Father’s Day + Summer = GOURMET BURGERS THAT YOU WILL SURELY BE ADDING TO YOUR GO-TO DINNER ROTATION
CHEDDAR-STUFFED BURGERS WITH PICKLED SLAW AND FRIED SHALLOTS INGREDIENTS • Kosher salt • 8 cups finely shredded green cabbage (from a 1 1/2-pound head) • 1 cup distilled white vinegar • 1 tablespoon sugar • 2 tablespoons yellow mustard seeds • Vegetable oil, for frying • 5 large shallots, very thinly sliced crosswise and separated into rings • 1/4 cup Wondra flour (see Note) • 1 1/2 pounds ground beef chuck, preferably 85 percent lean • 1 teaspoon onion powder • 1 teaspoon garlic powder • 1 teaspoon sweet smoked paprika • 1 tablespoon Worcestershire sauce • Freshly ground pepper • 6 ounces extra-sharp cheddar, shredded • 2 cups baby arugula • 4 brioche buns, split and toasted MAKE AHEAD The pickled cabbage can be refrigerated in its brine and the fried shallots can be stored at room temperature in an airtight container for up to 4 days. DIRECTIONS • Step 1: In a large bowl, toss 1 tablespoon of kosher salt with the cabbage and massage it until it softens and releases its liquid, about 4 minutes. Drain the cabbage in a colander and rinse it. • Step 2: Wipe out the bowl. Add the vinegar, sugar, mustard seeds, 1 cup of water and 1 tablespoon of salt. Add the cabbage to the vinegar mixture, toss to coat and place a plate on top to keep it submerged. Let stand at room temperature for 2 hours. • Step 3: Meanwhile, in a large saucepan, heat 1 1/2 inches of vegetable oil to 325°. In a medium bowl, toss the shallots with the Wondra flour. Fry the shallots all at once, stirring gently, until golden, about 7 minutes. Using a slotted spoon, transfer the shallots to a paper towel–lined plate to drain. Season the shallots with salt. Reserve the cooking oil. • Step 4: In a medium bowl, combine the ground beef

with the onion powder, garlic powder, smoked paprika, Worcestershire sauce and 2 teaspoons each of kosher salt and ground pepper. Knead gently until thoroughly mixed. Form the beef into eight 4-inch patties. Press the shredded cheese into four 2 1/2-inch disks. Sandwich the cheese disks between the patties. Pinch the edges together to seal. • Step 5: Heat a grill pan or griddle. Brush the burgers with some of the shallot cooking oil and cook over moderate heat until browned on the bottom, about 3 minutes. Flip the burgers, invert a large heatproof bowl over them and cook until medium within and the cheese is melted, about 3 minutes longer. • Step 6: Mound the arugula on the bun bottoms and top with the burgers. Drain the pickled cabbage and mound some of it on the burgers; reserve the rest of the pickled cabbage for another use. Top with the fried shallots and the bun tops and serve.
ASIAN-STYLE PORK BURGERS INGREDIENTS • 1 1/2 pounds ground pork • 2 scallions, thinly sliced • 1 tablespoon finely grated fresh ginger • 1 large garlic clove, minced • 1 1/2 teaspoons Asian sesame oil • Kosher salt and freshly ground pepper • 4 hamburger buns, split • 2 cups coleslaw mix • 2 teaspoons rice vinegar • 1 teaspoon soy sauce DIRECTIONS • Step 1: Light a grill or preheat a grill pan. In a large bowl, mix the pork with the scallions, ginger, garlic, 1 teaspoon of the sesame oil, 2 teaspoons of kosher salt and 1/2 teaspoon pepper. Form the meat into four 3/4-inch thick patties. • Step 2: Grill the burgers, turning once, until cooked through, about 8 minutes. Lightly toast the buns on the grill. • Step 3: Meanwhile, in a medium bowl, toss the coleslaw mix with the rice vinegar, soy sauce and the remaining 1/2 teaspoon of sesame oil. Season with salt and pepper. Set the burgers on the buns, top with the slaw and serve. Serve With Sriracha and mayonnaise.

