elcome to the sixth issue of The Voice’s African and Caribbean Food Restaurant Guide. This 2021/2022 edition is digital! This publication was first produced in January 2016 in a widely distributed printed format but we are now embracing the growing demand for digital platforms to reach a larger audience. For ease and convenience, you can link directly to the advertisers’ websites to view their cuisine and special offers. This 84-page publication is your essential guide to learn more about African and Caribbean cuisine throughout the United Kingdom and importantly to know where to find what you’re looking for. This food sector continues to experience steady growth and increasing popularity which has been showcased on numerous TV food shows. Veganism and vegetarianism are also on the rise, and African and Caribbean chefs continue to create amazing dishes as part of this trend. During the recent lockdown home cooking became popular as many people had the time to experiment or perfect their culinary skills. Cooking programmes are proof of how sought-after African and Caribbean dishes have become and recipes are widely shared on social media platforms. Unfortunately, due to the pandemic many restaurants and take-aways could no longer operate, however many more food businesses and delivery services pivoted and are now providing products and services online thus widening their customer base. In this guide, we take you behind the scenes of some of our well-loved African and Caribbean cuisine; we profile some leading chefs; and we provide an updated listing of African and Caribbean food businesses and restaurants. The Voice is Britain’s only black national newspaper, and we strive to continually support our community as we prepare to celebrate 40 years publishing in 2022. Enjoy reading!

Fine food proves a powerful medicine for London The first post-pandemic Speciality & Fine Food Fair underlined the strength and depth and the rich diversity of the culinary
T
he aim of the Speciality & Fine Food Fair, which took place over two days (September 6-7) at Olympia London, was to showcase artisan food and drink to retailers, buyers, chefs, independent business owners... and anyone looking to discover the latest trends and innovations in the world of food and drink. It is fair to say that, for the packed-out
crowd at Olympia, it was definitely ‘mission accomplished.’ Visitors enjoyed a couple of days of sampling, industry insights, and the opportunity to meet in person – after months of pandemic-enforced Zoom meetings – with passionate producers representing every corner of the world. Miss Pearl’s Chicken Pelau Ingredients: 4 lbs chicken joints (bone in) 1 lb pork, cubed (about 1”) n 5 blades of chives, chopped n 1 onion, finely chopped n 1 bay leaf n 1 sprig of thyme n 1 clove garlic, crushed n 1 tomato, chopped n Salt and black pepper n ½ tablespoon pepper sauce – some like it hot! n Mix the above ingredients in a stainless steel mixing bowl and stand in the fridge for several hours. n n
When you are ready to start cooking you will need: n 3 tablespoons brown sugar n 3 tablespoons corn oil with a few drops of sesame oil n 2 pints of chicken stock n 1 lb long grain rice n 1 oz butter n 2 oz seedless raisins n 2 oz almonds, blanched and chopped n 8 stuffed green olives, sliced

METHOD: Take a heavy cast iron pot and heat the sugar and oil until very hot but NOT burning! While you are waiting, take the seasoned chicken and pork, scrape off and reserve the seasonings. Add the chicken and pork to the hot oil and sugar and stir well with a wooden spoon until golden brown. Add the seasonings and enough stock to just cover the meat. Cover the pan and simmer gently for about half an hour. Add the rice and the rest of the stock (which should be gently simmering on the side). Stir well until all the seasonings are all well-mixed, check seasonings, cover and simmer gently until all the liquid is absorbed. Finally add the raisins, almonds and olives and stir in the butter. This should be enough for about 8 (unless they are Tobagonians... in which case it’s about enough for 4 people!) Chiffon Pie Ingredients:
METHOD:
1½ cups cooked and mashed pumpkin ¾ cups milk n 3 egg yolks n 3 egg whites n ½ cup brown sugar n 1 teaspoon unflavoured gelatine n ½ cup caster sugar n ½ teaspoon ground cinnamon n ½ teaspoon ground nutmeg n ½ teaspoon ginger (ground) n Salt to taste n 9” baked pie shell
Mix gelatine, brown sugar, mixed spices and salt together in a double boiler. Beat egg yolks and milk and add to the mixture in the double boiler (do not allow to boil). Add the mashed pumpkin and cook stirring constantly until the mixture thickens. Remove mixture from heat and allow to cool. Beat egg whites, and caster sugar, and continue beating until stiff and standing in peaks. Fold into the pumpkin mixture. Turn mixture into a 9” baked pie shell and chill until firm. Serve with cream if desired.

