isitors to the Emerald Isle or even patrons of Irish pubs located outside Ireland may recognize the term “craic.” The word can be confusing to people unfamiliar with Ireland, but upon learning its meaning people tend to embrace it. According to IrishCentral.com, “craic” is an Irish term that refers to the atmosphere and fun on a night out. When someone asks, “How was the craic?”, they’re essentially inquiring if a night out on the town was a good time, and just how good it was. Craic also may be a term for news, gossip, fun, entertainment, and enjoyable conversation. Even social butterflies familiar with craic may be surprised to learn that there are varying degrees of craic. • Minus craic: This refers to a bad night

out. • Good craic: This refers to a fun night out but not one that was especially memorable. • Mighty craic: Someone might have done something extraordinary, but this is by no means the most outrageous level of craic. • Savage craic: A night of savage craic might have been dominated by flowing pints, funny jokes and an overall great night out for all involved. • Deadly craic: Turn savage craic up a notch and you have deadly craic. • The craic was ninety: A perfect, fun and amazing night was had by all. Everyone involved will almost certainly remember the night “the craic was ninety” forever. Oddly enough, IrishCentral.com

ith its increased sunshine and warmer temperatures, spring is a beloved time of year. For those who live in areas where the weather changes dramatically throughout the year, spring can be a respite from the snow and also a chance to enjoy the outdoors prior to the arrival of the muggy, hot days of summer.Families can create a bucket list of entertaining and perhaps educational spring activities. Those who want to try something new can explore these ideas. • Check out a cherry blossom showcase. Cherry trees are popular and beautiful trees that flower in the spring. Their masses of pink and white blossoms are one of the first signals that winter has ended. Cherry tree varieties bloom over the course of several weeks, and climate will dictate how early or late these trees will showcase their spectacular flowers. Visit public

gardens and other areas known for their dramatic cherry blossom displays. • Watch a sunrise or sunset. Take advantage of longer days by enjoying nature’s light show. Wake up extra early and start the day with the sunrise. If you’re not a morning person, then wait until the last of the amber and red streaks light the sky and watch the sun drop below the horizon. • Fly a kite. There is a reason why the adage “March goes in like a lion and comes out like a lamb” is so fitting. Early spring weather can be gusty and unpredictable. Take advantage of windy conditions by flying a kite in an open field. • Head to a farm. Spring is not only about the rebirth of trees and flowers, but also a prime time for various animals to give birth to their young. A visit to an area farm or petting zoo can be a great way to catch a glimpse of some

of these adorable little as they enter and adapt to their new environments. • Check out a small town. Take a road trip to an out-of-the-way hamlet. Spend the entire day there shopping, dining and supporting a small town community. • Enjoy al fresco dining. While outdoor dining during the pandemic may have been done as a necessity, do not forget how it also can be a relaxing way to enjoy a meal. Find a restaurant with a particularly scenic backdrop and dine outdoors. • Visit a thrift shop or flea market. Spring cleaning can serve as the catalyst for people to put items on sale. Spring can be a great time to shop for antiques as well. • Go horseback riding. Enjoy the scenery on the back of a majestic mare or spectacular stallion. Spring is a perfect season to enjoy various activities. H


MANY ST. PATRICK'S DAY TRADITIONS ARE NOT FROM IRELAND

S

t. Patrick's Day is made special by various traditions. Everything from dyeing major cities' rivers green to parades to enjoying green foods has become part of the pageantry of St. Patrick's Day. The next time you raise a green beer to your lips, you may wonder which traditions are authentically Irish and which ones were created by regions with an abundance of Irish emigrants. Surprisingly, many seemingly Irish traditions likely began elsewhere. Parade: It would be accurate to assume that various elements associated with St. Patrick's Day began where St. Patrick, the patron saint of Ireland, once resided, including the first St. Patrick's Day parade. However, some of the first parades held in St. PatrickÕs honor took place in two North American cities, New York and Boston, that had high numbers of Irish immigrants. Historians say the first ever St. Patrick's Day parade was actually held in

St. Augustine, Florida, in 1601, a year after gunfire blasts were used to honor the saint. The parade may have been at the request of an Irish priest living there at the time. Corned beef and cabbage: What would St. PatrickÕs Day be without an authentic meal of corned beef and cabbage? This dish is not so authentic after all, and actually is an American innovation. Ham and cabbage was widely eaten in Ireland, but corned beef was a cheaper alternative found in America by immigrants. Therefore, corned beef became a staple of poor Irish immigrants living in lower Manhattan. The salted meat was boiled three times to remove some of the brine and make it palatable. Green beer: Green beer is not an Irish custom, but an American one. The most common beer consumed in Ireland is Guinness, which is dark brown to black in color, making green dye useless in Irish pubs since it would be largely invisible in the stout

