INGREDIENTS :
1 prime rib or standing rib roast about 8lbs/3 bones
1 packet of Lipton Beefy Onion Soup Mixput though a mesh strainer to removed the dried onion pieces
Pink Himalayan salt, about 1.5-2TBSP
Cracked black pepper, to taste
Thermometer
PrimeRibRoast
| Place rib roast on a roasting rack/pan with the bones facing down. Mix beefy onion soup mix, pink Himalayan salt, and cracked black pepper together. Season all sides with the dry mix. Be generous with the seasoning, it’s a massive amount of beef! *(You can season your rib roast up to 24 hours before cooking. Make sure to wrap it tightly in plastic wrap and refrigerate.)
2 | Bring the roast to room temperature before placing in oven, about 3 hours. Insert oven safe thermometer or remote temperature gauge into the middle of the roast, but not touching the bone.
3 | Preheat oven to 500º degrees. Multiply the number of pounds by 5. For example, for an 8lbs rib roast you are looking at roasting your meat at 500º degrees for 40 minutes (8 x 5 = 40). Once the oven is ready, place the rib roast in the oven for the calculated time and roast at 500º, then turn off your oven and DO NOT OPEN IT FOR 2 HOURS!!!! I REPEAT, DO NOT OPEN THE DOOR WITH THIS METHOD. :) After 2 hours, check the internal temperature. Beef is it’s most juicy and flavorful between 130-135º, which is medium rare/medium.

One of my favorite holiday traditions growing up was making Prime Rib with my mom! I love it because it is impressive, delicious, and stress free. I use the “500º method” or “closed oven method” when making prime rib. This method works best for 5-8lbs rib roasts.
