Meet Owner

CHEF NIKKY

N

ikky Phinyawatana is a visionary entrepreneur – the creator and owner of Dallas’ highly acclaimed, award-winning Asian Mint Restaurants. Recently, Asian Mint was awarded Dallas Eater’s #1 Best Thai Food and Culture Map’s Top 100 Restaurants. Asian Mint has received accolades from USA Today, Zagat, Dallas Observer and D Magazine. Chef Nikky infuses love and passion into her innovative Asian Fusion menus as well as her dedication to philanthropic work. She is a member of Les Dames d’Escoffier International – which provides mentorship and scholarships for the next wave of women culinary students – as well as serving as vice president of the Greater Dallas Restaurant Association and a Board of Trustee of the Texas Restaurant Association Education Foundation.

Nikky grew up in Bangkok, Thailand and ventured to Dallas, Texas and graduated from Hockaday in 1996. She received her Bachelors in Business Administration majoring in Entrepreneur Studies and Marketing from Babson College in Wellesley, Massachusetts. Nikky and her husband reside in Dallas with her two beautiful children, Knox and Skye.

SAUCES TO LIVE BY Pad Thai Recipe: 2 eggs 4 oz. rice noodles 3 tbsp. vegetable oil minced garlic 4 shrimp 4 oz. sliced chicken

4 oz. tofu 4 oz. Asian Mint Pad Thai Sauce 1 tbsp. paprika 2 cups bean sprouts green onions (cut into 2 pieces)

1. Soak 4 oz. of rice noodles in warm water for 1.5 hours. 2. Put a wok or large skillet on the stove and turn to medium heat. 3. Add oil, sliced chicken, shrimp, tofu and eggs. Stir-fry for about 3 minutes. 4. Add the garlic and stir-fry until cooked. 5. Add the rice noodles and some water. 6. Add the Asian Mint Pad Thai Sauce and paprika. Stir-fry until sauce is reduced. 7. Turn off heat and toss in bean sprouts and onions. 8. Pour contents into a bowl or plate and garnish with crusted peanuts, scallions and a fresh lime wedge. CHINESE NEW YEAR January 27-29, 2017

Guests came in to celebrate during our annual Chinese New Year at Asian Mint and received the traditional lucky red envelopes. The Chinese New Year tradition of giving red envelopes with money in them symbolizes luck and wealth for the coming year.

Asian Mint participated at a party to benefit the Dallas Chapter of Les Dames D’Escoffier, an organization that provides scholarships for women in the hospitality industry in Dallas.

FOOD AND WINE FESTIVAL March 16, 2017

The Dallas Arboretum hosted its own festival, which featured savory bites created by award-winning chefs from fine restaurants across the Metroplex. Asian Mint participated in this beautiful spring social event. Guests sampled wines and craft beers and ended the evening with dessert, coffee and a special concert. Nikky and Wylie High School Culinary Arts Volunteers, Phil and Noah.
