Gingerbread cutout cookies
ByEricaJones
Perfectly spiced and sweet, gingerbread cookies are the quintessential Christmas treat. I make these cutout cookies every year in a variety of shapes, and they’re always one of the first flavors to disappear off of the cookie tray.
Ingredients:
• 3 and 1/2 cups all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1 tablespoon ground ginger
• 1 tablespoon ground cinnamon
• 1/2 teaspoon ground allspice
• 1/2 teaspoon ground cloves
• 2/3 cup butter, softened
• 3/4 cup packed brown sugar
• 2/3 cup molasses
• 1 egg
• 1 teaspoon vanilla extract
For royal icing:
• 4 cups powdered sugar
• 3 tablespoons meringue powder
• 5 tablespoons warm water
Directions:
1. In the bowl of a stand mixer, beat the butter, brown sugar and molasses together until combined and creamy. Add eggs and vanilla and beat on high speed, scraping down the sides and the bottom of

the bowl as needed.
2. Add the flour, baking soda, salt, ginger, cinnamon, allspice and cloves and beat on low speed until combined.
3. Divide dough in half and wrap each half in plastic wrap. Chill for at least 3 hours.
4. Preheat oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
5. Remove chilled dough from the refrigerator and unwrap. On a generously floured work surface, roll out dough to 1/4 inch thick. Cut into shapes and place one inch apart on prepared baking sheets. Re-roll out dough scraps until all dough is shaped.
6. Bake cookies for 9 to 10 minutes. Depending on the size of your cookie cutters, smaller cookies will need less time and larger ones will need a little longer.
7. Allow cookies to cool completely before decorating.
For royal icing:
1. Beat all three icing ingredients together until icing forms peaks.
2. Divide icing into bowls and color as desired.
3. Transfer into piping bags and decorate cooled cookies as desired.
