Today with Jay: Ending the War in the Pacific: WWII By JAY BERGER During these past two weeks, TV and radio, newspapers and magazines covered the D-Day invasion at Normandy quite extensively. In addition to the landing and tremendous casualties, and the loss of life, ships, aircraft, tanks, and all equipment, the overriding thought to me was: This is 1944. Yet in less than three years our country was able to recruit, train, and bring 3,500 miles to the shores of France, this enormous force of people and equipment to overthrow Hitler and his regime. Along with that thought, one had to look at the immense fleet of ships and aircraft. Previously, we had little or no fleet or air force to brag about. What remarkable manufacturing capability we had in order to produce all that armor, ships, airplanes, tanks, jeeps and the bases from which we trained the personnel on the ground and in the air! I may be off a day or two, but I recall D-Day as the day

I left home to be sworn in and on my way to join the Army. After all the preliminaries, I ended up at Camp Croft in Spartanburg, South Carolina. For advanced training it was on to Fort Rucker in Alabama. Then on to more specialized forces in Oregon and Washington. Our troop ship left Seattle. Its destination, we found out much later, was the Marshall Islands, and it had become the staging area for the invasion of the homeland of the Japanese Empire. As our vessel approached the Marshalls, we began to see US ships and airplanes everywhere. Looking back, it was a repeat of D-Day. There were literally hundreds and hundreds of aircraft carriers, battleships, destroyers, troop ships, landing craft, etc. In the air were fighters, bombers, gliders of the Army as well as the Navy. After disembarking from the troopship and getting somewhat settled, we began learning how to descend from a rope ladder on the troop car-

rier to a landing craft with all the equipment we would need. We practiced repeatedly, endlessly, until we got it done speedily and correctly. We heard a report of a super-powerful bomb that had been dropped on a city called Hiroshima and created a great amount of death and destruction. Each day it seemed that more ships arrived until they obscured the horizon. (Just as an aside, later on it was predicted that the US military would sustain hundreds of thousands of casualties and deaths if an invasion of Japan took place—more than was lost in the Normandy invasion.) Even as a relative youngster, it was mind-boggling to think that in a little over four-and-a-half years. We had been able to build all this hardware and train all these people (now 7,000 miles away from the US). Finally it was time to leave and get to our starting point. Our group was flown out of the Marshalls to Okinawa.

When we stepped off the plane in Okinawa, we were told that Japan had surrendered and that we would be among the first troops to fly in for the Occupation. More than likely, later on in the summer we will probably get some media coverage of the lead-up to the surrender of Japan and we will surely see the enormous build-up for the invasion. We have to be proud of what we accomplished in such a relatively short period.

Serves 1 serving Steel Cut Oatmeal with Sweet Corn, Tomato & Pancetta Ingredients 1 tablespoon olive oil 1/2 cup diced pancetta (or

bacon, prosciutto or ham) 2 cups corn (approximately 3 ears, fresh or frozen and thawed) 1 cup halved cherry tomatoes 1 tablespoon butter 2 diced whole small shallots (optional) 2 diced whole garlic cloves (optional) 1 cup Quaker Steel Cut Oats 4 cup low sodium chicken stock Freshly ground black pepper to taste Grated Pecorino or Asiago cheese Preparation In large sautĂŠ pan, heat olive oil at medium heat. Add pancetta, corn and cherry tomatoes, and cook for five minutes. Remove mixture from pan and place in bowl; set aside. In same pan, add butter, shallots and garlic, and cook for two minutes at medium heat. Add steel cut oats and stir continuously for two to

three minutes, until lightly toasted, golden and fragrant. Add chicken stock and stir to combine. Cover pan and reduce heat to low. Simmer for 20-25 minutes, stirring occasionally, until oats are al dente. Add pancetta, corn and tomato mixture to the cooked oats and stir to combine. Season with black pepper to taste and top with grated Pecorino cheese. Serves 4 servings