River Cuisines... and Vitamin B pills. After deciding to not sit down and be defeated, River started seeing the light at the end of the tunnel and, with a bit of willpower, and words of encouragement from

iver Havilah, a determined and dedicated entrepreneur, started her very own Caribbean home takeaway business called, ‘River Cuisines’ in the borough of Croydon. The idea came about two months after losing her job in the pandemic, and like most people, River had to find another way to earn an income. What better way to achieve such a feat than doing something you love! Prior to starting the business, River was laid off her job as a teacher and struggling with mental health such as lack of sleep and barely eating, as well as experiencing a rollercoaster of emotions; where one moment she would feel upset to the next moment she would be fine. After consulting her doctor, she was diagnosed with anxiety and prescribed sleeping tablets
loved ones, River Cuisines was born. Cooking has always been therapeutic for River and it doesn’t matter how she feels, she will always find herself in the kitchen! River Cuisines is an authentic Caribbean home takeaway service providing delicious fresh Caribbean dishes that caters to many people, some of whom are celebrities. River prides herself in food made with love, cooked right from the soul

Cracking a nut: Book review
T
he stereotype of poor customer service within African Caribbean cook shop businesses is an aged old stereotype since the 1990s when BBC comedy,‘the Real McCoy’, aired the sketch Misery Café in which the customer tries to buy ackee ‘n’ saltfish with two dumplings and is scolded for his audacity to expect what is standard customer service. Cracking A Nut: Customer Service in the African Caribbean Business, written by Yvonne Witter, lifts the lid on the underlying issues and introduces the idea that ‘service vs servitude’ may be at the heart of the matter. In support of community wealth building, she exposes serious issues and uncovers the butt of jokes and ridicule. Yvonne believes that customers are important to any business and losing income affects wealth building across the community. In the book, written using the storytelling format, she demystifies business processes in an entertaining and informative manner. Aimed at the budding entrepreneur or those already in business, the book provides valuable technical business

Award-winning purveyors of fine Jamaican fayre, Marshall & Brown, offered visitors a 'Taste of the Caribbean', alongside other brands such as OTC Beverages, Jamaica on Ice and the official Marley Coffee. Products on display including Rum cakes in a variety of flavours, Organic and naturally flavour drinks, frozen Jamaican frozen dishes, rich, creamy truffles spiced with deluxe Jamaican rum, all-natural Jerk sauces and seasonings, tantalising chutneys and Blue Mountain Coffee. Marshall & Brown founder, Dr Carlton Brown and coordinator of The Taste of the Caribbean told The Voice: “It seemed as if the whole food and drink industry was cheering. The biggest challenge for so many food and drink brands now lie behind us. Mealtime with a difference...
Two food loving companies get together to create a divine dine-at-home mealtime experience.
C
umbrian cake maker extraordinaire Lisa Smith, owner of Ginger Bakers, and Sippie Mungaraza, CEO and Co-Founder of Mealtime, the UK’s first African & Caribbean together inspired a frozen meal and meal kit delivery service. During the pandemic, Sippie spotted a gap in the market catering for customers up and down the country who were hankering after a healthy, tasty and convenient offering, inspired by African and Caribbean cuisines. Quickly realising she was onto something, Sippie set about creating a range of classic dishes that could be delivered directly to the home as either frozen or freshly pre-prepared meals with a whole range of starters, main courses, desserts, drinks and snacks. Delicious meal options include their signature dish, grilled salmon in red pepper sauce, African sweet potato cream bake
served with Mediterranean vegetables, curry goat, rice and peas with sautéed green beans, Zanzibar fish curry with rice and roasted vegetables, boerewors sishebo with chakalaka and seasonal vegetables, and vegan Jollof rice with sweet beans in pepper sauce and roasted vegetables. Sippie, was also keen to use the very best ingredients available to her, which involved many months of visiting British farms and producers and carefully selecting ingredients to provide a wide range of flavours, textures and colours, so that Mealtime customers could enjoy authentic dishes without having to compromise. And, more importantly, without having to experience dishes brim full of additives or preservatives. Keen to collaborate with like-minded companies, Sippie set about finding producers to meet specific menu needs and Mealtime values, which is how she came

