muek Nueng Manao; Texas Raised Wagyu Beef with Panang Curry Sauce, Crab Fried Rice and Kabocha Squash; and the finale was a Lychee Flower Jelly with Jasmine Flower Cake, Coconut Cream. Appropriately chosen wine pairings accompanied each entree to offer attendees an unforgettable experience. The James Beard Foundation’s mission is to celebrate, nurture, and honor chefs and other leaders making America’s food culture more delicious, diverse, and sustainable for everyone.

Q: Why are you adding another concept to your restaurant group? A: When looking at the Dallas Ft. Worth marketplace, we see a void in the Asian food segment that offers fresh, healthy, innovative food with a fast and casual dining experience. I grew up in Bangkok, Thailand, and recently spent time in my homeland where I fell in love all over again with the spices, freshness and culinary selections. Bangkok has this high tech, millennial friendly atmosphere when it comes to fast and casual dining and we want to bring that to our home in Texas. Q: What will the new concept offer that is different from the current Asian Mint restaurants? A: Guests will order at an easy to use visual kiosk and then receive a meal prepared with the freshest ingredients and a little more Bangkok Pow flavor delivered to their table or ready for take-out. The fast and casual atmosphere is perfect for professionals or students grabbing lunch and dinner for families to enjoy take-out at home. The pricing will be very affordable, ranging from $10 - $12 per meal and delicious a la carte options. Q: Where is the new location? A. The newest location will be at 300 W. Campbell Road Ste. 140 in Richardson, Texas between Torchy’s Tacos and Snuffer’s. Q: When will EnjoyMint open for business? A. Our plan is to open this Spring in 2018. Chef Nikky Honored at 10th Anniversary Women That Soar Event October 13, 2017
Chef Nikky Phinyawatana was named Entrepreneur of the Year 2017 during the Women That Soar awards ceremony. Her passion for philanthropy causes her to stand out among entrepreneurs and the culture of Asian Mint reflects Nikky’s mindset that businesses can be both profitable and charitable. Asian Mint has donated to over 100 different charities, schools and non-profit Humans Right Day organizations. December 10, 2017 Asian Mint joined restaurants across North Texas in supporting the Human Rights Initiative (HRI) of North Texas during their fundraising and awareness campaign on December 10 th . Participating restaurants agreed to donate 5% of their sales or $250 (whichever was greater) on that day to support immigrant survivors of 6 MINT MAGAZINE January 2018 human rights abuse who live in North Texas.