PROPERTY MANAGEMENT UPDATE The Pools Are Open! • The Millview and Lakeview Pools are open for the season! The pools are open daily from 10 am - 9 pm. • Residents in good standing with their HOA dues can visit the pool anytime they want NO RESERVATIONS! Please always bring your amenities card with you to enter the pool. • If you need an amenities card, please call the office to make an appointment. • Each household can bring up to 6 guests with them to the pool. • Please practice CDC recommendations and guidelines while at the pool. • You can view all of the pool rules on hmill. com in the Document Center. Information on opening our other facilities: • The gym will open at full capacity on July 1st. You will not have to make reservations and it will be open from 5 am - 10 pm. Again, please practice the CDC guidelines for social distancing while in the gym. • The Lakeview clubhouse will be open for event rentals starting July 1st. PROPERTY MANAGEMENT Dear Residents, We have a few reminders for you as the weather gets nicer and everyone ventures outside to enjoy summer! GOLF CARTS When driving your golf cart throughout the community, please do so with caution. Your safety is our number one priority. Here are some tips to keep in mind for safe driving! 1. Always drive responsibly; arms and legs should always remain in the vehicle and seat belts should always be fastened. 2. Only carry passengers that you have seats for. Do not try to squeeze in extra passengers. 3. Never drive recklessly or joy ride. Be courteous to other drivers and obey vehicle traffic laws and the rules of the road. 4. Avoid distractions while operating your golf cart. Remain attentive and avoid talking, texting, or reading while driving, reaching for objects, applying makeup or eating. 5. Never allow anyone to stand in the vehicle or on the platform located in the back of the vehicle and never put the vehicle in motion until all passengers are safely inside the vehicle and buckled in. 6. Avoid excessive speeds, sudden starts, and stops, and avoid sharp turns at fast speeds. 7. Always yield to pedestrians.
Bike Safety There are so many great reasons to ride your bike: It offers fun, freedom and exercise, and it’s good for the environment. We want kids and families to ride their bikes as much as possible. Here are a few tips so that you’ll be safe while you do so. 1. Wear a properly-fitted helmet. It is the best way to prevent head injuries and death. Properly-fitted helmets can reduce the risk of head injuries by at least 45 percent – yet less than half of children 14 and under usually wear a bike helmet. Under Georgia law, bicycle riders 16 years of age or older are not required to wear a helmet. Any bicycle rider under 16 years of age must wear a helmet. 2. It is typically safer to ride in the street or bike lane than on the sidewalk. Further, riding on sidewalks is prohibited, statewide, for anyone over the age of 12 unless permitted by specific local ordinance to operate a bicycle on the sidewalk. 3. Use hand signals and follow the rules of the road. Ride in a straight line and don’t swerve between cars. 4. Wear bright colors and use lights, especially when riding at night and in the morning. Reflectors on your clothes and bike will help you be seen. 5. Ride with your children. Stick together until you are comfortable that your kids are ready to ride on their own.

Junior Spotlight Congratulations to Ainsley Trenbeath, Hamilton Mill player of the month. It has been a pleasure to work with Ainsley. She has a great attitude on the court and always comes ready to learn. She works hard and follows instructions very well. Ainsley has been putting in the work doing our level 3 junior clinics and privates. She has made very good consistent progress and has recently been promoted to the level 3 performance group. On Friday, April 30, we had our first ever Food Truck Friday! About 250 Hamilton Mill residents came out and listened (and danced!) to the steel drum band, Latitude Adjustment, ate off the Azucar Cuban and Tikiz trucks, and enjoyed the amazing weather we had. Some folks even came dressed up for the theme! We had the prettiest sunset to wind down the event. What a fun night with our residents! Thank you to the social committee for all of your hard work on organizing this event and helping us feel like we are getting back to pre-COVID days!

The three-day Show – the largest-ever North Atlanta Home – at 6400 Sugarloaf Parkway in Duluth will include home improvement experts, buyer discounts and product demonstrations, and is presented by Marketplace Events, North America’s largest producer of consumer home shows. Friday, June 4 is both “Trade Day” and “Hero Day”. On Friday only, anyone who works in the home industry will receive free admission to the show, simply by showing his or her business card at the show’s main entrance.
