hasselback chicken
1 | Preheat oven to 425 degrees. Line a rimmed sheet pan with foil and spray with oil.
2 | In a medium bowl, combine spinach, bacon, and 1/4 cup of the cheddar cheese.
3 | Place the chicken breast on the prepared pan. Using a sharp knife, cut slits across the top of each chicken breast about 1/2 inch apart and 3/4 way through. Be careful to NOT cut the breast all the way through. Season the breast with salt and pepper. Then stuff each slit with the spinach mixture. Top remaining 2 tablespoons of cheddar cheese on top of the chicken breasts.
4 | Bake on center rack until the chicken is cooked through, about 20 minutes (160-165 degrees). Switch the oven to high broil, moving the chicken to a higher rack (about 6 inches from the broiler) and broil until golden brown, about 2 minutes. Serve hot!

I love the idea of taking Swedish Hasselback potatoes and doing it with chicken.
A Hasselback potato is where you take a potato and thinly slice it threequarters of the way through. You can stuff it with whatever you like. The combination of bacon, cheddar, and spinach, is a delicious one.

What is it and how to know if
-Radon occurs naturally when uranium breaks down to form radon. Uranium is often found
granite rocky soils, as are common in northern Georgia counties. As radon is released into the soil, it can enter buildings through the foundation and well water, eventually building to dangerous levels.
- Radon kills nearly 21,000 people each year, more than 800 of them in Georgia, and is the second leading cause of lung cancer in the United States after tobacco smoke. Smokers are at an even higher risk of radon-induced lung cancer than nonsmokers.
- Your home can be tested for radon very easily and typically for less than $250 through a local company. Should your home require mitigation, typically the cost is less than $2,500 (depending on the size of the home, the layout and the radon level)
- EPA recommends homes be fixed if the radon level is 4 pCi/L (picocuries per liter) or more. Because there is no known safe level of exposure to radon, EPA also recommends that Americans consider fixing their home for radon levels between 2 pCi/L and 4 pCi/L. More information can be found on the EPA website, www.epa.gov.
