Man of the house The architecture of the Emlen Physick house, Cape May’s only Victorian house museum, is known as Stick Style. This style is characterized by an emphasis on horizontal, vertical and diagonal timbers that suggest the structural framework of the house. In reality, these “timbers” were not part of the framework, but were instead decorative pieces of lumber that were applied to the exterior. Often these pieces of applied timber were painted in a contrasting color to the main body of the house. Steep, irregular roof lines and an overall boxy and angular appearance are also trademarks of the Stick Style. The fact that the Physick family chose
Architect Frank Furness 1839-1912 to build their home in the Stick Style says something about their personality. The Stick Style was seen as somewhat avant garde and eccentric. When most people were building their homes in the Italianate, Queen Anne, or Gothic Revival Styles, the Physicks instead chose the Stick Style. The Physick House was designed by Philadelphia architect Frank Furness, who is now recognized as one of the country’s greatest Victorian architects. Furness designed numerous buildings in Philadelphia and had a summer house in Cape May. It seems likely that the Physicks might have met Furness during one of his stays in Cape May. Furness’ trademark features included greatly oversized corbelled (upside down) chimneys, jerkinhead dormers, and “dog bone” porch brackets. All three of these elements appear on the Physick House. The Stick Style is characterized by wood construction with boxy projections, such as bays, wings and towers; asymetrical forms and roof lines; a grid work of raised boards, called “stick work,” overlaying the clapboarded walls; and simple decorative elements, often geometric in design 6

MAC
The 50-year journey of the Mid-Atlantic Center for the Arts & Humanities (MAC) began in 1970 when a small group of dedicated neighbors joined together to save the 1879 Emlen Physick Estate from the wrecker’s ball. Over the years, the organization’s efforts have continued, restoring and opening both the Cape May Lighthouse and the World War II Lookout Tower. Those years also included thousands of special events and tours, all of which contributed to make Cape May MAC Cape May’s leader in heritage tourism, educational outreach, historic preservation and cultural enrichment.

A hidden treasure in the heart of Cape May City Located next to Cape May City Hall, the Colonial House (c 1730), was originally a tavern and the family home of Revolutionary War Patriot Memucan Hughes. The front room features a tavern room. Other rooms open to the public in this unsung survivor from Cape Island’s very beginning depict a colonial era cooking/eating room. A fine example of vernacular architecture and colonial living back in the days.

The iceman cometh Despite this year enjoying one of the mildest winters (so far) in memory, it wasn’t always so. And it’s a good thing, too, because back in the Victorian days of Cape May, residents counted on that cold weather to deliver something we take very much for granted today: Ice. In the days before refrigeration, perishable foods were stored in iceboxes. The Physick family had iceboxes in the basement and in the refrigerator room at the back of the house and, next time you visit, you can see one of these iceboxes just off the hallway past the kitchen. I’m also sure that many of you have wondered where the ice came from and how they kept it solid throughout the year. Ice was gathered during the annual ice harvest, which usually took place in January or February, after the ice was about 18-20 inches thick. The harvest was quite an event and was much anticipated by young and old alike. John Brandow, from upstate New York, worked many years during the ice harvest. National Geographic once recorded his remembrances of the ice harvest. “The winters were long. You could count on six months of winter, usually. Coming right in the middle of the winter, ice harvesting season was anticipated with enthusiasm, really. And it was a get-together – a place where friends met and talked and lunched together. We put in nine-hour days and it was pretty much constant work. And nobody seemed to shirk it; they rather enjoyed it… the ice harvest was a week 14
or 10 days of constant involvement and camaraderie.” Although, Mr. Brandow’s experiences come from the 1930s, the anticipation and process of the ice harvest were the same as the Victorians experienced decades earlier. Most of the ice harvested in the Northeast came from upstate New York, and the New England States. The ice was commercially harvested from ponds and rivers, stored in icehouses,
and shipped via railroad to urban areas. The first step of the process was cutting the thick ice into cakes with the help of a saw plow harnessed to a horse. Of course, the ice had to be thick enough to hold the weight of a horse, the saw, and a team of men. Later, the horse was replaced by the automobile. Once deep grooves were cut into the ice by the saw plow, men with large coarsetoothed cross-cut saws would cut the rest of the way through the ice and set it free in large cakes. Each cake measured about 12 by 18 by 18 inches, and weighed about 150 pounds. The cut cakes of ice were floated across the water to a conveyor belt, which moved them up to the top of the icehouse to a chute. Gravity propelled the large cakes down the chute and into the icehouse. Men stationed
at the base of the chute would harpoon the ice with a long pike and swing it into position in the icehouse. The icehouse would fill up in seven or eight days of steady work. Thick layers of sawdust were packed under, around, and over the blocks of ice, so that each block had its own insulating blanket. The trick to keeping the ice from melting was dry sawdust. Once the sawdust got wet, the ice would begin to melt very quickly. Therefore, sawdust was replaced as it became damp, thus slowing the melting process. Once the icehouse was filled, the doors were shut and not reopened until warmer weather when the ice was needed. Ice was transported from these large icehouses by train to urban areas, like Philadelphia. From the icehouses in these urban areas, the ice was moved again to the rural parts of the country and stored in local icehouses. The Physick family probably got its ice from the local ice house. When the winter was cold enough, ice would be harvested locally (from Lily Lake). When the weather didn’t cooperate, ice was shipped down from the North and was stored in the local ice house. As Dr. Physick and his family desired ice, they would simply get a block
or two from the local icehouse. In 1901, there was an icehouse located on Washington Street. Called the Knickerbocker Ice and Coal Company, the building stood at 624 Washington St. Ice was really only needed when the weather was warm (maybe May to September or October). During the rest of the year, items that the Physick family stored in the basement would stay cold enough to prevent them from spoiling. So, next time you go to the refrigerator and take advantage of your automatic ice maker, remember how precious and valuable that ice was during Victorian times, and how much work went into getting it to your glass.

