Lemon Chicken and Rice Casserole

Try this lemon chicken and rice casserole for an easy mid-week dinner. Chicken thighs are quickly browned and then baked with rice, lemon, and cream of chicken soup to create a comfort dish for the whole family.

Prep Time: 10 minutes

Cook Time: 50 minutes

Total Time: 1 hour

Servings: 4

INGREDIENTS

• 4 (6-ounce) bone-in, skin-onchicken thighs

• 1 teaspoon kosher salt

• ¼ teaspoon freshly ground black pepper

• 2 tablespoons olive oil

• 2 clovesgarlic, finely chopped

• 1 ½ cups uncooked long-grain white rice, rinsed

• 1 (10 1/2-ounce) cream of chicken soup

• 1 tablespoon freshly squeezed lemon juice

• 1teaspoongrated lemon zest

• 1 teaspoon choppedfresh tarragon, plus more for garnish

• ¼ teaspoon crushed red pepper, plus more for garnish

• 2 cups chicken broth

• 1 lemon, sliced into 1/8-inch thick slices

• 1 teaspoon chopped fresh flat-leaf parsley

DIRECTIONS

1. Gather all ingredients.

2. Preheat the oven to 375 degrees F (190 degrees C). Season chicken thighs evenly with salt and pepper on both sides.

3. Heat oil in a large oven-safe skillet over medium-high. Add chicken thighs to skillet, skin sides down, and cook until golden brown on both sides, about 8 minutes. Transfer chicken thighs to a plate; set

aside. Do not wipe skillet clean.

4. Add garlic to drippings in the skillet.

Cook, stirring constantly, until fragrant, 10 to 20 seconds. Add rice, cream of chicken soup, lemon juice, lemon zest, tarragon, and crushed red pepper; whisk to combine. Gradually add broth, whisking constantly, until combined and smooth. Arrange chicken thighs, skin sides up, over rice mixture and place lemon slices over chicken thighs. Cover tightly with aluminum foil or lid, and transfer to the preheated oven.

5. Bake in the preheated oven until rice is cooked through and a thermometer inserted into thickest portion of chicken registers 165 degrees F (73 degrees C), about 30 minutes.

6. Remove from the oven. Stir rice mixture, and sprinkle with parsley. Divide chicken, lemon slices, and rice evenly among 4 plates. Garnish with additional tarragon and crushed red pepper.

Rustic Chicken and Dumplin’s

Rachel Parton George makes this rustic chicken dish for her sister, Dolly Parton, every year on her birthday.

I call this rustic because I leave the bones in, which is authentic. But that means you must be careful and make sure not to swallow any! There are so many ways to make this dish, and since our brothers and sisters cook as well our family has several versions. I often ask the meat department or butcher to hand cut a whole chicken into pieces for me (the backbone and wings can be used later to make stock). This is one of Dolly’s favorite dishes, so I usually make it for her birthday in January.

INGREDIENTS

Original recipe (1X) yields 8 servings

• 1 whole chicken, cut into pieces (drumsticks, thighs, and halved breasts)

• 1 teaspoon Morton Nature’s Seasons seasoning blend

• 3 tablespoons butter

• 1 (32 ounce) carton low-sodium chicken broth

• 2 cups water

• 1/2 onion, minced

• 1 teaspoon poultry seasoning

• 1 teaspoon minced garlic

• 1 1/2 teaspoons sal

• 1 teaspoon black pepper

• 3 medium carrots, cut into 1-inch pieces (1 1/2 cups)

• 3 medium stalks celery, cut into 1-inch pieces (1 1/2 cups)

• 1 1/4 cups flour, plus more for dusting

• 1 teaspoon baking powder

• 1 egg

• 1/2 cup whole buttermilk, well shaken

• 1/2 cup butter, chilled and cut into thin slices

• Chopped fresh parsley, for garnish

DIRECTIONS

1. Season chicken pieces all over with the Morton’s seasoning blend.

2. Melt 3 tablespoons butter in a large Dutch oven over medium-high heat. Add chicken pieces, skin sides down, and cook until golden brown, 6 to 8 minutes. Turn chicken pieces and brown again, 6 to 8 minutes more.

3. Add broth and water; bring to a boil over high heat. Add onion, poultry seasoning, garlic, 1 teaspoon salt, and pepper. Reduce heat and simmer, covered, 20 minutes. Add carrots and celery. Leaving

pot partially covered, continue simmering over low heat until vegetables are almost tender, about 20 minutes.

4. Meanwhile, sift flour, baking powder, and remaining 1/2 teaspoon salt together in a large bowl. In a separate medium bowl, whisk together egg and buttermilk.

5. Cut chilled butter into dry mixture using a pastry cutter or two forks. Blend well to a crumbly consistency. Add buttermilk mixture and gently stir with a wooden spoon until combined. Cover with plastic wrap and refrigerate 30 minutes.

6. Turn out dough onto a floured surface. Using your hands, pat dough to approximately 1-inch thickness and gently fold outer edges into center. Continue to gently fold—do not knead—until it comes together. Pat dough out again to approximately 1-inch thickness.

7. Remove cooked chicken from Dutch oven (an instant-read thermometer inserted into thickest part of chicken should register 170 degrees F /76 degrees C) and put it on a plate. Cover with foil to keep warm. Skim fat from broth. Bring broth to a gentle boil over medium-high heat.

8. Using a knife, cut dough into 9 (2x2-inch) squares. Gently drop each square, one at a time, into boiling broth. Lower heat to medium and simmer, uncovered, until all dumplings rise to top and a toothpick inserted in center comes out clean, about 10 minutes. Return chicken to pot and simmer an additional 5 minutes.
