INSTAGRAM: @julielinhmouret TIK TOK: @julielinhmouretCrockpot Whole Chicken 4 September 2022 Brought to you by fellow Chateau Elan Resident, Julielinh Mouret INGREDIENTS:  1 whole chicken, giblets removed  2 tbsp of olive oil  4 sprigs of fresh rosemary  3 tsp of kosher salt  3 garlic cloves, smashed and finely chopped  1/2 white onion, to stuff in the cavity  1 tsp dried thyme  1/2 tsp of fresh cracked pepper  1 pound of baby potatoes (Yukon, Dutch, or red), halved or whole depending on size  1 pound of rainbow carrots ( I like to use 4-5 under my chicken to prop it up) 1 | Rinse and pat dry the chicken. 2 | Remove the leaves from 1 fresh rosemary sprig and set remaining the sprigs aside. 3 | In a small bowl, combine the loose rosemary leaves, garlic, 2 tsp of the salt, pepper, paprika, olive oil and thyme. 4 | In a 6-quart crockpot, place 4-5 carrots in a row to form a rack for the chicken. 5 | Rub the spice mixture all over the chicken. Sprinkle the cavity with 1 tsp of salt and stuff the cavity with 3 sprigs of rosemary and the 1/2 onion. Transfer the chicken to the crockpot, breast side up, on top of the carrots. 6 | Add in the potatoes and the remaining carrots around the chicken. 7 | Cover and cook on low for 8 hours or until the chicken is cooked through and falls off the bone. 8 | Using 1-2 wide spatulas, carefully transfer the chicken to a platter. Discard the skin, onion and rosemary sprigs. Then carve the chicken. On a separate plater arrange the vegetables and pour the jus into a gravy separator to serve with the chicken and vegetables.

Summer is winding down, but the weather is still nice.

“Fun Outdoor Activities for Kids”

Saturday, December 3rd at Sarazens.

1. Sponge Race- Each participant in this race needs a sponge and 2 small to medium buckets, one filled with water and the other empty. Players run from the empty bucket to the full bucket across the yard, filling the sponge and return ing to the empty bucket to squeeze the water into it. The first person to fill the empty bucket to the designated line wins.

The pool season will start in November and end in March. The Team Tournament will run after the season and will finish at the end of March. This is a handicapped league, so you do not need to be a great pool player. It is about meeting your neighbors, having some fun with light competition.

Here are a couple of fun ways to get kids active outdoors:

2. Outdoor Obstacle Course- Create an obstacle course for kids to go through again and again, timed or untimed. They can do things like crawl through a hula hoop or a large, empty box, balance walk on a long tree root or on the edge of the sidewalk or driveway, jump off a rock, crab walk through the grass from point A to point B, and hop through a pattern of squares or circles drawn with sidewalk chalk.

1) LDL or low-density lipoprotein (L is for “lousy” and the “lower” the better): This cholesterol is directly related to development of plaque in the arteries. LDL level less than 100 mg /dL is ideal for preventing heart disease.

Cholesterol: Just the facts

Heart disease remains the leading cause of death in the US and worldwide. Over 600,000 Americans die from heart disease every year. However, there are many things that we can do to prevent developing heart disease. One of the major risk factors for heart disease is high cholesterol, which leads to buildup of plaque in the arteries of the heart, brain, and other organs. This plaque can obstruct flow to our vital organs, and when it suddenly clots and completely closes the heart or brain arteries, heart attacks and strokes is a type of fat that is made by the liver and is absorbed by the body from the foods we eat. There are 3 important parts of cholesterol:

Total cholesterol has the 3 components above along with some others, and the typical goal for total cholesterol should be less than 200 or 160, depending on the levels of the above components.

It is important for all adults > 20 years old to have their cholesterol measured. It is also important to understand that quite often, people who look and feel healthy, eat healthily, and are even athletic, can have high cholesterol because of their genetics. High cholesterol can run in the family, because of genetic variants of proteins in the liver—and it is important to control the cholesterol with a combination of a heart-healthy diet and sometimes medications, in order to prevent the development of atherosclerosis (plaque buildup in arteries), heart attacks, and strokes. So please make sure you know your cholesterol numbers and talk to your doctors and health care providers about how you can reduce your risk for developing heart disease.

2) HDL or high-density lipoprotein (H is for “healthy” and the “higher” the better): This part of cholesterol helps remove LDL from the plaques in the arteries. Low HDL is a major risk factor for developing heart attacks. Cigarette smoking, being overweight, and being sedentary are 3 modifiable risk factors that lower the HDL and increase risk. Goal for HDL is at least 50 mg/dL, and ideally greater than 60.

Food that is high in saturated and trans fat, including meat, poultry, full-fat dairy products, and certain oils like coconut and palm oil, all increase the cholesterol in the body. In addition, there are other risk factors that affect cholesterol, including being overweight, being sedentary with no exercise, getting older, and smoking.

3) Triglycerides are fatty compounds that are elevated in people with poor diets that are high in saturated fats, overweight, or have diabetes. Ideally, triglycerides should be less than 150 mg/dL.