From home-cooking to catering t
I
Chef David Asante on bringing the food of his ancestors to the mainstream
T WAS the rich flavours and continental spices of traditional African food that David Asante's remembers as shaping his early childhood and his love of cooking. Growing up in south London, he was surrounded by four sisters and his mom, who all gathered in the family kitchen and cooked together. However, it was seeing his dad - a proud Nigerian and family man - in the kitchen that stayed with him. "I must have been seven or eight at the time, and my dad used to cook Sunday breakfast," recalls David. "We all know that mom cooks in the house, she's the matriarch, she does all the food. But, when dad used to cook...wow, it was incredible. I was the only boy around all my sisters, so when I saw my dad cooking I thought it was amazing, so I said I want to do that too. I was a daddy's boy as well. "I just took a shine to it, I would always comeback to it and I thought I like this; this is something I can do." At 23, David decided to make the first step into

“The gusto and the energy behind that movement was incredible" being taken seriously as a budding chef: he cooked for his family and friends. He organised a barbecue and invited his lovedones to try out his food, giving them the option to rate his food from one to five in a questionnaire.
"One was meant to to be rubbish and five was exceptional," says David. "It was great feedback. There were a lot of fours and fives so I asked myself 'where can I go with this?'" A young David tried his hand at local and private events, but it was through a friend who owned a couple of restaurants that gave him his first professional break. David began as sous chef in a Hampstead, London in 2009 before moving to his next opportunity a year later in Islington. He worked his way from sous chef to chef de partie to executive chef. Despite his early success, David doesn't forget the "roundabouts and

swings" and the "stuff that just didn't work" on his path. But a midst that, he was behind the launch of catering company in 2008 but it wouldn't be until another four years later that he decided to work himself. King's Kitchen found a home in corporate London, bringing African, Caribbean and modern European flavours to a diverse and bustling city, while catering to some of the
country's - and even the world's - biggest corporation giants. "We did everything from Tesco, Uber to Lloyds and Apple. We had a good stretch," says David. David's company, along with thousands of others, succumbed to the Covid-19 pandemic last year. With the catering industry "still struggling and at a standstill," the chef turned his talents elsewhere. He returned to his brief
stints in private cheffing during his days as business-owner, and saw himself catering to some of the biggest names in UK entertainment. "One of them was Idris Elba," he recalls. "He then went on to ask me to cater at his wedding in Morocco in 2019. That was the highlight of my career.

With a name derived from a Nigerian slang term ‘Chop’ for ‘eat your food’ and ‘Yum’ slang for Yummy. YumChop’s ambition is to create authentic African meals that are free from any added preservatives, colouring or flavourings responsibly sourced fresh ingredients, natural spices and herbs. Borne out of an archive of traditional foods and recipes, the business fuses African meals and flavours with meals from other cultures, offering a number of products based around our flagship Jerk Chicken. The meals are flash-frozen to retain taste, texture, and quality and provide a hassle-free experience for customers, removing meal preparation and cooking as they defrost in minutes.
We supply these automatic vending kiosks to Universities, including Canterbury Christ Church University in Kent, Imperial College University through TUCO (The University Catering Organisation), and NHS Hospitals (including Kettering General Hospital) through an NHS Food Framework agreement with NHS Supply chain. The kiosks have the capacity for remote management of stock, giving real-time access to data intelligence to support the re-stocking of products. I'm doing a lot of things with people of high profile, but for me what is more important is doing things with people from the diaspora." David believes the foods black people have grown up on is misrepresented in the mainstream, and among the community with myths that African Caribbean food is heavy and if you eat it you want to go to sleep afterwards. He believes these dishes can "sit at the table" alongside the likes of Italian, French and Asian cuisine. Post the surge of the Black Lives Matter movement, he believes there couldn't be a better time to do so. "The gusto and the energy behind that movement
was incredible. The younger generation is now behind us they have a voice that is unapologetic," says David. "We have a history behind us, and it's a heavy one, but by default, by design, we are a vibe. It's time for people to see who we are; we are opulent.