Author: Fanny Farmer c. 1896 Cookbooks began to gain in popularity in the latter half of the 19th century due to higher literacy rates, the lower cost of printing, and the emerging middle class with more disposable income. Fanny Farmer trained at the Boston Cooking School, where she noticed the lack of consistency for recipes. At the time, recipes called for amounts such as “butter the size of an egg” or “a teacup full of flour”. Farmer wanted cooking to be more uniform and scientific. If directions were followed correctly, a recipe should come out the same each time. When The Boston Cooking-School Cookbook was published, Farmer in-
cluded several new ideas. She used exact, standardized measurements such as 2/3 teaspoon and 1 ½ cups. Farmer included information about nutrition and a healthy diet. The cookbook was an instant hit, selling over 300,000 copies during Farmer’s lifetime.

The hand fan served many purposes in the Victorian Era. It was, first and foremost, a fashion accessory. A fashionable Victorian woman would make sure her gloves, boots, stockings and fan would all match. To keep women informed about the newest style of fans, magazines published detailed articles in their fashion
sections outlining the latest desirable fan. The most expensive fans were sold in their own individual velvet or silk-lined cases. However, inexpensive fans were shipped to America in large quantities, then boxed by the American shopkeeper. Oral history states that these three fans belonged to Mrs. Ralston, Dr. Physick’s mother. Look for these fans in Mrs. Ralston’s Bedroom.

CAPE MAY ABLAZE: The Fire of 1869
With the publicity caused by the opening of the new Stockton Hotel, Cape May had the best season in 1869 that the city had ever experienced. Unfortunately, the year’s good fortune took a devastating and unexpected turn at around three o’clock in the morning on August 31. In a small Washington Street shop known as the ‘Japanese Store,’ an unknown arsonist started a fire. Almost immediately, the Japanese Store was engulfed in flames, which spread to the nearby Post Office and then to the United States Hotel, which was almost fully occupied at the time. Within hours, the fire grew into a monstrous inferno that
devoured a quarter of the city and left nothing but ashes in its wake. A New York Times article dated September 1, 1869, noted, “Almost in a moment this last was but a huge ball of fire, and as it shot out ‘forked tongues of flames,’ it was seen that the great United States Hotel nearby was doomed. The guests hurriedly poured out in a great crowd, men, women and children, scarcely clothed, and unnerved by fright… The great hotel, in a few moments, was like the Post Office, enveloped in flames, which cast its lurid light far out upon the ocean.” A Cape May Wave article later explained the reason the fire spread so