Golf tournaments: One would not associate golf with St. Patrick's Day unless they reside in Nome, Alaska. Golf is a popular Irish pastime, and each year the Bering Sea Ice Classic Golf Tournament takes place right around St. Patrick's Day. Bright green golf balls are used, and breaks are factored in between holes to warm up at local bars. H

HOW TO CHOOSE THE RIGHT PAIR OF SUNGLASSES

S

unscreen is essential to protect skin against potential sun damage, but what about keeping the eyes safe from the sun? Are the eyes vulnerable to significant sun-related damage as well? According to the Calvert Ophthalmology Center, ultraviolet rays from the sun can contribute to various eye problems. These can range from temporary vision loss to macular degeneration. When spending time in the sun, it’s vital that individuals take steps to protect their eyes. One of the ways to do just that is to wear sunglasses. All sunglasses are not created equal. Quality sunglasses protect the eyes from UV rays, reduce eyestrain in bright conditions and protect the eyes from flying debris. Here’s how to find the right pair of sunglasses for you. • Check the UV rating. Sunglasses should block 100 percent of both UVA and UVB rays. UV rays can contribute to cataracts and even destroy the retina, which is the lining at the back of the eyes. In addition, UV light can cause changes in the cells of the eyes that may produce discomfort or even lead to cancer. Make sure the label indicates that the sunglasses protect against UVA and UVB rays. • Wear large sunglasses. The more coverage from sunglasses the better. The American Optometric Association advises that oversized or wraparound sunglasses are best, as they can cut down on the UV rays entering the eye from the side. • Don’t be fooled by dark lenses. Dark lenses do not necessarily block more UV rays than light-colored lenses. It is important to look at the label to see the UV rating. • Select functional sunglasses. The sporting goods experts at REI state that certain sunglasses are specifically designed for certain activities. Sport sunglasses, for example are designed for running, biking and hiking. They’re lightweight and fit tightly so they stay on while exercising. Their frame and lens materials also may be more impactresistant than casual sunglasses. Glacier glasses are sport sunglasses that protect the eyes from intense light at high altitudes and against reflections from snow. • Know the functions of polarized lenses. Polarization helps reduce glare coming off of reflective surfaces, such as water. Note that polarization will not offer more protection from the sun, but it makes engaging in certain activities more comfortable. • Recognize that the color of lenses also helps. In addition to polarization, the color of lenses can affect how much visible light reaches the eyes and affects clarity. Brown, gray and green are ideal for everyday use and most outdoor activities. Light colors like rose, yellow and amber are good in low to moderate light conditions. They can improve the visibility of objects and make surroundings seem brighter. Shop smart when selecting sunglasses to keep eyes healthy and comfortable. H

Warm up with Irish coffee this St. Patrick's Day

T

hough it might not be as beloved as a pint of Guinness or as inviting as a shot of Jameson’s Irish whiskey after some cold hours spent marching in or viewing a parade, Irish coffee has a place all its own on St. Patrick’s Day. The origins of Irish coffee are sometimes debated, though many historians trace the beverage to a stormy night in Ireland. One fateful night in 1943, Irishman Joe Sheridan was called back to work at the restaurant and coffee shop at the Foynes Airbase Flying Boat terminal in County Limerick. A flight that had recently departed for Newfoundland was forced to return to the airport that night due to inclement weather. According to the Foynes Flying Boat and Maritime Museum, Sheridan was asked to make something for the passen-

gers to help them stay warm. Before serving some freshly made coffee, Sheridan decided to add a little Irish whiskey, and the rest is history.The popularity of Irish coffee is undeniable, and some of that popularity likely stems from how easy it can be to make the drink at home. Though Irish coffee is a straightforward beverage, the Foynes Flying Boat and Maritime Museum offers the following tips for those who want to whip up a batch that would make Sheridan proud. 1. Preheat an Irish coffee glass by filling it with boiling water. Keep the water in the glass for 5 seconds, and then pour the water out. 2. Add 1 teaspoon of brown sugar and a good measure of Irish whiskey into the warmed glass.