those years ago. It was his dad who gave him the nickname King before he passed, and his mom - someone he describes as his biggest supporter - who reminded him how proud she would be to see him now. He still goes to his mom for help when cooking some of his African dishes; almost returning to the homecooking of his childhood that he calls his "lexicon." "The continent of Africa has influenced so many cuisines - French, Asian, Italian, Latin American, Caribbean - you see African food throughout all of this. "I'm not apologising for my culture - I want to bring the Egusi, the pounded yam and the Jollof. The food from my heritage it's soul, it's life, there's a sense of nostalgia there for me. It's on our DNA as people, now if the time to celebrate all the great things that we are and it's about time - it's about bloody time." n

How do you change careers
I
in the middle of a pandemic?
t has been a dream for the Michael family to be a part of the Caribbean food culture, importing authentic food and drink from the Caribbean particularly Jamaica. As the global pandemic took hold they decided to turn the 10 years dream into reality so they went for it. Michael Caribbean Imports officially started in October 2020 and imports food and drink from the Caribbean for wholesale distribution in the UK. Under the leadership of Nicole Bowen, she is helping the company to make their mark in a business dominated by large multi-national companies. The family members both in Jamaica and the UK work together to drive the business forward; with the family in Jamaica playing an integral role for the success of the business to date. The family run factory in Jamaica processes cassava to make bammies which are shipped to the UK. To date this is the only Jamaican bammy approved (carrying the vegan mark) by the Vegan Society. In addition to bammy, Michael Caribbean Imports also have their own line of products in ackee, Mango Jerk Sauce and callaloo under the brand MICKLE’S; unlike many other brands this callaloo has no sticks hence it has been a big hit on the

market, especially with the restaurant trade. Additional products will be added to the existing line: Fruit Punch, Hot and Spicy Jerk Seasoning, Spicy Pimento Sauce, Spicy Crushed Pepper Sauce, Hot Pepper Sauce, Spiced Vanilla combined with cinnamon and Carrot Juice. Their intention is to continue extending the product line to ensure great variety. From their base in South East London they distribute all over London with sights set on the Midlands and Manchester. Nicole recommends that we need to hold on to our dreams and bring them to fruition. During a holiday visit from one of the Michael sisters to the UK in 2011, the discussion was held and it was quickly discovered that members of the family shared the same dream of wanting to change their careers to feeding the nation. It was 8 years later when Nicole decided it was time to put an end to her long standing career in education to lead her family on this exciting and challenging journey; she was pushed to do this, Nicole explained. When she was told in a dream ‘you were born to do it’, she told her sister who advised that it was time to make the long awaited family desire a reality. The sister simply said ‘follow your dream so that we can live our dreams’. n