rapidly from the ‘Japanese Store’ to the rest of the city. “A few men had assembled… but without a leader each set to work to break in windows, knock down doors, and create a vent for the fire to reach the adjoining two-story building on the west, which was soon enveloped in flames… through misdirected energy, the Post Office building was broken open on the eastern side so as to provide a vent for the flames to reach the United States Hotel.” When the fire was finally squelched and the damage could be tallied, residents of Cape May finally learned the toll flames had taken on their city. The United States Hotel, the New Atlantic and the American Hotel were also lost, along with 20 other homes and businesses. In addition, the post office and other city offices were destroyed. The culprit was never determined,
though many in town blamed the fire on the proprietor of the Japanese Shop, Peter Paul Boynton. Boynton was wellknown around Cape May as ‘the Pearl Diver’ and had made a career as a sort of lifeguard for hire. Boynton knew the ocean well and was credited with saving a total of 75 people who were in danger of drowning. After the accusations against Boynton were made public, he was forced to appear in court and face the charges that he set the fire. He vehemently denied the accusations and explained that, along with all his wares, he also kept his life’s savings in the store and lost everything in the fire. Taking into consideration Boynton’s personal losses and the lack of any credible evidence against him, he was found not guilty and released. The 1869 fire remains unsolved. -- Ben Miller

Sit back and relax Morris Style Reclining Chair C. 1885 The term “Morris chair” today is applied to a large chair that has an adjustable back. The style of chair is named after its creator, the British designer William Morris (1834-1896). In 1861, Morris started a business entitled Morris, Marshall, Faulkner & Co. which was later renamed Morris & Co. Morris introduced a revolution in design. Believing furniture should be hand-crafted and made with traditional techniques, he is credited with being the father of the Arts and Craft movement. Morris-style furniture became very popular from the Victorian Era through the 1930s. Morris chairs were notable for being able to recline. Unlike recliners today, they were extremely low-tech. The back of the chair hinged onto the bottom of the seat. A brass bar fitted into a series of notches to control the angle of the back piece.

The Old Congress Hall When Thomas H. Hughes built the original Congress Hall, Cape May residents thought he was out of his mind. The original building was much smaller than what you see in the picture, but even so, people believed it was too large to ever turn a profit. Thomas Hughes, or ‘Tommy’ as he was known around town, became the object of ridicule by his friends and neighbors. Hughes called his new hotel ‘The Big House,’ but around Cape May circles, people named it ‘Tommy’s Folly.’ Hughes was undeterred by the jeers of others and he opened for business in the summer of 1816. Almost immediately, Hughes saw his gamble pay off as guests filled the hotel to capacity. The Big House turned out to be a tremendous success and Hughes was vindicated. The hotel continually sold out every summer season, as Hughes grew more influential. In addition to the hotel, Hughes had already served four years as the Cape May County Sheriff and five years in the New Jersey General Assembly. After the hotel opened, Hughes set his

sights on bigger goals. He was elected to the New Jersey Senate in 1819, and after serving six years, he decided to run for the U.S. Congress. In 1828, Hughes won the election and began the first of his two terms as a Congressman. In honor of his new position, The Big House was renamed, ‘Congress Hall.’ Hughes died in 1839, but the hotel continued to live on. Congress Hall grew more popular than ever and was greatly expanded upon. In the 1850s, Congress Hall reached a new height in popularity when it hosted the thenPresident of the United States, Franklin Pierce. His successor, President James Buchanan, also vacationed at Congress Hall, as did President Ulysses S. Grant. Things came to an abrupt halt in 1878, when the hotel fell victim to a terrible fire that swept through Cape May. Congress Hall burned to the ground, leaving nothing but memories amid a pile of ashes and glowing embers. The hotel was quickly rebuilt on a much smaller scale and the original Hughes property was sub-divided into a number of individual lots. Cottages
were constructed on the northern portion of the property, separated from the hotel by a new street called ‘Congress Place.’ Over the years, the new Congress Hall has weathered many storms, but it still stands today as a tribute to Thomas Hughes and his grand dream. -- Ben Miller

phonographs in the shape of a grand piano. The Lampagraph Company even combined the phonograph with a working lamp! By the late 1920s, the popularity of phonographs began to wane due to the advent of radio. Dr. Physick had a phonograph and more than 80 records in his collection. According to oral histories, Dr. Physick’s favorite singers included Enrico Caruso, Antonio Scotti and Nellie Melba. Dr. Physick also had at least nine records by John Philip Sousa. While not a family piece, this phonograph is typical of their time period.

The Victorian Era saw the advent of recorded music that could be played in homes. Phonographs became popular in the 1890s with Thomas Edison’s advances in wax cylinders. The popularity of phonographs continued into the 20th century. Since several companies were making phonographs, they began to create designs that would stand out from the rest. The Winsor Furniture Company began selling desks and tables with a phonograph inside. The Fern-O-Grand Company made their