3. Fill the glass to within 1 centimeter (a little less than half an inch) of the brim of the glass with hot and strong black coffee. Stir well so all of the brown sugar dissolves. 4. Carefully pour lightly whipped cream over the back of a spoon. The goal is to ensure the cream floats on top of the coffee. 5. Do not stir after adding the cream. It’s important to avoid stirring because the Irish coffee will be most flavorful if you drink the coffee and whiskey through the cream.A pint of Guinness might be a must for millions of St. Patrick’s Day celebrants across the globe. But those who want something a little warmer can try their hands at Irish coffee as they toast the patron saint of Ireland this March. H

LEARN THE DIFFERENCES BETWEEN TWO CLASSIC RECIPES

T

he terms shepherd’s pie and cottage pie are sometimes used interchangeably to describe layered dishes featuring a meat-and-vegetable base topped with potatoes. Shepherd’s pie and cottage pie are widely enjoyed across Great Britain and Ireland. While very similar, they are not the same. Cottage pie is the elder of the two recipes, believed to date back to 1791 in England. Shepherd’s pie came about nearly a century later and can be traced to Ireland, indicates British Grub Hub. Both creations are now enjoyed around the world, as these pies are savory comfort foods. There is a distinct difference between the two recipes, and that comes down to the meat. Cottage pie uses minced beef while shepherd’s pie uses minced lamb or mutton. Another distinction between the two is that it was believed earlier incarnations of cottage pie did not use mashed potatoes on the top, while shepherd’s pie has always included mashed potatoes. Sliced potatoes were originally layered on a cottage pie to make the dish look like the shingled roof of a cottage. Despite the names, both pies are not even pies at all. They do not contain any form of pastry dough like a pot pie would offer. Should either of the recipes be finished with a dusting of breadcrumbs on the potatoes, shepherd’s pie or cottage pie have then been transformed into Cumberland pie in another variation.The filling of these recipes is bulked up by various vegetables one may have on hand to make them more hearty. Peas and carrots are commonly included. Shepherd’s pie and cottage pie are the stars of Irish and British country cooking. Enjoy this recipe for ‘Cottage Pie,’ courtesy of Martha Stewart. To turn it into a “Shepherd’s Pie,” simply replace the ground beef with ground lamb.

COTTAGE PIE

Serves 6 3 tablespoons unsalted butter, melted 1 large yellow onion, diced medium 2 large carrots, cut into 3/4-inch pieces Coarse salt and ground pepper 2 tablespoons tomato paste 1 pound ground beef (or lamb) 2 teaspoons fresh thyme leaves 1 cup dark (porter) beer 2 tablespoons all-purpose flour 3/4 cup frozen peas 1 large russet potato (3/4 pound), very thinly sliced Preheat oven to 400 F. In a large skillet, heat 1 tablespoon butter over medium-high. Add onion and carrots and cook, stirring often, until onion is soft, 5 minutes. Season with salt and pepper and stir in tomato paste. Add meat and cook, breaking up with a wooden spoon, until almost cooked through, 3 minutes. Add thyme and beer and bring to a boil. Cook, stirring frequently, until slightly reduced, 2 minutes. Sprinkle flour over mixture and stir to combine. Add 1 cup water and cook until mixture thickens, about 2 minutes. Stir in peas and season with salt and pepper. Transfer mixture to a 2-quart baking dish. Top with potatoes, overlapping slices. Season potatoes with salt and pepper and drizzle with 2 tablespoons butter. Bake until potatoes are browned around edges and tender when pierced with a knife, 40 to 45 minutes. Let cool 10 minutes before serving. H

or many years Chris Garrett has been in the specialty glass and shower door industry, participating in the growing North Georgia housing market. Well good news if you are one of us that is looking for some excellent healthy restaurant choices and eating healthier in 2021. David Fountain, a local foodie and our communities Best of Forsyth financial planner and investment advisor continues his monthly mission to uncover Gainesville’s and Hall county’s culinary favorites.

“Wow, I’ve got to say that this eating healthier has been surprisingly much more fun and tastier than I was expecting.” David told Sarah Johnson, a conscience foodie and part of the local Cole Team real estate. The New Year is well on its way, already a month and half has flown by. While there are many of us who may have already completely forgotten about some of our New Year’s Resolutions, well this article might just help restore those healthy eating intentions. First off, the foods we all choose to eat has a huge impact on how we feel today, tomorrow, and what the future holds in maintaining good health. We are not qualified to get scientific here, but simply put, having a proper balance and improving your eating habits can be life enhancing. “For me, eating should be appetizing and gratifying,” David said when he started this month’s healthy venture.