irly-Sue is of Jamaican heritage and was born in the UK but lived in Jamaica from age 5 to 10 yrs. Living in Jamaica influenced her culinary choices from an early age. Kirly-Sue said: “In the 1970’s and 1980’s, my great aunt owned a restaurant in Jamaica, on the corner of Law Street and Rum Lane in Kingston, and she made some amazingly tasty dishes that was loved by her customers. I think my love of cooking comes from her”. Kirly-Sue’s expertise has afforded her the opportunity to work with companies in the UK & the USA. This includes being an international keynote speaker in the USA, Singapore, Dubai, Norway, and a TV presenter on a vegan cooking show in the USA for four seasons. Jamaican patties recipe (Vegetarian or non-vegetarian)
INGREDIENTS FOR FILLING: 5 pints cooked filling for the patties (popular fillings: ackee and salt fish; mixed peas and vegetables; chicken, callaloo and salt fish or beef) n 1 ounce margarine n 2 chopped onion n 1 scotch bonnet pepper n 2 teaspoons cooking oil n 1 clove garlic n 1 tablespoon black pepper n Salt to desired taste n 2 slices bread n 1 cup water METHOD: Add patty filling, bread, margarine and seasoning into a pan. Mix chopped onion, pepper and garlic in oil. Soften bread with a little water and mash into soft pulp. Cook for 20 minutes and cool for use as fill for patty pastry. INGREDIENTS FOR PASTRY: 11 ozs suet - lard or shortening 4 cups flour 1 level teaspoon salt 2/3 cup water
METHOD: Trim fatty surface and skin from suet and freeze overnight. Next day - use a sharp knife to shave suet very finely. Combine salt and flour, then work in suet as you would shortening in plain pastry, cutting it in with one or two knives. Add cold water in sufficient amount to have a dough which can be rolled out. Form the dough into a ball using a rolling pin, pat gently, turning the dough over once or twice in order to have it all properly held together. Wrap the dough in grease-proof paper and leave overnight in the freezer. Next day, defrost the dough, pull off enough dough to roll into a circle (the size of a saucer.) Dip dough in flour before rolling. Roll quite thin and cut in a circle. (use a saucer for accuracy) In the centre of each circle place a spoonful of filling, fold dough over to form a crescent shape seal edges with egg white or by crimping the edge and folding dough slightly under. Do not prick the pastry. Bake on non greased baking tray in hot oven for about 30 mins. This recipe will make about 36 patties. Use a smaller cutter for cocktail patties.

mall and medium-sized businesses, including those owned by people of ethnically diverse backgrounds, are the backbone of the economy. According to the government-appointed Commission on Race and Ethnic Disparities, there are over 250,000 minority-owned businesses in the UK that contribute £25 billion to the economy annually. Many of these businesses were disproportionately impacted by the Covid-19 pandemic.

Well it's quite simple really, the cakes Lisa creates contain a wide variety of ingredients including fruits and spices such as figs, lemons, pistachios from North Africa, and ginger from Jamaica - something of a natural fit. In addition, Lisa’s cake recipes have more links than you think. One particular classic is Lisa’s Westmorland Pepper Cake, an age-old recipe linked to the old county of the same name, which also happens to be the name for a district in Jamaica, where many of

River Cuisines Peppered Prawns
Serves 4 Preparation time: 30 mins Cooking time: 30 mins n n n n n n n n n n
2 Scotch bonnet chilli peppers 1 pound large shell-on prawns, preferably head-on, rinsed Half of 1 medium yellow onion, finely diced 4 sprigs fresh thyme 3 medium garlic cloves, minced 1 tablespoon of vegetable oil 1 1/2 teaspoons salt 1/2 teaspoon garlic powder 1/2 teaspoon onion powder 1/2 cups water
DIRECTIONS 1. Wearing latex gloves, prepare Scotch bonnet peppers. For very spicy heat, stem and chop or slice peppers, keeping seeds and white pith; for medium heat, stem and seed peppers, then chop or slice; for mild heat, leave peppers whole, including stems. 2. In a medium bowl, add shrimp with Scotchbonnets, onion, thyme, garlic, salt, garlic

powder, and onion powder. Stir to combine well. Cover with plastic and refrigerate at least 30 minutes and up to overnight. 3. Using a gloved hand, scrape aromatic vegetables and herbs off shrimp and set shrimp aside in a clean bowl. Add water to vegetable marinade, then pour mixture into a stainless-steel skillet large enough to hold shrimp in a single layer. 4. Bring to a simmer over medium heat then cover and cook at a simmer for 15 minutes. 5. Add shrimp to the skillet in a single layer. Cover and cook for 2 minutes. 6. Turn off heat, uncover, and stir until shrimp are just cooked through and no longer translucent, about 2 minutes longer. Season with additional salt, if desired. 7. Transfer shrimp to a serving plate and let cool slightly. Serve shrimp warm or at room temperature.

Tasty ackee & saltfish
A special personal ackee & saltfish recipe From the editor of theorator.press magazine
T
he national fruit of Jamaica is ackee. Whilst it is a fruit, grown on a tree, it is served as a savoury, traditionally with saltfish. Just like it's good people it needs to be treated tenderly, lovingly & carefully, otherwise it can be perilous. Handled well, it is simply delicious and largely irresistible; a Caribbean all day dish perfect for breakfast, lunch, brunch or dinner. Ackee & Saltfish is a wonderfully versatile delight and fabulous as an everyday staple or special treat on any celebration table.
PREPARING THE SALT FISH
PREPARING THE ACKEE
1. Soak 2-3 packets of saltfish overnight to remove the excess salt. Discard the water and replace with fresh water and bring the fish to the boil. One to three times should be sufficient (taste to test after each boil - and stop according to your taste buds and how salty or non-salty you like it). 2. Allow to cool. When cool, with your hands gently remove any skin and bones from the fish. Boneless skinless versions of salt fish are now available. 3. Place in a bowl. Drizzle with olive oil. Season to taste. Gently mix it together. Set aside.
1. Open a tin of ackee (such as Dee's ackee for instance) 2. Drain well. Pour boiling water over the drained ackee. (Twice.) *This process is essential otherwise this fruit can be deadly! 3. Once drained and rinsed off with hot boiling water, shake thoroughly & pat off any excess water with kitchen towel. 4. Bring the saltfish, vegetables and ackee together 5. Retrieve the saltfish 6. Place the vegetables on top of the saltfish 7. Place the ackee on top of the vegetables 8. Gently mix together. 9. Place on a low heat in a frying pan with 1-2 tablespoons of olive oil. 10. Cook gently till soft and tender on a low heat check every 20 mins.
Preparing the onion, tomatoes, scotch bonnet & peppers 1. Separately slice & blanche 3 tomatoes, 2 onions, 1 scotch bonnet & 1 green pepper, in hot water. 2. Drain. Then sweat down in some olive oil until soft and tender. 3. Season to taste. 4. Gently mix it together. Set aside.
Delicious with butter beans and spinach or calaloo.

Nomalanga Nyamayaro
'My cooking is still African inspired'
D
URING Nomalanga Nyamayaro's rise to culinary heights in 2016, when she reached the quarter finals of Britain’s most famous cooking shows, her appearance on BBC’s Master Chef was the first step to pursuing what she first fell in love with as a little girl in Zimbabwe. “I come from a family of great cooks,” she says. “Right up to my mother's side of the family, right from my grandmother, who is the hardest person to please when it comes to cooking. “She taught all of us. She taught my mother and my mother taught me and also learnt from her as well. “As a young girl, especially from our culture, you get trained to be a woman from about the age of nine. That’s what I was told so I spent a lot of time in the kitchen.” By the age of 21, Nomalanga could cook for her entire family. She loved being able “to take something raw, and make art and magic with.” In Zimbabwean culture, she was all too aware of the pressures to academically achieve, something

she admits was never a penchant for her growing up. After arriving in the UK in 2004, she saw the vast cuisine that a multicultural society had to offer, but still couldn’t tell her mother - a nurse who she calls logical and practical - about her desire to be a chef and so
“BBC’s Master Chef was the first step to pursuing what she first fell " instead began a degree in Food and Nutrition in 2009. Nomalanga, however, still questioned the first love she found in food and whether to return to it. After realising that culinary school was too expensive to enrol in, it was her aunty who saw her passion and told her to apply to Master Chef instead. “I wanted to win. I really
had my eye on the trophy,” says Nomalanga about her time on the popular show. “But only got as far as the quarter finals. “I knew there was more I could evolve and grow through though, and that is the journey I’ve been on since the show.” Nomalanga now teaches people how to have healthy relationships with food, and develops products to use in her cooking masterclasses. “My cooking is still African inspired, it’s the flavours, the colours, it’s the vibrancy,” says the University of Westminster graduate.“It’s still a huge part of what I do. You can always feel the African spirit living there.” n
